The Bellagio Hotel in Las Vegas has 3,933 rooms, spread over 37 storeys. However, if you stand outside and count the floors according to the windows, you’ll only see 16 levels. This trick is used on many of the gargantuan hotels in Vegas. It reduces their scale in the mind’s eye, so making them less daunting to the viewer. THE BELLAGIO HOTEL, LAS VEGAS,
provides a dramatic example of what is known as the “window eye trick”. The brain calculates the number of storeys by measuring the number of windows that your eye perceives. In our mind’s eye, the effect is not to see bigger windows but to see a smaller building. The architect, by presenting a facade that disguises the true scale of the interior, has managed to shrink a building with a simple optical illusion.

How would you describe your style? I think my style is minimalist. That’s kind of the core quality that I tap into in my work, sort of Tufte-an, not including marks that are unnecessary. I don’t like to over-ornament things, and if something can be refined, I’ll try and do that, but I also enjoy experimenting. The 2010-2011 biennial report Felton chronicled his move to Facebook by comparing and contrasting his life between California and New York over the years 2010 and 2011. Armed with a Fitbit smartphone and logging application, he plotted not just his whereabouts each year (2010 in cyan, 2011 in magenta, with shared locations in purple), but also used the data sketching application Processing to calculate a probabilistic rendering of where he was most likely to be at a given moment. Why combine the two years? Felton had skipped a year in order to create a poignant statistical tribute to his father, who died in 2010.

Autumn is the year’s bountiful harvest period, with musky undergrowth, powerful anti-oxidant greens, and vitamin-rich fruits, to help us stock up enough energy for the colder winter months. The Italian table benefits from the arrival of slender leeks, fennel bulbs, feathery-topped carrots, Swiss chard, chicory, Belgian endive, celery, and the curly Catalogna endive locally called puntarelle. Brussels sprouts, broccoli, and a range of root vegetables arrive in October. Fall season fruits include ruby pomegranates, Italian kiwi, Kaiser pears, sweet orange persimmons, quince apples, and the very first citrus, with clementines and navel oranges leading the way.

Autumn olive picking yields Italy’s liquid gold: extra virgin olive oil. Harvest season lasts around six weeks, starting late October; the further north, the later the harvest will end. Olives are still mostly picked by hand, either with small rakes that comb the fruits off the trees to collect in natural fiber nets strung across the grove; or manually picked into wicker baskets tied around the waist.
It’s the time of year for meaty mushroom and truffle hunting, carried out by expert trufolai and their trained dogs. Once the dog indicates a possible find the expert trufolau digs up the truffle with a narrow, long-handled spade. If unripe, it is carefully reburied for future harvesting. Truffles grow around the roots of oak and chestnut trees, buried up to a meter below ground.

Autumn is also when vines are clipped of their golden or dusty purple grapes, and made into the country’s prized wine, with early harvests starting in mid-September and the late harvest or vendemmia tardiva going as late as mid-November. Families and farm communities gather on this occasion and celebrate the end of the harvest with a communal, outdoor feast.
This is the time for roasted chestnuts, walnuts, and hazelnuts, the pride of the northern Piedmont region. Another tasty Italian specialty foraged this season are pinoli, pine nuts. Encased in the cones of tall Mediterranean Stone Pines, pinoli are available until late fall, carpeting tree-lined areas of public parks, or sold already shelled in small inexpensive packets.

Preheat oven to 180ºC/350ºF/gas 5. Break the eggs into a bowl. Add salt and black pepper, and whisk well with a fork. Set aside.

Melt 1oz butter in a pan. Add the sorrel, and gently wilt, stirring for 1 minute. The vivid green will turn very quickly to a green-khaki. After 1 minute pour in the egg mixture. Cook over a low heat for a couple of minutes, or until the sides begin to set. Pull the sides into the middle, letting the middle run to the sides and cook for a further 30 seconds. Transfer to the oven and cook for 7-10 minutes, or until set and golden.

To make the sponge 1 Pre-set the oven to gas mark 4/180 degrees C and line the baking trays with oven parchment. Warm the butter to room temperature and cut it into small pieces in a large bowl. 2 Break the eggs into the bowl, then pour in the sugar, flour, vanilla essence and baking powder. Using an electric mixer, beat the ingredients together until you have a light,pale mixture. This will take about 2 minutes. 3 Divide the mixture between the two Swiss-roll tins and spread into an even, thin layer, using a palette knife to even up the top. 4 Place the tins in the top half of the oven. Check after ten minutes—the mixture should be slightly browned on top. Leave for another 2 or 3 minutes if necessary, then remove from the oven and cool in the tins for another 5 minutes.

When our customers order a grilled lobster, we simply go and select one for them, cut the lobster in half and clean and grill it there and then, with nothing but lime and butter, and of course, a little magic in the form of Basil’s special seasoning...

Fresh lobster, approximately ¾lb in weight
The perfect lobster is cooked on an open grill. If your lobster is alive, kill it humanely by driving a knife smartly through the back of its head, at the point where the head joins the body. Lay it, shell side down, on an open grill basting it generously with a mix of lime and seasoned butter.

Leave it on the grill for six minutes, then turn it over, belly down, and grill for a further four minutes. The one thing that you must not do is overcook the lobster—like any other meat, it’s terrible when it is overcooked. Check whether the lobster is cooked through by making a small hole in the meat with the point of a knife. Turn it one more time and drizzle over a bit more butter sauce before serving. These little skewers of spicy chicken are probably the most popular-ever party food. They’re ideal for an outside barbecue, or you can cook them indoors on the grill. In Malaysia, every street stall’s satay will taste just a little different: a touch more chili, a pinch more sugar, perhaps an extra spoon of turmeric—and regulars will have their favorite stall which cooks it just right for their individual taste. 1 Squeeze the lemons to get 1/2 cup/100ml of juice. Set aside. 2 To make the marinade, put the shallots, garlic, turmeric, cumin, coriander, chili, and salt into a food processor and whizz until you have a finely ground paste. If it’s a little dry, add a dash of oil to get the right consistency. 3 Heat 1 tbsp oil in a shallow pan (a wok or frying pan will do), and add the blended ingredients, then cook over a low heat for 3 minutes, stirring continuously. Add the lemon juice and sugar, and cook, continuing to stir, for another 2 minutes. The paste will darken. Leave it to cool. 4 Slice the chicken or lamb into thin slices and place in a large bowl. Save 1 tbsp of the marinade in a small bowl (you’ll be using it later for the peanut sauce), and pour the rest over the meat, stirring it around to make sure that all the meat is covered. Leave to marinade for at least 2 hours, or, even better, overnight.

Make the peanut sauce just before you’re ready to cook the meat. 5 Grind the peanuts in the food processor until you have an even texture with just a few bigger pieces (if you like your peanut sauce very smooth, grind for another couple of pulses, but don’t overdo it—you want textured peanut, not powder). Squeeze the lemon. 6 Put the reserved marinade into a small pan and warm it through gently over a low heat. Add the peanuts and stir together, then add the coconut milk, sugar, soy sauce, lemon juice, and the chili flakes if you like a spicy sauce. Warm it through, stirring. Taste and make any adjustments—you may find you like a little more heat, or lemon, or sugar— you can tweak it according to your taste. Transfer to a bowl, ready to serve. 7 When you’re ready to cook, remove the meat from the marinade and thread it onto the skewers and put on the barbecue or grill. They take around 5 minutes to cook. Turn them once to brown both sides, before serving with the sauce.

The Chinese believe that every food we eat has its own sweetness, and squid is the perfect example; delicate in texture, sweet and savoury in taste. The key is to cook it for as little time as possible so as not to lose this delicate texture.

knowledge of three generations of Chinese chefs with formal studies at Le Cordon Bleu. In 2009 he established School of Wok, a mobile cookery school.
Preparation • Wash the squid thoroughly and then dry with a clean tea towel.
Cooking • Deep fry the squid at 190° for 3-5 minutes until the pieces start to brown.
• Cut the squid tubes in half to form 2 flat pieces. Score the flat squid pieces diagonally in both directions to form a diagonal criss-cross pattern along 1 side of each piece.
• Drain off excess oil. • Heat 1 tablespoon of vegetable oil in a wok to high heat. • Throw in the chillies and garlic.
• Place pieces in a prep bowl along with the legs.
• Add the squid and season well with smoked salt and plenty of pepper.
• Cover the squid with the seasoned corn flour and cover with a plate or lid which fits over the top of the bowl.
Ingredients 500g squid tubes 1 cup seasoned corn flour (season with 1 tsp salt, ½ tsp pepper, ¼ tsp liquid smoke) 3 cloves garlic 2 chillies ½ tsp smoked salt 1 ½ tsp course black pepper
Serving • Serve immediately on large plate.
• Hold the bowl and lid tight and shake to mix the corn flour in well. • After shaking, massage the corn flour into the squid. Each piece should be separate and as dry and dusty white as possible. If need be, add more corn flour until a dry, separate consistency is reached.
