editor’s letter You just can’t have summer without corn. When I was in high school, I was in the school musical Oklahoma. To this day I cannot drive by a corn field without hearing the words “The corn is as high as a elephant's eye, And it looks like it's climbing clear up to the sky.” Rodgers and Hammerstein sure had a way with words. What a perfect way to sum up the sight of a field of corn growing in the summertime. In terms of production, corn is the largest crop grown in the U.S. and it is used for everything from corn on the cob, to grits and cornmeal, to animal feed, to corn syrup, ethanol and even plastics. Here is WNC, we mostly grow sweet corn for eating and animal feed. But you will also find a few farmers, like Harold Long (page 12) growing heirloom varieties for seed. And if you prefer your corn in the popped variety, you’ll definitely want to check out Poppy’s Popcorn (page 14) and their amazing flavors! Every summer, Food Life celebrates the anniversary of our launch in Summer of 2014. We’d like to thank our staff, our contributors, our advertisers and our readers for all your support the past four years and we look forward to many more years to come. A FORD MUSTANG, PARTICULARLY ONE FROM THE 1960’S, has a specific sound. It is refined, and maintains a gentle purr like a house cat, but with a little gas, it lets out the most hollow and raucous roar. It is a muscle car with all of the muscle car elements: sturdy build, wide shoulders that rip their way around corners, and over 500 horsepower. But they are also elegant, in their own way, with every detail in just the right spot. By the 1970’s, they were the fastest car on the road and had become the steely embodiment of tenacity and a metal metaphor for America. Chef Graham House’s 1969 Ford Mustang is no different. Originally belonging to his grandfather, it sat in a garage for 20 years before House rebuilt it himself. He’d even left a note, scrawled in crayon in the glovebox when he was 6 years old, which served as the bill of sale in Georgia. That Mustang isn’t just an heirloom or a project to House, to see him leaning on the black metal bumper, contemplatively dragging from a cigarette before strolling into his kitchen at downtown cocktail emporium, Sovereign Remedies, you start to wonder if the car is some kind of extension of him, an avatar of sorts. Having cooked everywhere from Italy to the Napa Valley, from Atlanta to San Francisco, House has weaved his way around every avenue of the restaurant scene, rarely touching the same road twice, but always forging ahead to find new territory, somewhere just over the next hill or around the next bend. “I spent a lot of time in the woods.” He says, reflecting on growing up in Western North Carolina’s Dupont Forest. “My Dad was always a good cook, and he hunted a lot, so he was always doing whole hog, so I was brought up in that environment of you eat what you kill kind of thing.” So the transition to kitchen work was easy when he took his first job at what is now the Old Etowah

Smokehouse when he was 16 as a dishwasher, before learning to cook with fire. That experience would shape the direction of his career and stoke the engine that seems to drive him: curiosity. After high school, he found himself in culinary school but left to work in Atlanta after the first semester, not finding it challenging enough to peak his interest. From the Italian kitchen of Pricci to the farm to table cuisine of Canoe down on the Chattahoochee, House worked his way up before taking a job in Italy’s Lake Como at a small, traditional restaurant in operation since 1850, just at the toe of the Swiss Alps. For the most part we think of pasta when we think of Italian food in America. Olive Garden-like gargantuan servings of noodles slathered in sauce and dusted so heavily with cheese as to resemble a snow capped mountain. But that is not what House found in Italy. “There, it was very veg. forward, but here it’s all carbs, carbs, carbs.” He says. He learned simple, classic techniques. The Italians tend to focus on the quality of the product they are using over intrusive techniques. So a good potato will be treated like a potato and not mashed into oblivion or pureed as the French might do. “In my mind,” he says, describing Italian technique, “it’s that if you buy a perfect ingredient, you don’t f**k SUMMER 2018 | FOODLIFEMAG.COM

You find something that compliments it, or to contrast it, but don’t f**k with it.” “It’s kind of nice to look at a potato and not think, ‘this needs a steak with it,’ but think, ‘this will be a potato dish.’” He says, “I never plan menus, I go to the market and buy a tomato, and then my forager walks in the door and says he’s got this wildflower, and I think, ‘oh my god, this makes sense.’ When I’m walking the market, if I taste something that is good, and I think, ‘this should be a dish.’ then as I am walking the rest of the market, I’m looking around for what I can do. So instead of going through cookbooks and trying to find inspiration, I just do it out in the market.” After a year cooking in Italy, he took a 6-month sabbatical on the Greek Island of Crete before returning to Atlanta to start as Sous Chef and help open the oft lauded 4th & Swift. But the time in Italy and Greece had changed him. The freshness of the produce, the movement of the seasons, and a growing fascination with letting the ingredients speak for themselves left him driven, an engine churning, pedal to the floor, with no intention of slowing down. He wanted to learn more, he wanted to absorb everything. “When I’d realize I’d be cooking the same dish as last year, that’s when I’d know it was time to go.” He says, “you’ll see a chef that says, ‘oh, it’s asparagus season, let’s do that asparagus dish from last year.’ But that’s just not how I work, and I feel like that’s how I’ve garnered such an amazing staff. To keep your kids interested and make them want to keep working for you, you have to keep them motivated. It’s like cats, you have to give them toys every once in a while.” That drive pushed him into a country-crossing career, landing stints at Napa’s Rotisserie & Wine with celebrity chefs Tyler Florence and Jeremy Fox, Richard Reddington’s Michelin Starred Redd, before he returned to Asheville in 2012 to care for his mother after she suffered a stroke. “That’s when I started rebuilding that car. I was just sitting out there with her and needed something to do.” he recalls. House eventually returned to San Francisco where he worked with the immensely talented and celebrated Sean Baker at his outfit Verbena. “Sean Baker and Jeremy Fox are the two chefs that I was most inspired by, but I worked for them the least amount of time.” He says, noting that Baker curiously cut his teeth in higher-end vegan cuisine before shifting to whole animal cooking. That dichotomy between strong vegetable forward dishes, and meat-rich cooking are littered throughout House’s cuisine, and he explored those opportunities when he returned to Atlanta to run 4th & Swift and Terminal West, where cooking for a music venue taught him how to adapt a menu to a crowd. “If the kids were there to see an EDM show, it was lighter bites. If it was a Drivin’ N’ Cryin’ show, it was more substantial stuff.” It all just depended on reading the crowd. Around every turn and on every road he’s found himself, House doesn’t seem to ever stay the same. He adapts to each position, shifts his focus slightly, brings on new skills. But the work ethic stays steady, as does the focus on the ingredients, something that seems to have never left him since Italy and Greece. At Sovereign Remedies, which has always had a farm-driven menu, 10

he is able to concentrate those ideas into a diverse menu of produce-driven bar foods. “I don’t want to make heavy bar food. In my mind, I don’t want people to get full right away. It’s about satiation. I want people to be able to eat my whole menu and not be wheeled out of here.” Long may you run, chef. nancy and harold long carry cherokee stories in heirloom seeds by tiffany narron WHEN LOOKING AT CORN VARIETIES AND FARMING IN SOUTHERN APPALACHIA, there is no greater teacher on the subject than the Cherokee. Heirloom seed saver and registered member of the Eastern Band of Cherokee Indians Harold Long, alongside his wife Nancy Long, certainly have stories to share on the subject. “With seeds, there are so many different stories and they’re all unique and just really interesting,” shares Nancy. “It’s another way of listening to family history.” Now in their fourth year growing heirloom seed varieties on their 32-acre farm in Murphy, Long Family Farms and Gallery continues that history by growing and saving the seed of a variety of crops — tomatoes, pole beans, a very rare North Carolina Candy Roaster pumpkin and yes, corn. In fact, many of you may be familiar with the Three Sisters, a farming system unique to the Cherokee, used for growing corn, beans, and squash or pumpkin (selu, tuya and iya in Cherokee). These were all planted together as a cluster crop, allowing harvest of each on a timeline so that beans could be picked first, then corn and finally squash — some grown only to save the seed, some dried or ground to store for later and others grown for produce to sell at market. “This year we’re growing this very rare Will West Long Corn seed, which came out of the Big Cove Community in Cherokee. We got this through trading with another seed saver after we spoke on a panel at UNC Asheville alongside Vandana Shiva’s talk in October of 2017,” Nancy shares.“And we maybe got 150-200 seeds, so we planted them, and they’re doing good, and we’ll be growing them just to save the seed, not to eat.” Last year the Longs grew Hickory Cane Corn, which they made hominy out of to grind into cornmeal in preparation for traditional Cherokee Bean Bread using a grinder borrowed from a neighbor. They’ve also grown Cherokee seed bead in the past, or Job’s Tears, which is “really like a grass seed. You can pull this little strand out of it and there’s a natural hole in it which makes a nice bead. So they use it for making necklaces and things like that. Harold’s sister would always make necklaces out of it,” Nancy says. Harold’s family farmed in Cherokee on the reservation until his father passed away and the land was divided up, Nancy shares with me. Afterward, Harold and Nancy knew they would need more land to grow so they searched and found their now 32 acre home and farm in Murphy, NC, bordered on both sides by tribal land, “which makes Harold happy,” Nancy says. It’s also a bit isolated, she goes on, which is necessary for seed saving without fear of cross pollination if 12

It just was what you did. We’re just happy to do it and glad that we’re able to. It’s something that we love and if you love something it’s really not work.”

traditional cherokee Bean Bread 1 C Cornmeal 1 C Flour 2 tsp Baking Powder 1 tbsp Sugar 2 C Milk 1 C Melted Shortening 1 Beaten Egg 2 tbsp Honey 4 C Drained Brown Beans Mix all of ingredients except beans thoroughly, and then fold in the beans. Pour into greased, heated pan. A cast iron skillet works well for this. Bake at 450 until golden brown (usually 30 minutes or so). Test for doneness with a toothpick (done when the toothpick inserted comes out clean).

Poppy Popcorn: growing a Business one kernel at a time by tiffany narron photos by tiffany Welsh CORN GRITS. CORN TORTILLAS. CORN CHIPS. The list of foods created by the small golden kernel is long (and that’s not including all of the other creative ways we use this Yellow Gold in soft drinks, chewing gum, sweeteners, toothpaste and so much more). So, one might assume that you could potentially stop the car, dart out into a passing field of stalks, grab a few, shuck them of their 800 or so kernels and pop those babies into a nice warm buttery bowl and toss in your favorite thriller. It turns out it’s not so simple, as Ginger Frank, Founder of Poppy’s Popcorn, a four-year-old Asheville-based popcorn company, shared with me. Of course, just like many other crops, there are different varieties, and that is one of the many things Frank found out through the process of popping up her very own dream job. “Asheville is just this type of town where everyone wants 14
FOODLIFEMAG.COM | SUMMER 2018
to live, yet there aren’t a ton of means to make money,” she shared with me one afternoon. “So I feel like lots of people try to step outside the box and figure out how they can make a living, and my wheels were also really turning in that direction. I was watching The Food Network one night, and something came up about a popcorn cafe, and I realized there was no homemade popcorn in Asheville. In my very naive mind, I thought ‘how hard could this be? I mean it’s popcorn. Yeah, I’m totally going to do this!’” Quickly, Frank poured everything she had into finding a retail space off Merrimon Avenue. In fact, she found her little corner shop in the shopping center alongside Hop Ice Cream, Rise-n-Shine Cafe and many others before test popping large batches of popcorn, more than what you would make at home watching a movie at least. “My thought was to have

Provided by Poppy Popcorn this popcorn shop where people come in and buy bags of popcorn, and they’re all happy, then you close down at the end of the day and go to your kid’s soccer game or baseball game, and it will be this great, simple and happy life,” Frank shared. While she may have acted on her Food Network dream-scheme overnight, she wasn’t a nube to the corn popping game. Frank says growing up her family owned every popcorn related gadget there was, like the air popper and the new fangled foil poppers with the hand-held wire hook. She also popped homemade batches for her two middle-school age kids at home for after school snacks, adding in her own mix of seasonings. “You can buy pre-made mixes from the store and just whip up your popcorn really quickly and that’s super simple. But because I wanted to make my popcorn with real ingredients, nothing artificial, non-GMO and all these good things, it’s definitely more of a science like baking because we’re using real ingredients from scratch rather than these flavoring mixes that are out there on the market. So because of that it tasted different and people really fell in love with it,” she shared. It didn’t take long for fellow-business owners to put in requests to carry Poppy in their retail stores, something Frank never dreamed of. With a background in retail and merchandising, she had an understanding of that world, yet decided to begin working with Mountain Bizworks to help her work through the start-up costs and business practices. She also quickly hired on Atlas Branding to dream up the fun design for her popcorn packaging. “Once we started filling up bags of popcorn for other people to sell, Asheville was no longer our only audience. Anybody could buy it anywhere. That’s when the orders started coming in. At first, it was just word of mouth, and I was just stunned. Somebody would call from another state and tell me they wanted to carry Poppy and I was like, ‘What, this is crazy!’ But now we have 600 retailers across the country and have popcorn in almost every state,
and it’s just insane!” What began with a Food Network Dream and two part time employees has grown to 24 full time employees, 8 part time, and two locations, with the most recent in Black Mountain as of December, 2017. She recounts the days of running across the street to the grocery to grab a few seasonings then shoot back over to Merrimon Avenue and test pop a large batch. Now, spices are bulk ordered and delivered to her Black Mountain location alongside boxes and boxes of packaging for their retail popcorn. “We do everything in house and make everything from scratch,” she says proudly. “There’s a huge kitchen in the back of our Black Mountain store. So, the sweet popcorn goes through a candying process and is cooked in these big kettles — ingredients first followed by the popcorn. Savory popcorn is easier because there is no cooking process. You just have dry ingredients and it’s tumbled to coat each popped kernel. Then we fill each bag by hand and it’s all boxed up and shipped out. We are still making popcorn for the front of the store for those that are just coming in to buy a bag that day.” Frank’s popcorn batches are anything but the ordinary batches you’ll find lining the shelves at Whole Foods. The savory flavors range from familiar popcorn flavors like white cheddar and salt and pepper, to interesting blends like the spicy sriracha pop, jalapeno cheddar and olive oil and rosemary. Have no fear if you like your corn coated in sticky sweetness. For those who enjoy their corn candy-coated, dessert-style flavors range from dark chocolate and cherry to chocolate peppermint bark and the best selling Asheville Mix — a perfect blend of salted caramel and white cheddar. “It’s a salty sweet mix and it’s a best seller because it really is delicious and because of the name. Even in other parts of the country it’s our number one seller. A friend of mine was just in the Seattle airport and sent me a picture saying ‘Oh my gosh, I just saw Poppy in the Seattle airport!’ I knew it was there, but I never thought I’d have a friend send me a picture of it. The Asheville Mix is there in the Seattle airport. I mean Asheville is a brand in its own, and everybody loves it, so even if they don’t live here, they’ve heard so much about it; it’s just a cool place to be.” So where is all of this delicious corn, covered in herbs and caramels, being shipped to Seattle and across the nation, coming from? The closest supplier, Frank shares, is in the midwest, “because that’s corn country.” Just a few months back, however, Frank reached out to North River Farms in Mills River, who currently grows rosemary for one of their savory blends. She asked Owner Jason Davis if he would be interested in growing a test crop of popcorn for her and he said yes. It turns out much of western North Carolina’s corn crops are used for feed and edible ear corn. “What I’ve learned in talking with Jason, the owner of the farm, is it’s the soil, and not knowing how big of a kernel it will make. The kernels needed for popcorn are pretty big because they need to be hearty enough to withstand the coating process when it’s turned into sweet popcorn, so if it’s too small and fragile, then it just crumbles. So that’s what we’re looking for, not whether it would grow or not, just whether the soil is going to be rich enough for that variety to make a large enough kernel. He planted the seeds back in April so we’re waiting it out until Fall.” So what’s on the horizon for Poppy? A move into the bustling downtown scene is a dream for Frank as well as a future store in a city outside of western North Carolina, although she shares, she “will always go for cities that have an Asheville feel, not big cities. We still want to be where people live like Asheville people live and have the same kind of priorities and things like that. We feel like that’s part of what made us successful. We have a town that supports local and small business and really had a heart for good ingredients. Maybe without all that we wouldn’t have made it. grilled corn with chili lime Mayo, cilantro & Queso fresco chili Lime Mayo ½ C Mayonnaise 2 tsp Lime Juice 1 tsp Hot Chili Powder 1 tsp Tapatio or Cholula Hot Sauce 1/4 tsp Cumin 1 tsp Garlic, minced Combine all ingredients in a small bowl and mix until incorporated. 4 Ears of Corn 2 Tbsp Butter, room temperature ½ C Queso Fresco 2 tsp Chili Powder 2 tsp Salt ½ C Cilantro, chopped Shuck the corn and remove all of the corn silk. Rub each shucked corn with ½ tbsp room temp butter. Combine chili powder and salt and season the buttered corn. Grill over high heat if using gas or 3” above charcoal. Rotate the corn every 2 minutes until all sides are evenly cooked. Remove from the grill and spread 1 Tbsp chili lime mayo evenly over each ear of corn and sprinkle queso fresco and cilantro.

3 Tbsp Olive Oil or Butter 1 Medium Onion, diced 1 lb Potatoes, cut into ½” cubes 4 C Vegetable or Chicken Stock 3 C Corn (about 5 ears), either fresh or frozen 2 C Milk 2 Tbsp Flour 2 tsp Salt 1 tsp Black Pepper 1 C Shredded Cheese, optional Bacon and Chives for garnish, optional Place a large soup pot or Dutch oven over medium heat. Add butter or oil to pan. Once butter is melted, add the onion. Cook for about 5 minutes, stirring occasionally, until onions are soft. Add the potatoes, stock and 1 tsp salt. Bring to a boil. Cover and cook for 15 minutes. Add the corn and cook an additional 15 minutes. Whisk in the flour until completely dissolved. You will notice the juices getting thicker. Remove from heat. Add the milk and cheese, is using, and stir until melted. Season with salt and pepper to taste.
