USING THE YACHT’S AMENITIES AND EQUIPMENT during your charter you are allowed to use all amenities on the yacht and enjoy it as if it were your own. When it comes to watersports and scuba diving equipment, in most countries a license is necessary for certain water toys (e.g. jet skis, wave runners and other mechanically propelled watercraft) and there may be an age limit. To utilize the yacht’s Scuba diving equipment, a certified PADI license or equivalent is necessary. If you do not have the required certificates, our team can usually arrange for an instructor to come on board the yacht during your charter.

fering a range of bays to discover. Spend the day on Despotiko island, which is uninhabited and has an interesting archaeological site, and return to Antiparos for a late lunch at Captain Pipinos taverna in Agios Georgios and have the freshest seafood on the island. At night enjoy what we consider the best meal on the island at Sapou, which is in the main harbor. In a welcome break from all those traditional Greek dishes, Sapou centers around comfort food from around the world. The burger and lemon pasta are two of our favourites. Don’t skip dessert, the pudding is epic. When director Luc Besson was looking for the perfect blue waters to shoot his 1988 movie The Big Blue, which centered around the maniacal sport of freediving, he looked no further than the island of Amorgos, at the southeastern edge of the Cyclades. Such is the beauty and clarity of the waters surrounding this island. Outside of the water Amorgos is one of the most impressive Cycladic islands with marvellous beaches, interesting caves, ideal spots for diving, scenic bays and ancient footpaths leading through its steep rocky terrain. Have a meze and a quick drink and Parvas, a traditional café in the Chora, before moving on to dinner at Tranzistoraki where you should order their smoked eggplant salad and anything with cheese in it. Shining under the Aegean sun, Folegandros was named after the son of King Minos. This small island is certainly off the beaten path and captivates visitors with the untouched beauty of its beaches, the luminous blue of its waters,
AMORGOS
and the unadulterated style of its architecture. Walk along the narrow streets of Chora past timeless creations of traditional Cycladic architecture, white-washed homes with multi-colored doors and windows. If you need to take a rest, plane trees will offer you cool, welcome shade. In the evening have dinner at To Sik, which has a variety of vegetarian dishes, and polish off your night with a drink at the bar in Anemomilos Hotel. It’s easy for the avid traveller to dismiss Santorini because of its popularity. True, the crowds in the summer months can be overwhelming but the island really is one of a kind. Santorini is rightfully famous for its sunsets and breath-taking views but also for its excellent food, which is made all the more delicious by the use of local products, and wine. The island’s beaches aren’t to everyone’s liking as they are volcanic and the water is deep. From a yacht you can reach inaccessible options and choose from black, red or white sand beaches or just swim in the inky blue caldera. The islands of Thirasia and Aspro, which are part of a volcanic crater that has been engulfed by the sea, are also great swimming spots. Enjoy the sunset at Franco’s bar in Fira while listening to classical music and venture to taverna Metaxi mas in the village Exo Gonia, undoubtedly one of the best restaurants on the island. If you’re looking for something more elegant try Selene, in the traditional village of Pyrgos.

World Class Food from superyacht chefs Fine dining is such an important element of any successful yacht charter and, understanding this, the IYC charter fleet proudly boasts award-winning chefs, Michelin star standard food, and chefs with an incomparable passion and flair for their craft.

uests Looking for a true culinary experience during a charter will be spoilt for choice when making their selection from the IYC fleet of charter yachts with a huge range of talent and signature cooking styles on offer. Two yachts noted for their on board chefs are 50m M/Y Ouranos and 44m M/Y Bliss. Both yachts have dedicated dining spaces, both inside and out, for guests to enjoy several different dining experiences, whether a degustation formal dinner or a more relaxed al fresco lunch. Head Chef on Ouranos, British-born Duncan Geary has worked for more than two decades in the yachting industry on a host of popular charter yachts. Taking great pride in the presentation of his dishes, Geary especially enjoys tailoring menus to charterers’ specific requirements. Head Chef on Bliss Patrick Thezan – also known as Chef Pato – grew up in Haiti, immersed in the culinary world from a young age. Known for his creative flair Thezan’s passion for cooking translates into his food, creating unique dishes that cater to the preferences of each guest. Ahead of every charter, chefs will take the preferences of guests and create a bespoke menu to be enjoyed. Both chefs credit the role of the brokers as important in ensuring that a charter’s menu is perfect, as feedback on the personal preferences of each guest helps to create a truly custom menu. “We usually will begin with a broad menu plan, but this will evolve on a daily basis as we develop it once we have met the guests in person and listened to their wishes,” says Geary. As well as creating a menu based on personal preferences Thezan also enjoys presenting something new and memorable for guests, to make their culinary experience even more special. “Every charter is different, and I will plan my menu according to guests requirements, but I always try to have a few other things that I may think they will like,” he says. Creating a special and personal menu is one of Geary’s most enjoyable challenges as a superyacht chef, and he invests significant timeSCALA into capturing essence of each charter and translating this DEI TURCHI,the ITALY into guests’ food. “I like to know the history and specialities of the places I go to and if this can be amalgamated into the menu it gives
the guests a sense of place,” he says. “This does not have to be a full recipe, but can be an element or even a single ingredient; for example recently we were at anchor off the island of Agistri in Greece which is famous for pistachios, so we made use of these in a pistachio tuille.” Likewise, Thezan looks to capture the spirit of where the yacht is visiting, believing that the most special element about dining aboard a superyacht is for guests to experience a chef’s own style, amalgamated with all the cruising area has to offer. “I think it’s very special that guests are able to taste my food and my style, paired with their style and a twist of what’s local,” he says. “To ensure the guests have a great dining experience, I make sure all produce is fresh and most importantly cooked with love and passion. I always present myself during dinner or dessert to make sure everyone had a great dinner and for any feedback.” Geary’s cooking style is centred around letting beautiful ingredients speak for themselves. “This allows you to taste the elements on a plate that should always complement each other,” he says. “I don’t believe there should be extra items on a dish just for the sake of it, and food should not be confusing as your palate can only cope with three contrasting flavours at a time.” Living in Valencia, Spain, has given Geary a love for Tapas-style dishes, with this style of food having a heavy influence on his menus. “I love the Spanish Tapas style of eating and generally in the Mediterranean this style of dining is replicated throughout the cultures, for instance Mezze in Greece or Cicchetti in Venice, and I have picked up some of my favourite dishes from these Cuisines.” French-Caribbean is Thezan’s signature style, although he is able to turn his hand to anything, believing that as a chef it is important to be able to cook a little bit from every culture. Although working on a superyacht is a different challenge to working in a static restaurant, Thezan enjoys it because of the variety the role offers. “Working on a superyacht is a lot different to a restaurant simply because we are moving and always in a different locations,” he says. “I love the fact that I am able to cook for different people with different cultures, experience different places and especially to able to try different local products.” IYC.COM | 85

Ceviche ‘Acapulco’ of Blackened Scallop
Chef Duncan Geary, M/Y Ouranos Chef’s Notes: I worked in Mexico for quite a while and fell in love with Ceviche. The Acapulco style is quite sweet and originally has fresh pineapple and orange juice in it. This is a variation on the theme. Directions: In a very hot dry pan caramelise one side of a queen scallop, slice thinly and place in a mixture of orange and lime juice with a little chilli and salt to taste. The citrus acid will ‘cook’ the fish. Prepare between 1 and 3 hours in advance, allowing the flavours to infuse. For the mango salsa, soak an ancho chilli for a few hours then soften it in a warm pan. In a processor add this chilli to fresh mango with a little lime and salt to taste For the Mirin pickled cucumber use a peeler to take strips of cucumber white flesh with a little green on it, add a little salt and leave for 30 minutes, drain off the excess liquid that the salt has extracted and dress the cucumber with sweetened Mirin, and add toasted and black sesame – assemble in the half shell.

Chef Patrick Thezan Ingredients: 2 Eggplants 1 tbsp finely chopped garlic 2 tbsp cilantro Juice of 2 fresh lemons 1 tsp jalapeno 1 tsp cumin 1 Brunoise diced plum tomato ½ Brunoise diced yellow bell pepper ½ Brunoise diced red onion 1 Baguette crostini 2oz Beluga caviar Crème fraiche Directions: 1/ Poke eggplant, rub with olive oil and bake at 350F until very soft inside 2/ Let eggplant cool, cut in half, remove inside and discard the skin. Finely chop eggplant and mix with other ingredients (except caviar). Season to taste with salt and pepper. 3/ Cut baguette into small rondelles, season with salt, pepper and olive oil. Bake until crispy or golden brown. To Serve: Put eggplant caviar on crostini, top with Beluga caviar and a dollop of crème fraiche. Garnish with chives.

Chef Duncan Geary, M/Y Ouranos Chef’s Notes: This is more of a technique than a recipe. I learnt this from working with a captain and first officer from Galicia, Spain. This is the one time when frozen is better than fresh as the freezing process helps tenderize the octopus Directions: Bring a pan to the boil with water, salt and bay leaf, and dunk the frozen octopus three times allowing it to come back to boil each time then place in the water and cook until tender (about 40 minutes) This technique cuts down the cooking time of the octopus and also makes it retain its skin with a delicious gelatinous layer underneath. On a wooden board pour a little olive oil and rub around with a clove of garlic, slice the warm octopus onto the board, dress with sea salt, olive oil, and a little smoked paprika and a little hot paprika To make a more substantial version, slice some peeled potatoes fairly thickly and cook in the octopus liquor, and serve the octopus on top.
M/Y ANDIAMO Chef's Competition Winner The coveted 2017 Antigua Yacht Show Chef’s Competition was won in the 164’+ category by Chef Caitlin Kennedy of M/Y Andiamo taking out the top award in this popular and highly-contested competition.

he theme for the 2017 competition was to create a Caribbean Sunday brunch suitable for a charter party of adults and children and Chef Kennedy more than rose to the challenge. Early in the planning stages a brainstorming session with her sous chef and the yacht’s stewardesses helped provide inspiration for the meal. “We all talked about what we would want from our ideal brunch, which got us really excited about brunch and food in general,” says Chef Kennedy. “We also went out for some brunches in Florida to help with inspiration and capturing local flavour and I combined this with my previous travels in the Caribbean and the ingredients and dishes I loved when I was there.” This planning and vision paid off with the judges highly impressed with Chef Kennedy’s creative brunch, naming her top in category. Chef Kennedy has been working on superyachts since 2014, beginning as a sous chef on private and charter motor and sail yachts, before quickly rising through the ranks to become head chef on large motoryachts. Cooking in the Caribbean style, demonstrated in her winning Chef’s Competition entry, is just one of Chef Kennedy’s skillsets, and she thrives on providing a variety of styles and ingredients and catering to a range of palates. “As a chef on a yacht you have to be able to produce anything a guest requests and of course the requests are always interesting and surprising,” she says. “However, the more I cook, the more I am drawn to healthy, simple, vegetable orientated food… because of this, I love Italian food where simple, beautiful ingredients are the most important part if any dish. I also recently spent a couple of months in Tokyo learning about sushi and Japanese cuisine. I fell in love with the food culture there, and try to incorporate Japanese aspects into my menus. I also love beautiful but
uncomplicated presentation with lots of fresh and colorful ingredients”. This creative and passionate approach to cooking is something that all of Andiamo’s guests can enjoy, with Chef Kennedy working closely with the rest of the crew to create a special culinary experience for all who step on board. “Our chief stewardess Sonia and I have a friendship based at least in part (if not entirely!) on a love for food and we enjoy planning and sharing a vision of meals for guests,” says Chef Kennedy. “Guests can always look forward to local ingredients and styles, varying with where Andiamo cruises, and I usually like to use lots of fresh fish and seafood, as this of course is always in abundance.” This passion for creating an unforgettable guest experience extends across the whole crew. “Our captain Martin’s number one priority is always to create an unforgettable experience for charter guests, and so he always hires crew who are enthusiastic and driven to impress,” explains Chef Kennedy. “We like to have fun and this definitely comes across in both the food and in service.” Ahead of any charter Chef Kennedy and the interior team will draft a menu based on guest planning sheets and refine this after having met the guests. “As soon as the guests arrive on board, I like to speak to them as soon as possible so that we can discuss their likes and dislikes, and come up with a plan for the style of eating for the charter,” says Chef Kennedy. A particular pleasure comes from creating a special custom experience tailored around a meal. “We often undertake charters based around special occasions and events and recently Andiamo we celebrated a 30th birthday as a cocktail party,” she says. “We found out the guest’s favourite foods, cakes, flowers, décor and interests and tailored a party celebrating her and everything she loves! This is always what we aim to do.”

he Bahamas have lured and captivated seafarers for centuries, enchanting both settlers and traders alike. Explorer Christopher Colum-
bus landed on San Salvador in 1492 and declared this place to be a ‘baja mar’ or ‘shallow waters’ – and so the Bahamas was named. The archipelago of the Bahamas is formed from coral, creating over 700 islands and cays that contain incredible reefs. With sheltered waters and schools of tropical fish shimmering beneath the surface, this is a paradise for divers and snorkelers. Colorful reefs are alive with parrotfish and angelfish, which you can often spot without using a mask. Nassau is the best-known yachting port in the Bahamas, and it is where a good number of charter vacations begin and end. This high-energy port is a centre for international traders, alive with bartering, excited shoppers and the occasional celebrity trying to blend into the hustle and bustle. The docks of many of the five-star marinas are an easy tender ride from the airport, meaning you can easily add on an extra few days to explore. Casinos, bars and gourmet restaurants offer plenty of choice to fill your evenings, and the days can be spent on short day trips to nearby cays or visiting museums. Don’t miss out on a visit to John Watling, the only locally owned rum distillery. From there, nature-filled country roads meander westward to New Hampshire and the White Mountain National Forest. This is an American national park, so it only heightens the feeling when you’re driving a classic American. The car of choice is a second-generation Chevrolet Corvette. It’s one of the few domestic classics with a fully independent suspension, and that will make all the difference as you discover switchback mountain roads. Take the full day to drive Route 112 to Easton, NH, and then Route 302 out to Conway, NH. This loop will provide scenic mountain panoramas, tree-lined seclusion, and winding roads that follow white-capped rapids. New Hampshire can provide a Swiss Alps-like experience with far fewer tourists. Pulling out of a garage is a bit less elaborate than pulling out of a port. But in both cases, it takes the right vessel and the right destination to be truly memorable.
Paradise Island/Nassau The Bahamas offers temporary registration to those who want to bring a favorite classic car with them on their getaway. And as one of the best destinations in the world to combine tropical forestry and blue ocean views, this can create the ultimate automotive escape. The best car for this is a convertible that’s valuable, beautiful, but nothing irreplaceable. After all, island driving is all about enjoying the fresh salty atmosphere. Nothing should get in the way of pulling over on a whim to take in the beauty. Thus, this former British colony is best paired with an Austin Healey 3000 or Series III Jaguar E-Type roadster. A great place to start is Paradise Island/Nassau. This is a hub for culture, shopping, and always just a few minutes from an ocean-side highway. An added bonus of Nassau is they occasionally run a revival of the Bahamas Speed Week. These allow some of the island’s best roads to be enjoyed to their fullest. But even if the event is not being held during your stay, a run up the cliff to Fort Charlotte will still feel like your own private hill climb time trial.

ith its gleaming white sand beaches and shimmering azure waters, verdant rainforest and year-round sunshine, the French
Caribbean is a yachting idyll with something to delight explorers of all ages. It comprises of the islands of Martinique and Guadeloupe – the larger of the islands with their own outlying islets – and the smaller islands of St. Barts and St. Martin. This collection of islands is an ecological marvel, with calm lagoons and schools of tropical fish dancing beneath the surface. St. Barts is where the South of France meets the Caribbean – a place where the truly elite come to relax. Its capital, Gustavia, owes its name to the brief time the island was in Swedish hands and is a great place to hit exclusive shops before you head to more remote shores. Watch the sunset from Shell Beach while sipping on a piña colada and enjoy a fun, funky evening at the popular hilltop spot Le Ti St Barth. The next day head to Colombier, a beautiful small beach, accessible only by boat or on foot; it is ideal for excellent snorkeling and diving. Maya’s, which has been around forever and is just outside of Gustavia, has excellent Creole food. In the morning set off for Île Fourchue, a deserted island just a few miles northwest of St. Barts, is perfect for exploring by kayak and on foot. It has good snorkeling with rays and turtles, with the best dive site being at the southwest tip of the island. Enjoy the privileged access that a yacht offers by sailing to Tintamarre, another uninhabited isle on the northeast corner of St. Martin. Tintamarre perfectly fits the definition of a deserted island as there is no habitation – just turquoise water and white sand. Head north to Anguilla, part of the Leeward Islands, and anchor off the powdery mile-long beach of Mead’s Bay. Swim ashore for lunch at Blanchards Beach Shack. The MBLT (blackened mahi, bacon, lettuce and tomato) on a squishy bun is hands-down our favourite. A sunset cocktail at Malliouhana hotel’s gorgeous bar is in order, followed by dinner at Jacala, which is also on Mead’s Bay, and serves French Caribbean food. The next day, anchor off Maunday’s Bay, a beautiful palm-fringed stretch of sand for a morning swim and in the afternoon head to Sandy Island, a small cay near Anguilla with a tiny beach restaurant on it, for what will likely be the best lobster you’ll ever have.
