Savory Bread Pudding Submitted by: Yukai J. from Charlotte, NC Serves: 9 -1 2 “This is a perfect side kick for dinner or brunch or it can be an appetizer and used to dip into a tasty marinara sauce. My family and friends love it because of the savory flavor, cheesy goodness, and versatility. A nice crisp crust, soft inside, and fresh herbs and veggies make it filling. Pair it or eat alone. Give it a try and let me know how you like it!”

INGREDIENTS

Loaf of French bread 1 stick of butter 8 oz of heavy whipping cream 8 oz Parmesan cheese 2 tbsp of crushed garlic (fresh, frozen, or squeeze bottle preferred) 1 cup of chopped green onions 8 oz sliced mushrooms 1/2 chopped red bell pepper or green (your choice) 2 separated stalks of fresh rosemary 2 separated stalks of fresh sage 8 oz Italian cheese blend 1 tbsp of salt

DIRECTIONS

1. Preheat oven to 375°F. 2. Cut bread loaf in chunks and leave exposed. 3. In a sauce pan, melt stick of butter. Sauté garlic, onions, mushrooms, and peppers in melted butter and set aside. 4. In a large mixing bowl, mix bread and sautéed veggies. Separate rosemary and sage from stalk and mix in bread mix. Mix in Italian cheese blend and salt into bread and herbs mix to your taste and preference of cheese amount. Do not over salt. 5. Once fully mixed, transfer bread and cheese mix into 9x13 baking pan. 6. Pour cream over entire pan to evenly distribute, then sprinkle Parmesan over bread to cover. 7. Bake at 375°F for 25-30 minutes, checking to ensure bread is not over cooked. Remove once cheese is golden brown. 8. Let sit for 5 minutes to settle. Cut and serve warm.

Lauren G. from Philadelphia, PA “It’s my moms favorite dish that she loves for me to prepare during Christmas! To get a break from Turkey at Thanksgiving we go for the surf & turf meal instead of a traditional fest at Christmas.

Serves: 6 (ab o u t 1 8 s c allops) INGREDIENTS

1 lb of scallops 1 lemon or lime (fresh preferred) Black pepper Creole seasoning of your choice (my fam loves a sweet heat so I use Chef Paul Prudhomme Seafood Magic) • 1 pack of applewood smoked bacon (I prefer center cut but any pork bacon will do!) • Paprika • Fresh herbs for garnish (I use parsley) • Toothpicks or small bamboo sticks

DIRECTIONS

1. Rinse your scallops with cold water. Juice the lemon or lime and coat scallops. After about one minute, pat dry with a paper towel. 2. Preheat oven to 350°F. 3. Season your scallops with the black pepper (or white pepper) including your creole seasoning of choice. No salt needed—bacon & creole seasoning have plenty! 4. Now it’s time to prep your scallops. Cut bacon strips into two pieces and wrap around the scallop. Secure scallops and bacon with a toothpick or bamboo stick! Sprinkle with paprika. 5. Using a cast iron skillet, brown your bacon (2 mins each side) then finish in the oven for 10–15 mins at 350°F (ovens may vary). Garnish with fresh herbs and get ready to EAT!

1 1/4 cup hot water 3 eggs 1/2 cup shortening 1/2 cup evaporated milk 1/2 cup sugar + 1 tbsp 2 packs dry yeast (rapid rise) 4 1/2 cups bread flour 1 3/4 tsp salt

DIRECTIONS

1. Stir yeast and 1 tbsp sugar into 1/4 cup hot tap water and set aside to ferment. 2. Beat eggs with shortening, evaporated milk, and 1/2 cup sugar. 3. Add fermented yeast to mixture. 4. Add flour and salt to mixture, then add hot water to form dough. 5. Knead dough for 5 to 10 minutes. 6. Cover and chill dough for 8 to 10 hours. 7. Gently shape chilled dough into desired shape and place in greased baking pan. 8. Cover and let rise in warm dry location until rolls double in size (about 90 minutes). 9. Bake in 350°F preheated oven for 15 to 20 minutes or until golden brown. 10. Brush tops with butter and serve immediately.

Cornbread Dressing Submitted by: Gloria L. from Chicago, IL Serves: 1 2 “This is a traditional dish eaten anything during the year, but especially for Sunday dinner or Thanksgiving. My dear Pastor White loved my Dressing. He always asked that I make it for church dinners. He's since passed away, but I still enjoy making it for everyone in the church. There's usually nothing left in the pan, not even a crumb. Covid-19 has kept everyone away from the church, so I haven't made it but once this year for my husband and me.”

• Cornbread • Chicken giblets • 2 sticks of butter (one for roasting with the chicken giblets/ broth and one for sautéing vegetables • 1 bag of Pepperidge Farm bread stuffing croutons • Onion, bell pepper, and celery • Seasoning: sage, poultry seasoning, Lawrys seasoned salt, and black pepper

1. Make the cornbread first, preferably the day before. Cook’s note: You can use the recipe on the back of a cornmeal bag, but I want it to be drier than normal so it crumbles easier. To do so, I'll add an extra cup of cornmeal mix. Use the self-rising kind. 2. In a roasting pan, cook chicken giblets with a stick of butter to make a rich broth. Set cooked giblets aside. Transfer broth to another container and set aside. 3. Crumble the cornbread into the roasting pan. Add a bag of Pepperidge Farm bread stuffing croutons. Pour the broth over the bread mixture and let it sit for about 15 minutes to soak up the liquid. 4. Meanwhile, chop the onion, bell pepper, and celery. Sauté chopped vegetables with a stick of butter. 5. With a potato masher, mash up cornbread and croutons, removing all lumps. Add the sautéed vegetables. Chop up the giblets and add them to the pan. Start adding the seasonings to taste. The seasonings I use are sage, poultry seasoning, Lawry's season salt, and black pepper. I like a lot of sage in my dressing so I mix and taste as I go on. 6. Cover the pan with a lid. Cook in the oven at 300°F for about 1/2 hour, stir it up again, cook for another 1/2 hour, then stir it up again. Finally, put it back in the oven for another 1/2 hour without the lid to get a nice crust on top. 5. Remove from oven and let it sit for about 30 minutes before serving. Cook’s note: I don't really care for using a whole turkey, I prefer turkey wings. I get the butcher to chop the big part of the wing in half. I cook the wings in a separate pan, not the roasting pan. I seasoned the wings with Lawry's, garlic powder, onion powder, and black pepper. I pour 2 cans of cream of chicken soup and brown gravy mix over the turkey wings. Only add 1 can of water. Cover & bake for 90 minutes at 300°F. I love the whole berry cranberry sauce with my dressing. Hubby likes the regular kind, so I serve both. Enjoy.

Ginger-Molasses Bundt Cake Submitted by: Miesha S. from Saint Paul, MN Serves: 1 2 “This is a family favorite, and is something that we have for both Thanksgiving and Christmas. My family LOVES the taste, and how it is so moist. They say it reminds them of gingerbread cookies but better! They love to have it with a glass of milk or with some vanilla ice cream!” INGREDIENTS

2 3/4 cups flour 2 tablespoons gingerbread spice 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2 sticks of butter (softened) 1 2/3 cups light brown sugar 4 eggs 2 teaspoons vanilla extract 1/4 cup molasses 3/4 cups milk Confectioner’s sugar

DIRECTIONS

1. Whisk together flour, gingerbread spice, baking powder, baking soda, and salt. 2. In a separate bowl, beat butter, brown sugar, eggs, and vanilla with a mixer on medium-high speed until fluffy, 4 minutes. 3. Add molasses to wet mixture and beat on low speed. Beat in flour mixture in three batches, alternating with milk. 4. Pour into a buttered and floured 10-cup bundt pan. 5. Bake at 350°F until a skewer inserted into the center comes out clean, 55 minutes to 1 hour. 6. Let cool for 10 minutes in the pan then invert onto a rack to cool completely. Dust with confectioner’s sugar.

Jamie M. C. from Decatur, GA “I cooked this my first Thanksgiving, 2017, in my first apartment.”

Serves: 6 - 8 INGREDIENTS

• 4 Red Delicious apples • 4 Golden Delicious apples • 2 Pie crusts • Real butter • Lemon • Cinnamon • Dark brown sugar • Nutmeg • Sugar • Pure vanilla DIRECTIONS

1. Soak and wash apples. 2. Bake one of the two pie crusts in a buttered pie pan at 375°F for 10-15 minutes (or until crust is cooked but not golden). Let cool. 3. Cut, peel, and core apples. Slice apples in eighths. Cut lemon in half for juicing. 4. In large mixing bowl, combine cinnamon, brown sugar, nutmeg, sugar, pure vanilla, and fresh lemon juice. Mix in apples. Stir until all apples are covered with brown sugar mixture. 5. Pour mixture into cooked pie shell including any juices remaining in bowl. 6. Lay uncooked pie crust over the dish and cut a few slits so pie can breathe. Top with a few pats of butter. 7. Place in oven until goldem brown.

3 cups flour 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 cup butter, softened 1/2 cup shortening 2 cups packed light brown sugar 1 cup sugar 5 large eggs 1/2 cup milk 1 banana, mashed 1 cup chopped pecans 2 tsp vanilla extract

• • • • • “I hate bananas but my family LOVES them! I first made this decadent cake for my beloved Dad because it combines some of his favorite snacks (bananas, caramel, and pecans)....Not only was it a instant hit with him, my husband and sons became huge fans, as well! Sadly, my Dad passed away on November 1, 2013. However, this cake is still a part of every holiday meal and it’s well worth every step that it takes to make it when I see the pleasure on the faces of my family members when we gather around the table for food, fun, and fellowship. That’s really all that matters in the end.”

1/4 cup butter, softened 1/4 cup packed light brown sugar 1/4 cup sugar 1/4 cup whipping cream 1 tsp vanilla extract

CAKE DIRECTIONS

1. Preheat oven to 325°F. 2. Mix flour, baking powder, baking soda, and salt together. 3. Cream the butter and shortening together, then gradually beat in the brown and white sugars, beating constantly for 5 to 7 minutes. Add the eggs, one at a time, beating until the yellow disappears. 4. Add the flour mixture alternately with the milk, beating at low speed until blended after each addition, beginning and ending with the flour mixture. 5. Stir in the banana, pecans and vanilla. Pour into a greased and floured 10in tube pan. 6. Bake for 65 minutes or until a wooden pick inserted in the center comes out clean. Cool on a wire rack for 10 minutes before removing from the pan to completely cool on a wire rack. GL A ZE DIRECTIONS

1. Bring the butter, brown & white sugars and cream to a boil in a heavy saucepan over high heat, stirring frequently. Boil for 1 minute, without stirring. 2. Remove from heat. Stir in Vanilla 3. Cool until slightly thickened. 4. Drizzle over the cooled cake. Garnish the cake with additional pecans and slices of fresh banana just before serving. 28

“I love holiday time and love experimenting with my grandmother’s recipes to add a little flavor. My friends and family love the flavors of traditional peach cobbler with a little “kick”. This is a holiday dessert I have to make an extra for later.”

Cornbread Cake

Serves: 6 - 8 INGREDIENTS

8 peaches, peeled and sliced, about 6 to 8 cups 1/4 cup White Hennessy 3/4 cup sugar, plus more for dusting 2 tbsp corn starch 1 tsp ground cinnamon 1 1/2 cups all-purpose flour 2 tsp baking powder 1/2 tsp kosher salt 2 sticks cold unsalted butter 3/4 cup heavy cream, plus more for brushing

DIRECTIONS

1. Heat the oven to 375°F. 2. In a large bowl combine peaches, Hennessy, 1/4 cup sugar, cornstarch, and cinnamon. Mix well to coat the peaches evenly; set aside. 3. Prepare the dumplings: In a bowl, sift together flour, 1/2 cup sugar, baking powder, and salt. Cut 12 tablespoons (1 1/2 sticks) butter into small pieces. Cut butter into flour mixture with a pastry blender or your hands until mixture resembles coarse bread crumbs. 4. Pour in the cream and mix just until the dough comes together. Don't overwork; the dough should be slightly sticky but manageable. 5. In a 10-inch cast iron skillet over medium-low heat, melt the remaining 4 tablespoons of butter. Add the peaches and cook gently until heated through, about 5 minutes. 6. Drop the dough by tablespoonfuls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. 7. Brush the top with heavy cream and sprinkle with sugar. Put the pan on a baking sheet to catch any drips and place in oven. 8. Cook for 40 to 45 minutes, or until the top is browned and the fruit is bubbling.

4 large eggs 1 cup butter 1 1/2 cup self-rising flour 1 cup sugar 1 cup brown sugar 1 1/2 cup chopped pecans

DIRECTIONS

1. Grease and flour 9x13 glass baking dish. 2. Mix eggs and butter. Add dry ingredients; flour, sugar, and brown sugar. Add pecans and mix well by hand. 3. Pour into baking dish. Bake for 30 minutes at 350°F, until golden brown on top and bottom. Looks like cornbread!

I mean, before anybody fixes a plate of food they're fighting for cake. I bake as a side hustle and usually sell 15 to 20 cakes during Thanksgiving.”

4 eggs, room temperature 2 cups of sugar 2 tsp vanilla 1 1/4 cups of vegetable oil 2 cups of all purpose flour 2 tsp ground cinnamon 2 tsp baking powder 2 tsp baking soda 1/2 tsp kosher salt 3 cups of grated carrots 1 cup chopped pecans

ICING INGREDIENTS

1 cup of unsalted butter, room temperature 1 tbsp vanilla extract 16 oz cream cheese, room temperature 3 cups of confectioners sugar 1 cup of chopped pecans (for garnish)

CAKE DIRECTIONS

1. Preheat oven to 350°F. 2. Oil three 9-inch round cake pans and line with parchment. Set aside. 3. In large bowl or standing mixer, beat eggs, sugar, vanilla, and oil until well incorporated. 4. In separate bowl, use a whisk to mix flour, cinnamon, baking powder, baking soda, and salt. Incorporate 1/3 of the dry ingredients into wet batter, mix, then repeat until all is incorporated. Add carrots and hand-mix. Then add pecans. 5. Divide batter evenly into the three pans. Lightly drop the pans on a flat surface to free any air pockets. 6. Bake for 32 minutes or until inserted toothpick comes out clean. Allow cakes to cool completely before icing or they will absorb the icing.

ICING DIRECTIONS

1. In mixer, beat butter, vanilla, and cream cheese until smooth. Add 1/2 cup of confectioners (powdered) sugar and blend until smooth. Add 1/2 cup of confectioners sugar to taste! (I don't like mine too sweet so I blend a little, taste, and keep adding bit-bybit until I love it. Everybody is different.) 2. Ice cakes one layer at a time. Garnish top with pecans. Enjoy!

Cranberry Pomegranate Winter Sangria

1 (750 ml) bottle of white zinfandel (red in color) 4 cups of cranberry juice 2 cups of POM Wonderful pomegranate juice 1 cup of orange juice 3/4 cup of simple syrup 1 apple, unpeeled, cored, quartered & sliced thin 1 orange, halved and sliced thin 1 lemon, halved and sliced thin 1/2 cup of fresh cranberries 1/4 cup of pomegranate seeds San Pellegrino sparkling water

DIRECTIONS

1. Combine all of the ingredients in an extra large storage container. Taste and adjust flavors to your liking. Chill at least 4 hours or overnight. Stir before serving and transfer to pitchers or pour by the glass. Use a pair of tongs to extract some of the fruit for each glass. Add ice to each glass, and fill glasses, leaving about an inch of free space at the top. Top each glass off with a splash of Pellegrino and lightly stir. Cook’s note: The color for this sangria comes primarily from the juices, so you can use either red or white wine. Use any good wine that you prefer. I used a white zinfandel, which is actually light red in color, but other good choices include Cabernet Sauvignon, Merlot, Rioja, Shiraz, or Beaujolais. Summertime Red, White and Blueberry Sangria: Perfect for the patriotic holidays! Include the orange juice and sliced apple, pom seeds, orange and lemon slices, and cranberries. Substitute 1 small container each of blueberries, raspberries and blackberries.

This is my favorite for the holidays but is often my go-to for brisk winter nights with my friends and family. I hope you enjoy it!” INGREDIENTS

1 quart apple cider Premium peach brandy 1/4 tsp cinnamon 1/8 tsp of nutmeg One lemon and cinnamon stick, for garnish

DIRECTIONS

1. Warm one quart cider, preventing liquid to come to a boil. Add one cup peach brandy. Add cinnamon and nutmeg. 2. Cut lemon slice and add six to warm mixture. Stir to blend. Cut heat and let cool for 15 minutes. 3. Serve in brandy sifter or cosmo cocktail glass with one lemon slice and cinnamon stick. Drink should still be warm. Tip: For an extra kick, top with a brandy shot and ignite to heighten presentation.
