Jerk Daiquiri 50ml Appleton Estate V/X Jamaica Rum 30ml Jerk sugar syrup (see recipe below) 20ml Fresh lime juice METHOD Add all ingredients to shaker with cubed ice. Hard shake then fine strain into a chilled cocktail glass. Garnish with a lime wedge. JERK SYRUP RECIPE 1 Bunch thyme; 3 inches ginger (peeled and sliced); 3 Scotch Bonnet peppers, 2 to 3 crushed pimento berries; 1 cup of sugar and 2 cups of water. Combine the sugar and water in a pan on the stove over medium heat and stir until sugar is dissolved. Turn the heat right down and add the remaining ingredients. Cover and allow it to sit for 3 hours. Add more peppers as desired. Strain the mixture and bottle it. Cheers !!!!

PIMENTO-CRUSTED BEEF TENDERLOIN WITH ISLAND CHIMICHURRI

11⁄4 cups olive oil 1⁄2 tablespoon sea salt, plus more for seasoning 4 cloves garlic, minced, plus 1 tablespoon chopped garlic 1 bunch fresh thyme, chopped, plus 2 tablespoons chopped 1 red onion, thickly sliced 6 portobello mushrooms, caps only, sliced 3 bunches scallions drizzle of Scotch bonnet oil, or more to taste (page 46) For the Caribbean Chimichurri 1 cup chopped fresh parsley 1 cup chopped fresh cilantro 1⁄2 cup culantro or chadon beni (if not available use 11⁄2 cups cilantro) 1⁄2 cup chopped fresh mint 1⁄4 cup fresh lime juice 1⁄2 teaspoon minced Scotch bonnet 5 cloves garlic, chopped 1 bay leaf 1 tablespoon sea salt 11⁄2 cups olive oil 1⁄2 teaspoon brown sugar Method 1 Place the peppercorns and allspice on the bottom half of a dishcloth. Fold over the top half of the cloth and crush the peppercorns and allspice seeds together by rolling over them with a bottle. 2 Rub the beef with 1 cup of the oil, the salt, the 4 cloves minced garlic and the chopped bunch of thyme, making sure the beef is well salted. Roll the tenderloin in the crushed pepper and allspice mixture to coat and press the pepper and allspice into the surface of the beef. Refrigerate for at least 2 hours.

This recipe is a stripped-down version of jerk—we separate the elements that go into jerk seasoning and recombine them with this mouthwatering version of beef tenderloin. The beef is crusted with allspice berries, similar to beef au poivre, and grilled on a traditional coal pan. When ready, it is drizzled with Scotch bonnet oil and garnished with grilled scallions. A West Indian version of chimichurri made with culantro, Scotch bonnet and lime rounds this dish off nicely. We served this up family style at a

beautiful colonial house in the hills of Hanover for a rehearsal dinner organized, designed and executed by Los Angeles– based event planner to the stars Yifat Oren. It was the single most spectacular event that we have ever seen, executed or had the pleasure to work on; luckily for us, the food was a hit! Serves 8 to 10 1⁄4 cup whole black peppercorns 1⁄2 cup allspice berries 4 to 6 pounds tenderloin beef

3 To make the Caribbean chimichurri, in a food processor, combine the parsley, cilantro, culantro, mint, lime juice, Scotch bonnet, garlic, bay leaf, sea salt, oil and brown sugar. Process until well blended. 4 Heat up the grill or a grill pan over high heat. Combine the remaining 1⁄4 cup oil, 2 tablespoons chopped thyme and 1 tablespoon chopped garlic in bowl. Season with salt and add the red onion and mushrooms; mix well. Grill the onions and mushrooms, about 10 minutes total; transfer to a plate and keep warm in the oven. 5 Add the beef to the grill and cook to

The sisters’ food career started when they were young as servers in a small cafe before going on to start their acclaimed food catering business. Authors of the book Caribbean Potluck and visionaries behind the television series “Two Sisters and a Meal,” the sisters are a passionate duo who bring to life their love for the Caribbean life, the food, the music, the art forms, the history and hope to share their version of the Caribbean in an entertaining way with other foodies and lovers of the Caribbean lifestyle. Jamaica Experiences caught up with the sisters for a quick Q&A session. Here’s what they had to say.

Imagine growing up in a family with a deep appreciation for good food. Imagine being surrounded by fresh island eats and expert hands turning them into gourmet treats. Imagine traveling the world, immersing yourself in different cultures, learning more about different tastes and styles of cooking, living in food capitals where the street eats and gourmet all tantalize your tastebuds and excite you to infuse your own favourite tastes with your newfound knowledge. Enter, the Rousseau Sisters. They are Jamaicans who grew up in a family of food lovers; mom Beverly was a great cook and entertained all the time, dad Peter was a real gourmet who exposed them to great restaurants and dining experiences in the Caribbean and all over the world. “Ours was a very social household! Our parents entertained regularly whether in the form of fetes, dinner parties or casual limes. We also cooked for our friends and had great din-

BOILED CORN WITH PIMENTO

Butter and Cheese Coconut Jasmine Fried Rice Pilaf with Cashews and Raisins When Michelle lived in Fort Greene, Brooklyn, every Saturday she would head to the Fort Greene Flea Market to browse, chill a bit, buy a donut (or six) from Dough and eat corn on the cob rolled in chile and sprinkled with Mexican cheese. This is our ode to that dish, but we’ve added a little “Yardie,” or Jamaican, flavor. Serves 6 12 cups water 1 pound (4 sticks) butter 1 bunch scallions 4 cloves garlic 6 Scotch bonnets 2 tablespoons sea salt 1 bunch fresh thyme 6 allspice berries 2 bay leaves 6 ears corn, husks reserved 4 ounces Pimento Butter (page 119) 4 ounces Asiago cheese, grated (about 1 cup) Spiced Salt (page 55), to taste 3 fresh limes 3 tablespoons chopped fresh cilantro METHOD 1 In a large pot, combine the water, butter, scallions, garlic, Scotch bonnets, salt, thyme, allspice and bay leaves. Bring to a boil, add the corn and boil until the corn is very tender, about 45 minutes (less if using fresh American corn). 2With tongs, remove the corn from the water. Roll each corn cob first in the pimento butter, then in the cheese, then return the cobs to their husks. Garnish each corn cob with some Spiced Salt, a squeeze of fresh lime juice and the cilantro. Serve immediately.

Hermosa Cove is a lush 12 acre beachfront property in St. Ann, Jamaica owned by Texans Clayton and Deb Korver who fell in love with Jamaica way back in 1976. It is a timehop back into Spanish history with grandiose architecture of hand-crafted stone built into fortresses and towers mixed with the island flair of thatched roofs and rustic wooden trimmings. It’s the perfect hidden gem located on cliffs just outside of Ocho Rios that’s easy to miss if you’re whizzing by. Each of the nine villas at Hermosa Cove is unique, appealing to the varying desires of the discerning traveler. All are equipped with

kitchens and their own private pool. The warmth of dark wood and leather invite you inside luxurious chambers with views of opulent gardens and sounds of the sea. Christopher’s, named after European explorer Christopher Columbus who said Jamaica was the “most beautiful island he had ever seen” is an award winning restaurant. It was dubbed “Best Kept Secret” at the coveted Table Talk Jamaica Observer Food Awards 2014 and their Executive Chef, Chef Conroy Arnold, was awarded Chef on the Rise. Seafood is the specialty inside the gourmet kitchen as the restaurant has a close relationship with local fishermen who come daily

to deliver their fresh ocean bounty. Inspecting the menu will reveal many inclusions of fresh fruit, vegetables and herbs grown a few steps away in the garden which you may tour and select your choices to be paired with your dish. Chef Arnold prides himself on being a man of clean flavours using fresh ingredients. The menu is very Jamaican serving up meats and seafood smoked over the signature pimento wood used in authentic Jamaican jerk. An international spin adds panache to each dish distinguishing Christopher’s menu from your usual resort dining options. Dishes such as callaloo with scotch bonnet sauce, crispy plantain chips with fresh salsa, ribs with ratatouille style vegetables, tenderloin steak served up with fries or substituted with roasted wedges, curried goat ravioli, oxtails, coconut braised chicken, grilled lobster along with the catch of the day done to your liking. The marlin salad has been met with rave reviews along with the smoked chicken quesadilla and ackee spring roll appetizers. Warm bread pudding served with a scoop of homemade vanilla ice-cream tops a delicious dining experience inside the restaurant with ocean views or out in the open air. A stroll down to the intimate white sand beachfront with a spiced cocktail made from fresh-pressed juice in hand from Isabella’s Rum Bar at sunset adds romance to what will surely be a delectable evening at Hermosa Cove. The attentive and accomodating staff and celebrated chef help to bring life the golden age surroundings which envelope you on this property and submerge you into a magnificent aura of splendour and island charm.

GANJA BEYOND THE SMOKE Is Marijuana bad for you? The debate is raging worldwide with more countries and US States changing their perspective on this once illicit herb and Jamaica, known worldwide as the birthplace of the Rastafarian religion that uses the herb in sacrificial customs, has been dipping their toes in the controversy. On Bob Marley’s 70th birthday, law was passed decriminalizing small amounts of marijuana for spiritual or medicinal uses and allowing for its growth and study. Artists claim that after smoking marijuana, their creative juices flow more abundantly. There’s a boost to feelings of pleasure like sexual drive, intelligent enlightenment, clarity and appetite. There’s an overall reduction in prohibitiveness, less inhibition if you will, allowing them to be so much more creative than they would be otherwise when fear and societal norms are at play. Artists report being more relaxed and less critical of their own work. On the flip side, you can get paranoid, you can have disoriented thinking, it may lead to disruption in memory and even panic or anxiety attacks.

Could the medical marijuana market help to stabilise the Jamaican economy? It is stated that Colorado collected over US$4.2M in taxes in the first two months of legalization of the herb. It is estimated that over 38000 acres of ganja fields are now grown in Jamaica. Advocates lobby that this should be controlled in a safe and legal

manner and capitalized from. We may not be able to satisfy the 180.6 million marijuana smokers worldwide but we advocates lobby for a Jamaican strain to take its place on the exotic niche market. It is estimated that the revenue from a single marijuana plant is US$2,200. In fact, in the first 6 months of sales in Colorado, sales were estimated at over US$202M and experts say this number could be higher when the black market is controlled as some people still opt for buying weed on the black market because of lower prices. Ganja is a US$2.5M market in the United States. Whatever side of the divide you fall on, the conversation is happening and science is slowly catching up and backing up claims that pot-smokers have been alluding to for years. What we do know, is that more research is needed and regulations will

help to guide those who seek the herb for its now established medicinal properties. Where does Jamaica stand as it is right now? Since the law was passed, it is now not a criminal offence to have 2 ounces or less of the herb on your person. You may be ticketed if found by an officer but it carries a small fine and no criminal record. You’re not allowed to smoke it in public places, smoking in general is against the law in a public space in Jamaica and this will carry a much stronger punishment. If you have a prescription for medicinal marijuana, you may be able to have it honoured at some point here, but we’re not there yet. We’re getting there. A Cannabis Licensing Authority is being created and studies have been given the green light. Jamaica, won’t be left behind in the raging international debate.
