Grain has changed in the past half century Grains are part of the choosemyplate.gov recommendations for healthy food choices. The U.S. Department of Agriculture categorizes a grain as any food made from wheat, rice, oats, cornmeal, barley or another cereal grain. Grain, especially wheat, is a controversial food in modern society in part because grains aren’t the same as they were a few hundred years ago, or even a few decades ago. Modern wheat is dwarf wheat, a cultivar developed in the ’60s to increase yield per acre. A study from the Broadbalk Wheat Experiment, one of the oldest agronomic experiments in the world, found that concentrations of zinc, iron, copper and magnesium were stable until the mid-1960s, when they decreased significantly, which coincided with the introduction of dwarf, high-yielding cultivars. Since then, celiac disease has also increased. healthy fats. The bran is the outer shell of the kernel of grain. It contains the fiber, many B vitamins, and important antioxidants. Examples of whole grains include whole-wheat flour, bulgur (cracked wheat), oatmeal, whole cornmeal and brown rice. Refined grains have been milled, a process that removes the bran and germ. This gives grains a finer texture and longer shelf-life, but it also removes dietary fiber, iron and many B vitamins. Refined grain products include white flour, de-germed cornmeal, white bread and white rice. Refined grain has been shown to spike insulin levels. The Whole Grains Council defines “ancient grains” loosely as those that have changed very little over the past several hundred years. Examples of ancient grains in the wheat family include kamut, farro and spelt. Einkorn, an ancient variety of wheat, has been shown to be less toxic to patients with celiac disease. Others that are newer to Americans and also considered ancient grains include quinoa, amaranth, sorghum, millet and teff. Sprouted grains are whole grains, meaning all of the components of the grain kernel are present, and all are required for the sprout to grow. The sprouting process unlocks many of the grain’s nutrients, making them more available to our bodies. Here are some popular alternative grains you may want to try: Barley is a grain that dates to ancient times but is not glutenfree. Barley has a chewy and nutty flavor, making this a good choice for those new to whole grains. Barley is highest in fiber of all the whole grains. For Juan Carlos Collada, butterflies are a good omen. “When I see a butterfly, I always think it’s going to be a good day,” he said. He remembers the huge butterfly his mother embroidered on his denim jacket. She knew how much he loved them. “I must have been 6 or 7 years old. It was the most beautiful thing. Unfortunately I don’t have it anymore but I can see it so clearly in my mind,” he said. It was perhaps this memory that inspired him years later to create boxed panels of lifelike butterflies moving in graceful swarms. places I’ve been,” he said. His beautiful butterflies are hand made, of turkey and goose feathers mostly, in England, Australia and China. Some arrive already colored. Some he will paint. Most he will dip dye individually in various colors; then he will paint them with model enamel. While the butterflies appear fragile, they are actually quite sturdy. Using a hammer, he nails each one individually, placing nails through the foam composite body and onto a linen-covered medium-density fiberboard or MDF. The angle of the nail determines the angle of the butterfly on the board. When he is done with the composition he covers it with two coats of UV varnish to protect it from fading, then places it in a museum-quality acrylic box. Commissions have kept him busy while he prepares to embark on new work in a new medium. His new venture will be an assemblage displayed on panels containing a plethora of sea life made of real shells and small ceramic sculptures he has created suggesting coral and plants. ydeco D.J. Lola Love calls Brian Jack a “really good friend.” He’s a family man who focuses a lot of his attention on his kids. When Lola sees Brian Jack at a festival, their conversation often doesn't include much talk about music. And recently some of Brian Jack’s attention has been making music and more about producing music and getting it distributed. Jack assisted Jerome Batiste in recording Funky Good Time album which has been selling well on iTunes. Brian Jack has distinguished himself from other zydeco artists by the guest musicians he has featured on his past CDs: jazz pianist and bandleader Joe Sample, blues harpist extraordinaire Kellie Rucker, hiphop artist Cupid, and fellow Houstonian J. Paul Jr. Brian Jack has a new CD out titled Jacked Up released in Nov. 2017. It turns out that Joe Sample had married into the extended Jack family, and was having problems using the new recording equipment he had. Brian used the same equipment and helped Joe figure out his equipment. Not knowing that Joe Sample was a jazz legend, he asked

tephen Joseph “Step” Rideau was born in 1966 in the little St. Landry Parish town of LeBeau, Louisiana. Surrounded by Creole culture and zydeco music from infancy, it wasn’t until relocating to Houston in the mid-1980s that he began to play the accordion and eventually formed his own band. Today, Step Rideau is widely acknowledged worldwide as one of the living masters of the instrument. He’s also established himself over the the past two decades, the course of multiple recordings and festival appearances nationwide, as one of the most prolific and passionate zydeco recording artists, songwriters, and live performers across the globe. His first influence was listening to Boozoo Chavis, who sang songs about his real life: his wife, his ranch animals, his relatives, people with whom he has done business. Step has done a lot of farm work in his day, and his life has followed a similar path to Boozoo. For Step, zydeco music reflects his life and his music must be true to his values. “When I play, I always try to remind listeners, ‘why zydeco.’” It is important to have a positive message, and to bring

Frank Nooney Young went on his first trail ride in 1990 and loved it. There was horseback riding during the day, and a party at the campsite through the evening. Usually there was a zydeco band playing. The big influence for Nooney was Zydeco Force. Zydeco Force formed in 1988 and became a regional hit across Louisiana and East Texas. According to Herman Fuselier of the Daily Advertiser, Zydeco Force was one of the hot zydeco bands of the day with Boozoo Chavis, John Delafose, and Beau Jocque, ushering in a powerful “nouveau zydeco” sound. Nouveau zydeco seems to be defined differently by different people, but according to author Michael Tisserand, Zydeco Force “combined a Boozoo-style accordion with ’60s soul-style vocals.” Zydeco Force was best known for “Madeline” which founding member Jeffery Broussard includes in his stage performances today. Nooney says Zydeco Force had a more traditional approach to zydeco music without the R&B, pop and hip-hop stylings of other bands. In 1997 Nooney started to play and sing zydeco music himself in the style of Zydeco Force, and he has done so ever since. And he naturally covered some Zydeco Force material such as “Zydeco Extravaganza,” but gave it his own spin as in “Extravaganza Remix.”

Paul Jr. and his band, the Zydeco Nubreedz, started to make their mark on the music scene not long after frontman J Paul Jr. pulled the band together in his native Houston in 1995. The original name considered for the band was The Regulators. According to J Paul Jr., “The name Nubreedz means something brand new (new breed and a new style of zydeco).” “I got started in the music business singing in church. My dad who is a pastor is my biggest influence who basically taught me everything I know. When musicians were unable to perform, I would be called upon as a stand in. I first learned to play the drums at the age of five, but I didn’t know music or zydeco would be my career move. I was originally introduced to zydeco through Step Rideau & the Zydeco Outlaws. I played for his band for 3 ½ years, before I formed my own band, which has been around for 15 years now.” Three years later, he and the Nubreedz were named Best Newcomer of the Year and took home the Clifton Chenier Music Award. The artist grew up outside of Houston in the town of Conroe, the son of Bishop Paul Grant Sr. The elder Grant ran a recording

ouston-raised Ruben Moreno is still in his 20s, but he has been touring and performing on stage and in recordings with zydeco legends for the past fifteen years. Leroy Thomas, Roy Carrier, David Hidalgo of Los Lobos, CJ Chenier, Buckwheat Zydeco, Andre Thierry, Geno Delafose and Jeffery Broussard, to drop a few names. He writes his own music — superbly well — which is infused with traditional zydeco, blues, country, brazilian and African beats and gospel chord changes, and he is a great storyteller and passionate about a lot of social issues. His childhood was spent in the company of his grandmother who owned a bar in the east part of Houston and her friends, many of whom were zydeco musicians. After picking up the washboard while still very young, Moreno’s musical turning point came when he performed on stage at age 10 with Leroy Thomas. It was an experience that inspired Moreno to focus his energy on becoming a performer, and subsequently led to tours with CJ Chenier and Andre Thierry. For Moreno, though, it’s about more than just the music. He sees

Ortego, a disc jockey at radio station KBON in nearby Eunice who has come to watch the fun. As Chubby belts out a rendition of “Who Stole the Hot Sauce?” Ortego explains a little about the Cajun, zydeco and swamp pop sounds we’ll hear this week. Sometimes, it’s still sung in French. Usually, it features the whirling sounds of fiddles and accordions, and often, you can hear traces of Irish jigs, rhythm and blues and even rock ‘n’ roll in it. As the show winds down, some folks roll out sleeping bags inside the coliseum, and others pop tents outside. We’ve seen the forecast, though, and it calls for plenty of rain, so we head to a nearby hotel.

In less than an hour, we reach our first stop, Parish Brewing Co., where cyclists sample a little beer and I stuff a few Zydeco Bars, a Louisiana-made energy bar with an accordion on the wrapper, into my pocket. We ride another hour or so, then pull off at Belle Ecorce Farms, where someone uncorks bottle after bottle of white wine and we dip crackers into crocks of goat cheese. That’s when Gretch lets out a squeal. She has found a days-old dairy goat with tiny rosebud ears, and I swear it smiles and bleats as we cradle it in our arms. A few more miles, and we roll into St. Martinville, the heart of French Louisiana. There, we feast on crawfish étouffée, listen to more music and rest in the shade of Evangeline Oak, the subject of a romantic poem by Henry Wadsworth Longfellow.

magine a bike ride where speed doesn’t matter and every pedal stroke carries you closer to another helping of Louisiana music, food or drink. I lived that dream at Cycle Zydeco, a 200-mile rolling Cajun culture festival. Po’boys, étouffée and jambalaya fueled four days of bicycling, punctuated by the sounds of rubboards, fiddles and accordions. This was no endurance event to be feared. Mileage

Thursday: “Hey, wanna boil some crawfish?” Distance: 38 miles Chubby’s here bright and early, this time astride a shiny red beach cruiser. A police escort fires up its sirens, the musician climbs astride his bike and the whole parade rolls away with a cheer at 9 a.m.

Florida Cajun Zydeco Update! Then it’s back on our bikes. We roll past an old sugar refinery, then into Breaux Bridge, the selfproclaimed Crawfish Capital of the World. Cyclists are putting up tents and making their way to the shower truck, but Gretch and I are distracted by Mark Thibodeaux and Greg Latiolais of B&L Boiled Crawfish, who are preparing to cook up 300 pounds of crawfish for the group. We’re innocent bystanders until suddenly we’re enlisted to help. Soon, we’re slitting open sacks of crawfish and pouring them into boiling water, dumping in jars of okra and stirring the vat with giant paddles. We wrap up the night with a visit to Pont Breaux’s, formerly known as Mulate’s, a famous Cajun restaurant where we meet a busload of tourists all the way from France and nibble hush puppies and grilled shrimp while couples swirl around the wooden dance floor.

Friday: “Swamp thing” Distance: 42 miles We head out on our bikes by 8:30 a.m. Soon, we’re streaking toward the Atchafalaya Basin, America’s largest wetland. Our agenda calls for a swamp tour, and we’re hoping to see some alligators. At McGee’s Landing, we pedal up the levee and join the crowd of

In addition to our nightly concert, we are working on having a light function at the Shadows on the Teche, an antebellum home that sits on the banks of the Bayou Teche. • Friday we start with the ride heading through Loreauville, the resting place of Clifton Chenier. We finish in Breaux Bridge with post ride crawfish boil and concert with Rockin Dopsie Jr. • Saturday morning Breaux Bridge starts off with Zydeco Breakfast (music and bottomless mimosas & bloody marys). We lost Fred’s in the reroute but we were able to pick up the famous Zydeco Breakfast in Breaux Bridge.

Bernard Hinault will be the first “Capitaine de Cycle Zydeco” For many years we have discussed introducing a King & Queen or Grand Marshall to Cycle Zydeco. The title “Capitaine” blends both a term common in cycling and is also used for the Mardi Gras of the Acadiana region, “Courir de Mardi Gras.”
