Chicken & Sweetcorn Pies

Makes 3 Preparation Time: 25 mins. Cooking Time: 35 mins ____________________________________________________________________

Ingredients 125g puff pastry 1/2 cooked chicken breast or thigh 1 tbsp sweetcorn 1 tbsp peas 1/2 tsp Dijon mustard 1.5 tbsp double cream Egg wash Salt & Pepper

Pre-heat the oven to 170C fan. Roll out the pastry into a long rectangle. Cut the pastry into 3 equal squares. Gently push each square into an oiled muffin tin. Cut the chicken into small chunks and put in a bowl with the sweetcorn, peas, cream, mustard and seasoning. Mix together. 5. Divide the mixture between the pies. Fold the four corners of the pastry over the mixture. 6. Brush the pastry with the beaten egg. Put in the oven for 35 minutes or until golden brown.
