Chicken Bonne Femme Serves 2 Preparation Time - 15mins Cook - 45 mins

Ingredients 2 chicken breasts or 4 small chicken thighs, on or off the bone Knob of butter 8 new potatoes 6 shallots 60g bacon lardons or streaky bacon chopped 1 tbsp flour 60g chestnut mushrooms 150ml chicken stock 2 tbsp double cream Bay leaf Salt & Pepper Chopped parsley to serve (optional)
Method 1. Melt the butter in a non-stick frying pan, add the chicken and potatoes and brown. 2. Remove from the pan and set aside. 3. Add the shallots and the bacon to the pan and fry gently until softened and browned. 4. Transfer to a saucepan and add the flour, stir well over the heat for 2 minutes. 5. Add the stock gradually and blend with the flour to make a sauce. Add the mushrooms, bay leaf, salt and pepper. Bring to the boil. 6. Reduce the heat and add the chicken and potatoes, simmer for 40 minutes or until the chicken is tender. 7. Remove the bay leaf and serve with green vegetables.
