Extra special Mac'n'Cheese Serves 2 Preparation Time - 20 mins Cook - 45 mins ________________________________________________________________
Ingredients 1 tbsp olive oil 1/2 onion finely chopped 3 sausages 25g semi-dried tomatoes 140g of macaroni or small pasta shapes 25g butter 25g plain flour 350ml semi-skimmed milk 70g mature cheddar, grated 15g Parmesan, grated 2 rosemary sprigs, leaves picked and chopped Salt & pepper to taste
Method 1. Put the sausages in a baking dish (big enough to hold your pasta later), drizzle with a little oil and cook for 25 mins at 180C fan. 2. Heat 1 tbsp olive oil in a saucepan and add the chopped onion. SautĂŠ until soft and golden. 3. Cook the pasta in a saucepan of salted boiling water until tender, then drain. 4. To make the sauce, melt the butter then add the flour and whisk to make a paste. Continue cooking for 30 seconds, then add the milk a little at a time, whisking continuously, until the sauce is thick and smooth. Add the cheddar and Parmesan, reserving some for the top. Add the tomatoes, seasoning, rosemary and finally the cooked pasta and stir everything together. 5. Remove the sausages from the oven and cut into bite sized pieces. Remove any excess oil from the baking dish and then tip the pasta mixture into the dish with the sausages. Sprinkle with the remaining cheese. Return to the oven and bake for 25 minutes.
