Rocky Road
Makes 12-16 squares Preparation Time - 20 mins plus chilling ________________________________________________________________
Ingredients 115g butter 100g milk chocolate 2 tbsp cocoa powder 2 tbsp golden syrup 225g digestives 100g raisins 100g baby marshmallows
Method 1. Grease and line an 18cmx5cm deep tin. 2. Gently melt together the butter and chocolate. Stir in the cocoa powder and syrup and mix to a smooth consistency. 3. Stir in the biscuit crumbs and raisins, then leave the mix to cool a little. Add half the marshmallows. 4. Evenly spread the mixture into the prepared tin and scatter the remaining marshmallows, pressing into the mix. 5. Cover and refrigerate until set, then cut into squares.
