INGREDIENTS ¼ cup of ground almonds ½ cup of whole cane sugar 4 thick slices Simon Johnson Panettone, toasted 1 cup of crème fraîche 200 gm of cherries in syrup
INGREDIENTS 1 cup of light red wine 1 cup of castor sugar 2.5 cups of water 3 firm nectarines 3 firm peaches
METHOD Place the almonds and brown sugar on a baking tray lined with foil and place under a pre heated grill for 1 minute or until deep golden and slightly burnt. Place in a food processor and process to a fine crumb. Top the panettone with some crème fraîche and spoon over the cherries. Sprinkle with the crumb mix to serve.
METHOD To prepare the syrup, combine the wine, water and sugar in a small saucepan. Bring to the boil, remove from the heat allow to cool. Once cool place in the refrigerator until very cold. Once cold slice the fruit in 1cm pieces and put into the chilled syrup, leave for a few hours to allow the fruit to take on the flavours from the syrup. Perfect on a hot day.

METHOD Dissolve the sugar in the water but don’t let it boil. Add lavender and let it cool to room temperature. Combine 210 mls of the lavender syrup with the yolks and beat to combine. Place the bowl over near simmering water and beat until thick and a ribbon of the mixture is visible across the surface when the whisk is pulled over it. Beat until cold over iced water. Whip the cream to firm but not stiff peaks. Scatter the cooled nuts over it. Mix 1/4 of the Marco Polo Tea mousse Into the cream, fold this into the remaining mousse. Pour into a loaf tin lined with a piece of baking paper which covers the long sides (not ends) and provides about 6-8 cm extra on each side. These will cover the top and act as handles to assist unmoulding. Freeze overnight.

SPICED PEAR LOAF: Ingredients: • 175g plain flour •1tsp ground ginger • 1tbs ground cinnamon • 1½ tsp grated nutmeg • ½ tsp bi-carb soda • 2tbls milk • 75g dark brown sugar • 75g butter • 1 large egg • 30g treacle • 60g golden syrup • 2 large ripe pears cut into chunks
- Line a large loaf tin with baking paper. - Sift flour, ginger and cinnamon together then add grated nutmeg. - Mix milk with bi-carb and set aside. - Heat treacle, golden syrup, sugar, butter and 75ml water in a small sauce pan (do not boil). - Combine syrup mixture with flour & spices, when smooth beat in egg and add milk mixture until combined. - Fold through chopped pears gently and pour mixture into prepared loaf tin. - Bake in oven at 175 ̊ for 40-50 min. - Cake should be springy to touch. Leave to cool in tin for 30 minutes. Serve with double cream, or simply enjoy as is.

BBQ Spring lamb on a salad of roasted sweet potato, baby spinach, pistachios and dried cranberries with mint & preserved lemon yoghurt
James St Cooking School Ingredients: • 1kg sweet potato, peeled and diced into 2cm cubes • 3-5 cloves garlic • 150g pistachio kernels • 150g baby spinach • 100g dried cranberries • 300mls full fat yoghurt • ¼ bunch mint • skin of ¼ preserved lemon • 1 tsp salt • lamb rump, round or boned leg
SALAD: Lightly toss diced sweet potato in grapeseed oil to coat. Preheat heavy based fry pan, add 20mls grapeseed oil and carefully add the sweet potato. Keep turning until all sides sealed and lightly browned. If using a heat/oven proof fry pan, place in 180 ̊ preheated oven for 20 minutes or until soft. Remove from oven and pan into a bowl and allow to cool slightly. In same bowl, add the baby spinach, pistachios & dried cranberries and toss using the heat from the sweet potato to wilt the spinach leaves.

Talking art with Tove Langridge from TWFINEART How is art intrinsic in Brisbane culture? I think that we are at a real turning point, because Brisbane is a relatively young city so it doesn’t have a super strong art culture yet. That being said, there are a lot of very creative people here and because of the city’s youth, it is able to respond quickly to contemporary cultural appetites. We are living in a rapidly moving, experience driven culture and I believe that art is a powerful tool in providing those experiences.

What was the first piece of artwork you ever bought? It was a sculpture
by New York artist Emily Silver. I had known Emily for a while previously, but she’d started looking at Mike Kelly’s work and all of a sudden, something clicked. It was as if Mike had given her permission to do something that she had always been afraid to do. Overnight, her work became very convincing, honest, awkward and smart all in one. The piece hangs from the ceiling like a wild hand-made carousel horse – it has so much personality.
Briony Barr would be my pick for an Australian artist. She just did a major piece at the Contemporary Art Museum in Seoul, commissioned by the museum itself. Her art is created by the community using a set of rules and materials established by the artist – a visual algorithm of sorts.
What are your recommendations for first-time art buyers? Artists are constantly pursuing discovery in one form or another. I think as a collector or a first time buyer, you should join an artist on that journey of discovery. Be inquisitive and objective and you will find that pieces will unfold before you. You won’t look at artwork today like you did yesterday, or sometimes even 5 minutes ago.
In the future, art won’t be something that we just see in a gallery or museum - the shift has already begun. Art will become part of our everyday experience in various forms, walking down the street, through shopping precincts, it will be in our homes and offices, filtering all the way down to interactions with our smart phones.
What artists should we be keeping our eyes on as up-and-comers on the Australian and international stage? Internationally, I would say Christian Haub from New York City. I can’t get enough of his Floats. They are so fresh and way before their time - both conceptually and aesthetically - Chris started making them in the 80s.
When did your passion for art and design become prominent? My Opa
[grandfather] was an architect and very aesthetically driven, so I grew up with it. I’ve always been a very curious and quite a restless person, so I think art was always the only real answer for me. We opened TWFineArt a year and a half ago when we moved back. I joined forces with a selection of innovative artists that I had been working

Where do you go when you need creative inspiration? I find talking with passionate creative people a real source of inspiration. That creative energy is infectious and through the rambling conversations that we tend to have, I can really clarify ideas that have been wandering around inside my head. My go to’s would also be the Degas Room at The Met, or just sitting in front of The Piano Lesson by Matisse at MoMa, but they are both a long way away now ...
What should people expect when they come to visit TWFINEART? We
focus on artists working in Los Angeles and New York City (with a few Australian, German and Chilean exceptions). The art coming from LA, the lower east side of Manhattan and the Brooklyn neighbourhoods is all very directional; there is a real culture renaissance happening there.
What are your tips for someone buying art as a gift? Discretely observe
