winter weLLbeing Meaghan South, Director & Owner of Outshine Beauty MediSpa, reveals the secrets to making you shine more brightly this winter, inside & out • avoid sugar and processed foods, white breads, flours, pasta and rice. It is proven that an excess of sugar can be detrimental to your immune system and most of us will experience a rebound drop in energy after eating these foods. It would have to be our ‘Faux Pas jacket.’ It’s super warm and useful without being like every other puffer jacket out there! Quilted back and puffer sleeves keep you protected from the cold with some colourful faux fur geo shapes on the front. It’s great for adding a bit of practical disco to the wardrobe.

what is the one item that should be on everyone’s grocery list this winter? When fresh home-grown
with a lid, experiment with an accurate thermometer and use your BBQ to slow cook dishes at lower temperatures. This can enhance the flavour, particularly when cooking on lump wood charcoal, and help with the tenderization. use a pizza stone on your BBQ for perfect pizzas. I personally only cook on natural lump wood charcoal at low temperatures - I love it, even the smell of the slow smouldering charcoal on a cold night.
tomatoes are not in season, make liberal use of canned tomatoes and my favourite variety is San Marzano, great for soups, paella dishes and pasta sauces.
what is your tip for breaking up the monotony of winter dishes such as bangers and mash? Nothing quite beats a Dutch cream potato in winter however I love le puy style green lentils, cabbage (loaded with vitamins and minerals), celeriac (delicious), kale and brussel sprouts. Try a slow cooked spiced rib of beef, celeriac mash and brussel sprouts blanched and then sautéed in French unsalted butter, tossed with toasted almonds and small pieces of slow roasted belly bacon.
How has the food scene in brisbane evolved in the last decade?
We have seen Brisbane restaurateurs and chefs alike starting to find their own sort of identity. There is real originality coming through with many new different styles of venue and food. There are more dedicated festivals and food markets also offering a wider selection of food and introduction of new cuisines.
who is an up and coming local producer that we should keep on our radar? Woombye Cheese, Lirah vinegar and New Farm Confectionery.
What would we find on a perfect winter cheeseboard? A fromage
des Clarines studded with blanched garlic or truffle (see recipe), raclette and comte gruyere.
what is your one foolproof winter dish? Risotto. Simply obey the basic
rules and use a good rice; Carnaroli is my favourite as it produces a creamy risotto. A quick tip: at the end of cooking, fold in plenty of unsalted French butter and heaps of finely grated Reggiano parmesan.
what elements of brisbane food culture are you most passionate about and why? I love the multiculturalism that brings us such a beautiful blend of many cuisines. I love how fresh produce, particularly local, is gaining a place in many Brisbane eateries and home kitchens and these producers are being recognised for their commitment.

FROMAGER DES CLARINES RECIPE Serves 4 - 6 Prep: 5 mins, cooking: 20 mins INGREDIENTS 250g (1 wheel) Fromager des Clarines 1 clove garlic* or truffle, sliced into slivers Pinch fresh thyme or rosemary Splash white wine or brandy METHOD 1. Preheat oven / BBQ to 220°C 2. Unwrap the plastic covering from the cheese and leave the cheese (uncovered) in the wooden box. 3. Stud the top of the cheese with slivers of garlic or truffle. 4. Sprinkle the fresh herbs over the top of the cheese and add a splash of wine. 5. Cover with foil, put cheese in the oven for 20 minutes or until golden brown on top. 6. If using garlic, remove the slivers before serving. If using truffle, do not remove. * To reduce the intensity of the garlic, it can be blanched in cold water prior to slicing.

Straight from the oven still in the skillet on a cold morning, the best toasted sourdough available and loads of hot coffee!
What’s your secret to the perfect winter meal? Large plates of slow cooked meats, heaps of tasty veggie dishes and Iranian rice, shared on the deck at home with good friends and a couple of bottles of solid grenache.
The one winter essential I can't do without? Game of Thrones. As soon as the temperature drops I get a little bit excited. Ben Williamson, Head Chef

work perfectly for warming spices. I love mulled wine or gingerbread spices especially when they are expertly used in a Martini.

what is the best way to enjoy a winter meal in brisbane? We are pretty lucky to have a dry winter, so the best way to enjoy it is rugged up and sitting in the sun.
what’s one word you immediately identify with brisbane winter? It has got to be the EKKA. I never went until last year. We took our 5 year-old for the first time and it was amazing seeing him have an adrenalin rush on a roller coaster - it’s magic experienced through a little person’s eyes.

gerarD’s bistro INGREDIENTS Half an onion sliced thinly • one garlic clove crushed • two tbs extra virgin olive oil • two cinnamon quills • ¼ tsp caraway seeds • ½ tsp cumin • ¼ tsp freshly ground coriander seeds • one pinch of saffron • one tin crushed tomatoes • one roasted red capsicum peeled and puréed • two pinches dried mint • one bunch coriander, leaves picked, stalks and roots finely chopped • one merguez sausage, skin removed and broken apart • six free range eggs • two tbs thick yoghurt or labne • one bunch picked mint leaves and reserved coriander leaves • best quality sourdough

METHOD: In a heavy-based pot sweat the onion and garlic in the oil until very soft. Turn up the heat and add the cinnamon, caraway, cumin and ground coriander. Sauté until fragrant then add the tomatoes, saffron, puréed red pepper and dried mint. Cook out for 30mins until thick and sweet. Adjust seasoning with salt or raw sugar if necessary. In two cast iron skillets, colour the broken merguez and then add the tomato base. When boiling, crack the eggs into it and stir in carefully, trying not to break the yolks until well distributed. Cook out in a preheated oven at 200°C until the whites have set but the yolks are runny (about 5 to 10mins). Serve immediately, topped with yoghurt and herbs and freshly toasted sourdough. 33

snapper pie, classic mash, winter pea salad if winter were a meal what would it be? Fire roasted lamb, swede with
hommous, spiced cauliflower and pomegranate. The rendered fat and smoky flavour along with the earthy tones of the cauliflower accented by ras el hanout is complimented by sweet pomegranate. Eat this while enjoying the Brisbane blue skies, warm days and crisp nights of winter.

Duck confit

Duck confit was traditionally made in France, particularly in the south west region. It was used as a method of preserving duck or goose for the winter months, before refrigeration was available. The process starts with the marylands (leg and thigh) salted with the bone in, for up to 30 hours. Salting removes moisture from the raw poultry, in the same way that salt
is used to cure other proteins such as a fresh side of Atlantic salmon. The salt is next rinsed off and the meat is patted dry and then completely covered in the relevant fat i.e. duck in duck fat, goose in goose fat. The cooking process is similar to a braising or slow cook method with at least 2.5-3 hours of cooking at around 140-150°C in the oven. Some variations include cooking the meat for up to 6 hours at 110°C or until the meat falls from the bone and melts in the mouth. When preserving, the meat is cooked and then transferred into preserving jars and completely covered with fat. It is then stored in a wine or root cellar for months at a time. from the fat and allow to warm slightly. Heat a heavy-based frypan and add the duck skin-side down and allow the skin to get golden brown and crispy. Turn over and repeat on the other side, then finish in an 180°C oven until the duck is hot through. This dish is often served with braised cabbage, fennel or witlof with either a red wine or other vinegar, providing a sharp flavour to contrast the richness of the duck. treasure Hunting Local accessories mecca Molten Store celebrates the reveal of its flagship trove on James Street this month. A week before she opened the doors, Director Jessy Cameron took to the skies for Hong Kong to seek new treasures for her glittering utopia.
For winter SS16, we’re channeling Sir John Everett Millais’ moody painting, ‘Ophelia.’ Botanical elements such as leaf motifs and earthy textures are softened with muted blush tones and crystal embellishment. The Botanist earrings were among my favourite finds on this strip. I love the way the champagne crystals catch the light.
Whenever I travel, I always carry a little notebook just in case inspiration strikes. I collected a bundle of beautiful leather notebooks on my first day of treasure hunting; more market finds. from the Danes who are reportedly the happiest nation in the world and yet live for a large part of the year in deep, dark winter! The secret of their well-being is attributed to their philosophy of “hygge” - loosely translated as a feeling of warmth and cosiness. This includes creating a joyful and inviting atmosphere in the home through things like thick pile rugs, candles and books. In a deeper sense it implies taking delight in simple things and finding happiness in the small moments of joy that make a life.

early 1900’s Munch had an open air studio where he would paint scenes standing in the snow in sub zero temperatures - the mood of those paintings is sensational.
