Council discusses grill, staffing By CAROL BROOKS Editor If it hasn’t opened by now, the grill at the Jamestown Park Clubhouse will soon open its doors. Cindy Grubb has been hired as manager and is busy scrubbing down the equipment following the renovation and determining needed supplies. Interim Town Manager Cookie Billings reiterated to the Town Council on Oct. 18 the statement she made to the Planning Board that the first priority was to service the golfers. Several inquiries have been made regarding renting the facility for events but the Town is holding off actually

booking any reservations. Grubb has a background in catering and is expected to help in the scheduling. The search for a new town manager is on. Billings talked with four consultants before recommending that the Town Council approve the Piedmont Triad Regional Council conduct the search. The cost is not to exceed $8,000 but Billing expects the total to come in at several thousand dollars less. “Every one of them recognizes that selecting a new town manager is one of the most important steps a (town) council is charged with,” Billings said. “They will meet with the mayor and Council to find out what they are looking

for, what their needs are for a town manager.” Billings expects a new manager will be in place by January or February 2017. The town has not advertised for this position but the opening has spread by word-of-mouth. Cleaning up storm damaged trees High winds, ice and snow put tremendous pressure on trees growing near houses or power lines. With storms passing through the area, you may see damage to your landscape, including broken tree trunks and branches all over your (or your neighbor’s) property. “Storm cleanup is often when many property owners crank up their first chain saw,” notes Tchukki Andersen, Board Certified Master Arborist, Certified Treecare Safety Professional and staff arborist for the Tree Care Industry Association. “And, not surprisingly, they sometimes hurt themselves. Untrained property owners often attempt to remove large broken tree limbs from their property. Many of these accounts end unfavorably, often with serious injuries or even death. For homeowners thinking of handling post-storm

work themselves, here’s a primer on safe tree and brush removal: First, if a utility line is down: • Do not approach. Assume any downed line is energized. • Call the utility company immediately. • Avoid touching anything near the downed line and make sure nobody goes near the line. Contact with energized lines can result in electrocution. • Be aware that downed power lines can be hidden in brush and foliage. Play it safe; call a tree care professional. Second, when deciding whether to try removing a tree or large branch yourself: • Consider the size and location of the tree. If the work requires you to leave the ground or if the tree is more than 20 feet tall, call a tree care professional. Do not attempt any tree work

from a ladder. • Examine the shape and lean of the tree. Inspect the trunk for decay, weak spots or hanging limbs and look for any metal or concrete in or around the tree. If any of these features are present, the tree may be unstable and extra precautions need to be taken before removing the tree. • Carefully inspect the tree and the surrounding area for anything – utility lines, structures, vehicles, shrubs – that might interfere with the removal of tree pieces. • Note other people in the area, particularly children. You don’t want anyone to wander near the drop zone. • Even small trees bent under tension can be extremely hazardous. Do not cut wood that is under tension (one or both ends are trapped under something). • Ask yourself, “What will happen when I cut this

Local chefs battle for state title By CAROL BROOKS Editor When James Patterson III, better known as JP, decided to become a chef, he envisioned working in a prestigious restaurant in a large city, not a country club. But Patterson is now executive chef at Sedgefield Country Club and leading a team in the Battle of Champions next month in Raleigh. And he’s glad to bring Sedgefield’s name to the state. “Country club chefs and cooks don’t get the recognition restaurant chefs tend to get,” Patterson said. “We’re not usually nominated for awards because the public doesn’t get a chance to dine and see the quality and style of food we are capable of. “Doing the competition dining was a way to put us out in the public. It’s a reflection on Sedgefield.” Team Sedgefield Culinary Crushers is made up of Sedgefield Country Club’s Patterson, chef Isaac Spencer and former lead cook Tim Alston. Patterson has been a chef for 19 years, the past three at Sedgefield. Spencer has worked at Sedgefield for 10 years and Alston for nine years. Both Spencer and Alston are graduates of GTCC’s Culinary Arts school. None of the three gentlemen had ever participated in a competition before. Patterson said there is a different approach to their preparation than other teams. Rather than all three chefs working on the same dish, they each took their own course. Each of the Battle of Champions dinner events includes two teams pitted against each other, preparing three courses centered on a featured North Carolina

ingredient that is revealed only an hour before they start cooking that day. The chefs have about six hours to come up with a menu and prepare the meal. Unlike other cooking competitions, attendees (diners) vote on each dish using their smart devices. Diners do not know which team prepared a course. The chefs have to be prepared to fix just about anything. “You’re not allowed to have any kind of recipes or media – they take your telephones away from you,” Patterson said. The Culinary Crushers haven’t felt stress in the previous regional competitions. “Not knowing what the ingredients are, not knowing anything about the competition and the kitchen you’re walking into, we joked that there was nothing we could do,” Patterson said. “We can’t control anything, so let’s go ahead and have fun, make the most out of it. We went in almost blind but full of excitement. We weren’t nervous.” Patterson said the three men have known each other for about six years and working together for over three years has helped their team gel. “The kitchen is a wonderful place to be. I’ve tried to get out of it several times but I’ve always ended up back in it.” “This year’s Battle of Champions is certain to bring dynamic competition and delicious food throughout the five dinner events,” said Jimmy Crippen, Competition Dining Series founder and host. “The level of culinary talent and exceptional creativity in each of our 2016 local series events blew us away and we can’t wait to see what these skilled chef teams serve up in the annual championship. “Foodies won’t want to miss

The plans call for 59 parking spaces, 18 of which will be reserved for residents of new townhomes to be constructed along Gannaway Street and Ragsdale Road. In lieu of a planning director, Koonce and Public Services Director Paul Blanchard have been working with the de-

velopers of both the parking lot and townhomes. The town’s Technical Review Committee has also spoken with developers. With construction of the townhomes, public parking spaces along Gannaway Street will be eliminated, as each townhome will have a separate driveway. The Council was concerned with the loss of free parking, as the new lot would be paid parking and requested Koonce speak with the developer regarding several conditions the Council would like to see imposed. The Council also appointed Blanchard to take the seat on two boards formerly held by previous Town Manager Chuck Smith. Editor: I would like to ask all of my friends, neighbors and family to come together with me over the next few weeks and let’s try to help the Hurricane Matthew victims of North Carolina. I am putting out thousands of feelers through email and social media to raise/collect a truckload of goods, with all of your help, to take to Lumberton before Halloween. I would like for you to go to your favorite shopping places and buy something (toothbrushes, toothpaste, hats, gloves, washcloths, pencils, crayons, socks, children’s undergarments, Kleenex, blankets, coats, etc.) to be delivered to the hurricane victims before the end of the month. Some of you may feel that this is too much of me to ask, but all I am asking is 10-15 minutes of your time and a few $1 or $2 items that will make a big difference in the lives of the people of N.C. that have lost everything. Beware: Medical apps for smartphones There’s so much we can do with the new smartphones. But just because we can doesn’t mean we should. A study from the Illinois Institute of Technology Chicago-Kent College of Law revealed that a great many mobile health apps were sharing private medical information with third parties without the user being aware. Granted, for those of us with health conditions to monitor, a phone app can be handy to keep us on track. Sometimes our physicians recommend it. Some apps are even approved as prescriptions by the U.S. Food and Drug Administration. Specifically the study focused on Android diabetes apps and looked at whether there was indication that private information was being disclosed to third parties. (Android has the biggest market share of phone operating systems.) Researchers found over 270 diabetes apps and chose 75 of them to monitor for transmission analysis. Within six months, 60 of those apps were no longer available. Of the group

remaining, 81 percent didn’t even have a privacy policy. Of the ones that had privacy policies, only four would even ask if information could be shared. Of the 75 chosen for transmission analysis, there was a wide variety of information sent off to third parties: 86 percent placed tracker cookies in the app, and most of them shared information whether they had a privacy policy or not. Of the apps that actually had privacy policies, only 12 asked for the user’s permission before sending off their data to others. Ten shared the information with business partners, and 16 used the information for ads. The Health Insurance Portability and Accountability Act bars medical staff from disclosing your private information to others, but it doesn’t cover phone apps.

Do you grit your teeth when an athlete or performer takes a knee during the national anthem before a game begins? We have mixed feelings, don’t we? Like UNC-Chapel Hill basketball coach Roy Williams, who was angry when he first heard about San Francisco 49ers quarterback Colin Kaepernick’s pre-game protests of police violence against black men. Then, after talking to members of his team, Williams changed his mind and recognized that Kaepernick was not saying that our country was bad. But, there is a specific problem, Williams says and “I think he is correct.” Williams’ comments reminded old-timers of an earlier time when another Carolina basketball coach took unpopular stands on racial matters and supported his black players, who were dealing with special challenges because of their race. Veteran sports journalist Art Chansky tells this story in his new book, Game Changers: Dean Smith, Charlie Scott, and the Era That Transformed a Southern College Town. Chansky’s story begins in 1961 when the now legendary Dean Smith succeeded Frank McGuire as

Martin head basketball coach in Chapel Hill and a junior high school kid in Harlem named Charles Scott was hanging around the playground mostly watching other bigger guys play basketball. Meanwhile, Chansky writes, “On the surface, Chapel Hill was idyllic, with large colonial homes bordering Franklin Street as it wound up to and through the village.” However, “Not far beneath the apparently tranquil surface, Chapel Hill was in turmoil.” The few liberal leaders in town “faced opposition from the long-held convictions of southern segregationists, many of whom were prominent business leaders in the town.” “It’s hard to imagine Carolina basketball and Chapel Hill if Dean Smith had never come,” writes

Chansky. Meanwhile, in 1963, Scott had made his way to North Carolina to attend high school and play basketball at Laurinburg Institute, an all-black boarding school. His basketball talents caught the eye of Davidson College coach Lefty Driesell, who persuaded Scott to play for him. “Lefty was the first guy to recruit me,” Scott told Chansky. “If there was no Lefty, there would be no Charlie Scott.” Chansky explains in detail how Smith and the officials at Laurinburg got Scott to change his mind and go to Carolina. Chansky writes, “It’s good that Charlie Scott wasn’t born three years earlier. Chapel Hill was less ready for him in the early 1960s. Over the course of the decade, it went from a town clearly divided by race to eventually electing (and twice re-electing by overwhelming margins) Howard Lee as the first black mayor in a predominantly white municipality in the South.” Although the racial climate in Chapel Hill had improved by the time Scott arrived, he was still a black man in a predominantly white world. He was uncomfortable. He and his

Coach Smith gave Scott full support, Chansky writes, but “there was no playbook to guide the complicated group dynamics on Carolina’s first integrated team.” Scott told Chansky he regretted not forming any enduring friendships at UNC. “You did things with other people in college that you had lifelong relationships with,” he said. “I was not able to do that; it was a choice I made and I understand that. It wasn’t an experience I would wish upon my kids.” Scott said his children had a much better time when they came to Carolina. They obtained what their father had missed. “My son and my daughter had a fantastic experience. They enjoyed everything about Carolina. Shaun goes back now and he sees a friend, that’s great. I didn’t have that opportunity.” Thanks to Scott and Smith, black students can have even better experiences at Chapel Hill. Better. But still not good enough, Smith and Scott would tell us.

Boutique offers ethnic attire and more By NORMA B. DENNIS Staff Writer At first glance, Nubian Expressions, a boutique recently opened at 808 W. Main St., may seem like a specialty shop. As the name implies, there is definitely an African flare in the fashions, home décor and jewelry. But glancing around the shop, one can see items suited for anyone. “We carry things for all nationalities and social economic backgrounds,” said owner and manager Peggy Nelson. “We’ve enjoyed a great mix of customers with something for

everyone. There are unique things you can’t find in every store.” In addition to African art, colorful caftans and dashikis, and bold jewel pieces, the boutique offers an eclectic array of glassware, candleholders, bath and body items, framed artwork, woven shawls, scarves, shoes, gift baskets, sports accessories and more. Nelson, who identifies herself as a retired banking professional, cancer survivor and brain injury survivor, also has a background working with a familyowned business in San Diego in the late 1970s.

Search for truth continues By JANE WHITEHORNE Staff Writer Life can turn on a dime. And so it did in 1984 for two men from very different stations in life, but who will forever be linked together. Mark Rabil was a young, white attorney, just four years out of school, working for a law firm in Winston-Salem and climbing the corporate ladder. Darryl Hunt was a 19-year-old black man drifting through life a bit, probably not making some of the best decisions. However, he looked forward to someday working for the City of WinstonSalem, and having a wife and kids, a house, a pickup truck and a dog. In the early morning hours of Aug. 10, 1984, 26-year-old Deborah Sykes parked her car on a Winston-Salem street. While walking to the Twin-City Sentinel offices where she worked as a copy editor, Sykes was abducted, raped and murdered. Hunt was charged with this crime and Rabil became his lawyer. “For 32 years we traveled a road together,” said Rabil. “Twenty of those years he was my client. For the next 12 years, until he died, he was a colleague. We worked together for policy reform. We tried to help people. “As Darryl Hunt said, he was a voice for the voiceless. I guess for about 20 years, I was his voice.” The story of Hunt’s wrongful

MARK RABIL conviction and eventual exoneration is a familiar one to those living in the Piedmont Triad. It was a sensational crime, one that raised many issues about racial bias in the criminal justice system. Rabil spoke about the case during a lecture at Guilford Technical Community College Oct. 20 as part of the school’s All-College Read. This year’s reading selection is Picking Cotton by Jennifer Thompson-Cannino and Ronal Cotton. A New York Times best seller, Picking Cotton is the true story of Thompson-Cannino’s sexual assault, which led to the false conviction of Cotton, who served 11 years in prison before a DNA test proved his innocence. A few years after Cotton was released, he met ThompsonCannino and they formed a lifechanging friendship.

The themes of Picking Cotton center on sexual assault, race, injustice and redemption all similar to what played out in the Hunt case. Despite evidence to the contrary and a DNA test proving Hunt was innocent, he was charged, tried and convicted for Sykes’ death. Rabil outlined various injustices that occurred which stacked the deck against Hunt from false eyewitness testimony to failure to present evidence that could have cleared him. Finally, in 2003, after another round of DNA testing, Hunt was exonerated and pardoned. At the same time, the real perpetra- h tor, Willard Brown, confessed. “(Hunt) was an individual

like no other,” said Rabil. “You hear about charisma and a magnetic personality and that was Darryl. That’s why so many of us stuck with him for the 20 years he was incarcerated wrongfully, through two trials, appeals, DNA that should have shown he was innocent and through his exoneration.” Rabil said he was convinced of Hunt’s innocent upon their first meeting. Over the years, Hunt had the opportunity to plead to lesser charges, which would have allowed him to leave prison early. However, because he was innocent and because to accept a plea he was asked to point the finger at someone else, he stood firm. “That proves to me what his character was even at 19 years old,” said Rabil. “But somebody with the personality and the strength like Darryl’s only could burn for so long. His strength, his light, I think lives on.” Hunt died in March of an apparent self-inflicted gunshot wound. Hunt’s struggles were not in vain. Because of his experiences, thousands of people have been affected in some form or fashion. “Darryl started a project to help people reentering society (after being released from prison),” said Rabil. “The Innocence Inquiry

Review Commission was formed, which has released more than a dozen people directly because of Darryl’s case. There have been no executions in North Carolina since 2006 partially because of Darryl’s efforts. The Racial Justice Act was passed. “Darryl has inspired thousands of people. The question, in many respects, is at what cost? People may tell you the system worked in this case. The system didn’t work, we worked inspired by Darryl and his magnetic personality.” Despite seeing failures in the system, Rabil continues to be inspired by Hunt and to work for better practices. Today, he is an associate professor in the law school as well as director of the Innocence and Justice Clinic at Wake Forest University. He wants to ensure young prosecutors learn from this wrongful conviction. “The law was an important tool in getting Darryl out,” said Rabil. “But I have come to see in the 36 years of this that the law is the power narrative of those in control. In December 2015, the Town Council unanimously approved an update to the Land Development Ordinance to include attached housing to Article 8.4-7 as a permitted building type for this district. Carrie Spencer, who was the town planner at the time, noted this was just an inconsistency between the permitted use table and the ordinance that needed to be fixed. The current project has been reviewed several times by Jamestown’s Technical Review Committee, which requested changes each time. The Town Council

asked for further conditions at the Oct. 18 meeting. It was not known at press time if these conditions were accepted by developers. Jamestown Public Services Director Paul Blanchard said the development clearance certificate request was submitted by Tradition Homes and the site plan by MAG Property Management, LLC/Wrennovation Homes, LLC. Happytones celebrates 20 musical years By NORMA B. DENNIS Staff Writer Music has been said to “calm the savage beast,” but it can also gladden the hearts of those who perform it and those who hear it. In 1996, when Dennis Eaton began a choral group for seniors 50 and older, the name Happytones just seemed the perfect fit. The group met at the Roy Culler Senior Center in High Point. There were no tryouts. Anyone who loved to sing and wanted to join the group was invited to participate. “There were 12 original members,” said Anne Eaton, Dennis’ wife and current Happytones director. “The idea snowballed and enrollment increased. Today we have 40 on roll and about 30 show up for practice each Tuesday from 11:30 a.m.-1 p.m. ” The group, which sings a mixture of show tunes, gospel and popular music, is celebrating its 20th anniversary in style with a concert titled “For the Love of Music.” It will perform Nov. 11 at 7 p.m. at the Roy Culler Senior Center. Former members have been invited to participate and special guests are receiving invitations to attend. “One guest we’re inviting is Max Meeks,” Anne said. “When he had a radio program, he would invite us to sing on it before our concerts. “Jack Agati, the only original member of Happytones, still sings with the group. The goal of our anniversary concert is to celebrate all former members. Memorabilia of Happytones from years past will be on display in the lobby.” Happytones has sung at most nursing homes in the area, at the hospital, Day in the Park and annual

The group also performed at the Biltmore Mansion twice during Christmas and in December of 1998 traveled to Washington for a performance at the White House. Director Dennis Eaton arranged the appearance and Beverly Dale accompanied the group on the piano. The Happytones’ popularity made it difficult for Dennis, who had a full-time job, to continue to direct. Throughout the history of the group, there have been six directors. Anne, who joined the group after she retired, has been its director for the past eight years. “Betty Jo Farrington, who had been director for the longest period, was planning to retire from the position and encouraged me to do it,” Anne said. “I had become so interested in the group and agreed.” Anne, who says she has sung and danced all her life, is a retired teacher who taught movement education, which included music. She began working with grades 5-12, but after

ANNE EATON getting her master’s degree concentrated on elementary aged students. “My focus has gone from children to seniors. They are a lot alike, especially when it comes to talking,” she said with a chuckle. Anne has performed with the Sweet Adalines, Triad Chorus and Zoopendous Show Chorus. She has sung with Senior Class, a smaller choral group Dennis Eaton started at the Culler Senior Center and currently serves as its assistant director. Her husband, who directs Senior Class, assists Anne with Happytones. Music also runs in Anne’s biological family. Her sister, Constance Kotis, is an accomplished musician who has been voted leading piano teacher in North Carolina. She occasionally accompanies

He invented a shape note system in 1851. Although Happytones does not hold auditions, Anne does expect a certain amount of professionalism from the group. She teaches participants the importance of good singing habits – sit up straight, feet on the floor, use you face for expression. “I press for a beautiful round sound,” she said, “and it’s a fact that a tall smile, which lifts your soft palette, makes you sing

better. “Our singers realize they are here to learn and sing. Some are so dedicated they take a bus to and from practice.” Anne would love to have more men join the group but would welcome anyone who wants to participate. She noted that voices lose power as they age and the more people in the group the greater the sound. Happytones normally holds Christmas and spring concerts. Last year at Christmas, the group performed with the choir at Deep River Friends. The music director at the

Heather Pendrak’s first block class at Ragsdale High School started its Classroom to Food Pantry Pipeline (CFPP) in early October. The project is providing fresh greens for the Hand to Hand Food Pantry at Parkwood Baptist Church on Penny Road. This ministry has enabled students to work with some of the pantry recipients on surveys and other feedback they needed to complete the school project. “Hand to Hand only gives out food once a month,” said Michael Norbury, manager of ReBuildUp, LLC, who helps Pendrak with the CFPP project. “That allows us to harvest once a month and deliver more at one

time. The church’s pastor, Rev. Pittman, has been a big help as we tried out some things.” This year, Pendrak expanded the Classroom to Food Pantry Pipeline project to both her Science Visualization classes from just one last year. She plans to have the two classes compete against each other to see who can grow the most food based on weight. The CFPP will be providing weight data for students to use in the statistics and charting part of her SciVis curriculum. “We had hoped to expand beyond the four bins we’re setting up now at RHS, but the sponsor funding just wasn’t there,” Norbury said. The class is

applying for grant money so the number of bins on campus may still grow this year. Pendrak and Norbury are also contemplating setting up a Classroom to Food Market Pipeline where students – likely in an entrepreneur and/or marketing class – grow food to be sold at a nearby convenience store, grocery store or even restaurant. Students will try out different marketing tactics to drive people to that business to purchase all of the micro greens they’ve grown, helping raise money to pay for next year’s CFMP supplies. Sonya Hamilton of State Farm, along with a private donor, helped make this year’s program possible.

Basking in the autumn of Jamestown By PATRICIA SMALL Special to the News

The windy days are best, when the sky seems to rain leaves. Like children released after a long day at school, the leaves run ahead of you, dancing, spinning, somersaulting. Wherever you go you can hear the crunch of leaves beneath your feet, their spicy odor filling your senses until suddenly something inside of you that has been asleep all summer awakens. The Forestdale neighborhood, with its blessed shady canopy in the summer, now drowns in piles of leaves. The swish of rakes and the scream of leaf blowers will be heard for many days to come as the rest continue to fall. The sky that is starting to peek through the remaining leaves is sometimes such a deep blue it almost seems purple. There are the golden afternoons to enjoy, ones where if you are still enough you can hear the click and snap of the fall-

ing leaves around you. Days where you just want to sit and bask in the warm sunlight, relieved it no longer feels oppressive as it did in summer. Your cats and dogs have the same idea as they roll in the dusty grass at your feet. Your lunch break may find you on one of the benches at Wrenn Miller Park where you may hear the hum and roar of the afternoon school buses mixing with the now daytime call of crickets. The persimmons are turning opaque and falling. There will be puddings this year. The race is on with the squirrels in our yards as they gather the pecans before we can; even picking them green before they hit the ground. The ancient black walnut tree that hangs over Dillon Road at the bridge is dropping its fruit. Too bad black walnut hulls are so hard to remove because Black Walnut Cake is delicious. The large field at the Moore’s farm on Dillon Road is mowed for hay. We still miss Yesteryear in Motion and Willard.

The trees along the roadside that borders River Run are returning to their former glory of years past. The dark ruby red of the maples that surround Jamestown Public Library are quickly turning to give their annual display, usually the last show of color in town. Some birds are slowly disappearing. The crows will now strut around town as kings for the winter. The warmth of a sweater feels good as you venture out in the evening to one of the town’s many restaurants or to a class at GTCC or to the library’s historical lecture series. As you return home, with the summer hazes gone, even the stars look bigger and brighter. A blanket on the bed feels good as you crack your window for some fresh air. You hear the trains that run through town once again, the ones you had almost forgotten during the air-conditioned nights of summer.

The light that illumines the whole town is the pumpkin patch at Jamestown United Methodist Church. The brilliant orange is almost blinding as you drive by, the happy squeals of the children on the hayrides they offer, precious. There are days for us to vote at Town Hall where the placards of the candidates are as varied and colorful as the surrounding fall foliage. One of the loveliest sights to see in the Jamestown area is the mirrored images of the fall colors in the old City Lake: olive, crimson, gold, flaming and burnt oranges. You can enjoy this beauty up close on one of the park’s Leaf Boat Tours. Every Saturday offers more yard sales then you can shake a stick at and there is always something good to eat with the various church and organization fundraisers. How good of our Creator to warm us with these things before the cold, grey days of winter begin.

pooky, silly or symbolic, carved pumpkins are an essential ingredient to any Halloween celebration. This year, scare up some special fun for your party with a wicked watermelon carving, instead – but don’t stop there. After crafting your watermelon into an artful mummy, take advantage of the healthy, immunesystem supporting qualities of the lycopene leader among fresh produce. At 92 percent water, as well as an excellent source of vitamins A and C, watermelon is a hydrating post-art snack. Carving a creative design into a watermelon is a simple way to kick off the festivities and requires only a handful of common tools. Add a twinkling candle to make a fantastically frightful centerpiece. Or fill it with a fresh fruit salad or salsas for a more functional, practical approach. Even if you’re planning on a hollowed-out carving, keep the sweet juicy fruit and make it a healthy addition to your Halloween party menu with a recipe that puts to use all your carving leftovers. To take advantage of all a watermelon has to offer – outside of the fun carving – try Frosted, Frozen Watermelon Balls or Kids Watermelon Pizza Supreme. These fun, simple recipes make it easy to incorporate a healthy snack after all your hard work carving up a Halloween masterpiece. Supplies and Tools: Oval or round seedless watermelon Cutting board Kitchen knife Small bowl Dry erase marker Paring knife Melon baller, fluted or regular Scoop Assorted peelers Cheesecloth Straight pin Battery-operated candle or light Candy eyeballs or blueberries Wash watermelon under cool running water and pat dry. On cutting board, place watermelon on its side and use kitchen knife to cut off

1/4-inch to 1/2-inch from bottom (end opposite stem), being careful not to cut too deep into white part of rind. Cut 1/2-inch to 3/4-inch from stem end to create opening large enough to fit small bowl. Using dry erase marker, draw eyes, nose and mouth, along with wavy slits around carving to let more light flow through. Use paring knife to cut out design, being sure to cut through to red fruit. Use fluted or regular melon baller to hollow out inside of watermelon. Use scoop to remove excess watermelon. Peel green rind off outside of watermelon. (Tip: Different peelers work well for different parts of the

watermelon, depending on how flat or round the melon is.) Wrap thin strips of cheesecloth around mummy carving and secure with straight pin, if needed. Put battery-operated candle or light into carving. Fit small bowl into top of carving and trim away excess rind to make bowl fit securely. Fill bowl with melon balls and attach candy or blueberries to make eyes. Kids Watermelon Pizza Supreme Servings: 6 1 watermelon slice (8-10 inches around and 1-inch thick), drained 1 cup strawberry preserves 1/2 cup white chocolate chips 1/2 cup raisins 1/2 cup chopped walnuts 1 cup sweetened shredded coconuts Place watermelon slice on serving platter and cut into 6 wedges, leaving in

shape of pizza. Spread preserves over watermelon and sprinkle chocolate chips, raisins, walnuts and coconut. Frosted, Frozen Watermelon Balls Servings: 35-40 1 small watermelon 1 package (3 ounces) watermelon or other red flavor gelatin dessert

Using melon baller, scoop out 35-40 small watermelon balls. Place on paper towels and set aside. Pour gelatin into shallow bowl. One-by-one, gently drop watermelon balls into bowl, roll around, take out and place on plate covered with paper towel. Repeat until all gelatin is used. Place plate of frosted watermelon balls in freezer. Allow at least 2 hours

to make sure they are completely frozen. Remove from freezer and let sit a few minutes before eating.

Carving tips • Prior to carving, read through all of the directions. • Cuts are easiest when the watermelon is at room temperature. Once your handiwork is complete, chill the carving and contents before serving. • After drawing your design on the rind, insert toothpicks in key places to guide your cuts. • A sharp knife with a pointed tip makes the easiest, cleanest cuts. • Remove excess flesh in large pieces, when possible, to allow for easier melon ball or cube creation. • Use round toothpicks or skewers to attach pieces to your design as flat toothpicks are not strong enough to bear the weight or stand up to the thickness of the rind. Choosing a watermelon With a thick rind covering the fruit inside, you may wonder how to choose the best watermelon at the market. Here are some tips for picking the perfect one: • Look it over. Look for a round, oval or oblong shaped watermelon that is free from bruises, cuts or dents. • Lift it up. The watermelon should be heavy for its size. On average, a 5-pound watermelon yields 15 cups of edible fruit. • Turn it over. The underside of the watermelon should have a creamy yellow spot from where it sat on the ground and ripened in the sun.
