Council takes up issue of sealed minutes By CAROL BROOKS Editor

The Jamestown Town council has several items on its agenda for Feb. 21 that will interest citizens. Foremost, perhaps, is consideration of a resolution to establish a policy for sealing and unsealing minutes from closed sessions. Councilmembers held nine closed sessions in 2016, sealing the minutes of eight of them, according to Council minutes. Sealing means the minutes’ contents cannot be made public. Many of these meetings related to personnel matters, details of which are not available to the public. However, according

to the UNC School of Government, the state’s Open Meetings Law (G.S. 143.318.09) does not prohibit disclosure of information from closed sessions. The Council also held a closed session on Feb. 2, one is planned for the Feb. 21 regular meeting for matters relating to real estate and two are scheduled for Feb. 22 and 23 to discuss qualifications of candidates for a new town manager. The Council will consider adopting a resolution to direct the Town Clerk to investigate a petition received under G. S. 160A31 for a voluntary contiguous annexation from Koury Corporation. Book provides help facing a loved one’s journey through Alzheimer’s By NORMA B. DENNIS Staff Writer Deborah Barr, the principal author of Keeping Love Alive as Memories Fade: The 5 Love Languages and the Alzheimer’s Journey, never expected to write a book. She was working in the Memory Counseling program at Baptist Hospital in Winston-Salem when she realized her boss, Ed Shaw, was using the fivelove-languages concept in his counseling to help families facing the dementia of a loved one reconnect. “Twenty-five years ago, I was working as an administrative assistant to Gary Chapman, who wrote the original book The 5 Love Languages,” Barr said. “In fact my name is included in its acknowledgements. When I saw that Dr. Shaw was using these concepts, I knew it was a novel approach and called Gary because I thought he would be interested. Before the end of that call, we were discussing the possibility of a book.” Shaw and Chapman had never met and Barr was the connection between the two. Although both men contributed to the book as experts on the topic, Barr was responsible for its writing. She found that in order to complete the task, she needed to resign her job at the hospital. community and get information about Alzheimer’s out to them,” Gulledge said. “Within a month after her book came out, we began to arrange a time for her to come to Jamestown. “I wish I had had more information like this when I was caring for my mother.” Keeping Love Alive as Memories Fade is written for caregivers who have a close relationship with someone experiencing Alzheimer’s or any form of dementia, as well as professional caregivers. “It is a tool for sustaining your relationship with that person,” Barr said. “We have a lot of empathy for caregivers. “Eighty percent of dementia is due to Alzheimer’s. We provide enough information to help anyone understand the basics of the disease, but the book is different from others because it focuses on how it affects relationships.” Shaw notes that people can receive love long after they cannot give it. He says sometimes people get so busy caring for the physical needs of their loved

one, they forget that person still needs emotional signs of love. Although you cannot expect to get back what you give, Barr says they have stories that show some do respond to what you do. The bottom line is that it is up to the caregiver to sustain the relationship. Research to what causes Alzheimer’s is still being done. For now, certain things that contribute to the disease – such as aging or genetics – cannot be changed. But altering one’s lifestyle could help. “Anything that has to do with improving the vascular system may be beneficial,” Barr said. “What affects the heart, affects the brain.” Eating well and remaining physically and socially active are suggestions for maintaining a healthy body and mind. “This will not prevent Alzheimer’s 100 percent, but will reduce one’s risk for it,” Barr said. Barr, who has a master’s in health education and promotion, is currently working on another book that includes devotionals for caregivers. Besides

Lexington Ave., is hosting a presentation on Feb. 25 from 1-2 p.m. The Digital Library on American Slavery contains unique, detailed information extracted from legislative and county court petitions, runaway slave ads, slavery-era insurance registries, slave deeds and slave trade voyages. Buried in these documents are names and other data on over 200,000 individuals including slaves, free people of color and whites. In his presentation, Richard Cox, Digital Technology Consultant at UNC-Greensboro Libraries, will demonstrate how to search the database and review what can be found within all of that information, as well as answer any questions participants may have about the contents and use of the database. Black History Month: Freedmen’s Schools By CAROL BROOKS Editor Prior to and during the Civil War, most Southern states discouraged teaching slaves to read or write. Some slaves, however, did learn these skills, sometimes being taught by a member of their master’s family. Following the Civil War, it became a mission of Quakers (Society of Friends) in Philadelphia, Penn., to educate these newly-freed people. The Friends’ Freedmen’s Association was founded in 1863. By 1866, other missionary and aid societies had begun to offer education through the federal government’s Freedmen’s Bureau, later the Bureau of Refugees, Freedmen, and Abandoned Lands. The Bureau, begun in 1865, was created to help former slaves and poor whites in the South transition to freedom following the war. Known for their strong belief in education – a Quaker trait – the Mendenhall family of Jamestown willingly organized Freedmen’s schools in the area. Judith Jemima Mendenhall (1831-96), daughter of Richard

Mendenhall whose house still stands on West Main Street, opened and taught at a school in a building she owned in Jamestown, the location perhaps now within the City Lake Park. Judith’s niece, Mary Mendenhall Hobbs wrote: “At the close of the civil war [sic] there was an association formed by the English and northern Quakers of this country for the purpose of giving aid to the colored people and conducting schools for them. This association employed Judith Mendenhall as teacher and opened a school in what had been an office building opposite the old brick store (Editor’s note: Mendenhall’s Store at the entrance to City Lake Park) where a house full of little negroes [sic] received not only instruction in the usual school studies, but also in household manners, in religion and in good behavior.” Ronald E. Butchart once wrote in Schooling the freed people, “Five members of the extended Mendenhall family spent 17 years teaching the freed people. Noting her long history of support for African Americans, one observer remarked of [Judith] Mendenhall, ‘She and her family

have been for years the friends of the colored people running much risk both before and since the war on their account.’” Judith’s brother, Nereus Mendenhall (1819-1893), and the father of Mary Mendenhall Hobbs, and best known as the principal of New Garden Boarding School, now Guilford College, is also known to have organized Freedmen’s Schools for Negroes. The Historic Jamestown Society has copies of superintendent’s reports from Judith’s school: “Average enrollment 1866-67 was 47 (ranging from 37 pupils to a high of 64) – one teacher, included white and col(Sketch from Frank Leslie’s Illustrated Newspaper, Nov. 17, 1988) ored pupils, male and female.” HJS also has copies of letters Misses Cooke’s school room, Freedman’s Bureau, Richmond, from Judith to the Freedmen’s Va. 1866.

under consideration are two special event permits, one for a 5K run/1-mile walk for Jamestown United Methodist Church and the other for Potent Potables Food Truck Rodeo to benefit the Autism Society of North Carolina. A change in zip code is also on the Council’s February agenda. The Town has received a request from a homeowner on Penny Road to have their property included in the 27282 (Jamestown) zip code. “The U.S. Postal Service process requires the Town to request that the Postal Service investigate the change,” said Jamestown Planning Director Matthew Johnson. “The change

would be at the discretion of the U.S. Postal Service.” The Council will consider investigation of properties from 106-146 Penny Road for this zip code change. It’s the time of year when the Guilford County Sheriff’s Office and the Pinecroft-Sedgefield Fire Department present their annual reports to the Council. In addition, the Ragsdale YMCA will present a grant progress report the same night, Feb. 21. The Town Council will meet at 6:30 p.m. Feb. 21 in the Council Chambers at Town Hall. And she was constantly asking the Freedmen’s Bureau for rations for those in need. She writes in Feb. 1868, asking if there was “any way whereby assistance can be obtained. I desire something for a few persons near me – Not at all for our own use, but to give to the starving. I do not know what is best. Of course, ‘They are a trifling set’ but do they not necessarily require more care? If this is too great a trespass upon your time and patience, please to excuse me.” In Aug. 1868, Judith told the

superintendent that the freedmen used her building during the summer for worship services and Sunday school. It would not be available for a Freedmen’s Association school for the fall term. She then asked for another teaching position and was able to start another school in Jamestown, which ran for a few months, then reverted back to a Freedmen’s School. The Freedmen’s Bureau lasted until 1872. It is believed that only 10 percent of the black children nationwide attended one of these schools.

Will Donald Trump remember Washington on Presidents’ Day? Will President Donald Trump remember George Washington when we celebrate Presidents’ Day next week? Here is some help for him with thoughts from a column I wrote earlier. When I was growing up, Feb. 22, Washington’s Birthday, was a major holiday. Its replacement, Presidents’ Day, just does not have the same personal connection. There are no longer cherry pies or axes to help us remember the legends of his honesty and character. Washington’s name is still everywhere. In a general way, we remember that he was great. Our nation’s capital is named after him. His face is on dollar bills and quarters. He has been made an important character in the Broadway pro-

his management of the Constitutional Convention. His even-handed administration bound this country together in its first days. He was a genuine hero. George Washington’s many successes are important to remember. We should be grateful for them. They should inspire us to higher standards of service to our country. But I am not thinking so much of those successes today. More important to me now are his failures and disappointments. There were many. In romance. In his military service. In politics. Miss Betsy Fauntleroy rejected him twice. She was not the only one who broke Washington’s heart. He also fell in love with Sally Fairfax, the wife of his friend, and he suffered because she could only be a good friend.

He began his military career in embarrassment. In the frontier country claimed by both the French and the British before the French and Indian War, Washington was put in charge of a force of British Colonials. He had a fort built to defend his troops – in a creek bottom surrounded on three sides by higher ground. It was a stupid mistake. Soon the French had him surrounded. He surrendered after a short siege, and was tricked into signing a confession that his forces had “assassinated” a French officer who had been killed in an earlier skirmish. When this became known, he was demoted and lost his command. In politics, he started out as a poor public speaker and never got much better. His first election to the Virginia House of

Why? Because Washington’s successes were built on the foundations of these disappointments and failures. The lesson of his life should not be that he was a perfect person who never failed at anything. All of us, Washington included, have terrible disappointments in romance, in our work, and in our attempts to lead others and persuade them to do the right thing. What made Washington special was his strength in getting past those tough times. His broken heart in romance did not stop him

from finding a happy marriage to Martha. His early military reverses did not prevent him from becoming a great general. He worked around his political deficiencies and became our country’s most successful political leader. What we should remember about George Washington is that he overcame his disappointments. So, the next time somebody breaks your heart, or you make a bad mistake in your career, or you have problems persuading people to do the right thing or when there is some other roadblock in your path, just remember, it happened to George Washington, too. So, President Trump, think about Washington these next few days and learn from him. And don’t forget that cherry tree story.

States open their winter applications at different times, and you should apply for LIHEAP right away if you think you’ll have trouble paying for heating. LIHEAP won’t cover your entire utility bill, but it can help keep your home warm. LIHEAP’s heating benefit is only intended to help you pay to heat your home. For example, if you’re heating unit runs on gas, the program will contribute towards your gas bill, but not your electricity bill. You might only be able to receive a benefit once every 12 months, but it can make a big difference for your finances. For the fiscal year 2014, the most recent data available, over 5.7 million households received heating assistance and it offset an average 45.9 percent of recipients’ annual heating costs. Qualifying for LIHEAP assistance. States, tribes and territories have some control over the services, qualifications, aid limits and application process for the LIHEAP program in their area. You can review each

state’s income eligibility for the fiscal year 2017 on this table. The state or local organizations that distribute funds also consider applicants’ utility costs, family size and location. Renters and homeowners could be eligible for LIHEAP assistance, but you might not qualify if you have subsidized housing. Being qualified doesn’t guarantee that you’ll get assistance. Each state receives a set amount of funds for the year, and on average only 20 percent of qualified household receive benefits. How to apply for LIHEAP. Often you’ll apply for LIHEAP at a Community Action Agency (CAA), local non-profit organizations that help administer federal, state and local grant programs. Some states let you complete the application online, otherwise you may need to mail, fax or hand in an application. The Office of Community Service’s website has contact information for each state and territory, including a link to a website where you’ll find state-specific eligibility guidelines and program information. As part of the application process, you may need to share identifying and financial information, including: • Recent utility bills. • Recent pay stubs, or a profit-and-loss statement if

you’re self-employed. • Documentation for other income, such as Social Security benefits. • A lease or property tax bill as proof of your address. • Your Social Security number. • A list of people living in your home, their relation to you, dates of birth and incomes. • A copy of a utility termination notice, if you received one. • Your energy provider’s information.

The chill of winter can be offset with the pleasure of curling up inside a warm home. Turning on the heat and settling into your favorite chair to open a new book or watch a movie feels even better when snow falls or rain patters against the windows. Unfortunately, some families have to choose between paying high winter utility bills and buying groceries or gas for their cars. The necessity of food and transportation often wins. Fortunately, there are assistance programs. One such program, the federal Low Income Home Energy Assistance Program (LIHEAP), helps lowincome households with heating or cooling costs, during an energy-related crisis (such as a shutoff notice from your utility) and with weatherization improvements. If you, a parent or a friend are struggling to make ends meet this winter, LIHEAP and similar programs might be able to help keep your home warm. Apply as soon as you can if you think you’ll need assistance. The federal government provides the funding for LIHEAP, but the programs are run at the state level. The money gets distributed on a first-comefirst-served basis and states give priority to households with children, elderly or

Exercise class aims to be orange By CAROL BROOKS Editor One sure sign of a good workout is sweat. Another is a red face. But a new exercise facility coming to Adams Farm Shopping Center aims for sweat, red – and orange. That’s the concept behind Orangetheory Fitness. Orangetheory believes there are five different heart rate zones – gray, blue, green, orange and red. The company believes the orange zone, which is 84-91 percent of your maximum heart rate sustained over 12 minutes, allows you to keep your metabolism going for up to 36 hours after a workout, thus burning more calories. This is called EPOC, or Excess Post-exercise Oxygen Consumption, or afterburn. Orangetheory Fitness was founded in 2010 by Ellen Latham in Fort Lauderdale, Fla. There are currently over 500 franchise studios. Local franchise own-

His newest location, dubbed the Jamestown location, is in space being remodeled beside Harris Teeter in the Adams Farm Shopping Center at 5710 West Gate City Boulevard. “We’re a science-based one hour total body workout,” Campagnolo said. “We use heart-rate monitoring. We have coaches that guide you along, so it’s very motivational. People get results because they stick with it. That’s what makes us so successful. People want to come back. Each participant wears a heart rate monitor during the high-intensity interval training session. During a workout session, a member’s heart rate is shown on a screen. The color on the screen changes as the heart rate goes up. Each small group class – with one-on-one training – is one hour long and each participant goes through cardio and strength exer-

cises to get into the “orange zone.” Exercisers can burn up to 1,000 calories per class. “If we can get our members to come at least every other day, they are continuously burning calories,” Campagnolo said of the EPOC effect. “Whether you’re a sprinter or a walker, it doesn’t matter. You know when to push harder and when you should be recovering to get the best results.” With renovations continuing in their new space in Adams Farm Shopping Center, Campagnolo and others began staffing an orange tent outside their location earlier this month to introduce their fitness program and to offer introductory memberships. The Orangetheory Fitness tent is open 10 a.m.-4 p.m. daily. Campagnolo said customers can begin their workout now in Greensboro and transfer their membership once the Adams Farm location opens, probably in May. “Let us know they want

While Orangetheory Fitness is membership-based, Campagnolo said there are a variety of options available, but single sessions and a pack of as few as 10 sessions are available. Explore what it’s like HPU commissions new miniature train to be a GTCC student for City Lake Park

A popular attraction for families in High Point will keep chugging thanks to a gift from High Point University. For nearly 25 years, High Point City Lake Park’s miniature train has provided more than 50,000 rides annually to local residents. “The first train was the ‘Rotary Wheels,’ a miniature version of a modern train. It ran from 1953 to 1973,” said Gary Pressley, who retired as the park manager in 2013. “The present train was put in service in 1976. It is a 1974 model C.P. Huntington.” In recent years, the train began to show its age. It required constant, extensive repairs that eventually became unsustainable and staff feared they might lose one of the park’s icons. “I can assure you it is time to replace

it due to age and extreme difficulty in getting parts to fix the engine,” Pressley said. HPU has commissioned a new locomotive to be built by C.P. Huntington Train in Wichita, Kan., for approximately $188,500 so families can continue to enjoy all of the park’s offerings. City Lake Park will receive the new locomotive this summer, and HPU will dedicate it to the City of High Point. “The citizens of High Point and the region have enjoyed this attraction at City Lake Park for many years,” said Lee Tillery, the City of High Point’s Parks and Recreation director. “The train is an icon at City Lake Park, and we thank HPU for ensuring the legacy will continue for future generations.”

Limited library services Feb. 19-20 There will be no computer access at the High Point Public Library on Feb. 19, to allow for maintenance to the off-site servers that contain the library’s database. These servers also control access to the public computers, so the public computing center and online catalogs will be unavailable. Customers will not be able to log in to their account from their smartphones or home computers and

will not be able to call the Automated Circulation System to renew items. Customers will be able to check out materials, but will be limited to five items, and they must have their library card in order to check out. Staff will not be able to issue new library cards while the system is down. TLC, the library’s automated services vendor, expects the maintenance to be completed on Feb. 20.

The library has extended the Food for Fines Amnesty Event through Feb. 23 to accommodate the interruption in services. During Food for Fines, customers can have $1 in overdue fines waived by donating one can of human or pet food during this period. Black History Month By CAROL REED Jamestown Public Library We all know that February is Black History Month. We and our children have been doing book reports on famous Americans for years. In 1976, President Gerald Ford declared it official, urging Americans to “seize the opportunity to honor the too-often neglected accomplishments of black Americans in every area of endeavor throughout our history.” Of all the black authors, Alex Haley stands out. His two books influenced most of America and the way the races viewed each other. The Autobiography of Malcolm X was written in 1965 during the height of the Civil Rights movement, and Roots was written in 1976. When it was made into a miniseries, 130 million people watched it. It broke our hearts and gave us a truer idea of how the Africans felt, torn from their families and turned into slaves. Read Alex Haley and the Books that Changed a Nation, written by Robert Norrell. This biography was greatly researched and tells about Haley writing for Playboy and becoming the first African-American star journalist.

Devotion: an Epic Story of Heroism, Friendship and Sacrifice by Adam Makos, illustrates the history of a white country club lieutenant and a black Mississippi sharecropper’s ensign son. They flew during the Korean War, a time when our country was so segregated that the two couldn’t have gone into a restaurant together. They relied on each other and their devotion to country and friendship. Courage Has No Color by Tanya Lee Stone, tells the true story of the first black paratroopers in World War II. The group was called the Triple Nickles. The book was aimed at middle and high schoolers, but adults should read it too. These heroes had true courage. Bound for the Future, by Jonathan Shectman, reminds us that Quaker children, fugitive slave children and young free Blacks were instrumental in keeping the Underground Railroad running. This book of child heroes is a study of the vital role children played during a time of great stress on our nation. Parents had to rely on their very young children not to tell they were hiding runaways. Sometimes the children themselves smuggled food and blankets to strang-

The Rachel Caldwell Chapter, Daughters of the American Revolution, met for lunch at the Greensboro Country Club on Jan. 24 to hear National President General and National Chairman of the DAR Schools Committee Peggy Troxell describe her visits to the two DAR schools and the four “approved schools.” The two DAR schools are Tamassee, founded in 1919 in Tamassee, S.C., and Kate Duncan Smith, founded in 1924, in Grant, Ala. Both still flourish today. The approved schools include Berry College in Mt. Berry, Ga., Crossnore School and Children’s Home in Crossnore and Winston-Salem, N.C., Hillside School in, Marlborough, Mass., and Hindman Settlement School in Hindman, Ky. In 1934, the DAR supported 35 approved schools and it was decided when vacancies occurred, no new schools would be added. All of the schools

Cynthia Mary Miller Mrs. Cynthia “Cindy” Mary Miller, 56, a resident of Greensboro, passed away on Feb. 9, 2017, at her home surrounded by her loving family. Cindy, lovingly called “Taduh” by her family, always wore a huge smile with a contagious laugh. Children stole the majority of Cindy’s smiles, as she owned a home daycare in New York, worked as a preschool teacher at Kids R Kids, and spent many years as a teacher assistant at Florence Elementary in High Point. Often accompanied by her husband Craig, family and friends, Cindy enjoyed playing with her babies in the water, and having her cup of tea on the deck while dolphin watching. People who knew Cindy, knew how she loved a good cup of tea. Most importantly, Cindy adored her family. She loved her husband, who was her high school sweetheart, soul mate and best friend for over 40 years. February is Heart Month A heart attack strikes someone approximately every 43 seconds and is the leading cause of death in the United States, according to the American Heart Association (AHA). Many Americans have developed a taste for a high salt diet, which can contribute to high blood pressure (HBP). HBP, commonly called a “silent disease” since most are unaware they have it, causes an increase in the workload of the heart and blood vessels making them less efficient. “Cutting back on table salt can help reduce sodium intake and lower blood pressure – yet most sodium in our diets stems from packaged and processed foods,” said Joseph Yeboah, M.D., assistant professor of cardiology at Wake Forest Baptist Medical Center. “High blood pressure due to excessive salt intake can lead to an enlarged heart, heart attacks, congestive heart failure and strokes.”

Americans roughly consume 75 percent of their sodium from processed foods like soups, tomato sauce, condiments and canned goods. Words such as soda, sodium or the symbol “Na” on labels indicate that those products contain sodium compounds. Certain canned and frozen food labels help consumers minimize their salt intake by identifying salt levels as “low salt” or “low sodium” on the packaging, according to the AHA. The AHA and Yeboah recommend the tips below to minimize sodium consumption:

He took the crown in the shot put and 55-meter events at the North Carolina High School Athletic Association indoor track and field state championship Feb. 11. And he did it all from his wheelchair. The Ragsdale High School sophomore was born with Spina Bifida, a neural tube birth defect. Spina Bifida happens when the spinal column does not close completely. Babies often are born with an opening on their lower back. According to the Spina Bifida Association, about eight babies per day

of severity. Although life has not been easy for Christopher, he has never let it get him down. He has no feeling in his legs. He has endured numerous surgeries. He has been in and out of school because of his health. But he continues pushing forward, trying new things, planning for his future. “I’m different; I’m in a wheelchair,” said Christopher. “Some people think I have a disability. I think, don’t focus on the disability, instead focus on what you can do and see how far that can get you.” Christopher has gotten pretty far and he seems

destined to go even further. He was introduced to track and field during middle school when he joined the Jamestown Middle School team. He raced the 800-meter event and threw the shot put. His middle school track success encouraged him to continue at the high school level, where he is consistently progressing. While in middle school he competed with and against able-bodied students, but his scores were compared to other wheelchair athletes. In high school events, Christopher squares off against others using wheelchairs. His wins gain points for the Ragsdale team. Christopher made it to

Wealthy and stylish surgeon Stephen Strange (Benedict Cumberbatch) loses the steadiness in his hands after a car accident. He finds some supernatural healer up in the Himalayas called the Ancient One (Tilda Swinton with no hair). Instead of just fixing his hands, Strange learns the magic touch (and other spells) and soon finds himself in conflict with an evil sorcerer (Mads Mikkelsen). It stretches the formula for Marvel action, but doesn’t step too far outside the Marvel Cinematic Universe comfort zone. Brain-bending special effects fold city horizons together in a cosmic kalei-

His single mother (Naomie Harris) is spiraling into addiction, and his only surrogate for familial stability comes from the drug dealer who feeds off mom’s habit (Mahershala Ali). MIGHTY MUSHROOM BLENDED BURGER

t’s not always easy to create meals that are both nutritious and satisfying. Managing intake of added sugar and saturated fat takes effort and planning, but transforming your favorite recipes into more nutritious family meals can be simpler than you imagined. The nutrient-dense mushroom masterfully bridges that divide, offering rich and meaty flavor while still being fat-free, low-calorie and low-sodium. All mushrooms contain vitamin D at various levels, which helps build strong bones. Additionally, mushrooms are a source of B vitamins, including riboflavin and niacin, which help provide energy by breaking down proteins, fats and carbohydrates. “Mushrooms are an incredibly versatile ingredient,” said Mary Jo Feeney, MS, RDN, nutrition research consultant for the Mushroom Council. “They can be the meaty star of a vegetarian dish or a nutritious comple-

Pair roasted or marinated mushrooms with crunchy vegetables and nutty grains, beans and pulses, and top with a simple vinaigrette or squeeze of citrus. For lightened-up versions of classics such as burgers and meatballs, try adopting a culinary technique known as “The Blend.” Simply chop any mushroom variety to match the consistency of ground meat, blend the mushrooms into the meat and cook the mushroom-meat blend to complete the recipe. Mighty Mushroom Blended Burger Prep time: 10 minutes Cook time: 15 minutes Servings: 4 1/2 pound any variety mushrooms 2 tablespoons olive oil, divided 1 pound ground beef 1/2 teaspoon salt 4 buns Finely dice mushrooms or gently pulse in food processor. In skillet, warm 1 tablespoon olive oil on mediumhigh heat and add mushrooms, cooking 5-7 minutes, or until golden brown. Remove from heat and cool 5 minutes. Transfer cooled mushrooms to medium bowl. Add ground beef and salt, mixing until combined. Make four patties. Add remaining olive oil to pan and cook burger patties on medium-high heat until internal temperature reaches at least 160˚ F. Plate and add desired toppings to bun. Recommended toppings include: pickled red peppers, crumbled blue cheese and watercress greens.

Marinated Mushroom Bowls with Lentils and Wild Rice Prep time: 40 minutes Servings: 4

Roasted Mushroom and Wheat Berry Salad with Orange Curry Vinaigrette Prep time: 10 minutes Cook time: 15 minutes Servings: 4 8 ounces white button mushrooms, halved 1 tablespoon extra-virgin olive oil 1/2 teaspoon finely ground sea salt 1/4 teaspoon ground black pepper 2 cups cooked wheat berries, warm 2 green onions, sliced 2 tablespoons dried cranberries, chopped Dressing: 2 tablespoons extra-virgin olive oil 2 tablespoons fresh orange juice 1 teaspoon curry powder 1/4 teaspoon finely ground sea salt

Mushrooms: 1/4 cup extra-virgin olive oil 2 tablespoons unseasoned rice vinegar 1 tablespoon low-sodium soy sauce 2 teaspoons dark sesame oil 1 teaspoon chili oil 1 green onion, thinly sliced 1 tablespoon chopped fresh cilantro 1 teaspoon sesame seeds 8 ounces crimini mushrooms, thinly sliced 2 cups thinly sliced purple cabbage 1 tablespoon fresh lime juice pinch of salt 2 teaspoons low-sodium soy sauce 2 cups cooked French lentils 1 cup cooked wild rice 1 cup chopped cucumber

Heat oven to 400˚ F. Place mushrooms on baking sheet. Drizzle with olive oil. Sprinkle with salt and pepper. Toss to coat. Bake 10 minutes. Carefully stir mushrooms and bake 5 more minutes, until tender. Transfer mushrooms to medium bowl. Add wheat berries, green onions and cranberries. In small bowl, whisk together all dressing ingredients. Pour dressing over salad. Toss to mix all ingredients. Serve warm.
