Flagpole to grace park entrance

There’ll be a change in the weather

By CAROL BROOKS Editor Anyone passing the large field at the corner of E. Gate City Boulevard and Guilford College Road on March 7 may have noticed a rainbow kite floating high in the air. Kelton Patafie and her mother Dawn took advantage of a windy March afternoon to enjoy a little outdoor play with the kite.

The Jamestown Parks & Recreation Advisory Committee unanimously approved the purchase and installation of a flagpole at the entrance to Jamestown Park. The pole will be on the hill on the northern side. Discussion on the flagpole began in 2015 when the late Charles Dowdy said the Jamestown Rotary Club was interested in donating the pole. Since then, the Jamestown Civitan Club

has joined in to split the $3,288.69 cost. A memorial plaque also will be installed. Work should begin shortly. Rezoning tops Jamestown council agenda By CAROL BROOKS Editor In September, the Jamestown Town Council approved closing an undeveloped portion of Camelot Drive to allow for development by Koury Corporation. The original easement line was moved from solely on property owned by William Pearson to an equal divi-

sion between Pearson and Koury. At its March 21 meeting, the Council will hold a public hearing to consider rezoning the nowclosed portion of Camelot Drive. The Koury property (now part of 4301 Millis Road, the site of the new Millis and Main Apartment Homes at Grandover) would be rezoned to Conditional Zoning Bypass

(CZ-B). Pearson’s property, now a part of William Pearson’s 4401 Merlin Dr. property, would become Single Family Residential (SFR). The Planning Board unanimously approved the rezoning request in February. Also related to Koury Corporation projects is a reading of a certificate of sufficiency regarding

the company’s request for annexation of three additional tracts in the Grandover Village project around the intersection of Guilford College Road and Jamestown Parkway/ Gate City Boulevard. The Council is expected to set a public hearing date for the annexation request. The Council will hear grant progress reports from the Jamestown

Public Library, Historic Jamestown Society and Jamestown Youth League. In addition, the Council is expected to set public hearing dates for rezoning requests from Davis Family Enterprises, LTD for 413 E. Main St. and from Riverwalk I, LLC, for 3511 RI and 3511 Z Dillon Road. At the end of the regular session, the Council will go

into closed session to discuss matters relating to real estate and attorney-client privilege. The Town Council will meet March 21 at 6:30 p.m. in the council chambers at Town Hall. The public is invited to attend.

‘Evolving American Home’ showcase for High Point Market and a deserving family

Progressive Business Media, the leading home furnishings and gift trade media and marketing solutions company, is partnering with High Point Market Authority and the City of High Point to construct a home with Habitat for Humanity that will be built by members of the furniture industry. PBM will work with architects, designers, home builders, furniture manu-

facturers and others allied in the industry to create and display a demonstration home project at High Point Market, “The Evolving American Home.” The project will emphasize two

key aspects, education and service. The service aspect focuses on the revitalization of High Point by working with Habitat to build a home for a local, low-income fam-

ily. Volunteers from the home furnishing industry will build the house in a two week building “blitz” March 27 to April 7. It will be constructed on the Habitat ReStore parking lot

at 133 Montlieu Ave., and then moved to Commerce Ave. to be open during the Spring Furniture Market for attendees to tour. The education aspect will explore what the

It’s a good thing no one was driving by or trying to exit the Jamestown News parking lot last Friday afternoon. The day’s strong winds took down part of the tree in the newspaper’s front yard. A tree specialist quickly cleared the debris to the side for removal on Monday and said the remainder of the tree could probably be saved. The only casualty was the address marker.

Signs at Ragsdale High sprayed with graffiti • A representative of Ragsdale High School, 1001 Lucy Ragsdale Road, Jamestown, reported someone spray painted several street signs in the school parking lot. Total damage is estimated at $150. The incident occurred between March 5 and 9. • Justin Williams, of High Point, was charged with possession of cocaine, possession of marijuana and driving while impaired after attempting to flee and elude deputies on March 4 at 4:55 a.m. Williams was arrested at 3520 Dillon Road, Jamestown.

Sheriff’s Report • Dollar General Store, 715 W. Main St., Jamestown, reported two incidents of shoplifting on March 10. The first incident occurred at 4:18 p.m. when two suspects stole audio/video equipment. At 5:24 p.m. the store reported two suspects stole household goods and audio/video

County confirms CALENDAR third case of animal rabies March 15 The Guilford County Department of Health and Human Services, Division of Public Health is alerting residents that a raccoon found on North Mendenhall Street in Greensboro tested positive for the rabies virus on March 9. This is the third confirmed case of animal rabies in 2017. North Carolina law requires that all domestic pets (cats, dogs and ferrets), whether living inside or outside, age 4 months or older be vaccinated. Even animals that are confined in outdoor fenced areas should have current rabies vaccinations, because wild animals can get into these areas and attack your pets. The best way to protect your family and your pet’s safety is to vaccinate your pets against rabies. Check to make sure all of your family pets are properly vaccinated against rabies and get their shots updated as needed. A simple rabies vaccination can protect your pets against this dangerous health risk.

Planning and Planting for Pollinators – The High Point Public Library, 901 N. Main St., will host “Planning and Planting for Pollinators” from 6-7:30 p.m. on March 15 in the Morgan Community Room. This is presented by the N.C. Cooperative Extension Master Gardener Volunteers, and will focus on creating gardens that are a habitat for pollinators as well as a beautiful setting to enjoy. Food for Fines – Jamestown

• Bradley Scott Jones was charged with misdemeanor driving while impaired after he was stopped near the intersection of Guilford Road and Winrow Drive in Jamestown. The incident occurred March 12 just after midnight. • The Sheriff’s Office responded to a call on March 3 at 3:43 p.m. regarding suspicious activity at 205 Forestdale Drive, Jamestown. A metal grinder was seized from Jamal Hooper of that address and stored as confiscated property. No further charges were filed.

Public Library, 200 W. Main St., is hosting a Food for Fines Forgiveness Drive from March 20-April 1. For every nonperishable item donated, $1 in fines will be forgiven. There is no limit to the amount of food that can be donated, but items must be undamaged and unexpired. You don’t need to have fines to participate. All that we collect will be donated to Greensboro Urban Ministry at the end of the drive.

Everybody’s Irish on St. Patrick’s Day Although never canonized by the Catholic Church, Patrick is considered a saint due to his missionary work in Ireland. By the way … it’s St. Paddy’s Day, not St. Patty’s Day. Paddy is the Irish nickname for Padraig, which is Anglicized to Patrick. The official recognition of St. Patrick’s Day began in 1607 in Ireland. Boston held the first celebration in America in 1737. New York City held the first parade in 1762. In Chicago, the river is dyed green to celebrate the day. (Wonder what would happen if Deep River turned green?) St. Patrick’s Day falls during Lent, but prohibitions are lifted so revelers can dance, drink and eat the traditional meal of corned beef or Irish bacon and cabbage.

By CAROL BROOKS Editor When it comes to celebrating St. Patrick’s Day – March 17 – everybody’s Irish, or wants to be. So it should come as a surprise to learn that Patrick himself was not Irish, but English, born around 389 A.D., probably in presentday southwest England, then under Roman rule. It’s believed he was enslaved as a shepherd in Ireland before escaping, supposedly led by an angel in a dream. After becoming a priest and then bishop, he received another angelic dream telling him to return to Ireland to convert the pagans there to Christianity. Legend holds that the popular shamrock was used to explain the Trinity – Father, Son, Holy Ghost.

Sunshine Week is March 12-18 That odd-sounding moniker does not relate to the time change or upcoming first day of spring. Rather, Sunshine week is an annual nationwide celebration of access to public information and what it means to journalists and the community. Last year, to the best of our ability, the Jamestown News kept readers informed on details relating to the dismissal of Town Manager Chuck Smith and the hiring of Interim Town Manager Cookie Billings. Many of the dealings, however, are hidden in sealed minutes of the Town Council. We attempted to champion the opening of these closed session minutes. Whether due to our diligence or not, in February of this year, the Town Council passed a resolution that every December the mayor, town manager, town attorney and town clerk would review all minutes that had been sealed to see if making them available to the public would no longer be detrimental to the purpose of the closed session. Once unsealed, they become public record and placed in the

town’s minute book. What this means is the public will potentially have access to real estate deals, annexation petitions or other dealings within closed session meetings. Personnel matters will probably continue to be sealed. Sunshine Week coincides with the March 16 birthday of James Madison, the fourth president of the United States. Madison and others championed the First Amendment to prevent the kind of tyranny colonists faced from King George III who prevented newspapers critical of him from publishing during the American Revolution. Madison said: “A popular government, without popular information, or the means of acquiring it, is but a prologue to a farce or a tragedy; or perhaps both. Knowledge will forever govern ignorance; and a people who mean to be their own governors must arm themselves with the power which knowledge gives.” Congratulations to the Jamestown Town Council for taking action to open up, or unseal, previously classified minutes.

CHEERS AND JEERS LETTERS TO THE EDITOR

It’s your right, it’s your business By JIM ZACHARY CNHI Regional Editor Editor, The Valdosta Daily Times

Every action of government is your business. Every document held in government halls is your piece of paper. Every penny spent by government is your money. From the courthouse to the statehouse to the White House, government belongs to the governed and not the governing. You have the right to know what the governing are up to, always. We are self-governed. The only way the public, and the press, can hold government accountable is by having unfettered access to its deliberations and the documents it holds. Transparency is not liberal or conservative, Republican or Democrat. The media champions open government in its traditional role as the Fourth Estate, knowing that independent checks and balances are critical to our liberty. When city council, county commission or the board of education brokers a deal behind closed doors and conceals documents containing important information the public wants and needs to know our freedoms are compromised. Local government has the biggest impact in our lives on a day-to-day basis.

Whether it is in the form of property taxes, sales taxes, business taxes, state-shared dollars or federal grants, loans and funding, local government is 100 percent taxpayer funded. The decisions being made, the monies being spent and the records being kept by city hall, the county commission, the board of education or the hospital authority affect us all, and when government is allowed to operate behind closed doors, it grows out of control, is not responsive to the public and subject to corruption. Elected officials – from the school board member to the President of the United States – must remember they answer to the people, not to professional government bureaucrats, not to government lawyers and not to their elevated campaign advisers. It may be true the public has lost a lot of confidence in the national media, but imagine a government run amuck without media watchdogs holding it in check. Even Thomas Jefferson, who battled with the press, at times excoriating newspapers in his letters, understood that a free press with unfettered access was essential to the health of democracy. Jefferson would grow irritated with newspapers, even writing, “Nothing can now be believed which is seen in a newspaper,” but he is also the man who famously wrote in a letter to Edward Carrington in 1787, “And were it left to me to decide whether we should have a government without newspapers, or newspapers without a government, I should not hesitate a moment to prefer the latter. But I should mean that every man should

receive those papers and be capable of reading them.” When you ask to see the county’s operating budget or challenge whether city council has the right to go into a closed session, remember it’s your right. It’s your business.

Cuba: hellhole or precious jewel? Are you thinking about taking a trip to Cuba before President Trump, as he promised during his campaign, slams the door on the travel opportunities created by the Obama administration? Last week, Wall Street Journal editorialist Mary Anastasia O’Grady wrote, “Tourists are welcome, but only to drink state propaganda and leave behind hard currency.” She continues, “Cuba is the same totalitarian hell-

hole that it has been for the past 58 years.” Maybe her report gives you a good reason to stay home. Or it could spur you on to experience for yourself what a country governed by an old-style Communist dictatorship is really like. But if you stay longer, you’ll be full-Communists.” Sure enough, the museum is a temple to the Castroled revolution that ousted the dictator Batista in 1959. Museum exhibits deride U.S. efforts to undermine Castro’s revolution. Cuban and Russian weapons from the Bay of Pigs and the Missile Crisis are used to tell the Cuban side of these stories. Cartoon caricatures of U.S. presidents mock their efforts to bring Castro down. Impressed, I wondered whether the regime’s ubiquitous anti-U.S. propaganda makes Cubans hate all Americans. Our guide explained that basic living costs, a place to live, utilities, food and commuting expenses were heavily subsidized so it is possible to scrape by. Education and medical care are free. And, he said, most Cubans find a second job or some other way to make money. Many also receive regular funds, remittances, from family members liv-

Criminal justice system may not be as blind as it should be

By JANE WHITEHORNE Staff Writer According to the 2010 U.S. Census, 72 percent of the population is white and 13 percent is African-American. Based on those figures, Dr. Kimberly Cook would expect it to follow that the country’s prison population would be similar. “That’s not how it works out,” said Cook. “If we have an equal society, equality would predict that 72 percent of those incarcerated would be white and 13 percent would be black. Executions also would be equivalent. But what we see is that the number of death row inmates and the number of people executed are disproportionally people of color.” Cook, a professor of sociology and criminology at the University of North Carolina at Wilmington, discussed racial disparities in the criminal justice system dur-

In the process of doing that, they established a variety of amendments to the constitution that were intended to limit government power, particularly govern-

ment power that interferes in our lives. “The 4th Amendment is a protection against unreasonable search and seizure. The 5th Amendment allows the right to remain silent. The 8th Amendment is protection against cruel and unusual punishment. The 13th Amendment officially abolished slavery, but one important thing about this amendment is that it abolished slavery except as a punishment for crime. The 14th Amendment is supposed to provide us with equal protection before the law, irrespective of ethic background. “A U.S. Supreme Court case in 1972 abandoned the death penalty because it was found that it violated the 8th amendment against cruel and unusual punishment and the 14th amendment of equal protection under the law.” Cook said 3,859 executions had been carried out between 1930 and 1967 and 54 percent of those executions were of black

men. Of all those executions, 455 were for the crime of rape and 405 were of black men who had been convicted of raping white women. Since 1973, there have been 1,444 executions and 157 exonerations of death row inmates. The death penalty was reinstated in the United States in 1976. Today, 19 states have abolished the death penalty, four have imposed moratoriums against it and 27 states permit its use. There have been no executions in North Carolina since 2006. “Research shows that the race of the victim in homicide cases is an important factor in terms of predicting whether the death penalty will be imposed or not imposed,” said Cook. “When the victim is white and the perpetrator is a man of color, the probability of imposing the death penalty goes through the roof. We are talking about a violation of equality.” Cook has spent a great deal of

time researching death row exonerations. She is a board member of the nonprofit organization Healing Justice, which provides support, reconciliation and recovery in cases involving exonerations. Nationally, since 1973, 157 people serving time on death row have been exonerated. Fifty-two percent of those were black men who had been wrongly convicted. Being silent when such injustice occurs in not an option for Cook. She encourages others to become involved in various organizations that fight wrongful convictions and support the innocent and exonerated. “As a society that is based on equality,” said Cook, “we should be very concerned about this racial disparity.”

Students explored the lives of political figures, inventors, athletes, artists, and local legends. Presentations included re-enactments, costumes, research projects and audience participation. Local performers also joined in the fun. The audience greatly enjoyed a step performance from

N.C. A&T Iota Phi Theta Fraternity Inc., music and song from Justin the Beloved, a story from Carol Reed of the Jamestown Public Library, and a musical performance by C.J. Greene’s very own Sharon Stanfield. Joining in on the fun was T. Dianne Bellamy-Small, District 1 Representative for the Board of Education. Bellamy-Small spent 14 years serving as a statewide parent advocate, trainer, consultant for Exceptional Children’s Assistance Center and trainer for the GCS Title I Conference. In addition, she has served

GCS as a substitute teacher, trainer, performer and volunteer. She served the Greensboro City Council District 1 from 2003-2013 and served in leadership roles on state and national leadership boards. She holds a degree from UNCChapel Hill and postgraduate degrees from Duke University and the University of Maryland. The Mustangs also enjoyed a visit from Karen Harris with Character Education who spent the morning enjoying an overview of all of Greene’s service learning projects and activities.

Garden club celebrates golden anniversary at March meeting By NORMA B. DENNIS Staff Writer Many programs presented during Cedarwood Garden Club meetings are designed to teach and inform. The March 9 meeting, however, was filled with reminiscences of the club’s past 50 years, sprinkled with gracious amounts of laughter. Held at the home of Pat Little and hosted by Little, Club President Sherrie Richmond and Cece Leonard, the meeting fell on the exact day of the club’s charter, March 9, 1967. In honor of its 50 years, charter members Reba Rooks and Joan Sova were invited to speak and former member Carroll Miller also was included for the special occasion. Carol Fogleman presented a light-hearted memorial to Sheryl Edge, a former four-time club president who passed away recently. Attendees smiled and chuckled as she reminded them of Edge’s “rules for girls raised in the South” and gave examples – Always make sure that how you dress and your makeup are appropriate for the occasion; always write thank-you notes; never show up empty handed; always go to church; and, in a pinch, do whatever you have to do. Fogleman’s essay about Edge included her many contributions to the work of the club. Fogleman also shared a brief history of the club and Lynette Smitherman summarized the club’s programs, field trips and service projects. “If members applied all

She also told a bit of her work history. “When the Army was seeking civilians to work for them I took a typing test to show my skills,” Rooks said. “I was good at that and was typing along, but was horrified to look down

and see that the space key was not working and all my words had run together. I still got the job. “After moving to Cedarwood, I began to sell Avon, but instead of going door to door, I held coffees in my home. The customers came to me. I later took the state board to sell real estate and have been doing that for the past 40 years.” Rooks admitted that when she moved here with her husband and children she thought she had jumped straight off the map. “But living in Cedarwood was the best thing that ever happened to us,” she added. “I don’t think (Cedarwood

“Fantastic Beasts and Where to Find Them” (PG13) – Long before Harry Potter got his first acceptance letter to Hogwarts, an adorably awkward floppy-haired Brit comes through 1920s Ellis Island, but chooses not to declare the menagerie of magic monsters in his suitcase. That fella is named Newt Scamander (Eddie Redmayne), a wizard researcher of mystic critters visiting the U.S. for the first time. (Super)naturally, some of the beasties escape into Prohibition-era New York, just as tensions flare between the American wizard community and their non-magical counterparts. J.K. Rowling’s whimsical vision expands to a new setting, with new players and backgrounds and simmering subplots. It’s exciting to open up a new place and time, but the act of “world-

building” gets in the way: You can feel the pressure of five planned sequels weighing down on this adventure. “Silence” (R) – Two Jesuit priests (Andrew Garfield and Adam Driver) smuggle themselves into feudal Japan – where Christianity is outlawed – in search of their missing mentor (Liam Neeson). While Japanese inquisitors punish and execute the faithful of a small town, Father Rodriguez (Garfield) suffers with the silence he gets in response to his prayers, with guilt from people dying to protect him, and with literal physical torture. Father Rodriguez refuses to believe that his mentor turned from God while under torture, but can he justify keeping the faith when innocent people are killed each time he doesn’t denounce? Martin Scorsese has had this project in his sights since “The Last Temptation of Christ.” It’s a long movie, and one full of spiritual doubt and bodily pain, but never without a point. Even the anti-Christian inquisitors are shown as men protect-

ing their homes from dangerous foreign beliefs. It’s not a cheerful validation of faith, but an unafraid examination of it. The sky doesn’t crack open and reveal the truth of the Lord, but the devout carry on. “Patriot’s Day” (R) – Mark Wahlberg stars as a fictional Boston cop acting fast in the aftermath of the real 2013 bombing of the Boston Marathon. The film is mindful of the many complicated issues swirling around the events, but still has a very procedural feel. While Wahlberg’s everyman protagonist interacts with characters pulled from real life (played by Kevin Bacon, John Goodman, J.K. Simmons), timestamps appear on screen and the alphabet soup of agencies get involved. There’s still room to argue about the ethics or wisdom of dramatizing such recent tragedies – intentional or not, it casts a narrative in bronze – but director Peter Berg shows restraint and consideration. © 2017 King Features Synd., Inc.

The number of tricks a side can make often is determined by distributional factors rather than highcard points, as witness this deal from a match between Ireland and Italy. The Irish declarer, Peter Pigot, got to four hearts doubled as shown after East, Benito Garozzo, opened with one club, showing 16 or more points. West led a spade, ruffed by Pigot, who returned the king of diamonds and discarded a spade from dummy. East took the ace and played another spade, ruffed again by declarer. Pigot now cashed the queen of diamonds, discarding dummy’s last spade, and made the key play of a low trump from his A-10-9, won by East with the queen. Garozzo could do no better than return a trump, won by South with the ace. After ruffing a diamond with dummy’s last trump, Pigot took a club finesse, which won, and led the J-10 of diamonds. West ruffed with his high trump and played still another

spade, but Pigot ruffed and scored the last two tricks with the A-J of clubs to make four hearts doubled. Thus it was that South, with 17 points, scored 10 tricks, while East-West, with 23 points, scored only three. The outcome emphasizes that what counts in bridge is the number of

tricks you can take and not the number of points you have. Point-count enthusiasts eventually learn from bitter experience that while high-card points are a valuable measuring rod, they are by no means an accurate barometer of how many tricks actually can be made. © 2017 King Features

Ham and Gouda Quesadilla

In small, nonstick skillet, heat olive oil over medium-high heat until hot. Stir in onions. Cook, stirring frequently, until onions become tender and golden brown. Spread mustard on one half of tortilla. Top with ham, onions, pickles and cheese; fold uncovered part of tortilla over filling to form semi-circle. Cook quesadilla in dry skillet over medium-high heat until browned on both sides and cheese is melted. Cut into four pieces and serve.

BAKED SPAGHETTI Baked Spaghetti Cook time: 35 minutes Servings: 6 Nonstick spray 1 package (16 ounces) spaghetti 1 tablespoon butter 1 cup chopped onion 1 cup chopped green pepper 1 pound ground beef 1 can (28 ounces) tomatoes with liquid, cut up 1 can (4 ounces) mushrooms, drained 1 can (2 1/4 ounces) sliced ripe olives, drained 2 teaspoons dried oregano 2 cups Borden Cheese Mild Cheddar Shreds 1 can (10 3/4 ounces) condensed cream of mushroom soup 1/2 cup water 1/4 cup grated Parmesan cheese Heat oven to 350˚ F. Spray 9-by-13-inch baking dish with nonstick spray. Cook spaghetti according to package directions. In large, nonstick skillet, heat butter over medium-high heat until hot. Saute onion and pepper until tender. Add ground beef and cook until beef has browned; drain. Stir in tomatoes, mushrooms, olives and oregano. Bring to boil and reduce heat to medium. Simmer 10 minutes. Place half of spaghetti in prepared baking dish. Top with half of vegetable-meat mixture. Sprinkle with half of cheddar cheese. Repeat layers. Combine soup with water; pour over casserole. Sprinkle with Parmesan cheese. Bake uncovered 30-35 minutes, or until thoroughly heated.

Pulled Pork Grilled Cheese Servings: 6 Sandwiches: 3 pounds pork shoulder Barbecue Sauce (recipe below) 4 tablespoons Borden Butter 1 loaf (1 pound) sourdough bread, sliced 16 slices Borden Cheese Singles Sensations Extra Sharp Cheddar Barbecue Sauce: 2 tablespoons Borden Butter 1 medium yellow onion, diced 1 jalapeno, diced (optional) 1 cup ketchup 1/2 cup brown sugar liquid smoke, to taste To make sandwiches: Heat smoker to 210˚ F. Smoke pork shoulder 3-5 hours, until internal temperature reaches 150 F. Remove and wrap in aluminum foil. Refrigerate overnight. Remove excess fat from pork. Using two forks, shred remaining meat into large bowl. Mix in Barbecue Sauce. In skillet or griddle, brown two slices of buttered sourdough bread over medium heat. Place slice of cheese on each piece of bread. Top with oneeighth of pulled pork mixture, second slice of cheese and another slice of buttered bread. Turn sandwich over when bottom slice has browned and brown other side. Tip: Use prepared pork shoulder in place of smoking pork. To make Barbecue Sauce: In medium skillet, melt butter over medium heat. Saute onions until soft; stir in jalapenos, ketchup, sugar and liquid smoke. Bring to boil then reduce heat to medium-low and simmer 1 hour, or until sauce

has thickened to desired consistency. Tips: To make sweeter sauce, add more sugar. To make spicier, add more jalapenos. Easy Quinoa Mac and Cheese Cook time: 55 minutes Servings: 4 Nonstick spray 2 teaspoons olive oil 1 tablespoon minced onion 1 clove garlic, minced 1 cup quinoa, rinsed and drained 2 1/2 cups water 2 large eggs 1 cup non-fat milk 1 cup Borden Cheese Sharp Cheddar Shreds, divided chopped tomato (optional) green onion (optional)

Heat oven to 350˚ F and spray 8-by-8-inch baking dish with nonstick spray. In medium skillet, heat oil over medium heat until hot. Add onion and garlic, and saute 1 minute, or until onion is tender. Add quinoa and cook, stirring, until golden brown and toasted, 2-3 minutes. Add water, bring to boil, reduce heat to medium-low and simmer, covered, until water has been absorbed, about 10 minutes. Remove from heat. In large bowl, whisk together eggs and milk. Stir quinoa into egg mixture and whisk in 1/2 cup cheese. Spread in prepared baking dish and sprinkle with remaining cheese. Bake 30 minutes. Garnish with chopped tomato and green onion, if desired. Serve immediately. Source: Borden Cheese
