High Point Council approves bypass assessment High Point City Council unanimously voted 9-0 on May 19 to approve the Jamestown Bypass Land Use proposal. The Council had few comments on the proposal regarding what the City could do with its portion of the Jamestown Bypass at its meeting on May 17. The city’s Planning and Zoning Commission approved the plan in March. The review of the document has been a long process, beginning in January. Only Areas 7 and 8 of High Point’s Land Use Assessment, an area of approximately 132 acres along Dillon and Bales Chapel roads, would affect properties near Jamestown. These areas are in the High Point Extraterritorial Juris-
ABOU
diction near the Jamestown town limits. Since original plans were presented in January to the P&Z Commission, proposed plans for 82 acres of Area 8 – closest to the Jamestown town limits – were modified, with medium-density residential cut approximately in half and eliminating just over half of the proposed development along Bales Chapel Road. It no longer abuts Jamestown town limits. The deleted portion was in the Oakdale Reservoir Watershed Critical Area Tier 3. This includes protection of fragile natural watershed areas. “[This] limited development to two dwelling units per acre and 35 percent built-upon area,” said Heidi Galanti, planning administrator for the City of High Point. “Due to these constraints, the area was modified. Area 8 was reduced to approximately 44 acres and 18

COMPILEd By NORMA B. dENNIS BROTHERTON PERFORMS OPERA AT JPC Summer 2021 will prove to be an exciting time for Kayla Brotherton, a member of Jamestown Presbyterian Church. She applied for and was accepted to participate in the Berlin Opera Academy summer program. Brotherton was one of approximately 100 singers chosen from over 3,000 applicants. Her audition videos resulted in Brotherton being offered the role of “The Mistress of the Novices” in Puccini’s “Suor Angelica.” She also will understudy the role of the witch in Humperdink’s opera, “Hansel and Gretel.” Not only will Brotherton have the opportunity to perform, she will receive voice lessons and professional coaching, classes in German and participate in meetings with opera talent agents. “I am thrilled to have this opportunity,” she said. Brotherton will present a recital on June 6 at 4 p.m. in the Jamestown Presbyterian Church sanctuary. Her mother will accompanied her as she sings several arias and art songs. The recital will be live-streamed at https://www.youtube.com/channel/UCVkSRzFYkKlF0NsWg4llkDQ. The event is free to everyone. However, donations to help make her trip possible will be gratefully accepted. They can be made at the recital by cash or check. Send checks made out to Kayla Brotherton to Jamestown Presbyterian Church, 1804 Guilford College Road, Jamestown, NC 27282, or use Venmo: @ Kayla-Brotherton or Cash app: $KaylaBrotherton. “For years I have been privileged to hear Kayla sing at church and in the Greensboro Choral Society,” said Clarajo Pleasants. “The opportunity to attend the Berlin Opera Academy can be the beginning of my longtime wish for her to be able to share her awesome voice with the world. I hope everyone will come to her performance and contribute to making this possible.”

It is now solely in the Oakdale Reservoir General Watershed which allows 75 percent builtupon area.” Area 8 is bordered on the north by the bypass, west by Dillon Road, south by Bales Chapel Road and originally on the east by the High Point/Jamestown Annexation Agreement line. Since there are no water or sewer connections in these two areas, High Point could not annex until a developer requested it. Annexation would be required for residents to receive these connections. Real people, real stories, real prayers – God is real By NORMA B. dENNIS FreeLANCe WrIter ndworddesign@gmail.com “You never know what a day may bring, but one thing I’ve learned is that everybody’s got a story,” says Chuck Simpson. Thus begins an episode of The Driver, a YouTube series produced and directed by Chuck and his wife Trish. Chuck plays the part of the driver, a position he knows well from his job with Uber for 18 months before the pandemic shut down the economy. An outgoing person, as he was driving Chuck often engaged his passengers in friendly conversation. An idea began to form that he could share the unique stories they told using The Driver as a platform. Although his job as a driver ended, the idea for the YouTube series that could give a glimpse into the multifaceted lives of others continued to grow. Earlier this year, that idea became a reality. Chuck and Trish have already filmed four videos and uploaded them to their YouTube site. “Chuck and I both have the
Golf course revenue continues to rise By CAROL BROOKS FreeLANCe WrIter cab1hp@gmail.com Golfers can be seen hitting the ball in all kinds of weather, especially warm weather. But in April 2020, just as the weather was warming up, the course closed due to Covid-19. No rounds were played. But in 2021, with the course open, 3,436 rounds were played, bringing in $121,361. Rounds played increased 734 from April 2019. Year-to-date, rounds played are up nearly 48 percent. With more rounds played, golf maintenance expenses for April were up 110 percent over the previous year and year-to-date expenses

are up by 12.5 percent. Golf shop expenditures were up over 64 percent. Year-to-date expenditures were up by about 19.5 percent. Increased play also meant an increase in other areas of the golf course. Greens fees, cart rentals, pull carts, driving range and golf shop inventory were up 100 percent as could be expected. No mechanical golf main-
tenance had been done for three months so that was required due to increased play. Clubhouse rentals for gatherings of large groups have resumed but year-todate are down nearly 83 percent. The grill reopened in April 2021 for inside dining. It had been open only for takeouts. Revenue in April was $11,033 and year-to date, the grill is running approximately $12,000 ahead of 2020. “Rounds of play continue to be impressive,” said Finance Director Judy Gallman at the May Town Council meeting. “If the weather is good for the remaining two months, we believe that the results by fiscal year-end will look very positive.”

I see a need for Christian content within the videos. “We are trying to produce one video about every two
weeks. The original concept was to reenact actual rides, and possibly include some absurd humor. But this project seemed to evolve on autopilot and we kept getting the word ‘real.’ So far, we have used real people and real stories and kept the driver’s backstory as autobiographical as we can. The
only thing not real is the ride.” The realism of the videos seems to have added to their popularity as the couple has received many comments about it. The rides are based in Jamestown and surrounding areas including High Point and Greensboro. Each passenger comes up with the story they want to share. The Simpsons create a few bullet points so the driver, Chuck, can interject questions and comments. Three iPhones mounted inside the car are used to record the rides. As director, Trish is scrunched up behind the driver’s seat. She controls each camera using an iPad and Switcher Studio software. Sound is captured and recorded with wireless lavalier microphones, a shotgun microphone and Zoom H6. Trish pulls all the pictures and sound together into the final video product. “With technology, this is not brain surgery,” she said with a smile. Treme presents finalized Strategic Plan By CAROL BROOKS FreeLANCe WrIter cab1hp@gmail.com During the Jamestown Town Council’s March budget meeting, Interim Town Manager Dave Treme suggested the Town establish a strategic plan for the future. The initiatives identified will influence budgets for several years. He presented his final version of his plan to the Council at its May 18 meeting. It is designed as a multi-year version of the Town’s mission, serving as a roadmap for staff and Council for the next three-tofive years. Treme’s plan includes “goal statements that are the foundation of Jamestown’s mission statement, long-range objectives that define those goals, multi-year initiatives to achieve the objectives, and annual tasks captured in a separate working document and a reporting structure that will be updated regularly to track progress.” There will be five goal statements: staff

excellence, public safety, infrastructure and facilities, outreach and involvement, and planning and development. The Town’s Comprehensive Plan is currently being updated and, during the process, the Steering Committee has created a new mission statement. Treme’s plan would add a new vision statement. “Those communities that have a plan are more successful than those without,” Treme said in March. “We are not unfocused, but we could be more focused.” The plan would begin immediately and in June he would determine the progress. Of the 40 goals listed, some items or projects have already begun. Two are finished. The plan will be reviewed quarterly, with December of this year as the first review. It is a way to evaluate the manager and staff and provide direction to the staff. The Council will review the plan at their annual retreat to ensure goals are still relevant and the plan will be updated and adopted as part of the annual budget process.

On my recent visit, I learned about and enjoyed Dick’s Hot Dog Stand, at the corner of Nash and Pearson streets. It began in 1921 when a Greek immigrant, Socrates “Dick” Gliarmis, sold his first hot dog. A century later, Dick’s family is still there in a cozy building with walls posted full of North Carolina memorabilia. You can bet Dick’s will be featured in any revised “Roadside Eateries,”. Good eating is important, but we came to see the whirligigs. A friend, Susan Hudson, arranged for us to be guided by Henry Walston, who, as chairman of the Vollis Simpson Whirligig Park and Museum, was instrumental in bringing the whirligigs to downtown Wilson. The late Vollis Simpson, a farmer, welder, house mover, and handyman turned out to be an important American artist who could turn heaps of metal junk into gigantic, toylike, playful sculptures.
Simpson assembled his artwork on his farm, which became a popular, local attraction. Walston was a leader in a community effort to gather, repair, and display Simpson’s work in downtown Wilson. In 2017 he explained to WUNC’s Frank Stasio, “When we embraced this project we had creative placemaking in mind. Creative placemaking being when you take an art/cultural project and you use it as a vehicle to stimulate economic development in the area the project is located.” Wilson’s loss of its tobacco markets and bank headquarters had stunned the town. The whirligigs have come to the rescue. They are on display from 5 a.m. to midnight. It is the best kind of art museum—no tickets, no lines, no guards—just an open park full of Simpson’s quirky, colorful, structures moving differently with every breath of wind.
The whirligigs have helped attract other artists and businesses to downtown Wilson. Artist Sebastian Correa, a native of Chile, joined with George Newsome and Reggie Harrison to form Artisan Leaf, where they use epoxies and tobacco leaves to make lovely, sturdy tables and smaller objects that they sell for a fair price. Former Chapel Hillian Barb White moved her art gallery to a downtown building in Wilson called the Edge. In her totally renovated space, she displays and sells her work and that of others. Other artists are bringing life to the town. Thanks in large part to the whirligigs, Wilson is on the move. It was a perfect post covid trip.

He studied filmmaking, majoring in producing and sound at the Los Angeles Film School. From 2008 to 2017 he traveled back and forth from Greensboro to California hoping to increase that aspect of work. He took early retirement to pursue video projects and has worked locally as a sound engineer for commercials, movies, and support for live performances. He

After setting her music aside for a while, Trish once again began to investigate ways to record and share her original faith-based music in the fall of 2019. She was introduced to Chuck, who was renting a friend’s basement for a recording studio and realized he could record her music more easily than she could do it on her own. “We immediately clicked,” Trish said. “It felt like we had always known each other. “We are soul mates – artistically, creatively and, most importantly for us, spiritually. Six months after we first met, we began 3am Productions.” Chuck and Trish chose that name because they seemed to be constantly emailing each other about 3 a.m. A few months after forming their company, the couple married and still find they sometimes wake up about that time to discuss current projects. “We call these times our ‘staff meetings,’” Trish said. The Simpsons produced videos of Trish’s music and made several videos for Mike Jenkins, the organist/

They also released three videos for Chuck including an original song composed together called, “My Christmas Song to You.” Shortly after they married, Chuck was diagnosed with cancer. “We have turned that over to God and he has given us peace about it,” Chuck said. “But we decided we needed to prioritize our time.” Chuck and Trish began The Driver project in April. Their goal is to be entertaining, but also help others. “We want God to use the videos as he sees fit,” Chuck said. An upcoming episode of The Driver will include Chuck’s cancer story. They have already filmed a visit to the Cancer Center at High Point Medical Center, including a chemo session. Chuck plans to give his testimony of how trusting and submitting to God for the outcome of his cancer has provided not only peace but even joy in the journey. “God clearly has His hand in this project,” Trish said about The Driver. “There is no other way things could fall into place the way they

Cupcake-making tips from Betty Crocker By ANgELA SHELF MEdEARIS tHe KItCHeN DIVA While Betty Crocker is often associated with 1950s happy homemaking, she originally belonged to a different generation. Created in 1921 as a “friend to homemakers” for the Washburn Crosby Company (a forerunner to General Mills) in Minneapolis, her purpose was to answer consumer mail. “She” was actually the women of the Home Service Department who signed Betty’s name. Eventually, Betty Crocker’s local radio show on WCCO expanded, and audiences around the nation tuned her in, tried her money-saving recipes and wrote Betty nearly 5,000 fan letters per day. “Your talks ... have given me hope,” wrote one listener to the Betty Crocker radio program during the Depression. A fascinating book, “Finding Betty Crocker” (Minnesota Heritage, 2007), by author and documentary producer Susan Marks, offers a unique look at the culinary and marketing history of America’s First Lady of Food. According to Marks’ largely chronological “biography” (there was no real Betty Crocker), it was human connections like this one that made Crocker one of the most successful marketing tools ever. Filled with treasures from the General Mills archive — including letters sent to Crocker during World War II, reprints of famous recipes and advertisements, and portraits updated through the years — Marks’ book introduces readers to the people who breathed life into Crocker’s image as the happiest of homemakers. With these basic items and tips courtesy of the Betty Crocker website (www.bettycrocker.com), you can bake and decorate a batch of beautiful cupcakes in a snap. CUPCAKE MAKING TIPS Staples: * Betty Crocker boxed cake mixes in a variety of flavors * Ready-to-spread frostings * Decorating icing, assorted colors * Decorating gels, assorted colors * Food colors (liquid, gel or paste). Try paste food color for more vivid color frosting * Assorted colored sugars and edible glitters * Assorted candy sprinkles Equipment: * Cupcake pans (mini and regular) * Paper baking cups, available in a variety of colors and prints. Find them in supermarkets, party, craft or specialty cake decorating stores. * Resealable food-storage plastic bags for piping icings and glazes. Tip: Baking Pans A box of cake mix makes 24 to 30 cupcakes in regular-size cupcake pan. There also are pans that have mini, large and jumbo cups. If you have only one pan and a recipe calls for more cupcakes than your pan will make, just cover and refrigerate
the rest of the batter while baking the first batch. Cool the pan about 15 minutes, then bake the rest of the batter, adding 1 to 2 minutes to the bake time. An easy way to fill baking cups is to use an ice cream scoop. Use one that measures out 1/3 cup batter when filling regular-size cups. Use one that measures out 2 tablespoons batter when filling mini cups. Frosting Tips: * Carefully dip tops of cupcake into the frosting, give a slight twist and remove. Finish off with a swirl of a knife if needed. * Dip frosted cupcakes into bowls of nuts, colored sugar, sprinkles or other decors for easy decorating.
Storing Cupcakes: 1. Cool cupcakes completely before covering to keep tops from becoming sticky (about 30 minutes). 2. Loosely cover cupcakes that will be frosted later so the tops stay dry. If covered tightly, they become sticky and difficult to frost. 3. Store cupcakes with a creamy-type frosting loosely covered with foil, plastic wrap or waxed paper, or under a cake safe or inverted bowl 4. Refrigerate cupcakes with whippedcream toppings or cream fillings. 5. Frost cupcakes with fluffy frosting on the day they are to be served. 6. Freeze cupcakes two to three months, tightly wrapped. 7. To keep frosting on frosted cupcakes from sticking, freeze cupcakes uncovered 1 hour, then insert a toothpick in the top of the cupcake, and tightly wrap. 8. Thaw cupcakes in the refrigerator or on the countertop. 9. When thawing on the countertop, loosen or remove wrapping to prevent condensation. 10. Decorating gel, hard candies and colored sugars do not freeze well because they tend to run during thawing.
