City Lake pool is getting a renovation BY CArol BrookS freelance Writer cab1hp@gmail.com It’s been two summers since residents of Jamestown and High Pont have been able to enjoy a popular pastime – swimming in High Point City Lake Pool. But by Memorial Day May 2022, all that will change as the pool is scheduled to re-open with new and improved features. “The age of the pool and deferred maintenance necessitated the renovations,” said Lee Tillery, High Point Parks and Recreation director. “The pool liner and maintenance system are old.”

Many of the changes will not be noticed by the swimmers, such as mechanical upgrades, but the design of the pool will change. It will now be in two sections. The section near the gym will still have the eastwest 50-meter competition pool with the addition of a splash pad outside the building where there are currently swimming lanes. The biggest change to the pool will be at the southern end near West Main Street. Samet Construction Co. has already removed that section of the pool and made it ground level, creat-

CoMpiled BY norMA B. denniS The Jamestown Rotary 60th Annual Horse Show sponsored by the Jamestown Rotary Club is quickly approaching. This equestrian event is scheduled for Oct. 2 at the Piedmont Saddle Club, 8001 Leabourne Road, Colfax. It will begin at 10 a.m. Jamestown Rotary Club members will be volunteers at the event, which is promoted and sanctioned by The Piedmont Horseman’s Association. Over fifty English and Western riding classes will be in full competition and judged for their skills and showmanship. Members of the Jamestown Rotary Club are working on final arrangements, hoping to make this 60th show the most successful of all. “We wish to thank the communities and local businesses for their continued commitments in sponsorships and support,” said Michael Greth, horse show chairman. “Our focus this year will be Our Community and this will be a great day of fun for kids and families. Attendance is free. Foods and beverages will be available. Raffles, prizes, gift baskets and even a balloon pop with a secret gift inside will ensure that a great time will be enjoyed by all.” All proceeds will be distributed to the Rotary’s local community charities and non-profit organizations. Town council to meet BY CArol BrookS freelance Writer cab1hp@gmail.com The Jamestown Town Council will hold its monthly meeting on Sept. 21 at 6 p.m. in the Civic Center at Town Hall. During the meeting, Eddie Oakley will be recognized for his service as a member of the Planning Board. A new member and alternate to the Board will also be appointed. Under consideration is a resolution to direct the Town Clerk to investigate

an annexation petition as well as consideration of a waiver of a waiting period for a rezoning request. The Council will also consider approving an accounting specialist position. Following the regular session, the Council will hold a closed session to discuss matters related to personnel and attorneyclient privilege. BY CArol BrookS freelance Writer cab1hp@gmail.com One sight in nature that is certain to bring smiles to even the grumpiest person is a butterfly flitting around, especially if a child or pet is trying to catch it. From its metamorphosis from the little striped caterpillar to the delicate and beautiful adult, the butterfly has become a metaphor for

transformation and hope and a symbol of rebirth. There are a lot of these little creatures populating Jeanne Megel’s home in Cedarwood. But though some may think of them as pests, to Megel, they are the beginnings of some of the most beautiful beings on earth, monarch butterflies. Megel is a monarch conservationist and has been raising butterflies seriously for about six years. Her

daughter Katie also is a big help in the endeavor. “A lot of people are starting to raise butterflies in their home now, monarchs specifically,” Megel said. “Populations have dwindled so badly that they would have been red-listed as endangered this last year except there is not enough funding to take care of them on a federal level.” There are many reasons butterflies are endangered,

including pesticides, deforestation, climate change and urbanization, all of which lead to the destruction of the milkweed plant. Females lay their eggs on milkweed and when the eggs hatch, the resulting caterpillars, or larvae, feed on the milkweed leaves. The female can lay over 1,000 eggs in her lifetime. The Jamestown Planning Board will hold a special meeting on Sept. 20 at 6 p.m. Their regularly-scheduled meeting on the second Monday of the month was rescheduled for this date. Several items are on the agenda, including a public hearing to consider approval of the updated Comprehensive Plan. If approved, the Plan will go to the Town Council in October for approval. The Board also will hold a public hearing to

CONSTITUTION WEEK SEPTEMBER 17-23

Three delegates from north carolina’s sign constitution

Fifty-five men attended the Constitutional Convention in Philadelphia in 1787, but none were there the entire time. On the last day, of the 42 in attendance only 39 signed the Constitution. Three were from North Carolina. North Carolina had five delegates at the Convention, but William R. Davie, known as the “Father of the University of North Carolina,” and Alexander Martin, the governor at the time, were both back home in North Carolina when the Constitution was signed. North Carolinians who signed the document: • Dr. Hugh Williamson was the leader of the N.C. delegation. He was an ordained Presbyterian minister who had gone to the University of Pennsylvania, as well as a surgeon who served as the Surgeon General during the Revolutionary War. Dr. Williamson also was a mathematician and an astrologer. He was a friend of Benjamin Franklin’s and even conducted experiments in electricity with Franklin. He made 73 speeches at the Constitutional Conven-

During a Q&A session of a lecture on C-Span one author was asked which founder he thought would most likely fit into society today with all our advance technology. He answered that Ben Franklin would have to be one, but he thought Dr. Hugh Williamson from N.C. was the most cosmopolitan of all the delegates to the Convention. • Richard Dobbs Spaight was a wealthy planter. He was orphaned at the age of 8

and sent to live with relatives in Ireland, where he graduated from the University of Glasgow. His uncle was the Royal Governor Arthur Dobbs. Spaight was only 22 when he served as an aide to Richard Caswell during the Revolutionary War. He was one of the few delegates who attended every session of the Convention. Spaight proposed the 3/5 amendment during the Constitutional Convention. This said that three of every five slaves would

be counted for determining representatives in the House of Representatives. He was also one of North Carolina’s governors. Spaight was very ill when he and a political rival fought a duel. Being too weak to hold the pistol, he was shot and died several days later. • William Blount was a merchant, planter, land speculator and paymaster for the N.C. militia during the Revolutionary War. He was a big proponent of the rights of the common man, but did not have much to say at the convention. Benjamin Franklin talked him into voting for the Constitution. Blount missed an entire month of the Convention because he was serving in the Continental Congress. He was considered a charming man, but was not altogether honest as he used false names to aid him in purchasing land grants. George Washington appointed him as the governor of the territory that became Tennessee. Blount was impeached by the Senate for plans to turn over land to a foreign country and found guilty. He was ousted from his seat in the Senate.

ButterFlY continued from front this project from reading how the monarch butterflies are being decimated. “I’ve always been attracted to wildlife, especially those that are badly misunderstood, like sharks or those that are becoming endangered,” she said. Megel grows milkweed in her yard from seed and regularly checks to see if there are any tiny eggs attached. She will break off the leaf, bring it inside and place it in one of the mesh containers in her front bay window. “You have to start with a garden that will attract them,” Megel said. “First you have to put in your nectar garden that the adults like to feed on, but they will only lay eggs on milkweed.” The eggs hatch within two-three days into caterpillars, a form they will keep for about two weeks. During this stage they each will eat from 175-200 milkweed leaves. After this stage, the cat, as Megel calls it, climbs up to the top of its enclosure and hangs down in a “J” shape for approximately 24 hours before beginning to shed its skin. After about two minutes, the chrysalis, or pupa, emerges, similar to a person unzipping and emerging from a sleeping bag. As it continues to hang for up to two weeks, the chrysalis will turn from green to transparent and the new butterfly can be seen inside. The entire process from egg to butterfly lasts from three to six weeks. Four generations can be born in one year, with the first three living only two-to-six weeks. The final generation lives about nine months, dying after it returns to lay eggs. “Last year I think there were only three weeks we actually saw butters,” Megel said, using an affectionate name for the monarchs. “This year they started early. We actually released some in March. I was lucky

I counted 157 this morning.” There are two populations of monarchs in the United States. The final generation of the year east of the Rocky Mountains migrate to Mexico to overwinter and those west of the Rockies migrate to California. There is some controversy regarding whether monarch butterflies should be raised in captivity or just let nature run its course. Megel is obviously in the first camp but understands both sides of the issue. “There’s a case to be made either way,” she said. “Look what has happened by letting nature take its course. They diminished by 90 percent over 20 years. And they have diminished a lot more since then. 2020 was the first year the overwintering grounds in California did not see a single monarch. They had thousands of them before. “Also, people want to raise them by the thousands, they don’t take proper care of them and you have to be

very careful about a disease (Ophryocystis elektroscirrha) because if you release a butterfly with OE, it perpetuates the disease. That’s a sticking point.” Megel thought she had several monarchs with the disease but after tests, the butterflies were fine. “It’s not like we’re [raising in captivity] in a laboratory and releasing thousands of them.” She stresses that she is not harming the creatures. “They get first priority. We don’t go anywhere until I know they have been fed. I get up two hours early in the morning to make sure everybody’s got food and they’re not fighting with each other. Caterpillar fights are ugly.” Raising butterflies at home is a project families could enjoy. There is very little expense, other than purchasing milkweed and what Megel calls the “condos” in which to raise the creatures. The gymnasium building is also undergoing major renovation as the gym goes away, transforming the building into a community center with assembly room and offices. “There will be two multipurpose big rooms and additional restrooms,” Tillery said. Locker rooms will be remodeled and entrances to the locker rooms and new community center will have a major facelift. Additional parking, including handicapped parking, will be added, taking over some of the Great Lawn event space, which will be shifted to the west,

with the stage area moved away from the building. “Parking is a huge issue,” Tillery said. “This is our most-used park.” He expects more visitors to come after renovations are completed. The renovations to the park are separated into two phases, with the pool area being phase one. Samet began work on the project in May of this year. Since the plans for the park were approved by the High Point City Council on May 23 of this year, some changes have been made due to the rising cost of materials. Thus, the planned bridge across the lake on Penny Road has been postponed. The bridge will connect to the Piedmont Environmental Center, High Point Greenway and Bicentennial Greenway as well as the

proposed sidewalk along Penny Road in the plans by the Town of Jamestown. The City Lake Park Renovation project plan can be found at www.highpointnc. gov.2483/High-Point-CityLake-Park-Construction. MacAdams Company prepared the document. MacAdams also worked with the Town of Jamestown on the recently-approved Parks and Recreation Master Plan. The City of High Point approved a $9.5 million bond referendum for the renovations in November 2019. When Covid-19 closed the pool in 2020, the City got to work on design plans and lining up contractors. The park is located in High Point but actually has a Jamestown address on West Main Street, The city

provide work to idle laborers. More than $300,000 federal funds were given to construct the park and was completed by CWA workers. Other park amenities, like shelters, fishing, marina and playground with rides remain open.

On Sept. 7, family, friends, former coworkers and board members gathered at the Ragsdale Y to honor McKone’s dedication to the organization with a ceremony officially naming the community room the McKone Community Room. “Kim dedicated her life and career to the YMCA,” said board chair Joe Jackson. “The impact she made will always remain.” “Kim was all about community and this space represents community,” said Terry Matthews, who served along side McKone as assistant executive director of the Ragsdale Y. “I believed in Kim and when she asked me to join her (to help establish a Y in Jamestown) I was willing. Kim knew this would be a special place.” Kerry Miller, lifelong board member of the Ragsdale Y, expressed his appreciation to McKone’s husband and son, Mark and Matthew, for supporting Kim in her career move to Jamestown. Mark, in turn was grateful for the honor given his wife and that Kim’s passion for helping children would be continued.

When Joe Warwick, supervisor of the five YMCA of Greensboro branches, first approached her about the position in Jamestown there was no office, building or staff. But as Warwick continued to answer her questions, McKone caught a vision and passion for what the future could hold as Jamestown citizens sought to establish a YMCA in their area. “By the end of our meeting, I knew Kim was the right person for the job,” Warwick said. “She brought Terry Matthews on board and the two hit the road running.

McKone came with experience as director of the Central YMCA in WinstonSalem. She also came with a commitment to the Jamestown community and to its Y. Together she and Matthews began creating a wide range of activities for the community and McKone began laying the foundation for raising funds for a building in which to house Jamestown’s Y. The Jamestown YMCA became part of the YMCA of Greensboro. In 2004, the efforts of many were brought to fruition in what was to become known as the Mary Perry Ragsdale Family YMCA. Guilford Technical Community College donated land off Bon-

ner Drive in exchange for use of the facility by its students. McKone oversaw hiring staff and directors for the various activities offered by the Ragsdale Y and under her direction, the organization flourished with programs for everyone, including seniors, sports enthusiasts and school-age participants. McKone left the Ragsdale Y in 2009 for a position as Community Outreach Director for the YMCA of Greensboro corporate office. But her influence locally continued to be felt by many. Following her passing, board members and staff realized the need to do something to honor her memory and a decision to name the community room after her seemed most appropriate. An endowment fund to recognize McKone’s love for children and family also was established through the YMCA of Greensboro. It

will provide a yearly scholarship at the Mary Perry Ragsdale Family YMCA to a child or family in the Jamestown community, giving recipients the opportunity to enjoy the benefits of the YMCA in McKone’s memory. The goal for the endowment is $20,000, which would ensure a $1,000 scholarship for the next 20 years. “The dedication of the community room in Kim’s honor was a way to help put closure to losing her and the endowment will keep her legacy going for years to come,” said Marlee Rindal, current executive director of

the Ragsdale Y. “The day after the ceremony we got a call from Joe Warwick stating if we raised an additional $5,000 the YMCA of Greensboro would match that amount. That would put us over our $20,000 goal.” Sept. 7 would have been McKone’s birthday and those who attended the dedication were treated to mini cupcakes iced with pink frosting and pink rosebuds. “Pink was her favorite color and pink roses her favorite flower,” Rindal said. “It was one more way to remember Kim and remember the day.”

No-bake cheesecake is lemony delight By patti diamond divas on a dime

Summer may be coming to an end, but in much of the country the weather is still warm enough to appreciate the refreshing zing of citrus and the ease of a no-bake dessert. So, before we move on to pumpkin spice everything, let’s enjoy the sweet, tart flavor of lemon cheesecake once more. This technique has been around forever so I can’t take credit for creating this recipe. I first recall seeing it made by Martha Stewart, so I’ll credit her for the inspiration, made more frugal by yours truly. Lemon cheesecake is the perfect finale to so many meals. Even though it’s assertively sweetened, it’s not cloyingly sweet because of the tart lemon. But make no mistake, this cheesecake is sweet, rich and indulgent. I recommend small slices and letting people come back for more. To make this economical, store-brand graham crackers, cream cheese and sweetened condensed milk are perfectly fine for this recipe. NO-BAKE FRESH LEMON CHEESECAKE Total: 3 hours Active: 25 minutes Yield: 8-12 servings For crust: 2 packages (18 full sheets) graham crackers 2 tablespoons sugar Big pinch kosher salt 11 tablespoons (1 3/8 sticks) unsalted butter, melted

For filling: 2 (8 ounce) packages cream cheese, room temperature 1 (14-ounce) can (1 1/4 cups) sweetened condensed milk Juice and zest of one large lemon (about 1/4 cup juice) 1 teaspoon vanilla extract

1. Place graham crackers in a large ziptop plastic bag and crush them with a skillet or rolling pin until they’re the texture of coarse sand. 2. Into a medium bowl, stir together the crumbs, sugar and salt. Melt butter and add to the crumbs, stirring until well-combined. 3. Into a 9-inch springform pan, spread the crumb mixture. Press the crumb mixture 1 1/2 to 2 inches up the side. Use the bottom of a measuring cup (or something similar) to flatten the crust and really press it into the sides. Chill crust in freezer while you make the filling, or at least 10 minutes. 4. In a large bowl, using an electric hand mixer, beat the cream cheese until aerated and smooth. Continue beating the cream cheese as you gradually add the sweetened condensed milk, scraping the sides of the bowl, as necessary. Add the lemon juice, lemon zest and vanilla, mixing until combined. Resist the urge to eat this right now. 5. Retrieve your semi-frozen crust and carefully add the filling, ensuring there are no air pockets. Smooth the top with the back of a spoon. Cover with plastic wrap, and refrigerate until firm, about 2 1/2 hours. 6. To serve, unclasp sides of pan and remove cheesecake. Slice into 8 to 12 slices. Serve while cold for best presentation.

I knew he had a garden of his own, so I eagerly asked what I should do with three humongous 18-inch-long zucchini that dominated my veggie garden while I was on vacation. Without skipping a beat, he said, “Bake a chocolate zucchini cake.” What? “Yep, a cake,” he said. “It’s the ultimate dessert my mom made when I was a kid. An Austrian neighbor gave it to her and said to pass it on. And that’s what she did. Now I make it and share it with friends.” He emailed me a simple list of ingredients. When asked for directions, he said stir the ingredients in order, one by one with a wooden spoon in a big bowl. No mixer, no fuss! Stir together family fun with this kid-friendly recipe and serve with cold glasses of milk and colorful napkins and straws for a special after-school snack. CHOCOLATE ZUCCHINI CAKE 1/2 cup soft butter 1/2 cup canola or vegetable oil 1 3/4 cups granulated sugar

Light but lush — it’s thickened with late-season corn, low-fat milk and a Yukon gold potato — this refreshing farm-stand soup is summer’s answer to cold-weather chowders. 4 slices thick-cut bacon, cut into 1/2-inch pieces 1 large shallot, finely chopped 3 cups fresh corn kernels 1 large (8 ounce) Yukon gold potato, peeled and shredded 1/8 teaspoon smoked paprika, plus additional for garnish 2/3 cup water 4 cups (1%) low-fat milk Salt and pepper 1/4 cup packed fresh cilantro leaves 2 eggs at room temperature 1 teaspoon pure vanilla extract 1/2 cup sour milk (stir together 1/2 cup milk and 1/2 tablespoo white vinegar. Let it sit 15 minutes.) 2 1/2 cups all-purpose flour 4 heaping tablespoons unsweetened cocoa powder 1 teaspoon baking soda 1/2 teaspoon ground cloves 1/2 teaspoon cinnamon 1/2 teaspoon salt 2 cups grated zucchini (if using an extra-large, firm zucchini, remove seeds) 1/2 cup semi-sweet chocolate chips Topping: 1/2 cup chopped nuts 1/2 cup chocolate chips 1. Grease and flour a 9- by-13-inch

pan. Preheat oven to 350 F after sour milk is prepared. 2. In a large bowl, stir together butter, oil and sugar for a few minutes, until light. Add the eggs one at a time until well-blended. Stir in vanilla and the sour milk. 3. Meanwhile, another child may measure and sift the flour, cocoa, baking soda, cloves, cinnamon and salt. Add to the large bowl and stir gently until mixed. Add zucchini and chocolate chips, and stir until just combined. 4.
