Mamma Mia! HERE WE GO AGAIN

Mamma Mia! Here We Go Again – at last! Following the success of the feel-good movie of the decade, the long-awaited sequel (and prequel) is released in summer 2018, timed to coincide with the tenth anniversary of the original. And after a long, hard winter at home, that glorious backdrop of cobalt-blue skies, endless sunshine and crystal clear waters is set to inspire the same longing to join the film’s flamboyant characters for a simple, carefree, Greek island life.

M

any are of course already aware of the enchanting nature of islands such as Skopelos, where most of the first Mamma Mia! movie was filmed. Aficionados may find it hard not to burst into a rendition of ‘Does Your Mother Know?’ on a visit to the popular Kastani Bay, or ‘The Winner Takes It All’ looking up at the tiny Agios Ioannis chapel, perched precariously on top of a rocky promontory on the north of the island. Skiathos, too, played a part in setting the scene for the heart-warming romantic comedy that saw some of our favourite actors cast in roles that seemed far outside their comfort

zones. Yet here they all are, back for more, suggesting it was probably every bit as much fun as it looked the first time. It isn’t hard to see why a cinematographer would grab the chance to film here with both hands and a very wide-angled camera lens. The movie’s fictional island of Kalokairi (‘summer’ in Greek) brings together all of the islands’ most charming attributes: superb light quality; glittering, secluded bays; lush pine forests; bustling harbours dotted with colourful fishing boats and dazzling white cottages with brightly painted shutters and terracotta roof tiles.

What could be more appealing than sitting beneath the stars at the table of a local taverna, sipping ice cold beer or local wine to accompany mouth-watering meze, freshly caught fish, tasty dolmades and succulent souvlaki? You may not get to be serenaded by the familiar melodies of 'Super Trouper', 'Voulez Vous' or 'When All Is Said and Done', but on a balmy summer’s evening, that special ambience that’s such an integral part of the movie’s appeal is easily recreated – flares and platforms optional. One of the joys of these islands is taking to the water to explore hidden coves, secret caves and breathtaking beaches that are inaccessible by land. We can’t promise Colin Firth’s guitar strumming, Pierce Brosnan’s sketches or Stellan Skarsgård to hoist the sail, but the views will be just as memorable.

More accessible are the neighbouring islands of Hvar and Brac, where elegant, farmhouse-style stone villas overlook beautiful sheltered harbours and divinely clear waters. And you can always hop on a local ferry for a day trip to Vis to satisfy your movie buff curiosity. With a few additions to the exceptional cast, including no less a superstar than the iconic Cher, this summer’s song and dance extravaganza will soon have you swinging your hips, flailing your arms and spinning around in time to another crop of unforgettable Abba tracks. Your bags are packed, your transport to the airport is organised, and sun-drenched days are within touching distance (at last!). There’s just one thing between you and the villa pool that’s been the centre of your holiday daydreaming for months… the flight. We know all too well that once you’ve navigated the check-in, passport control, found your departure gate and are finally ready to board, you’re really in need of a holiday! But jetting off is the official start of your getaway. So it should be part of the fun, right? Flying doesn’t have to be stressful, so to help you take to the skies feeling relaxed, here are some of our top tips for preparing to take off.

BEFORE YOU GO

Being organised certainly reduces the stress of travelling. From a handy travel wallet so all your important documents are within easy reach, to pre-booking an airport lounge to escape the bustle of the departures, having a plan will avoid any last minute rushing on the day you leave for the airport. Give yourself plenty of time. Most airlines recommend arriving at the airport at least 2 hours before your flight for European destinations, and at least 3 hours before when flying further. If getting everyone plus the luggage in the car and to the airport in time to catch the flight fills you with dread, staying in a hotel near to the airport is a great option. Enjoy a little bit longer in bed and start the first day of your holiday at a more leisurely pace, with the peace of mind that you’re already in the right place.

FLYING WITH CHILDREN

UP, UP AND AWAY… How often do you get a few spare hours to switch your phone off and sit back with a refreshing drink? Flying is an opportunity to do just this. So take a bit of time out for yourself and read that book you never finished, watch that missed season of your favourite TV show, or scribble down your destination bucket-list. The plane is also a good place to practice mindfulness. It’s the buzzword on everyone’s lips, but actually dedicating some time to focus on the moment you’re in is difficult to do in everyday life. So where better than on a flight when you’re sitting still for a few hours or more? Take a few minutes to practice breathing exercises – inhaling deeply through your nose and then out through your mouth with a pause in the middle. Simple stretches while seated can also alleviate stiffness. Try a seated twist by holding the seat’s armrest with both hands and gently pull to twist your torso to one side, before turning to the other.

If you’re taking little ones on board, keeping them happy is the key to an enjoyable flight for you as much as them. Not to mention your fellow passengers! Check in early and pre-book seats to ensure you all sit together. Sharing the child-care load with the other adults in your travelling party will give you the break you need to arrive in your destination feeling fresh. Modern in-flight entertainment on offer is better than ever, but play it safe and pack plenty of items to keep little ones amused. Use your time above the clouds to get creative. Bring pens, pencils, notebooks, colouring books and stickers and get the kids to create a holiday diary, starting with their airport experience complete with drawings of the plane.

ZLATNI RAT

Brac, Croatia

If it’s a fairytale beach you’re after, then Zlatni Rat deserves to be crowned the fairest of them all. A golden spit whose ever changing character is shaped by the wind and waves, walking along it’s pebble shore you’ll be surrounded by the electric blue of the Adriatic Sea. In the heat of the Croatian sun, seek shade in the pines that offer a cool retreat and you may even discover an ancient Roman villa. Or with sunloungers to hire or a beach towel to sit on, sit back and relax and enjoy the views to Hvar and beyond.

PORTO TIMONI Corfu, Greece

Like two children fighting for their parent’s attention, it’s hard to pick a favourite from Porto Timoni’s twin beaches. Chances are you’ll love each one equally! Separated by a row of trees, these golden bays glisten in the Greek sun. There are no facilities here, it’s island beauty at its simple best. So make sure you’ve loaded up on snacks, suncream and supplies before you begin the walk from the nearby clifftop village of Afionas. As you make your way back up those paths, you’ll find yourself turning around for one last look.

BENAGIL CAVE Algarve, Portugal

A golden beach lies in wait for those who enter this intriguing sea cave. A natural work of art carved by Mother Nature, Benagil is breathtakingly beautiful. ‘The Eye’ in the roof shines a sunny spotlight on the fine sand, showing you the way to secluded paradise. Lay back and enjoy the curving archway entrances, which become rocky frames to wonderful waves from your new perspective. Sail in and out of the cave by boat, or paddleboard your way to this sheltered paradise. Complete this ultimate beach day with a walk along the cliffs, where you can take in the beautiful views of Praia de Benagil’s main stretch of sand.

Getting caught between Goloritze’s towering rock formations is a sight to behold! The sea sparkles in its wonderful shade of Sardinian blue and the sun beaming against those shining whites of sand and stone. It might be a little hard to reach, but this natural beauty is worth the extra effort! Around an hours hike from car to sand, you’ll find seclusion that’s shared with only the most dedicated beachgoers.

Palm trees swaying in the sea breeze and white sand that feels like soft pillows on the soles of your feet - Bottom Bay is like that Caribbean daydream you’ve always clung to. But even better than you’ve imagined. Cliffs enclose part of the beach, adding a secluded feel and relaxing vibe. Bottom Bay feels like your own deserted island. Don’t worry about searching for your dinner, this is a popular picnic spot. Why not stock up on some goodies to tuck into? You don’t have to take the deserted island experience too far.

Zakynthos, Greece

Shipwreck Beach, Smuggler’s Cove – Navagio goes by many names, each hinting at what lies enclosed in its towering limestone cliffs. A ship ran aground here in the 1980s, as Greek naval vessels chased smugglers in bad weather. Today its wreck is a rusty beacon among the white and blue, a truly unique coastal spectacle popular with photographers. Grab your camera and set course for this hidden wonder, which is only accessibly by boat.

Sa Calobra is a gorgeous rose between two rocky thorns, a gorgeous beach at the end of a gorge – something special! Excitement builds as you stroll through the cliff face tunnel and suddenly you’re in beach disbelief! Catching your first glimpse of the pebbly sand sitting between towering rocks, the shimmer of magnificent turquoise seas winking at you just beyond. And with the Torrent de Pareis river running through the shore, this beach is like nothing you’ve seen before.

BLUE LAGOON Comino, Malta & Gozo

‘Good things come in small packages’ rings true for visitors to Comino. Sandwiched between Malta and Gozo you’ll find this little island and its jaw-dropping Blue Lagoon. The white sands are just the spot to rest between swims in the crystal clear turquoise water. You’ll be feeling anything but blue as you snorkel and sunbathe, although it might be a different story when it comes to leaving this mini-paradise…

CALA MACARELLA Menorca, The Balearic Islands

Gentle waves glisten in the Balearic sun, the white sand is ever so inviting, and pine-covered cliffs wrap around the cove. Macarella is Menorcan charm at its finest! A breeding ground for protected turtles, you’ll find Lara Beach just as nature intended. Calm and tranquil, it’s perfect for laid-back beach lovers and nature’s finest creatures alike. ARRIVAL in

WITH JO THOMAS

Escape to the rolling hills of Spain with Jo Thomas as she reflects on her experiences of Spain in the spring. Jo sets the scene for Andalucía, the backdrop to her irresistible new novel Sunset over the Cherry Orchard. I was in no doubt as I boarded our plane that we were heading for Spain. All around me young people were chatting loudly and expressively, enjoying each other’s company and sharing their opinions, often all at the same time. There was a joy to their conversation, bursting with enthusiasm. Spain, I realised, was expressive, joyous and passionate. Until, that is, I reached my villa… Driving from the airport, I pulled off the main road and up towards Casa Nobleza. The road twisted around the cream coloured stone mountainside and in the cracks and crevices wild flowers were starting to poke through. I passed small whitewashed villages and their locals sitting outside bars, watching lost tourists go by. When I finally arrived, I got out of the car and was stunned not only by the view, but the peace. There was nothing more than the sound of a few birds and, in the distance, a single dog barking. A watering system was gently hissing, feeding the lush grass and olive trees in the garden, but 16


the surrounding mountainside was covered in what looked like dead vines. The villa was blissfully remote and quiet, with mountains wrapping right the way around it. On my first morning waking in the villa, the sunrise was slow to creep over the windowsill. The sound of a lone cockerel finally signalled the sun coming up above the mountains. Clouds rolled along the hillsides as the day slowly warmed up. The sky was light blue and there was a breeze in the late-March air. A bay horse wandered across the slopes of the field on the opposite side of the valley, grazing in the early morning sunlight. In town, I walked the steep cobbled streets of Competa where pots of red geraniums hung along the whitewashed walls and in amongst the blue and brown tiled mosaics, as if eagerly waiting to welcome the arrival of springtime. As darkness fell that evening, I lit the fire and read, drinking in the peace and a soft rioja. But the quiet was shattered when the dark sky lit up with huge sheet lightening. The thunder rumbled and crashed, and rain pelted down like an intense performance of two rival dancers on a big stage, both wanting to claim the crowd’s applause. It was intense and passionate. Spain was filling me with its sounds and smells, and the feeling I wanted for my new book. The following morning, the sun burst over the mountain like a fresh start, like lovers waking having made up after a falling out the night before. Everything felt newly showered and green, ready to soak up the day’s sun. Outside the French doors of my bedroom, birds were tweeting and chirping, as if they were swapping family news. The sky was the most amazing, brilliant blue, like someone had painted it with poster paints, and not a cloud in the sky. There were small, colourful birds everywhere: gold crests, finches and blue tits. They were like the Spanish youngsters on the aeroplane: loud, chatty and expressive. But most noticeable were the blackbirds, arguing and squabbling, fighting off rival suitors. Everything was waking up and bursting into life with colour, smells and sounds. Spanish life had arrived here, too. The wild flowers on the side of the road were now a riot of colour, like a bright Spanish dancer’s skirt: mauve sweet pea flowers, wild lavender, bright red poppies, and vibrant yellow and fragrant gorse like broom. The vines I had thought were dead suddenly unfurled their tightly closed leaves and sprung into life. The wisteria over the outside table burst out its beautiful purple blossom. All around,

there were bees the size of bomber planes, hard at work, buzzing loudly, going about the serious business of visiting all the flowers that had suddenly opened in the Spanish sunshine. Lizards scuttled out to bask on the rocks as the birds continued their loud courting and bickering. As I sat writing in my room with the patio doors open, a little but loud blue tit sang outside my window, perched on a pine tree behind the twisted, ancient olive, serenading me. All around, nature was imitating the colourful, vibrant, enthusiastic and passionate Spanish life! Across the country, valleys of cherry orchards were waking with blossom bursting into bloom on the branches. In town, families congregated, soaking up the spring sunshine. Kids set off firecrackers in the back streets and I heard the clap, clap….stamp, stamp, the sound of flamenco taking place somewhere within the whitewashed walls of the town. Noise, laughter and happiness surrounded me in the cobbled streets. And as the sun set over the mountains covered with different patterns and colours created by the flowers and shrubs bursting into life, I sat beside the beautiful blue pool, soaking up the sounds and smells, watching the swallows arrive to sit on the overhead wires, heralding that spring had well and truly arrived in Andalucía. She couldn’t get enough of the children’s pool, the beach and going to the park – it really is the perfect type of holiday for a young family as there are so many facilities right on your doorstep!

HANDPICKING VILLAS ASIDE, WHAT DO YOU GET UP TO OUTSIDE WORK? I’m a mum to a baby and a toddler, so they keep me pretty busy. I spend most of my time running around keeping them entertained.

This well-loved fruity punch is the heart and soul of Spain, poured lovingly by locals from a hefty jug. Made using a combination of red wine, brandy, syrup and fruit, it’s often the centre stage of a Spanish sojourn. There are different variations served throughout Spain’s shores. The best typically have a base of good Spanish wine creating a deep authentic flavour. It’s the perfect complement to a tasty tapas feast! It may be made from grape skins, seeds and stalks left over from the wine-making process - but don't let that put you off. Limoncello We’ve left the best (or should that be zest) until last! If anything says ‘Italy’, it’s Limoncello. Lemon skins are infused in alcohol, creating a deep yellow colour and zesty flavour. With its origins stemming from the Amalfi Coast, it’s traditionally served as a delicious after dinner digestivo. So pour a glass and drink in the aromas while on holiday along this coastal masterpiece. Even at home, the tempting zing of this fruity liqueur will bring back precious memories each time you enjoy a sip after an Italian feast.

Made using sugar, water and tiger nuts, Horchata is a traditional Spanish beverage. A flavour similar to rice pudding makes it a popular drink at merienda, the late afternoon snack intended to carry you over from lunch to a late dinner. Dunking sweet pastries into your Horchata creates the perfect pairing. Served throughout Spain with early roots in Valencia, it’s non-alcoholic and suitable for vegetarians. A lifetime of James Villas holidays James Villas veterans Carl and Mandy from West Sussex tell us about their villa holiday comeback, (without the kids).

You’ll always remember your first family villa holiday. The kids splashing in their own private pool, their laughter that fills the days and the thrill of extended evenings when bedtime is flexible. Sitting on the terrace at the end of the day when the excitement tails off and the kids are sound asleep, you sip on some local wine and reflect on another day of fun. It’s these memories that stay with both you and your children for years to come. As they grow up, fly the nest and have holidays of their own, group getaways turn into bookings for two. And eventually, life comes full circle and you become built-in babysitters on holidays with their own little ones. Families evolve, grow and change. But the villa at the heart of the memories remains the constant. With a lifetime of villa holidays, the Flinn family have first-hand experience of just this. We sat down with Carl and Mandy to hear about their James Villas holiday history, both travelling to their most loved destinations as a family and then later on without the kids. Pretty Provence Carpets of lavender fields and glorious vineyards by the River Rhone - a Provençal holiday in the south of France is full of colour. Back in 2007, the year of France’s controversial Six Nations win and the opening of the Grand Théâtre de Provence, the Flinns took their very first James holiday here. Children in tow, they were about to embark on the first of many. “As a family we started going on villa holidays more than 10 years ago when both of our daughters were still at school, and continued to travel as a family of four until they went to university. Even then they would come and visit sometimes!” says dad Carl.

He recalls how his girls loved the freedom to splash in the pool or read a book, while he and wife Mandy could chill out with a bottle of wine and sample the local cheese. The villa lifestyle suited them all. “These days it’s just the two of us and we continue to enjoy the home from home comforts of a villa holiday.” Their number one tip? Revisit what was left undiscovered the first time around… Heading back to Provence in 2017, the couple stayed in Villa Romarin, where relaxation was still the number one priority. Close to the beach and pretty French villages as well as your very own private pool and space – what more could you want?

"...his girls loved the freedom to splash in the pool or read a book." “We stayed close to where we holidayed the first time, which was nice as we could go back and see some of the places we’ve been to before when we were with the children.” But with no extra mouths to feed (and no kids to keep amused), day trips to St. Tropez and soaking up culture in Cannes were now on the holiday itinerary. “We were able to do some of the things we possibly wouldn’t have done when we were with the kids. We even revisited some places and took our time, and it was all the more relaxed! All of the villas we’ve stayed in we’ve enjoyed, but probably enjoyed our latest trip to Provence in Villa Romarin the most.”

Chilled out Costa Calida

So where next ?

As their girls grew, the Flinns fell in love with the natural beauty of Costa Calida. A round of golf in one of the many beautiful courses or snorkelling in the largest natural pool in the world at Mar Menor – there’s so much to discover, one trip here isn’t enough! It was the Flinns love of exploring the small towns and finding quiet crowd-free beaches that kept them coming back.

Spanning only 100km, Mallorca’s easily navigated island landscape means its day trips galore with a new town or cove to discover every day. From Alcudia in the north, it’s only an hour to the capital Palma meaning you can have a city break and beach holiday rolled into one.

Well you guessed it, the Flinns are rediscovering another old favourite.

Carl and Mandy first explored Mallorca in 2015. Going back later this year they’re swapping bustling Alcudia for the chic resort of Cala d’Or.

Served by two Spanish airports and under three hours from the UK, it was the perfect choice to take their daughters for an easy getaway. It was here Carl and Mandy discovered Holiday Resorts which gave them the best of both worlds - the privacy of a villa mixed with hotel-style facilities.

Self-catering meals

- MADE EASY Mealtimes are as much about enjoying each other as enjoying the food on your plate. From laughter around the barbecue, to the youngest family members trying new tastes, and flowing conversation across the table – eating is a shared experience. On holiday, the beauty of selfcatering is that you’re in control. And with simple delicious ingredients you can create something special in no time at all, so you’re back around the table with the ones you love most. Food writer and stylist Charlie Clapp brings us some fail-safe recipes that are quick and easy to rustle up on your villa holiday.

SWEET PEACH, CRISPY PARMA HAM AND MOZZARELLA SALAD SERVES 2 4 slices of Parma or locally cured ham 150g mozzarella 2 ripe peaches or nectarines, halved and destoned 2 handfuls of rocket 2 tbsp balsamic vinegar 4 tbsp extra virgin olive oil Heat a griddle or frying pan over a high heat then cook the ham, turning once until crisp. Halve your peaches, removing the stone, then cut each into two or three wedges. The pan should have all the lovely fat from the ham, so keep it on the heat and add your peach wedges. Cook for 30 seconds on each side until charred and softening, then remove and set aside in your chosen serving bowl. Meanwhile assemble your salad. In a small jar or jug add the balsamic vinegar and olive oil with a pinch of salt, pepper and sugar. Stir well until emulsified. Roughly tear apart the mozzarella into bite sized pieces and add to the bowl with the peaches and the rocket, placing the crisp Parma ham on top. Drizzle with the dressing and serve.

STUFFED AUBERGINES WITH GIANT COUSCOUS (V) SERVES 4 4 aubergines Drizzle of olive oil 4 garlic cloves, skin on 250g couscous 2 tomatoes, roughly chopped 1 red chilli, seeds removed and finely chopped 50g cheddar cheese Handful of pinenuts Small bunch each of mint and coriander, finely chopped 1 lemon Preheat the oven to 200°c. Halve the aubergines lengthways, keeping the stalks intact. Score the flesh in a criss-cross pattern and place flesh side up in a baking tray. Drizzle with a little oil. Nestle the garlic cloves amongst them and bake in the oven for 30-40 minutes until the aubergine flesh is tender. Meanwhile place the couscous in a bowl and cover with boiling water. Cover with a tea towel and leave for 5 minutes, then fork through to seperate the grains.

Main attractions

When the aubergines and garlic are ready, scoop the flesh from each aubergine half with a spoon making sure you keep the skin and shape of the aubergine intact. Then roughly chop and place in the bowl with the couscous. Squeeze the soft flesh from the garlic cloves and add. Place a frying pan over a medium heat and toast the pinenuts for a minute or two until golden, then tumble into the bowl along with the chopped tomatoes and chilli. Add most of the herbs, setting some aside for serving. Then finely grate the zest of the lemon and squeeze in the juice. Season well and stir everything to combine. Divide the mix into 8 and stuff each aubergine half with the mix. Grate over the cheddar cheese and return to the oven for 15 minutes to warm through, then remove and finish with a last scattering of herbs. Serve with a green salad.

GARLIC PRAWN SPAGHETTI SERVES 4 400g spaghetti 2 tbsp olive oil 1 tbsp butter 3 cloves garlic, finely sliced

350g - 400g fresh large prawns (if using prawns with the skin on then you’ll need 600g) 1 lemon, zest and juice

Always room for dessert

1 red chilli or 1tsp dried chilli flakes

Handful of chopped parsley

Place a large pan of salted water over a high heat and bring to the boil. Add the spaghetti and cook for around 9 minutes or until al dente. Meanwhile heat the oil and butter together in a large frying pan over a high heat. Once the butter has started to sizzle add the garlic. Cook for 30 seconds or until the garlic is just turning golden then remove with a slotted spoon and set aside while you cook the prawns. Add the prawns and zest of lemon to the lovely garlic infused butter and oil and cook over a high heat for 5 minutes until the prawns are pink and just cooked. Return the garlic to the pan along with the chilli. Drain your spaghetti keeping aside a mug of cooking liquid, then add to your garlicy prawns along with a good splash of the cooking liquid and the juice of the lemon. Season well with plenty of salt and pepper, stir through the parsley then divide between 4 hungry people.

HEALTHY PAVLOVA CUP SERVES 4 4 individual ready made meringues (or one large ready made meringue) 400g plain yoghurt 200g strawberries, sliced 4 tbsp runny honey 2 ripe passion fruit 50g pistachios Small bunch of mint, leaves picked and finely shredded Roughly crush the meringue and divide half between four serving glasses. Top with half the yoghurt and scatter over most of the sliced strawberries and a drizzle of honey. Repeat with the remaining meringue, yoghurt and strawberries. Scoop the flesh from the passion fruit and divide between your glasses. Roughly chop the pistachios and scatter over with the mint to finish.

DALAMAN Dalaman doesn’t have a favourite angle or ‘good side’ - it looks perfect from every perspective. Little do you know that person on the beach, whose outline you can just make out, is also as pleased as punch looking up at the magnificent lush green landscape.

Butterfly Valley

Hiking lovers will tell you that there’s only one way to enjoy Dalaman – the Lycian Way. Over 500km of coastal trail begins in Fethiye, from which you can take in sights so beautiful they’re worth the aching feet and sweaty brows. Grab a birds-eye view of the Blue Lagoon that hugs Oludeniz’s curving arc of golden sand. Stroll on to Butterfly Valley, a fjord-like inlet that’s a peaceful portrait of natural beauty. just how beautiful these beaches are up close! Feel the sand beneath your feet, listen to the waves caressing the shore and take in that spectacular scenery. For a brush with nature head to Iztuzu Beach. Loggerhead turtles breed and nest here, so you might even spot an adorable hatchling heading for its very first swim. This narrow stretch of golden sand separates the Dalyan River from the waves of the Aegean sea. The turtles might head for the sea, but holidaymakers head to the mud baths on the banks of the Dalyan. Covering yourself in the sludge is rumoured to have medicinal benefits. Even if it doesn’t fix those aches and pains, you’ll at least leave with smoother skin. You might even look a few years younger too... get ready for plenty of compliments!


BODRUM Stroll past a Bodrum bazaar and it’s pot luck as to which of your senses will start tingling first! Your ears might prick up as market traders jokingly barter with tourists, locals and one another. Your nose might twitch as fruit fresh from nearby orchards send a wave of wonderful scents your way. Did you know that the area was home to one of the world’s seven ancient wonders? The Mausoleum of Halicarnassus was built here, a shrine to King Mausolus following his death. His wife ordered this architectural marvel, pairing Greek design with an Egyptian pyramid-style roof. Sadly an earthquake destroyed the wonder in the 16th century, but its stone ruins were taken to Bodrum Castle where you can see them today.

Take a seat in a restaurant, grab a menu and get ready to order. Everything you need to know about Turkey’s past can be enjoyed amid an explosion of flavours. Nomadic natives brought dishes back with them after dipping into Asia. Then the Ottomans added flavours from all across the empire; their master chefs returned to share tips from Mediterranean Europe to the Middle East and beyond. Spice and silk travelled along Turkish trade routes, but those chatty locals saw this as their chance for some cultural exchange. To learn a little more about their neighbours tastes, that famous Turkish welcome was extended and new flavours were shared. And thankfully they did! Who knew history could be uncovered with a knife and fork in hand?

TIMING IS EVERYTHING

ONE FOR THE MANTELPIECE

If you’re an early riser, the good news is that early in the morning is the best time to get shots of your surroundings. Subjects often look better with the light coming across the frame rather than the sun shining straight down onto them, so avoid taking photographs in the middle of the day. If waking up early on holiday isn’t on the agenda, the hour before sunset also provides great lighting and adds red and yellow tones to your photographs.

Tripods are great for taking photos of everyone together, but make sure you take plenty of shots to avoid having people with their eyes shut in your photo. For the best angle, try putting the tripod up as high as possible and standing on a step ladder or stool to take the image (but be careful!). Have a look online for a travel tripod which is perfect for packing in your suitcase without taking up too much room!

PUTTING THINGS INTO PERSPECTIVE

The sun setting always make for popular holiday snaps. But why follow the crowd? Try getting an angle of the sunset which captures a boat, tree or even people too. Once the sun has disappeared beyond the horizon, stick around for 15 minutes or so as the sun will brighten up the sky with amazing warm colours.

Where photography is concerned, perspective is key. Always keep on the lookout for creative ways to frame your images. Rather than standing in front of an attraction, look out for doorways, windows or trees which you could use as a natural frame for the image. Use the ‘rule of thirds’ and make the subject off centre to create a well-balanced image.

WHAT’S YOUR SUBJECT? Keep your eyes peeled for interesting subjects - it’s not always the most obvious things which make the perfect picture! Once you’ve chosen your subject, move in close to avoid lots of dead space. This is often helpful if crowds of people are gathered nearby. You can also try positioning the subject off centre to add variation to your photography. Once you’ve found the perfect subject, half press the button to take the photo until it focuses and then take your picture once it’s at its sharpest!

AS THE SUN SETS

Our Visual Asset Manager and in-house photographer, Holly, tells us her favourite destinations to photograph… "I love anything with a bit of culture and history. Ruins such as the Acropolis in Rhodes are great to photograph especially as it has St.Paul's Bay right next to it, so you get a great mix of history and beautiful scenery. The Greek Islands are one of my favourite places to visit as there's always something different to see. Melissani Cave in Kefalonia is stunning and you can go on a rowing boat around it, which is great for getting close-up photos. I also really enjoy photographing fishing villages like Kassiopi in Corfu, with the cute little boats bobbing along the shoreline."

ALGARVE WHITE STORK Protected and revered in Portugal, you’ll spot these beautiful birds and their nests high up on chimneys and telegraph poles. So don’t forget to pack your binoculars! Discovering the White Stork perched on the roof of your villa would also be a sign of good luck. Just like us, storks prefer warmer climates. So in winter why not watch as thousands migrate and capture the stunning view as they soar in the skies above?

CROATIA EURASIAN LYNX Want to feel at one with nature? Then leave the stunning Dalmatian shoreline behind and discover Croatia’s big cat – the Eurasian Lynx. Native to Europe and Asia, this solitary creature will have you feel like your very own nature show presenter as you hide behind bushes to sneak a glance. Recognised by their ruff face fur and short tails, these forest felines feast on mammals and birds. With incredibly secretive natures, you’ll feel that finding the Eurasian Lynx is a real game of cat and mouse.

MALTA FRESHWATER CRAB This little guy is somewhat of a celebrity in Malta. Once taking centre stage on their old 5-cent coin, the Maltese freshwater crab (known as qabru) is now endangered. If lucky enough, you’ll spot these greenish-grey creatures wherever there is fresh water, no matter what time of year. As you enjoy a glass or two after sunset, this carnivorous crab will be tucking into his dinner of a tadpole or any smaller animal he can get his claws into, so keep a lookout for these precious creatures.

CYPRUS CYPRUS MOUFLON As you soak up the Cyprus sun, take a trip to Paphos Forest and spot their largest mammal – the Cyprus Mouflon. Make sure to pack your hiking boots as these wild sheep live high on the mountains, perfect for an early morning workout! Very shy and agile, these animals are quick-moving so take care when walking nearby. Although mouflons are found in various Mediterranean countries, this species is exclusive to Cyprus.

IBIZA IBIZA WALL LIZARD Ibiza’s wall lizard is just as energetic as the island’s nightlife. Found in and outdoors, you may find these small, fast creatures flash under your feet as you relax in the comfort of your villa. As you get a glimpse, you’ll first notice its long tail, attached to a rounded body. Varying in species, their striking colours of green and brown makes them easy to spot as they scurry past. One things for sure though, these funny lizards are harmless and will add amusement to your day!

This is our second year working with Porchlight and we have continued to plan many events in aid of them. To name a few, our 2018 events include World Travel Day, Star Wars Day, Dragon boat race and to support Purple4Porchlight, Porchlight’s annual event."

...are a Kent based homelessness charity, helping people who have nowhere to go and no-one to turn to. Porchlight help families, children, young people and adults with support around housing, education and employment.
