“PAELLA” FROM ALICANTE Ingredients (6 people) • • • • • •

Chicken (1 piece) Green plat beans (300 g) Garlic (10 cloves) Oil (200 ml) Peppers (1 or 2) Racks of lamb (500 g)

Rice (600 g) Saffron Salt Tomato (400 g) Water (50 cl)

How to make it / preparation 1. 2. 3. 4. 5.

First, fry slightly some cloves of garlic, peppers and French beans. When fried, put them separated on a plate. Now, fry the pieces of meat. When the meat is gold coloured, add the tomatoes. Following, add the rice and, after removing a short time, add the water. When water starts boiling, add saffron, salt and the vegetables fried at the beginning. 6. Finally, let boil all together 20 min.

CHICKPEA STEW Ingredients • • • • •

400 g of chickpeas 10 codfish strips (dry and salted) 2 peeled and sliced potatoes 1 bunch of spinachs 1 small piece of pumpkin

How to make it / preparation 1. First, in a pressure cooker, boil the chickpeas previously water-laid 5 h. 2. Following, in a pan, fry a handful of almonds and two slices of bread. Chop it and reserve. 3. Next, poach a fine cut onion with a red pepper in a pot. 4. Later, add 3 l of water, the chickpeas and the rest of the ingredients. 5. Finally, after 1h boiling, add the chopped prepared. Add salt and saffron. 6. Let boil all ½ h.

GARLIC SOUP Ingredients • • • • •

1 big piece of dried garlic 1 middle piece of tomato 200 g of white bread 3 glasses of water Saffron

How to make it / preparation 1. 2. 3. 4. 5. 6. 7.

First, fry the garlic cut in sliced pieces. Next, add the tomato, grated. Add the bread in small pieces. When all is fried, add hot water (not boiling) and salt. Following, add saffron (previously hot inside its bundle to enhance the flavour). Let boil 10 min. Finally let rest 5 min before serving.

“BOLLITORI” - BOILED CODFISH Ingredients (4 people) • • • •

1 big onion 1 small dried garlic piece ¼ of cabbage 2 big potatoes

300 g of English codfish cut in pieces 1 dried pepper 3 glass of water Salt

How to make it / preparation 1. First, fry the dried peppers, the garlic, the potatoes and the onion cut in pieces and preserve. 2. Next, fry the tomato cut in pieces together with the codfish. 3. After, add the dried peppers, the garlic, the potatoes, the onion and water. 4. Let it boil for 10 minutes.

“OLLETA”: WHEAT AND VEGETABLES Ingredients (4 people) • • • • •

750 g dried beans 250 g of wheat 1 kg of thistle’s leaves 1 kg of pork ribs 500 g potatoes

¼ l extra olive oil 1 onion A bit of saffron Salt

How to make it / preparation First, chop the wheat after having it in water so it peels off. After that, boil the beans, the thistle and the wheat. Meanwhile, fried slightly the onion, well chopped, and mix it with the ribs, the cut potatoes. Add salt and saffron. Finally, boil all together in a small fire, removing every short time until it reaches the special point.

“COCIDO” WITH MEATBALLS Ingredients (5 people) • 300g of veal • 500g of chicken • 2 stalks of celery • 1 parsnip • 500g of mince • Crumbs of bread

1 carrot 2-3 potatoes 50g chickpeas A bit of salt 2 garlic pieces 1 handful of parsley

Ingredients for the meatballs • 3 eggs

How to make the “cocido” 1. First, peel and clean the vegetables. 2. Boil them. 3. Add the veal. 4. Add the meatballs and let them simmer. 5. Add the chickpeas, the salt and saffron. 6. Boil all together for 3 hours.

How to make the meatballs 1. Mix the mince, the crumb and the eggs. 2. Add the garlic. 3. Add the parsley. 4. Mix all together 5. Give the meat a rounded shape.

CAKE FROM “AIGÜES” Ingredients (10-12 people) • • • • •

12 eggs 300g of flower starch 1 spoon of wheat flour 1 Lemon zest 450g of sugar

How to make it / preparation 1. Beat the egg whites until stiff. 2. Add sugar slowly. 3. Continue beating until dumping the container with the mixture, it will not fall. 4. Beat the egg yolks with the lemon zest and add with envolving movements the egg whites with a wooden spoon. 5. Later, in the same way, add the flower starch. Pay attention, because the flower starch can become liquid. 6. Finally, put on a plate and put in the oven at 160º for 45’.

“MOLLETES” CAKE Ingredients (6 people) •

To make the cake o 2 glass of flour o 1 ½ cup of virgin olive oil o 1 ½ cup of white wine o A bit of salt

o 1 small spoon of bicarbonate To make the “molletes” o 1 glass of flour o Olive oil o A bit of salt

How to make it / preparation 1. Make a Vulcan with the flour; add salt, bicarbonate, oil and wine. 2. Mix all together. 3. Stretch the dough before putting in the oven, over a vegetal paper. It should be the most thin you can do it. How to make the “molletes” 1. Put in a plate the flour and the salt 2. Add bit by bit the oil, doing small balls which should be separated 3. Put them over the cake and introduce all together in the oven at 180º until being gold brown.

TORRIJAS Ingredients • 10 slices of hard bread • 2 pieces of cinnamon stick • Milk • 1 Lemon peel • 1 egg • 100g of grinded cinnamon • 100g of sugar How to make it / preparation 1. 2. 3. 4. 5.

First, cut the bread in round slices. Then, boil the milk with the lemon peel and the cinnamon sticks. Take off the milk when it is hot. Soak the slices in milk and let them dry on a cloth for ½ hour. Following, beat 1 egg and soak the slices there. After that, fry the slices with very hot oil. 6. Put the fried slices over a paper towel to lose the excess of oil. 7. Finally, mix the sugar with the cinnamon and put the slices in.
