COMMUNITY EDUCATION A Message from the Director Thanks for taking the time to look through the fall 2016 Community Education catalog of offerings available at West Kentucky Community and Technical College. This edition of the catalog is electronic. Printed copies are available on request. It is my desire that the catalog will be something you will peruse often as you look for personal enrichment offerings. I feel confident you will find a class to your liking. There are a variety of subjects to choose from for all ages. At WKCTC, we are always looking for opportunities to better serve you. REGISTRATION INFORMATION PRE-REGISTRATION Pre-registration is required for all classes. Classes fill quickly so register early! The registration deadline is seven business days prior to each class starting date. Register early so your class is not canceled due to lack of enrollment. Call to check the status of your class and where your class will meet. If you do not have a registration form, please send in your name, address, name of the classes you are registering in, daytime and cell phone numbers, and e-mail address. Read the ransom note and follow the fingerprints, fibers and other clues. You will use your powers of observation and conduct scientific tests to help solve the mystery of the missing Mars rocks. This is a two-day camp.

If you would like to know how to create folders so that you can organize your files on your computer, this is the class for you. This class will allow you to create and delete folders; create and delete files and move existing files, as well as new files, to the appropriate folders. Microsoft Excel 2013 – Beginning $95 August 23, 25, 30, September 1, 2016 6:00 – 8:00 p.m. Emerging Technology Center, Room 214 Age: Adult Instructor: Bettie Bean If you are new to Microsoft Excel 2013 or need a refresher course in the basics of Excel worksheets, this course is designed for you. Included in this class are the following topics: program fundamentals; working with simple formulas; editing and formatting worksheets; managing worksheets within a workbook; working with charts. Class will meet on Tuesday and Thursday nights for two consecutive weeks.

Star Wars Science $20 November 5, 2016 10:00 a.m. – 12:00 p.m. Challenger Learning Center Age: Kindergarten – 4th Grade Young Jedi will want to attend this program! Participate in activities and experiments based on the popular movie series. You can even wear your favorite Star Wars costume!

Join Anita in making homemade ravioli stuffed with sweet potato filling and covered in brown butter sauce. The side dish is Southern Italy’s famous Arugula, Parmigianino & Prosciutto Salad. Italian bread will be served with herb butter and olive oil, and our Italian meal will conclude with gelato and almond cookies.

These dishes are quick and easy that aren’t just homemade and healthy they can be mostly home grown as well. Cajun Dishes by Anita $45 September 22, 2016 6:00 p.m. Anderson Technical Building Culinary Kitchen & Bistro Age: Adult Instructor: Anita Granier These dishes are not in any particular form. They are just a few Cajun favorites that are enjoyed in our home. Pastalaya is the noodle version of jambalaya. It has the same rich and Cajun flavorings, but pasta is substituted for rice and accented with Andouille sausage. Who dat! Best Cajun potato salad with shrimp. And last but not least, our dessert will be New Orleans beignets, a deep fried pastry doughnut sprinkled with powdered sugar and nearly impossible to eat just one!

Our Daily Bread $60 September 6 – 7, 2016 6:00 – 9:00 p.m. Anderson Technical Building Culinary Kitchen & Bistro Age: Adult Instructor: Chef Erik Engelland In this two part series, Chef Erik Engelland teaches the fundamentals of artisanal bread baking. Students will learn how to mix, shape, and bake artisanal breads including: Caramelized Onion & Herb Ciabatta, Anadama Bread, and Pain a l’ancienne. You will be introduced to the concepts and techniques of making fresh cultured butter and growing and feeding sourdough seed cultures. On the second evening on artisanal bread baking, Chef Erik and the gang expand on concepts taught in the earlier class. Students will utilize artisanal techniques and pre-ferments made in the earlier session to mix, shape, and bake even more bread including a 2000 year old bread recipe from ancient Rome.

Principles and strategies for effectively reducing the likelihood of assault through actual techniques of countering an attack are stressed in this program. Utilizing efficient and effective methods of subject control that do not rely on size and strength, PPCT has developed a training system that can be used by just about everyone who is interested in personal safety.

Kids will learn Ozobot’s simple color language as they draw mazes, paths and intersections, creating a puzzling playground for their robot to follow. LICENSURE AND CERTIFICATION FOR PROFESSIONALS ServSafe Manager Training & Certification $125 3rd Thursday of each month 7:30 a.m. – 4:30 p.m. Emerging Technology Center Age: Adults Instructor/Proctor: Tina Carver This course of training is designed to develop an understanding of the basic principles of food sanitation and safety and to be able to apply them in the food service operations. Personal hygiene habits and food handling practices that protect the health of the consumer will be reinforced. Basic computer skills are helpful because the exam is web based. The book required for these sessions is the ServSafe Manager 6th Edition book with the 2013 Food Code, which is available at the WKCTC campus bookstore. A picture ID along with a valid email address is required. ServSafe Manager Certification – Retest / Recertification Only $67 3rd Thursday of each month 2:30 – 4:30 p.m. Emerging Technology Center Age: Adult Instructor/Proctor: Tina Carver This offering is for those who need to re-test due to failing of exam after having had the eight-hour course or for the current certificate holder who needs recertification before current certification expires. A picture ID along with a valid email address is required.

Registered Nurse Refresher Course - Online $800 Dates: Open Age: Adults Instructor/Facilitator: Paula Isenberg This course is designed to prepare the inactive registered nurse to return to nursing practice and is a KBN approved RN Refresher Course. This course will provide a review and update of knowledge and skills necessary to care for the patient in the acute care environment. If you are an inactive RN whose license has lapsed, it is in compliance with guidelines to award 120 contact hours. The course is in a format that allows you to work at your own pace with a modular format that provides access to your lessons and tests online. There will be one day that you will need to come to the West Kentucky Community and Technical College campus to review and demonstrate competency in nursing skills and to complete a simulation lab experience. Whether you are an employee seeking your Food Handler Card or an operation seeking a compliant solution for your employees, the ServSafe Food Handler Certification is the product for you. Course covers five key areas: basic food safety, personal hygiene, cross-contamination and allergens, time and temperature and cleaning and sanitation. There are many benefits to training: increased business growth, less employee turnover and increased overall customer satisfaction to name a few. Course includes book. LIFESTYLE, FITNESS & HOBBIES Crocheting 101 $75 September 6, 13, 20, 27, 2016 November 1, 15, 22, 29, 2016 6:00 – 8:00 p.m. Emerging Technology Center Age: 9th Grade – Adult Instructor: Anita Weathers In this class we will cover the basics of regular Crochet including how to start and how to end off. We will cover four basic stitches for beginners. At the end of the course the student will complete at least one square or one round coaster. Supplies needed for the class are: Red heart yarn: pastel or medium colors or variegated. One size “G” or “H” crochet hook. Student is responsible for supplies. Beekeeping Course 2 $100 Honeybee Husbandry – A Continuance of “Keeping Honeybees, Beginning the Process” September 6, 13, 20, 27, 2016 6:00 – 8:00 p.m. Emerging Technology Center, Room 140 Age: Adults Instructor: Kent Williams This course picks up where Course 1 left off. Kent Williams, Eastern Apiculture Society certified Master Beekeeper, will cover topics including: choosing the type of honeybees for your operation; knowing the enemy Part 1; the need to feed; developing and maintaining a sustainable honeybee business and more. There will be an opportunity to visit Kent’s beekeeping business and take part in a “hands-on” lesson in beekeeping. All participation is voluntary, and protective gear will be available if needed. Course meets four consecutive Tuesday evenings. Beekeeping – Beginning the Process $85 November 1, 8, 15, 22, 2016 6:00 – 8:00 p.m. Emerging Technology Center, Room 140 Age: Adults Instructor: Kent Williams Join Kent Williams, Eastern Apiculture Society certified Master Beekeeper, as he discusses what to expect in the first year of keeping bees - potential for honey production; potential for colony loss and pitfalls to avoid and triumphs to exploit. Necessary equipment and supplies needed for keeping bees and the attending costs; different methods of obtaining bees. Course will cover equipment options - pros and cons; costs per hive for different hive types; yield potential vs. labor needs relative to different type hives. Course will include equipment assembly workshop, basic economics of keeping bees and more. Course meets four consecutive Tuesday evenings. Disclaimer: The beekeeping courses are not meant to promote any particular method of beekeeping over other methods but are instead intended to promote beekeeping as a whole by giving a “real-world” picture 10

of all aspects of honeybee management. The courses are designed to educate those involved in the study as to how to deal with the principle of “cause and effect” as it applies to each method of management. It is the intention that each participant comes away from these courses with the confidence that they can successfully manage their beekeeping project regardless of what type hive is used, or what style of management is employed. Basic Floral Design – Fall Themed Creations $89 August 11, 18, 25, 2016 September 1, 2016 6:00 – 8:00 p.m. Emerging Technology Center Age: Adult Instructor: Maryann Cain, Interior Designer Maryann will introduce you to the world of floral design. This class will focus on fall designs for your home. You will learn how to make bows, step-by-step floral design, create your own style and ultimately make your own wreath that will be the envy of family and friends. The music has beat and tempo changes that move the workout from one toning, strengthening or cardio move to another, and targets every major muscle group in the body. Zumba uses dance styles such as Salsa, Merengue, Mambo, Hip Hop, Tango and more. 4:45 p.m. – 5:45 p.m. each Monday afternoon.

The course will build concepts and skills toward more advanced projects using the looms. Children under 13 must be accompanied by a parent. Student supply cost will depend upon choice of materials with which to work. Here’s your chance to enjoy and explore this versatile painting medium. Students will learn traditional watercolor basics, as well and more experimental techniques. Finished works will be Raku-fired, an exciting and dramatic technique in which red-hot ceramics are placed in containers of combustible materials, creating beautiful surface effects. From start to finish, this is a fun filled course that can be habit forming. (Additional cost of $12-$24 for clay according to use.) Introduction to Oil Painting $78 August 27, September 3, 10, 2016 9:30 a.m. – 12:00 p.m. PSAD 2D and Graphic Design Building, 905 Harrison Street, Room 201 Age: Adult Instructor: TBA This class provides basic instruction in oil painting for beginners. Working from the still life, students will learn how to set up the palette, color mixing, brush selection and oil painting techniques. Students should wear appropriate clothing and a shop apron. Introduction to Darkroom Photography $129 July 30, August 6, 13, & 20, 2016 9:30 a.m. – 12:30 p.m. WKCTC Clemens Fine Arts Center 4810 Alben Barkley Drive, Paducah, Darkroom Age: High School Students through Adult Instructor: Todd Birdsong Students enrolled in this course will learn the basics of black & white film photography and the use of the darkroom as it relates to photographic printing as a fine art medium. Students should already have a complete understanding of camera exposure techniques including the use of shutter, aperture and ISO and how those relate to one another. This is not a beginning photography course. Students must provide their own 35mm film camera. $35 fee for supplies due at first meeting. Class size limited to 9.

Photographic Fundamentals 101 $100 August 16 – September 13, 2016 November 8 – December 6, 2016 6:00 – 8:00 p.m. Emerging Technology Center Age: Adult Instructor: Jim Ethridge Learn the basics of making a great photograph. Class will cover topics like camera types, aperture, shutter speeds, ISO, composition, posing, lighting and how they work together to produce a great photograph. Introduction to Digital Negatives and Alternative Printing Processes $120 August 27, September 3, 10, & 17, 2016 9:30 a.m. – 12:30 p.m. 2D and Graphic Design Building, 905 Harrison Street, Paducah, Room 112 Age: High School Students through Adult Instructor: Todd Birdsong Students enrolled in this course will learn how to create and print large format digital negatives for use in alternative contact printing techniques. The term alternative printing refers to any nontraditional or non-commercial photographic printing process. Alternative printing processes are often called historical and most of these processes were invented over 100 years ago and were used by early photographers. This is not a beginning photography course. Students must provide their own digital camera and have a fundamental understanding of Adobe Photoshop. $35 fee for supplies due at first meeting. Class size limited to 15.

Emerging Technology Center Age: Adult Instructor: Jim Ethridge Delve deeper into what it takes to produce great photographs. Hands on exercises in class will push you to experiment and see what is possible for your photography. There is a review of the basics and in-class discussion of several photographic subjects. Class meets for five sessions, four Tuesday evenings and one Saturday morning. There will be a field trip with this class on Saturday, October 22, and class will not meet on Tuesday of that week. An understanding of basic terminology and camera operation is helpful. Please bring your own camera to class. (Not a point and shoot.)

Minecraft is a web-based education experience that has been compared to a virtual LEGO environment. Since August 2015, it has provided a supervised environment for educators to develop curricular goals at Minecraftedu.com. This club offering will extend the experienced Minecrafter into connecting their skills into topics such as computer programming math and science. Rich exploration of these and other appropriate topics will provide a creative outlet for participants. Tynker with Coding $150 August 16 and 30, 2016 September 13 and 27, 2016 October 11 and 25, 2016 4:00 – 5:30 p.m. Emerging Technology Center, Room 223 Age: 3rd – 4th Grade Instructor: Bill Kunnecke This club will meet six Tuesday afternoons in a WKCTC computer lab. Students will develop their basic skills in computer science through virtual gaming platform using the web educational website Tynker. com. Students will develop characters, solve puzzles and create games while learning the 7 basic tools of computer coding. Topics covered to create games include keyboard/mouse interaction, conditional loops, fluid motion, parallax scrolling, local and global variables, functions, and object cloning.

Maker Space Monthly $150 August 20, 2016 September 17, 2016 October 15, 2016 November 19, 2016 10:00 a.m. – 12:00 p.m. Emerging Technology Center, Room 140 Age: 7th – 10th Grade Instructor: Bill Kunnecke This STEAM TEAM club offering will meet the 3rd Saturday of each month this fall. Students will be provided resources that facilitate them going through the design process of engineering while practicing the scientific method associated with the sciences. Students will walk through some pre-designed projects the first month but will be challenged to develop their own once they learn the resources provided in this makerspace. Sample of resources: Makey Makey Kits (Go to YouTube and type “Makey Makey – An Invention Kit for Everyone”), Brick Pi Robots, Lego Robotics Kits, and more! Initial sessions will include these experiences: “How to make a banana music keyboard”; “How to create LED lighting on a 5 cent budget” and more. Adult/Child LEGO EV3 Robotics Workshop $150/pair August 4 – September 22, 2016 5:30 – 7:00 p.m. Emerging Technology Center, Room 214 Age: 10 – 100 years old Instructor: Bill Kunnecke This workshop meets eight consecutive Thursday evenings pairing a young person with a NOT as young person to experience LEGO EV3 Mindstorm Robotics. Participants will learn the magic behind making robotics appear to have human characteristics. Pairs of participants will start by building a basic mobile robot and use it as a tool to understand the Guided User Interface (GUI) software programming interface. Next, pairs will systematically incorporate four different robotic sensors on the mobile robot. Challenges for each sensor added will be provided. Finally, pairs will choose a non-mobile robot and create an interactive robot model (maybe a puppy, color sorter, robotic arm, etc.) to share in show and tell near the end of the workshop. The workshop is ideal for those interested in the annual FLL/RCX robotics competitions. Learn more at USFirst.org or rcxrobot.org.
