In the blink of an eye, the summer is over. Say goodbye to dining al fresco, pina coladas, and barbecues. Say hello to football, beer and well, football. It’s inevitable, seasons change, and time marches on. My first nephew is off to Saint Joe’s University, my little niece is going to middle school. How can that be? As quickly as things change, this issue of J’eat Magazine celebrates a few things that haven’t really changed at all, except to maybe improve. First we highlight one of the oldest restaurants in the country, Dante and Luigi’s, established in 1899. What?! 1899?! How can that be? I’ll tell you how—damn good Italian food. Owners Michael and Connie LaRussa are as old school as they come, demanding a consistency and perfection that has allowed Dante and Luigi’s to thrive over the last 117 years. A short ride over the bridge takes you to Rexy’s, originally built in 1943. I’ve watched my fair share of Flyers games in this South Jersey landmark. This neighborhood staple, known for its amazing pizza, also offers delicious fresh fish, steak and pasta options. The Lambesis family successfully preserved this beloved South Jersey institution by adding value and creating a new neighborhood favorite. At the end of the A.C. expressway, is Angelo’s Fairmount Tavern, opened in 1935. 80 years? Also not too shabby! Angelo Mancuso is the third generation of the Mancuso family running the business. Angelo’s combines old world charm with home-made Italian specialties that never go out of style. I have started many of my A.C. adventures with dinner at Angelo’s and have never been disappointed.

And it’s not only Italian restaurants that stand the test of time. Mustard Greens, offering delicious Chinese cuisine in Queen Village since 1992, is near and dear to both my house and my heart. This warm, inviting and super friendly spot serves up the best Chinese food in the city, served by the best of friends. Bon, Ming, Dave and Fuan have worked together over 20 years and have formed a life-long friendship which somehow translates into amazing Chinese cuisine. In addition to these tried and true classics, J’eat also introduces you to brand spanking new endeavors that will surely leave their mark on the Philly restaurant scene. Chick’s and SouthHouse, both in South Philadelphia, are taking the neighborhood bar up a notch. I guarantee you will eat like a king and feel like family at both of these incredibly delicious additions to the area. The clock is ticking. I suggest you slowly savor that last frozen daiquiri of the summer since pumpkin spice lattes are right around the corner. Philly, J’eat yet? It’s go time! Anthony Conte Publisher

Behind the Scenes Catching up with those in charge Crystal A. Fox

Chef, Bocconcini Crystal has always considered herself to be an ‘accidental cook’ because while some know from an early age that cooking was their chosen path - it took Crystal until the age of 26 to work in her first kitchen. When Crystal moved to Philadelphia she landed in a kitchen, in a nightclub, as a prep cook. Although just cutting vegetables and prepping cold plates she knew she was hooked. Crystal eventually moved her way through the city working at French/Cajun spots, did a short stint at Garces’ Amada, before eventually landing at Giorgio on Pine as a salad cook. It was there, at Giorgio’s, where she fell in love with Italian food and made her way from the salad station, to pasta cook, to eventually Sous Chef. Crystal, after making Sous Chef, decided that she wanted to put herself through culinary school before making the final leap to Executive Chef. She attended The Art Institute of Philadelphia while simultaneously working the line full time. In 2011, she graduated from The Art Institute and made Executive Chef at Giorgio’s where she ran the kitchen for six years. Owner, Giorgio Guiliani, sent her to Italy to gain a deeper respect and knowledge for Italian food and culture and eventually became partners in their new venture, Bocconcini, Giorgio on Pine’s sister restaurant, located two doors down from Giorgio on Pine.

Tony Hoda

Chef, La Padella Tony Hoda grew up in Tirana, Albania. From a young age, he always had a passion for cooking. At the tender age of ten, he had already gained experience working at his father’s restaurant. His father always preferred to be on the operations side, but Tony always preferred the kitchen. At one point, he even attended a few culinary schools, only to realize that the trade is better learned through experience. “It’s not about cooking one great dish one time, it’s about cooking 100 great dishes at the same time,” a motto he strongly adheres to. At the age of sixteen, Hoda decided he wanted to travel to America to pursue the dream of opening his own place. Working in restaurants in Chicago, Philadelphia, and various shore points in New Jersey, he gained even more knowledge and experience in the art, until finally landing in Ventnor, NJ. La Padella gives Hoda the opportunity to do things his way. “Only the freshest and highest quality ingredients are used and each dish is carefully plated to ensure it is perfect, because seeing the initial satisfaction on the customer’s face is exactly why I love doing this.”

Darlene “Star” Jones Chef, Star Fusion

Star Fusion Restaurant in West Philadelphia is the perfect fusion of a heart for cooking and a head for business. Owner and Chef Darlene “Star” Jones took what she did best and combined her talents to create a cozy-cool oasis of Asian, American and Caribbean cuisine. The road to success was not an easy one, riddled with detours, but Jones stayed true to her first passion. First, as a teen, there was the failed attempt at restaurant school. Then the successful completion of a business degree, followed by a lucrative corporate career. Then Adrienne Armenia came the lay-off, followed by the ingenious creation of a home-grown business, selling dinners out of her house. Always practical, the corporate world made Jones an “offer she couldn’t refuse,” but she took that opportunity to put a down payment on what is now Star Fusion. Opened in August 2015, Star Fusion serves-up an eclectic menu of Modern American and Caribbean fare, sprinkled with some Asian flair. From soups and salads to specialty wings and a spring roll bar, the menu is as diverse and delicious as the city it serves. Darlene is an example of how hard work and staying true to yourself will always pay off.

Executive Chef, Paradiso

Fred Ryan Chef, Chick’s

Chef Fred has over 20 years experience in the hospitality industry. A native of Philadelphia, he has been on the opening team of Lacroix, Moshulu and Northbowl. With his fine dining background he takes comfort food to the next level. Chef Fred operates a scratch kitchen and uses local ingredients when available. The menu is seasonal with daily specials as well.

Paradiso’s Executive Chef and founder Lynn Rinaldi began her restaurant career as a teenager in South Philadelphia. Her interest in the business led to the opening of a successful café at The Pennsylvania Academy of Fine Arts. After attending the Restaurant School at Walnut Hill College, Rinaldi became inspired to open a stylish and modern, seasonal Italian restaurant in her native South Philadelphia, along the East Passyunk Avenue corridor. Her fresh approach to accomplished cuisine helped kick off the emergence of Passyunk Avenue as one of the county’s most dynamic restaurant districts. In 2008, Lynn and her husband, Chef Corey Baver, opened Izumi, a well-received Japanese restaurant, just up the block on Passyunk Square. Rinaldi is an active member of her community and is an active and charitable neighbor in this ever increasingly vibrant community.

Before

There Was Old School, There Was Dante & Luigi’s EST. 1899 Consistent. It is a word that is over-used and usually taken for granted. It’s not sexy. It’s not flashy. It’s not trendy. But it is what has made Dante and Luigi’s in South Philadelphia thrive over the last 117 years. This Philadelphia landmark is no doubt the epitome of consistency. The home-made gravy, the lasagna, and the osso buco NEVER disappoint and thanks to owners, Michael and Connie LaRussa, they never will. Consistency is an art form and the LaRussas have perfected it.

Opened in 1899, by Michael DiRocco, the restaurant was named Corona di Ferro, which translates to Crown of Iron. The restaurant started as a small business where Italian immigrants were hired to work and even live on the second, third, and fourth floors. After Michael DiRocco’s passing, his sons Dante and Luigi, added their names to what is now known as Dante & Luigi’s Corona Di Ferro. Over the years, the restaurant was passed down to Dante’s daughter and eventually his granddaughter. In 1996, Michael and Connie LaRussa purchased the business, becoming the first nonfamily members to carry on the tradition. They did not take this task on lightly. Determined to maintain the historical, cultural and culinary significance of the restaurant, the LaRussas decided to restore, not change, the South Philadelphia landmark. Michael is a builder/restoration specialist. His first improvement was to turn what was once a boarding house for immigrants into beautiful apartments, by restoring antique moldings, beautiful stairways, floors and fireplaces. In more recent years, Michael and Connie undertook the task of restoring the restaurant dining rooms, exposing original soaring arched windows and intricate plaster moldings. The two row-homes which housed the restaurant were redecorated in classic, timeless elegance, returning the aging structure back to its original glory. Other improvements that the LaRussas made were more subtle, as they were

warned by long-time loyal customers not to change the menu. They stayed true to their loyalists, but quietly tweaked ingredients and added many of Michael’s favorite family dishes from his home town of Campobello, Sicily. Sweet Breads, calves liver and lamb stew, rarely found in most restaurants, are some of the classic, Old World recipes that Dante and Luigi’s prepares to perfection. Their meat-based gravy is slow-cooked from scratch. Their broths and stocks, right down to their croutons, are home-made every day. To say that the LaRussas are old school would be an understatement. Both Michael and Connie are at the restaurant every day; she runs the floor, and Michael oversees the kitchen. They are both very hands-on and insist on seeing what is being brought to the table. That one hundred percent commitment is what Connie believes is the secret to their success. Dante and Luigi’s doesn’t even take on-line reservations. They prefer to speak personally to the customers. A computer doesn’t know it’s your birthday dinner or that you want to sit at a particular table, but Connie most certainly does. Their operation is run like a well-oiled machine. It is a collaboration of the finest restaurant professionals in the industry, from the chefs to the waiters to the managers; some of whom have been there over 30 years. They all share Connie and Michael’s vision and trust one another to execute that vision flawlessly. As a result, the food and the service are impeccable.

As the oldest Italian restaurant in the city of Philadelphia and the country, Dante and Luigi’s longevity and success continue to flourish. Its reputation for consistently outstanding food is spread locally and nationally mainly by word of mouth. Connie recalls many customers coming in for dinner because Dante’s was so highly recommended to them while on a flight to Philadelphia. It is a favorite spot for celebrities, athletes and politicians, but you would never know it, because the LaRussas respect their privacy and want everyone to simply feel “at home” when they eat at their restaurant. They have “regulars” who enjoy lunch every day and Connie can even name a few customers who have been coming in for over 70 years. In the heart of the Italian Market, Dante and Luigi’s has seen the neighborhood surrounding it go through many changes. Presently Bella Vista is experiencing a revitalization, as developers realize the value, convenience and charm of this close-knit area. East Passyunk Avenue is exploding with trendy restaurants and hipster bars. But through it all, Dante and Luigi’s not only remains true to itself, but truly REIGNS, living up to its name, Corona di Ferro, the Crown of Iron. Mustard Greens Chinese Restaurant in Queen Village will be celebrating its 25 year anniversary this coming Fall. That fact, alone, is reason enough to eat there, (if you haven’t already,) but if you need more convincing, read on. Chef Bon Sui opened Mustard Greens on South 2nd Street in 1992. He’ll be the first to admit he was nervous and scared. The area was quiet and dark, far from the bustling neighborhood it is now. “I wasn’t sure how successful my restaurant would be, but I needed to work, so I went for it.” 25 years later, the nerves are gone. Bon attributes Mustard Greens’ longevity and success to his loyal patrons and his dedicated team, or rather, his Mustard Greens’ family. Mustard Greens offers a contemporary take on Chinese cuisine. The signature dishes are prepared from original Cantonese recipes with only the freshest ingredients. Chef Fuan Chan has been creating the delicious entrees for 23 years, and servers Ming Chew and David Tran have been presenting his creations to customers for over two decades. These four gentlemen have shaped Mustard Greens into the intimate and award winning restaurant it is today. Whether you’re up for traditional Chinese cuisine like steamed dumplings, Cantonese wonton soup or its namesake, mustard greens, or perhaps you want to try fire cracker pork or lamb chops, Bon and his team will not disappoint. The restaurant offers a full bar and can host up to 40 people on the

second floor for a unique private party, complete with a 65 inch TV and private bar. In addition to the delicious cuisine, there is a comfortable coziness about Mustard Greens that makes every meal that much more enjoyable, whether you are one of their regulars or just experiencing the restaurant for the first time. The family atmosphere Bon has created for his employees is shared also by his customers. David reflects on his time at Mustard Greens, “Happiness is having a boss like Bon, a boss who offers you food and drink, a boss who encourages camaraderie.” Ming added, “It is like a brotherhood, the bond between us.” Walk past Mustard Greens around 10pm any evening and you’ll notice the same scene: a table of employees, who are even better friends, sharing a feast. Fresh, savory dishes -- spicy pickled mustard and cabbage, chicken with shiitake mushrooms, beef with black beans, barbecue spare ribs and seasonal soft shell crabs. Bottles of red wine and an abundance of laughter top off the nightly celebration. Many strive to attain happiness and fulfillment at work; Bon and his team at Mustard Greens have succeeded in this mission.

Ingredients 2oz Effen Raspberry Vodka 1oz Raspberry Puree Top with Berrits Ginger Beer Lime wedge

Instructions Muddle berries, sugar in the raw, lime, and dash of simple syrup, Add rocks and then Cacahca, SHAKE dump in a rocks glass over ice

Instructions Muddle raspberries in a base of shaker. Add next three ingredients, shake with ice and fine strain into ice-filled glass. Top with ginger beer, lightly stir and serve with straws. Garnish with lime wedge.

PERFECTING THE INSTITUTION How one family transformed Rexy’s from neighborhood staple to a premier restaurant Successfully preserving the old and bringing in the new is much easier said than done. All too often, we see lauded and treasured restaurants transformed into a bastardization of their former selves by reckless new management. It takes patience and dedication to transform a hallowed tradition into a new favorite, something which the Lembesis family has executed flawlessly in Rexy’s of Collingswood Heights. You don’t have to look too far to find the evidence of their success, it’s right there in the people. The chef making the pizza, for which they are most famous, has been working there for over forty years, and the chef making the dough, over fifteen. Likewise, many of the servers have been there for

over twenty years. If their tenured staff with hundreds of years of combined service to Rexy’s don’t convince you, the regulars will. Many of the long-time servers continue to host the same guests from the ‘old’ Rexy’s who themselves, have been regulars for decades. They all love it. Top to bottom, everything that made Rexy’s special has been perfectly maintained. But it’s not enough to preserve the good, great change is about adding value. The first and most obvious testament is the restaurant itself. The restaurant was originally built in 1943, but it had burned down in 1975. Since then, it hadn’t gone through a major renovation in over thirty years, so it was desperate for a makeover. “We completely gutted it, brought it down


to the studs and put in a brand new everything,” says Pete Lembesis. The restaurant is bright and warm, but retains the classic vibe you’d expect for a neighborhood institution. There’s also a subtle homage to Rexy’s origins in the form of the original wooden doors hanging in the dining room, adorning a lovely fireplace. The menu also went through a deserving transformation. Angelo’s Fairmount Tavern Could anyone ever doubt the quality and distinction of a restaurant that has thrived over 80 years? Absolutely not and Angelo’s Fairmount Tavern in Atlantic City will deliciously prove it. Located in the same location in the Duck Town section of Atlantic City, Angelo’s truly represents what it means to be unflappable. Through almost a century of drastic changes in Atlantic City, from America’s beach playground to America’s gambling mecca to a financially struggling economy, Angelo’s has remained steadfast through it all, providing its clientele with consistently excellent home-made Italian food that never ever goes off trend. Owner Angelo Mancuso III is the third generation of the Mancuso family operating the business. He recalls when he and his four sisters had sleep-overs on the second floor of the restaurant, where his grandparents used to live. Since then, the restaurant has undergone extensive renovations and includes a large banquet room and

several smaller rooms for private parties but it hasn’t lost its oldworld charm. The atmosphere is reminiscent of old school Italian restaurants, complete with exposed brick walls and red-checkered table cloths, an environment as comfortable for families as it is for a romantic dinner for two, sharing a bottle of red. But all the charm in the world will get you nowhere, without the food. Angelo’s has been delighting customers with its menu since 1935. Head Chef Gregory Montgomery was hired by Angelo’s grandmother over 25 years ago, a strong hire, to say the least. Chef Montgomery’s lobster ravioli is a favorite, along with such Southern Italian staples as chicken marsala, eggplant rollatini and steak pizzeola. The secret, everything is made from scratch. The Mancuso’s have stood for the definition of homemade. “What makes us different is the fact that we prepare everything ourselves. We actually grind our Parmesan cheese, we make our own breadcrumbs, we do our own meatballs, we make our sauce every day,” commented Angelo. He added, “We don’t have things made elsewhere and brought in for us.” Whether you are in A.C. for a night on the town, or even if you are a home-grown local, you will always feel welcomed and at home at Angelo’s Fairmount Tavern. REDEFINING THE AVE How Chick’s is Single-Handedly Transforming West Washington Ave Among block-after-block of construction suppliers and home furnishing showrooms, lives one of Philly’s newest gems. It’s possible you haven’t noticed it, simply because it’s hiding in plain sight. Right under your nose, on the 1800 block of Washington Ave, Phillip and Gina Narducci are bringing the city’s best in comfort food and good vibes to an area of the city where it is most sorely needed. You walk inside Chick’s and immediately you know the building has undergone an enormous transformation. Perhaps the only artifact of its previous layout is the large bay door that opens up into the main dining room, creating the feeling of al fresco dining with none of the noise. The design of the restaurant is open and exciting, with chic booths and a hip bar surrounding plenty of table seating where old friends meet up and new friends are introduced. The patrons, the staff, and the entire vibe is just as inviting as its design. You’ll most likely find the food equally inviting too, if not downright tantalizing. Chef Fred Ryan has designed a menu that plays to our treasured tastes but also one that begs you to try something a little different. The Pho Mussels in a lemongrass

beef broth with bean sprouts, Thai basil, jalapeno, and sriratcha butter or the Old Forge Pizza with mashed potato, mozzarella, fontina, sour cream, red onion, scallion, and chive definitely fit the bill. For those of us that want to sink back into an old favorite, Ryan whips up a Rigatoni Bolognese or a Shrimp Scampi that can go toe-to-toe with the best of them. Where others have tried and failed, Chick’s will surely succeed. Guests can find a bustling dining room any night of the week, especially if there’s a game on. Moreover, it’s seemingly becoming a neighborhood favorite almost overnight, cultivating a following of dedicated regulars with unparalleled speed. The West side of Washington Ave has been starving for this sort of revitalization as long as anyone can remember. Let’s hope that the Narduccis are the first of a long line of pioneers that will re-define this area of the city. While it’s true that there’s hardly any neighborhood competition immediately surrounding Chick’s, they can still throw down some of the best food in the entire city, giving any restaurant a run for its money.

The Neighborhood Restaurant our City Deserves SouthHouse’s New American Cuisine is Destroying the Stereotype of the ‘Neighborhood Restaurant’ Camouflaged by a humble exterior just north of Oregon Ave, SouthHouse is the neighborhood destination you always wish you had. The inside is bright, clean, and open, a far departure from the ‘divey’ appearance of most other bars and restaurants in the area. The open kitchen and a long inviting bar frame a dining room overlooked by a colorful chalkboard highlighting the day’s menu specials and draft beer. It’s simple and neat, but don’t be mistaken, people don’t come here for the ambiance, they come for the food and fellowship. While the interior is a little understated, the food is anything but. Owner Thom Sueta leaned on the expertise of Chef Beth Esposito, consultant/owner of Pink Garlic, to help craft his menu concept and then take it to another level. ‘Shareables’ like the Piggy Back Bread cram every hallowed flavor of South Philly into one mountainous, mouth-watering plate with house roast pork, chopped long hots, melted provolone all stuffed into a fluffy bread loaf that’s soaked in natural jus. There’s also solo-entrees for the covetous foodie, like the equally delicious SouthHouse Burger with arugula, goat cheese, bacon, smoked paprika honey glaze, and roasted shallot mayo.

Another rare feature of the menu design is that it can accommodate any taste or dietary restriction with a seemingly endless array of choices. Aside from the tantalizing vegan and vegetarian options, there’s a whole host of offerings that are either gluten free or can be prepared as such. Finally for those impossibly finicky eaters (yes, we all know one) there’s an entire section of the menu where you can build your own entrée based on six expertly crafted dishes including a Cold Noodle Bowl, Spaghetti Diablo, and the all-time favorite Taco Cart. The food is always crowd-pleasing and consistent, and just like every great restaurant, the hospitality mimics the cuisine. Thom and his staff ensure that every single one of his guests feels that his restaurant is an extension of their own home. You’ll never experience that record-screeching awkward moment of realizing you’re the only stranger in the room because even strangers are treated like family here. For all of these reasons and many more, SouthHouse is not only the prime example of what a neighborhood restaurant should be, it transcends that mantle entirely. Although casual and inexpensive, Eatalia is authentic. It was opened in 2012 by the manager of Il Cantuccio, a popular Italian restaurant in Northern Liberties. Frank spent six years working at Old City’s Trattoria del Ghiottone, followed by eight years managing its then-sister restaurant, Il Cantuccio in Northern Liberties. Crocetto enlisted former co-worker Ernesto Lima as chef, and they’re executing a slightly more expansive menu of easy-priced favorites now.
