Wow Philly, what a year! Our Eagles won the Superbowl, the Sixers were in the play-offs, Villanova took it all again and our Phillies, who’d a thunk, are in First Place!!! Celebrating Over 50 Years in Philadelphia, The Saloon Proves Silence is Golden

The more things change, the more they stay the same. Never has this sentiment been more apropos than when talking about The Saloon in South Philadelphia. Everything about this high-end Italian restaurant points to family, tradition and excellence. In celebration of The Saloon’s 50th Anniversary, J’eat Magazine sat down with the owners, managers and staff to reminisce and uncover what makes The Saloon the quiet giant that it is. The Saloon is the love child of three brothers, Charles, Richie, and Bobby. In 1967, twin brothers Richard and Bobby, purchased the old neighborhood bar on the corner of 7th and Clymer, just below Fitzwater Street. Their older brother Charles, a successful artist, book illustrator

and antique collector, acted as an advisor. As a gift, Charles gave them his huge antique National Cash Register to display in the restaurant, and the rest, as they say, is history. In the beginning, they served mostly hamburgers and .40 cent martini’s with Bobby’s idea of showing old movies on Tuesday nights that brought throngs of neighborhood folks lining-up outside. With their success, Richard and Bobby expanded to the second floor, taking over the painting studio of their youngest brother Joe, and eventually purchased the building next door. Today the meticulously maintained restaurant houses dozens, maybe hundreds, of authentic antiques and paintings, many of which were created and/or selected by Charles and most with historical links to the city of Philadelphia.

Most restaurant articles go into great detail describing the delicious menu, the beautiful ambiance, and the vibrant clientele, which all perfectly applies to The Saloon. But what stood out most to this writer was the palpable love and respect these restauranteurs have for one another. Owner, Bobby Santore died in 1978 at the young age of 40 but his influence and impact on The Saloon and its long time employees can be heard and felt in everything they say and do. Bobby was handsome and congenial, the prolific “man around town” who loved his customers, staff and neighborhood. His son Mark, now one of the managers of the restaurant, remembers huge picnics that Bobby and Richie would host for staff and friends of the Saloon in Bucks County. They would


Bobby Santore actually rent busses to transport family and friends to the celebration, and hire refrigerated trucks to transport the picnic fare, which was mostly Saloon specialties, definitely not your average barbecue. Bobby’s son Mark started working at the Saloon in 1994, after his brother, Frankie, also sadly passed at a young age. “Like our dad, Frankie was born to manage this place, really the perfect fit. When I came onboard, I just wanted to maintain the excellence that both my dad and my uncle achieved for this place.” Mark added, “Really, I’m just lucky to be where I am. They did all the work.” This humility resonates throughout The Saloon. It has never been a bragga-

docious or trendy establishment. Owners and management were never pressured to stray from what has worked for fifty years, excellence, plain and simple. The owner is known as a man of very few words, but ironically, he is always heard, loud and clear. Joe, the youngest of the Santore brothers and a successful artist living in New York, describes Richie as a listener, an observer and above all, a patient man. “Humility allows you to learn, that is a strong belief of my brother,” commented Charlie. Once a martini drinking regular mistook the owner for a member of the cleaning staff. He actually offered him a job cleaning his place of employment. He never corrected him, just politely declined,

saying he appreciated the offer but was really happy where he was. The owner’s respect for his customers is apparent in the meticulous care he takes of The Saloon, cleaning and polishing continuously. “If I stood still long enough, someone would dust me!” joked his nephew Mark. This personal pride is hard to come by and a dying art form. The Saloon is also known for the long list of celebrities, politicians and athletes that frequent the restaurant when they are in Philadelphia. Tony Bennet, Charles Barkley, Joe Biden, Billy Joel, Mickey Rourke, Mark Wahlberg, the list goes on and on. The reason for this, according to Joe, is these stars know their privacy will be

respected. Their presence there is usually kept quiet and they are treated like every other customer who simply wants to enjoy a delicious, authentic Italian meal. Charlie recalls the story of when the restaurant received a phone call letting him know that Frank Sinatra and Dean Martin would be stopping in for dinner. The response, “No disrespect, but can you take them somewhere else?” No fuss, no spectacle, just good food. Finally—let’s talk food. The Saloon does not stray far from what it does best. Most of the authentic Italian menu was created by Chef Bruno Scarsini who was there for over 20 years. Today, the Lobster Francaise sautéed in white wine, lemon and butter with lump crabmeat; the Filet Moda, tenderloin of beef encrusted with coarse black peppercorns in a creamy cognac mustard sauce and the Clams Pavarotti, featuring clams, shrimp and

lump crabmeat topped with béchamel sauce, really haven’t changed much over time, because you simply cannot improve perfection. The passing of time does not change the dining experience that is The Saloon. Whether it is the menu, the staff or the décor, consistency and loyalty remain. Bartender Anthony Cardullo has been with the Saloon since 1993. He met his wife Laura while she was working there as a waitress. Longtime manager, Thomas Cross, aka Tucker, has been at The Saloon since 1969. Downstair’s Bartender Frankie “Chadman” Rotonda started in 1974. Fifty years, twenty-five years—these time frames are unheard of in the ever changing restaurant industry. But the people who work at the Saloon are part of a family--a large, eclectic, artistic and loyal family. Anthony commented, “I love my job, it doesn’t feel like a job, I truly enjoy

coming to work every day. Who else is lucky enough to say that?” The Saloon truly encompasses all that is unique in the City of Philadelphia. Its historical significance, the loyalty of its characters, and the reputation of its cuisine all come together in such a way that diners realize they are in for so much more than a delicious meal. Fifty years ago, the Santore Boys decided to open a bar in South Philly. The rest, as they say, is history.. With Managing Partner Rich Furino of Taphouse 23 How did you get started in the restaurant industry? I really didn’t have much of a choice. My mother and father had a restaurant, as well as my aunt, who we lived right next to in Hoboken, NJ. We also owned a hot dog truck about two blocks from the Holland Tunnel that my brother still operates to this day. It has been opened 60 years on the same corner. I am born and raised in Hoboken and very proud of it. Do you have any formal culinary training? I graduated from The Restaurant School in Philadelphia in 1986. I met my wife while I was here and remained in the King of Prussia area. At 27, I started my own business Furino Catering. I had many corporate clients which was difficult and three young children. In 1998, while making a catering delivery, I saw a sign for the opening of Sullivan’s Steakhouse in KOP. I pulled over, went in, and started as a waiter. Twenty years later, I was Regional Vice President of Operations for Del Frisco’s. Why make the switch to Taphouse 23? In my last year at Del Frisco’s, I spent over 200 nights in a hotel. My kids were getting older, my parents are getting older, and the corporate structure at DelFrisco’s was changing. My good friend Gary Johnson, owner of TapHouse 23,

wanted me to help him out for a long time and offered me a partnership and a golden opportunity. The timing of it all was perfect. How would you describe Taphouse 23? We are like a “Transformer” but of a restaurant. We can be your favorite sports bar, gastro pub or Italian pizza kitchen. We have live entertainment on the weekends and even an oldies dance party on Wednesdays. So what does a sommelier know about craft beer? I taught myself real fast! I knew I liked to drink beer and that was about it. Between reading books, researching on-line, taking a crash course and doing a lot of tasting, I now have a new respect and understanding for the craft but I’m still not a beer snob. What is your favorite craft beer? We have 36 taps, six will be recognizable to the average beer drinker. My favorite right now is out of the Sterling Pig Brewery in Media, Pa., the Notorious P.I.G. How would you describe your menu? I like to use the word “Cravable.” My customers will drive a long way for our unique and creative spins on comfort foods. Our wood-fired pizza selections are amazing. Our burgers are made of

brisket, chuck and short-rib. We use filet mignon on our steak salad, not flat iron steak. Our Fat Slab appetizer is off the charts. It’s a thick pork belly bacon slab with a bourbon citrus glaze. We have a great selection of seafood including beer mussels and crab cakes. What is your favorite pizza? Our Carbonara pie is my personal favorite. It is made with bruschutto and sweet peas with a cracked egg on top. Any future plans for Taphouse 23? Right now, we are creating our Fall/Winter menu featuring local seasonal specialties. Then we’ll switch to our Spring/ Summer menu to keep our customers surprised but always satisfied. I also plan to expand our on-site and off-site catering menu. We have a beautiful room upstairs that seats 60 people for a private party, as well as a cozy outside patio that is perfect for a wedding or large celebration any time of the year. Could you see yourself in any other type of occupation? Growing up, I had two brothers and I was the chubby one. They would lovingly tease me to get me to stop eating so much and my mom would yell, “Let m’eat!” Today that’s on my license plate, cause that’s what I love to do!

Ingredients 1 1/4 cup all purpose flour

6. Roll cookie dough into 3� shell and bake for 20 minutes

Method 1. whisk together sugar, flower and cornstarch, salt and egg until smooth

1/4 cup granulated sugar

7. Taker out of the oven and cool

2. in sauce pan bring milk to a boil

1/2 tsp salt 1 large egg

Banana Cream Filling Ingredients 1/2 cup sugar

1/2 tsp vanilla extract

2 TBS all purpose flour

1/2 cup or 1 stick cold butter

2 TBS cornstarch Method 1. creme and sugar until creamy

1/2 tsp salt

2. add salt and egg with vanilla extract

2 cup whole milk

3. then add flour until forms dough

4 oz cold butter (softened)

4. wrap in plastic wrap, place in refrigerator for 30 minutes

2 tsp vanilla extract

2 large eggs

3. gradually add hot milk to the egg mixture, stirring constantly 4. return egg mixture to sauce pan until it thickens 5. remove the pastry cream from the heat and stir in extract and butter 6. place the sliced banana in the bottom of the backed tart shell, and pour pastry cream on top until it fills up the shell 7. let it cool for 30 minutes, place sliced bananas on top

The Farmhouse Local, Seasonal, Sustainable The Farmhouse was built in 1859 as – well – a farmhouse in Cherry Hill, NJ. Seeing its potential as more than just a home, it was eventually transformed into a restaurant. The authentic farmhouse was home to La Campagne, for 25 years, closing its doors in 2012. Although casual and inexpensive, Eatalia is authentic. It was opened in 2012 by the manager of Il Cantuccio, a popular Italian restaurant in Northern Liberties. Frank spent six years working at Old City’s Trattoria del Ghiottone, followed by eight years managing its then-sister restaurant, Il Cantuccio in Northern Liberties. Crocetto enlisted former co-worker Ernesto Lima as chef, and they’re executing a slightly more expansive menu of easy-priced favorites now. The same menu is on for lunch and dinner, showcasing house specialties like the Black-and-White Sesame-Encrusted Tuna served with an orange Triple Sec glaze.
