The art of elevated tablescapes Tori Falzon is a trained chef and nutritionist turned recipe developer and social media personality. Under her brand, ‘Into The Sauce’, Tori shares her tried and tested recipes, her design approach, and her personal style. Tori shares with us her tips on how to create an elevated tablescape, as well as a recipe for a bright and tasty cauliflower and pomegranate salad – the perfect side dish during your days of entertaining this summer.

As an ex-chef turned home cook with a keen eye for aesthetics, my approach to styling a tablescape blends creativity and functionality. The presentation of a table isn’t just a backdrop for food but a way of evoking a special evening, weaving a narrative through every element and leaving guests with memories of a thoughtful, joyous occasion. When styling a tablescape, my goal is to create something visually cohesive that complements the occasion. Whether it's a small group for pizzas or a big celebration with pasta and roasted meat, the table sets the tone. I love the cosiness of dining indoors, but in summer, warm nights outdoors with friends or family are unbeatable. In summer, I embrace lighter dishes that showcase fresh produce, like vibrant salads, grilled vegetables and seafood pasta. I choose dishes based on more than taste; presentation makes

cooking exciting. Pinterest is a great source of inspiration I look to for ideas on how simple foods can be made more aesthetic.

I enjoy playing with contrasts when working on a tablescape, whether through an eclectic collection of glassware or mismatched yet curated serving pieces. Purchasing the same glassware in different colours allows for versatility in creating new tablescapes. I adore serveware, and how a beautifully crafted bowl or platter adds character, elevating a tablescape beyond the ordinary. Layering linens adds texture and interest. Unless it’s a casual barbecue or pizza night (paper towels), linen napkins are essential for the depth and colour they add. Personalisation through DIY place cards, especially using watercolour paints, is a fun creative outlet appreciated by guests.

For those aspiring to cultivate a distinctive style, seeking inspiration from TikTok can be fruitful. I often discover new serveware or tablecloth ideas, and TikTok gift guides are a great way to discover new brands. Confidence in styling comes from understanding preferences and experimenting with various elements. Start small, repurpose items at home, and remember trends move fast; you might look at something dusty at the back of your cupboard with new eyes.

My favourite brands for tableware include Dinosaur Designs, Alex & Trahanas, In The Roundhouse, and Hay Design. Somewhere that inspires you? New York is my favourite place on earth - the food, the fashion, the shopping - everything! Someone who inspires you? My grandma is an incredible cook and the way I was raised, eating multiple family dinners at her house each week around a large, beautifully dressed dining table, is everything I want to give my family. Favourite three ingredients to work with?

A quality dried pasta is a staple ingredient in my home many nights a week, I’m a big fan of butter, and Parmesan works it’s way into most of my recipes in one way or another. Something you want to do more of this year?

Tori’s Roasted Cauliflower, Pomegranate & Feta Salad Ingredients:

Method:

– 125g pearl couscous

1.

Cook pearl cous cous according to packet instructions and set aside.

– 1 large cauliflower, cut into florets

2.

Preheat oven to 200°C.

3.

Toss cauliflower in olive oil with a generous pinch of salt.

4.

Spread on a lined baking tray and roast for 20-25 minutes until golden brown and tender, then set aside to cool.

5.

Prepare the dressing by whisking all ingredients together until smooth, then season to taste. Set aside. You may need to whisk in up to 1/3 cup water to get it to an ideal dressing consistency prior to serving as it will thicken once it’s mixed up.

– 2 cups loosely packed fresh mint leaves, chopped

In a large bowl, combine pearl cous cous, cauliflower, pomegranate, feta, almonds, chilli flakes (optional) and mint.

For the dressing:

Drizzle over the dressing and gently toss until combined.

– 60g tahini

Serve scattered with extra mint and a sprinkle of sumac

– ¼ cup extra virgin olive oil – 1 pomegranate, seeds removed – 200g Greek feta cheese, broken into pieces – ½ cup almonds, toasted and chopped – 1 tsp chilli flakes (optional)

– 2 tablespoons extra virgin olive oil – Juice of 1 lemon – 1 tbsp honey – 1 tsp sumac

The home & interior trends to know in 2024 Sophie Lewis Editor at est living

We’re delighted to have Sophie Lewis, Editor at renowned design authority and publisher est living, guest write for In Focus. Here, Sophie explores the eight overarching themes observed at this year’s Milan Design Week and Salone del Mobile that will inform home and interior trends in 2024.

Nature The fair revealed nature was a constant source of inspiration for the design of furniture and objects and how they were presented, as seen in furniture designer La Manufacture’s exhibit, which featured floral arrangements and nature-inspired soundscapes and scents.

Colour Rich and vivid colours characterised this year’s Milan Design Week and Salone del Mobile, specifically red; a hugely symbolic colour across multiple standout exhibits. Fashion brands helmed the exploration of colour, such as LOEWE. Their exhibit showed the humble stick chair transformed by colour and texture through the artistry of weavers and artisans. The use of colour, texture and metallic surfaces was also nostalgic for the 1970s. Prominent furniture brands re-released iconic products in their original colours, such as the Zanotta multi-coloured Sciangai 50 coat stand – originally sketched as multi-coloured in 1973 – and only just released in these colours fifty years later.

Brutalist A stripped-back, Brutalist thread defined certain spaces and objects at this year’s Milan Design Week and Salone del Mobile. Australian lighting designer Henry Wilson was one of 20 designers to reveal his lighting in a deconsecrated church, while fellow Australian designer Tom Fereday presented his Cor light collection – large sculptural lamps carved from travertine. Travertine has been a clear material of choice in recent years, but the fair indicated it was still a go-to for designers in Milan in 2024 and beyond.

Freeform Organic-shaped rugs typified the theme of ‘freeform’ at Milan Design Week and Salone del Mobile, such as English designer Faye Toogood’s celebration of Henri Matisse’s work through a curvacious and, at times, playful furniture and rug collection.

Quiet materiality was further highlighted in a strong sense of social responsibility as designers demonstrated a move towards a more sustainable way of production and the value of craftsmanship.

Exhibitors at this year’s Salone del Mobile placed almost equal importance on their outdoor furniture range and maximising a home’s connection to the outdoors. Some brands also translated popular indoor designs into outdoor counterparts, and the biennial Euroluce lighting event saw more portable lighting than ever before, further leaning into the idea of ‘indoor-outdoor’ living.

Beyond colour, a moodiness pervaded several installations during the design week, where dark and deep colour palettes enveloped spaces to create a sense of arrival and a feeling of ‘exhale’.

There was a clear renaissance for glass and resin across furniture, lighting and accessories at Milan Design Week and Salone del Mobile, led by Italian designers such as Draga and Aurel.

The theme of quiet materiality through Milan Design Week and Salone del Mobile reflected how materials could be expressive and, at the same time, quiet and neutral. This extended to the new lighting releases and a consistent theme of diffused light; materials such as ceramic or paper creating a soft, ambient glow.

My Neighbourhood with Adam Dureau

Tell us about how or why you got started in real estate? I was leaving my corporate role after 19 years and was looking for a new challenge. I chose real estate as I had been approached by a number of local agents over the years asking if I had any interest to work with them, and after a lot of travel in my previous role I wanted to work locally where I was connected to the community and people. The Jellis Craig Mount Martha & Mornington group has recently joined Jellis Craig, tell us about the impetus for this change and your plans for the future.

After 7 years in the industry and working primarily as an independent agent/agency, we were keen to join a strong premium real estate network to assist with our growth plans. What's one piece of advice you would share with someone that is just getting started in real estate.

It’s important to be patient and understand that it takes time to break into an area where there are already established agents. I believe things come back to you if you do the right thing by everyone. Offer unconditional support and advice to everyone that needs your assistance and play the long game. You might not get an instant win, but clients will remember later on who was helpful, honest and supportive. What is the last book you read or podcast you listened to that you enjoyed? I am currently enjoying Joel Selwood’s autobiography ‘All in’. I admire his commitment and passion as an AFL Player. What do you love most about the area of Mount Martha and Mornington? How has the area changed in recent years?

We sat down with Director Adam Dureau, to talk about his ambitions for joining the Jellis Craig network and to learn more about living and working in the area.

What’s not to love! Amazing beaches, cafés, restaurants and so much to see and do. Recently more and more people have been moving into the area from other parts of Victoria, and it’s great to be able to point out the amazing possibilities the Mornington Peninsula has to offer. Tell us about a typical Sunday. A typical Sunday for me is going out for a bike ride with friends and then spending the day with my family. We don’t need to do a lot, just spending time together is what I appreciate.


If you had a friend visiting from interstate, where would you take them... FOR COFFEE I frequent many coffee shops in the area. I might get in trouble here if I call out anyone special!

FOR AN ACTIVITY I love to exercise, and we have so much choice from our amazing beaches to running and bike routes.

FOR DINNER Volpino in Mount Martha, Squires Loft in Main Street, Mornington and Doppio Zero in Moorooduc.

I like to train and keep fit. I have completed several Ironman events over the years and look forward to continuing to maintain my fitness to keep competing. Tell us about ‘home’. Home for me is a place where I can spend quality time with my wife Jacqui, daughters Lily and Ava and our King Charles Cavalier, Archie and Cavoodle, Florence. I feel lucky to have a supportive family that allows me to perform at my best for my staff and clients.

Recently more and more people have been moving into the area from other parts of Victoria, and it’s great to be able to point out the amazing possibilities the Mornington Peninsula has to offer.
