AMINIATURE SWISS VILLAGE with a six-foot-tall tree artfully studded with 1,200 macarons. A spherical chocolate display with 65 pounds of dark, white and milk chocolate. A replica tenor saxophone with a musical staff that seems to gush out from its horn made entirely from chocolate. These fantastical dreamscapes of sugar and butter are conceived not by the likes of dessert designer Willy Wonka, but instead by The Boca Raton’s own Stephen Day, a master pastry artist whose nearly 26-year career on the property has seen countless edible displays that awe, inspire and whet palates.

“I’ve learned to always push the envelope,” Day says of his imaginative designs. “Whatever you did before, just do better. Don’t be afraid to work outside the box.”

These days, Day is adding another impressive element to his already illustrious pastry career. From the confectionery store Maison Rose, Day and his team are creating custom cakes to celebrate an array of occasions, including birthdays, anniversaries, parties, and everything in between. Designed with timeless elegance in mind, these cakes can be ordered directly from Maison Rose by Club members and hotel guests, and will be delivered by Boca By Design. How sweet it is.
