Government urged to reconsider as HMRC suggests furlough pay will not include tronc According to a government spokesperson, the 80% of average wages the government will cover for furloughed workers through the coronavirus job retention scheme (CJRS) will not include tips, tronc or service charge.

UKHospitality chief executive Kate Nicholls said the decision was “disappointing” and urged the government to reconsider. She said: “It is incredibly disappointing that the government has seen fit to exclude tronc payments from people’s earnings. HMRC will have evidence that employees are paid tips through a tronc, so there seems no reason not to include it in the Job Retention Scheme. “This is taxable income that team members have earned. Excluding it from the scheme means that furloughed employees will receive less money to see them through this crisis. Money they should be entitled to. “Hospitality employees put in a huge amount of hard work to earn their tips, often going above and beyond to give customers a fantastic experience. At such a difficult time for the country, people’s hard work should be acknowledged, and those people should be supported.

4

“Not doing so only risks putting additional, unnecessary pressure on the welfare system. “Hospitality businesses are doing their best to support employees during extraordinarily difficult times. But with zero revenue and persistent demands on cash from landlords and others, there is only so much they can do. Including tronc payments in the Job Retention Scheme would give more people some much-needed support, and we hope the government reconsiders.” Government guidelines published last week suggested employers could claim for any regular payments they are obliged to pay employees, including wages, accrued overtime, fees and compulsory commission payments. However, discretionary bonuses (including tips), commission payments and non-cash payments were excluded. But questions were raised over service charge and tronc which go through the PAYE system.

A spokesperson for HMRC said that currently, tronc is not eligible to be part of the scheme, as a form of paying tips. Further guidance has not yet been published. The furlough scheme was introduced by chancellor Rishi Sunak to cover 80% of the wages of workers whose jobs have all but disappeared during the lockdown put in place following the coronavirus outbreak. Grants to cover wages will be backdated until 1 March and will be available for at least three months from this date. Sunak said there would be no limit to the amount of funding that will be available via the scheme as he unveiled what he called “unprecedented measures for unprecedented times”. The scheme is believed to have saved thousands of hospitality jobs, however employers are still awaiting details of the policy and a concrete timeline of when funds will be received.

Independent Hotel Show 2020 forced to cancel IHG’s Hotel Indigo recently launched a new initiative to allow travellers to unlock the best experiences in Hotel Indigo destinations. To explore more, editor Hamish Kilburn caught up with Meredith Latham, Vice President Global at Hotel Indigo and Henry Reeve, the brand’s Head of Design… The Independent Hotel Show Amsterdam 2020, which was originally due to take place in March 17 – 18 but was then postpostend until June 24 – 25, has now been cancelled due to the coronavirus outbreak. In a statement, the show organisers said: “It is with deep sadness and heavy hearts that we must inform you that, due to the ongoing coronavirus (COVID-19) pandemic, Independent Hotel Show Amsterdam 2020 is cancelled and will no longer take place on 24-25 June at RAI Amsterdam, as planned.

“We hoped that postponing the event until June would have provided enough time for life to return to normal, but unfortunately this has not been the case. We understand the significant impact coronavirus (COVID-19) is having across the entire hotel and hospitality industry and offer our support in these challenging times. “Please rest assured that all paid for tickets will be refunded in due course so please bear with us as we get these processed. We are truly in awe of the resilience, innovation and kindness that we have seen by so many within our industry.”

In order to keep in touch with its audience, the show has said that over the next few months, it will be sharing stories from suppliers and hoteliers that are thinking differently and offering advice on how to stay ahead in this current climate. In addition, on June 24, the date Independent Hotel Show Amsterdam should have taken place, the event will be running a free one-day online webinar series, featuring many of the speakers who were due to speak at the event. Bill Bensley has designed a ‘human zoo hotel’ concept Architect Bill Bensley responded to a hotel brief by designing a hotel where guests are caged while wild, exotic animals roam free Known for his bohemian and brilliant ideas when it comes to sustainability, architect Bill Bensley has perhaps new creative heights by designing a concept to flip the idea of a zoo on its head, allowing animals to run free while humans in put in cage-like rooms. CNN reported that the first phase of the eight-year WorldWild project, which will consist of several different top branded hotels, is slated to open in as early as 2023. The ‘human zoo’ hotel concept, which will be targeted to luxury travellers who are seeking for unparalleled

6

experiences, will shelter 2,400 ‘human cages’ that will actually look more like high-end, design-led guestrooms that frame an uninterrupted and uncorrupted view on natural the wildlife below. The site where the hotel is being conceived is situated on a 2,000-hectare plot, which will reinstate wetlands to encourage biodiversity. With the concrete aim being firm to free wildlife from captivity, Bensley’s concept has recently reached a milestone, gaining approval from Southern China’s Communist Party to

relocate abused animals from zoos in the country, to be released onto the roughly 2,000-hectare piece of land where the ‘human zoo’ will be located. Bensley’s latest wild concept will give animals the luxury of 95 per cent of the land to roam about in, while humans will reside in just five per cent of the grounds in the hotel. Turning the Zoo concept on its head when designing a new hotel approach has raised further questions as to how hospitality can help to educate people on how to conserve areas that would not otherwise be protected.

Any equipment that processes water needs to be maintained at peak standards of hygiene to protect against contamination. Leaving a machine unused for extended periods with water in the system allows bacteria and microbes the opportunity to grow. Scotsman ice makers come in all shapes and sizes, from counter top units to huge systems capable of making hundreds of kilograms of ice a day, so following the instructions for your specific model is vital. The process for all of them broadly involves similar steps, including washing and sanitising the interior, draining out the water and disconnecting the machine safely from the water supply. However this process is different for every type of ice maker, and the documents provide a step by step, illustrated guide for every model. For example, counter top units are relatively simple, with a guide that is mainly a handy checklist of cleaning actions that need to be undertaken, like removing and sanitising the ice spout and drip tray. Larger units with integral plumbing involve more work, with the guides including clear information helping you to identify the correct tubes that need to be disconnected to allow a full drain down. The largest units are the most complex and the decommissioning process involves actively sanitising the pipes before the water supply is

The DUKES – royally British chips for first class fast food! If there’s one thing that defines being British more than any other, it’s a love of chips! Chips, wedges and fries make up 60% of potato servings out of home, accounting for the lion’s share of both value and volume. Most are sold through fast food outlets and pub restaurants1. So in fast food, QSR outlets or pub restaurants, chips are king, and not just any old chips will do; for this discerning nation of connoisseurs, the chips have to be tip-top! Distinctively natural, gloriously golden, royally rustic, thick-cut chips, made from 100% British potatoes - provenance matters, so it’s important to flag up Britishness on your menu. Some 29% of consumers agree that operators should put a greater focus on locally sourced products. The number of dishes that are described on menus with references to British regions has increased. Dishes with components described as British have the largest share, with 116 recorded by MCA’s Menu Tracker

– up from 102 last year (autumn/winter 2018 vs autumn/winter 2017)2. Amongst the greatest chips fans are pub customers; more than half (56.2%) of pub dinner occasions include chips, fries or wedges as a side and chunky, thick-cut chips are the most ordered potato product in pubs.3 In a consumer test, almost 40% declared their love of chips as a side, more than 60% said they prefer skin-on in a pub. And 35% prefer them plain, while for 26% loaded is the preferred serving option. A huge 72% are willing to pay a bit more in a pub for a British sourced product. The most important attributes of a chip, according to consumers, are: crispiness outside, cut size (thick), fluffiness inside, a hand-cut appearance, decent portion size and served up hot.4 Bring on The DUKES! Brought to you by innovative global leader Lamb Weston, The DUKES are set to take this chip nation by storm! These little beauties are irregularly cut, with feathering and golden edges to appear homemade and distinctive in character. Beautifully crispy outside –

The Room Bridgewood Manor has many different rooms available, from standard rooms all the way up to your own private suites. I was lucky enough to be given an executive room during my stay. The room was an excellent size, with twin or king beds, both were available. The room had character and came with its very own en-suite bathroom to the left as you walk in, the freefalling showers are the perfect way to wind down after the pool. It also has an extremely large work desk and satellite TV. I found the hotel room exceptionally clean and tidy. Each room offers complimentary Wi-fi to their guest, so a perfect destination for people on their travels or working away from home.

Broadview create stunning outdoor area at Chichester Yacht Club Outdoor shading specialists, Broadview, have worked their magic yet again by creating another stunning outdoor seating and dining area, this time for Chichester Yacht Club on the South Coast. With an already near perfect setting with beautiful marina views, the club owner wanted to make the outdoor experience even better for club members by creating an outdoor seating area that can be used all-year round. Broadview completed a site survey and following further discussion with the club suggested a B200 XL louvered-roof pergola from Brustor. Not only would this shading structure be large enough to cover the 12m x 4.5m space required, it also allowed for the installation of a number of accessories such as remote control LED lights and 2.3Kw heaters. It was essential to the client that the view toward the sea was not impeded in any way but with strong gusts from the ocean, some form of wind protection was necessary. Broadview installed one of their new frameless sliding glass panel systems along the front elevation to provide the perfect solution and designed bespoke planters in timber to match the clubhouse. The outdoor seating area at Chichester Yacht Club now looks better than ever and the client was incredibly pleased with the final result. Now members and visitors can make use of the outdoor seating area come rain or shine; the louvres in the roof can be rotated 180° between fully open and closed to give full control over shade, ventilation and shelter. The bespoke planters also provide a stunning visual impact and enhance the dining experience.

20

The B200 XL also comes equipped with an efficient water drainage system, which funnels rainwater down the legs of the structure to avoid pooling and damage. Now Chichester Yacht Club no longer has to worry about bringing terrace furniture inside during the more unpredictable winter season. Built using only the finest materials and craftmanship, Broadview’s outdoor shading solutions create a valuable, usable space to use all year round. To discover how an outdoor structure can help boost your business, please contact Broadview’s expert team on 01202 679 012 or visit www.outdoor-shading.co.uk where you can also view a video of Chichester Yacht Club’s new outdoor structure.

Here, he discusses how the hospitality industry will be rewarded for readjusting its view of sober customers, and how to make the most of the opportunity that comes with serving them with the same consideration as their guests that are imbibing.

26

With 1 in 5 adults identifying as teetotal and with even greater numbers choosing to reduce their alcohol intake, as an expert in premium non-alcoholic drinks, Morgan knows the value in targeting this demographic. ”By extending the already excellent hospitality we have in the UK, it makes perfect sense to be more inclusive to more guests by offering a variety of carefully crafted nonalcoholic drinks with intriguing flavour profiles. There is a growing demand, and, excitingly, growing options that will allow better choices for people choosing to moderate their alcohol intake. As the understanding and, most critically, acceptance of this new category increases over time, good quality and rewarding drinks will be sold at a similar price point to their alcoholic alternatives. It’s important that the industry remembers that it’s not just teetotallers and designated drivers who don’t drink, customers of all persuasions might wish to moderate with something more sophisticated than an elderflower spritz.”

Given this viewpoint, it is no wonder that consultant Morgan is working with emerging brands such as NINE ELMS. Fresh from a successful launch into the capital, the South London based drinks brand’s first drink, No.18, is forcing the industry to think past traditional non-alcoholic options and into a new era of truly inclusive hospitality. As Morgan puts it, “the evolution of vegan and vegetarian eating is a good example – 10 years ago, we couldn’t have predicted the progress in quality we have experienced”.

tested it with food and it’s brilliant,’ said Parkinson. ‘We are definitely going to be seeing more products like this.” With feedback like this, it is no wonder early adopters of No. 18 currently include the Michelin-starred Clove Club, as well as some of the capital’s most exciting restaurants and bars: Maremma, The Frog by Adam Handling, Berners Tavern and The Standard, London, where they serve NINE ELMS No.18 as the key ingredient in their No-Tai, a refreshing blend of NINE ELMS, almond and lime.

As the only non-alcoholic option available that drinks like a wine, No. 18, has been specially crafted from 20 different flowers, herbs and spices and the juice of 4 types of berry to create an experience on the palate that has good acidity and mouth-watering tannins but also remains full-bodied and satisfying in the mouth. A refined, adult option to the usual non-alcoholic alternatives, its complex taste profile truly bridges the divide between both drinkers and nondrinkers alike, providing an inclusive experience. Sommelier Wine Awards’ head of judging, Christine Parkinson, believes NINE ELMS have created something very different. ‘I’ve

NINE ELMS’s joint CEOs Simon Rucker and Zoltan SzucsFarkas are firmly looking to the future for non-alcoholic drinks, with Rucker suggesting that “although the ’zero proof’ (aka ‘No & Low’) category is in its infancy, we are seeing new drinks like NINE ELMS that don’t have an immediate alcoholic analogue. We are amongst a new group of drinks that sit in their own credible, emerging category of drink, not just the zero-proof version of an alcoholic version. Long term, a new 'third’ overall category of NA drinks for grown-ups will emerge and break the simplistic dichotomy of soft- and alcoholic drinks.”.

EAT. DRINK. SLEEP May 2020 The Hoxton Hotel Group has recently opened a new mixed-use development comprising a 192-bed hotel with boutique style co-working office spaces above. The Hoxton, Southwark is a redevelopment of former social security offices, located on the western side of Blackfriars Road in London. The Hoxton Group already have hotels in London, Europe and The USA and this latest London offering is designed with the same ethos in mind, to create vibrant spaces that are cosy, welcoming and a home away from home. Eurobrick has been leading the brick slip cladding sector for nearly 30 years and has extensive experience of supplying I-Clad for interior fit-outs in the hospitality and leisure sector. They supplied around 1570m² of their I-Clad brick cladding system, which is specially designed for interiors. Comprising a composite of a 12mm plasterboard panel with a ribbed skin bonded to it, fixings, adhesive, brick slips and mortar, I-Clad is an easy alternative to traditional masonry. I-Clad’s slim profile means that a real brick finish can be created with less intrusion to the interior floor space. St Ives Cream Rustica slips and corners from Eurobrick’s Classic range were used, complementing the loft style concept for the interior. St Ives Cream Rustica slips are a cut brick offering a blend of cream/grey hues with a tumbled, distressed finish. Eurobrick’s specially formulated Europoint mortar was chosen in white to finish. The end result is tactile, characterful and stylish, in keeping with the desired aesthetic.

Thinking long term can save restaurants time during busy days By spending more time on administrative tasks and longterm planning, research suggests that you can actually free up time. Research among owners and managers of independent restaurants highlights the crucial impact time has on all aspects of running a restaurant and how learning to think more long term and make better use of resources can improve your business. As a restaurant manager, every little detail needs to work perfectly when guests are lining up, and there are things you can do to improve efficiency in your restaurant. Research shows that managers suffer from heavy workload as well as a lack of control and planning. The research found that managers risk spending time on things that are not the most efficient use of their time, for example supervising staff to make sure they prioritise the tasks they are supposed to. Restaurants are shown to benefit from prioritising time management and making sure to use the limited time of both management and staff in the best way. This helps staff to focus on giving guests the best experience, and it also frees up more time for restaurant managers to focus on the creative aspects of running a restaurant and improving their business, such as serving great food and growing sales. One way to plan longterm is for example to find the right solutions for each specific restaurant which will result in a better workflow. Taking limited time into account To ease the workload for restaurants and minimise unnecessary time-consuming tasks Tork has launched the new napkin dispenser system, Tork Xpressnap Fit®. The Tork Xpressnap® System is the number one napkin dispensing system in the world, and the new innovation was developed specifically with independent restaurants and small chains in mind.

With Tork Xpressnap Fit, Tork wants to help managers to make the most of valuable time and space, and its different features have been developed with this in mind. The Tork Xpressnap Fit table top dispenser dispenses upwards so that every inch of space on restaurant tables can be used. The one-at-a time dispensing reduces waste and cuts unused napkins thrown away by more than 50 percent*. It also serves almost twice as many guests between refills, resulting in less time spent on refills**. Tork Xpressnap Fit also has a customizable advertising panel – AD-a-Glance® – for operators to be creative, communicate with customers, and share marketing messages on the dispenser. * 2-ply napkin in Counter dispenser compared to Counter fold (Tork Dispenser: 271600 and Tork Refill: 10935); 2-ply napkin in Table top dispenser compared to Fast fold (Tork Dispenser: 271800 and Tork Refill: 10933) ** 2-ply napkin in Table top dispenser compared to Fast fold (Tork Dispenser: 271800 and Tork Refill: 10933)
