An important element of masculine design is that it is, beyond all else, function oriented. So before any design is created, the first question must be “what will you be doing in this room?” and this question has an underlying implication “what do you want the best version of you to be doing and how can this room assist you?”. Thus, a well-designed office will help the man focus, a study and library will help him think and a majlis will promote lively conversation.
Simon Shuck from bespoke lighting design studio Inspired By Design explains the value and need for masculine design in order to create a deeper meaning in the projects currently on the boards. There is a stereotype that interior design is more of woman’s trade and that the wife makes the decisions regarding the interior of the home and therefore it remains from a woman’s perspective and designed according to women’s tastes. There is some truth to this but in perpetuating it, we deny the importance of men’s spaces and the masculine design that shapes them. The typical male spaces include the executive and home office, study, library cigar room, gun room, majlis and the “man cave”. However, the style of design that marks these spaces can easily be extended to other areas in the house. Though not specifically a man’s space, it can retain the same masculine energy. The spirit of the room Just as a tailored suit is made bespoke to the man wearing it – not just to fit his body but also to fit his lifestyle, his purpose, and his character. So too is a well-designed space for the man using
it – it is an expression of his identity, it bears his signature.
The answer to this question will determine the decisions for every other element from the furniture required, the lighting, even the colour scheme. Every aspect of design contributes to creating the spirit of the room, which in turn fosters the spirit of the man. Materials When someone imagines a man’s space, they will instinctively imagine
materials such as leather, wood and metal yet people will rarely consider the reason. The choice of leather and wood are ancient materials that demonstrate man’s dominance over nature while the use of metal is emblematic of his strength and industry. Textures The consequence of selecting these materials invariably provides a variety of different textures from the cold, metal to the rough timber and the smooth leather. The use of different textures provides a more natural feeling environment and as authenticity is an integral element of the design, this prevents a feeling of the artificial. Colours There are certain masculine colours that tend to be associated with masculine spaces – grey, black, brown, dark green, navy blue. The choice of colours serves the purpose of tying the natural materials together harmoniously. Light Light, as with every other element of the space, should be focused. Directed at illuminating key elements to bring attention to the different layers and textures of the design. In many ways replicating the light given off by a fire in a cave, with a bold warm light that creates dark shadows and directs the man towards the function of the space. The desk light illuminates his working space the floor lamp illuminates his reading chair. Bespoke Ultimately, the space should not be designed for just any man, rather it should be designed specifically for him and how he will use the space. This includes a custom-made desk and furniture designed according to how he will use them and a bespoke featurelight that serves to welcomes the man into his space and is a symbol of his unique signature on the room.

Hospitality businesses could open from July as coronavirus lockdown measures relaxed
Almost two months after implementing lockdown measures, prime minister Boris Johnson has said the hospitality industry could begin to reopen from July with social distancing measures in place. The lessening of restrictions in some areas of the industry will come in stage three of the plan to lift the lockdown, which was implemented to control the spread of coronavirus, and will be dependent on the government’s five conditions being met. These five conditions are protecting the NHS, a sustained and consistent fall in deaths, the rate of infection decreasing to “manageable levels”, ensuring the supply of tests and PPE meets demand, and avoiding a second peak. The first steps in relaxing the lockdown will be introduced from tomorrow, with people who cannot work from home actively encouraged to return to their workplaces, avoiding public transport if possible. However, the prime minister stressed that social distancing will remain in place and would be implemented in those hospitality businesses permitted to welcome guests, if the fall in cases allows them to begin reopening from July. No further details on what the relaxation of restrictions on hospitality businesses could look like, or which areas of the sector they would apply to, were given. UKHospitality said tonight’s statement “leaves the door open” to extend the Coronavirus Job Retention Scheme for those sectors that will take longer to reopen and return to profitability, something operators told The Caterer this evening would be essential. Chief executive Kate Nicholls said: “Mr Johnson was explicit about his commitment to support those workers whose businesses are not able to return soon, and we remain committed to continuing our dialogue with the government to achieve that. We have been calling for a more flexible, extended
furlough system and today’s statement appears to leave the door open for that.

“UKHospitality has already been working up protocols for implementation in different parts of the sector, to allow venues to confidently open their doors when it is safe to do so. This is very much consistent with the approach of ‘Covid secure’ standards that the prime minister referenced. He recognised in his statement that some parts of business will be able to open and others won’t – we will work to ensure that the government is well-placed to support those in hospitality that need longer, as well as on enabling those who are able to return.”
Stage two of the relaxation, which could be introduced from 1 June at the earliest, would see a phased reopening of shops and schools.
Johnson tonight said the measures already taken have prevented a “reasonable worst-case scenario of half a million fatalities”, adding that it would be “madness to throw away that achievement by allowing a second spike” stressing that this was not the end of lockdown but the “first careful steps”. From Wednesday people will also be able to undertake “unlimited exercise” with members of their own households,

Stage three will be enacted in July “at the earliest”, with further details expected to be released tomorrow in a written report. The prime minister has said some further restrictions will also be introduced, including a quarantine period for those entering the UK by air. The threat posed by the virus will be measured by a new five-stage system called the Covid Alert level, which will dictate how severe distancing measures are. Lockdown measures had been introduced by the prime minister on 23 March, three days after restaurants, pubs and cafés had been told to close. Both Wales and Scotland have already announced that their respective lockdowns would be extended, with very minor relaxations.

It is anyone’s guess as to what the ‘new normal’ will be like after the COVID–19 pandemic has passed. And while it is, for some, too far-fetched to suggest that hotels will permanently introduce new hygiene measures, others believe that the pandemic has opened the hotel door to welcome in innovative new hygiene products. One architect who has taken the lockdown as as an opportunity to create something purposeful is Carlo Ratti, who is the brains behind a new battery-powered wardrobe purifier. Currently developed as a prototype, Pura-Case is a portable wardrobe purifier that uses ozone to remove most micro-organisms, bacteria, and viruses from clothes and fabric. The project aims to address the needs of the “new normal” – that is, the emerging changes brought forward to our domestic life by COVID-19. The product was commissioned by Scribit, the tech startup which recently converted part

of its production line to respond to the current pandemic. Once a piece of garment is hung inside the case, an air purification system by ozone treatment cleans and deodorises the fabrics. Viruses or bacteria can survive on clothes for long periods. Ozone, a naturally-occurring triatomic form of oxygen (O3), is commonly used in the health and textile industry to sanitise fashion items, objects, and spaces. Pura-Case brings this technology safely into the household. It uses ozone to sterilise clothes while reducing the need for unnecessary washing and thus the consumption of water. Employed together with public health guidelines of the World Health Organisation, PuraCase would help contribute to a more hygienic environment in the house. “As the entire world adjusts to a new normal in terms of health and hygiene, Pura-Case aims to promote top sanitation standards in the key interface between us and the environment
– clothes,” says Ratti. “Pura-Case is an alternative to large-sized devices currently being used in hospitals. It can play a vital role in the post-pandemic world next year as we regain our old social life.” The product can be installed in a domestic setting and complete a cycle of purification in about one hour. Users can place the clothes inside the case, which accommodates up to four hangers and close it with an air-tight zipper. Using only a small amount of power, an imperceptible discharge will activate the ozone to penetrate the fabric and purify it while at the same time removing its odour. Once the cleaning cycle is completed, the ozone is reduced to oxygen through a natural decay process, ensuring the case is safe to open. The entire process can be started and controlled either via the LED-lit top panel or remotely through the Pura-Case mobile app.
Environment secretary George Eustice has said drive-through food businesses such as McDonald’s are “made for” social distancing. Speaking at the daily briefing on Friday (8 May) Eustice said he has had a “number of discussions” with food companies such as McDonald’s, KFC
and Costa Coffee and that, while he understood there were a number of reasons why such businesses chose to close their outlets, the government was
“quite explicit that it [the lockdown] didn’t cover takeaway food… we were quite keen to keep that capacity”. He said: “Our view is that probably a McDonald’s drive-through is made for the social distancing situation that we are in, in that people do not leave their car… It is quite possible for these venues to reopen and reopen safely. We never mandated that they should close.” Businesses such as Pret, McDonald’s and KFC have started reopening some of their outlets in recent weeks. Eustice added that these businesses could “learn lessons” from what supermarkets have done as they tentatively consider reopening.
Time is running out for a safe return to business, say suppliers Sixty per cent of Deliveroo’s small, independent restaurant customers have said that they can only survive another three months of lockdown, according to a survey by the delivery company. Giles Derrington, head of public affairs, UK & Ireland, at Deliveroo, spoke on the results of the survey this morning in a webinar organised and chaired by UK Hospitality. In the results, 77% of Deliveroo’s customers said that delivery would be fundamental to their survival. Derrington said: “Our customers’ biggest concern is food safety, and we all need to collectively nail this message moving forward. There is a huge amount of evidence that says that Covid-19 cannot be spread by food or food packaging. However, there is still such a real consumer fear around this. “The government has to land the message that food is safe, including delivery, with a full-blown public information campaign.” The supply chain panel included Derrington, Timiko Cranwell, director of
legal and corporate affairs at Budweiser Brewing Group UK&I and Miles Beale, chief executive, Wine & Spirit Trade Association,. The panel also discussed the phased return of hospitality. Cranwell said Budweiser was well-placed to step up production and to work towards a phased re-stock to their customers, but stressed that the government’s support package for hospitality needed to continue with a long-term plan. “Arbitrarily putting hospitality at the back of the queue for recovery will have serious consequences,” she said. She shared some behavioural insights from an internal psychologist report, stating that consumers would be looking for three key behaviours from suppliers and operators post-lockdown: enthusiasm from their trusted brands; competence and care; and loyalty and trust. She added
“’Safe social’ will be a term we will see and hear regularly.” Beale said his membership, which have 20% of their business in value terms in hospitality, stand to lose 40%-60% of their revenue. Cashflow problems were also being exacerbated by excise duties paid on stock pre-lockdown and invoices not being paid. “Our suppliers to the ontrade will disappear if the support from government for hospitality does not include suppliers.” Asked about the ‘new normal’ by webinar host David Sheen, public affairs director for UK Hospitality, the panellists agreed that customer perception would be crucial to re-starting hospitality, with a clear blueprint for best practice and a phased schedule for returning to work “absolutely paramount.”

A World Without Wires... Ever since their first introduction, smartphones have been accompanied by traditional wired chargers, with a cable connected to a mains adapter. They’re simple and efficient, if at times a little impractical. But many new phones also include wireless charging options. Devices from Apple, Google, Huawei, LG, Motorola, Samsung, Sony and Xiaomi all adhere to the Qi standard. Developed by the Wireless Power Consortium, Qi (based on the Chinese word for material energy or energy flow, and pronounced ‘chee’) uses inductive charging, a system whereby an electric current creates a fluctuating magnetic field in the charging pad. This field induces an electrical current in any compatible device placed on the pad, which is then used to charge the battery. It’s a wonderfully convenient system: there are no exposed electrical connections to wear out or suffer
damage, and there are no cables strung across the room, waiting for people to walk into them. The process of charging is slightly slower – by around 15% – but this is outweighed by the general practicality and ease-of-use. Although still in its relative infancy, Qi wireless charging is rapidly growing in popularity. A recent survey by the Wireless Power Consortium saw a distinct increase in interest for wireless charging while people are out and about – most notably in airports, hotels and restaurants, where wired charging can be problematic. Wireless charging systems are perfect for hotel rooms. They are inconspicuous, easy to install and secure, and need practically zero maintenance. And as Qi is a global standard, a single pad will work with a wide range of devices, irrespective of make or brand. Google, LG and Sony adopted wireless charging in 2012; it’s been in Samsung phones since 2015; in Apple phones and smartwatches since 2017; and both Huawei and Xiaomi intro-
duced wireless charging in 2018. Indeed, 2018 proved a watershed year for the technology, when the market grew by 77%, with more than 366 million devices shipped, around 270 million of those being smartphones. There are currently more than 245 phones on the market that have Qi built in, as well as a number of phone cases that add Qi wireless charging to older models. Adding Qi wireless charging to a hotel or entertainment venue couldn’t be easier. BREWERS ASSOCIATION ANNOUNCES ANNUAL GROWTH REPORT FOR 2019 Bob Pease, CEO/president of the Brewers Association, the notfor-profit trade association representing small and independent American craft brewers, reports on the latest figures for the American craft brewing industry in 2019
“The Brewers Association recently completed its annual survey of 5,500+ brewery members used to measure the performance of the U.S. craft brewing industry. In 2019, small and independent American craft brewers collectively produced 26.3 million barrels of beer (30.8 million hectolitres) and realised just under 4% total growth, taking craft’s overall beer market share by volume to 13.6%. Retail dollar value was estimated at $29.3 billion, representing 25.2% market share and 6% growth over 2018. Growth for small and independent brewers occurred in an overall down beer market which dropped by 2% volume in 2019. Craft brewers provided more than 160,000 direct jobs, an increase of 7% over 2018. There were 8,275 craft breweries operating in America in 2019, with 942 new brewery openings and 294 closings. American craft beer maintained a stable growth rate in 2019 and continued to gain share in the beer market. We are seeing demand for new and exciting styles like American IPA, barrel-aged beer and well-made classics continuing to grow both domestically and overseas. American

craft brewers continue to lead the global craft beer movement in terms of innovation and the development of new flavours outside of traditional styles. Many of these styles pair well with food dishes and are available to the restaurant and hospitality trade (when they re-open) from selected wholesalers. Despite American craft brewers entering 2020 on a solid foundation, the beer landscape is dramatically different now to just a few months ago. According to a recent Brewers Association poll, independent craft breweries are being severely impacted by COVID-19, as evidenced by a sharp drop in craft category sales, massive furloughs or layoffs and potential brewery closures. The craft beer community is rooted in collaboration and philanthropy so
the Brewers Association has launched a new initiative to support breweries impacted by the coronavirus pandemic. It also has an extremely large work desk and satellite TV. I found the hotel room exceptionally clean and tidy. Each room offers complimentary Wi-fi to their guest, so a perfect destination for people on their travels or working away from home.

The Food Dining within the Squires restaurant had a wonderfully secluded feel to it. Serving a wide range of comfort foods and carefully crafted dishes by the top in-house chefs. I opted for the Chicken & Chorizo press to start, with Roasted red pepper puree, garlic scented chive & chickpea salad. For the main course I went for the breast of corn fed chicken – a deliciously cooked Roasted corn fed chicken, Sundried Tomato & Spinach risotto, parmesan shards & micro watercress both of which left me both satisfied but also craving more. EAT. DRINK. SLEEP June 2020 The Hoxton Hotel Group has recently opened a new mixed-use development comprising a 192-bed hotel with boutique style co-working office spaces above. The Hoxton, Southwark is a redevelopment of former social security offices, located on the western side of Blackfriars Road in London. The Hoxton Group already have hotels in London, Europe and The USA and this latest London offering is designed with the same ethos in mind, to create vibrant spaces that are cosy, welcoming and a home away from home. Eurobrick has been leading the brick slip cladding sector for nearly 30 years and has extensive experience of supplying I-Clad for interior fit-outs in the hospitality and leisure sector. They supplied around 1570m² of their I-Clad brick cladding system, which is specially designed for interiors. Comprising a composite of a 12mm plasterboard panel with a ribbed skin bonded to it, fixings, adhesive, brick slips and mortar, I-Clad is an easy alternative to traditional masonry. I-Clad’s slim profile means that a real brick finish can be created with less intrusion to the interior floor space. St Ives Cream Rustica slips and corners from Eurobrick’s Classic range were used, complementing the loft style concept for the interior. St Ives Cream Rustica slips are a cut brick offering a blend of cream/grey hues with a tumbled, distressed finish. Eurobrick’s specially formulated Europoint mortar was chosen in white to finish. The end result is tactile, characterful and stylish, in keeping with the desired aesthetic.

Thinking long term can save restaurants time during busy days By spending more time on administrative tasks and longterm planning, research suggests that you can actually free up time. Research among owners and managers of independent restaurants highlights the crucial impact time has on all aspects of running a restaurant and how learning to think more long term and make better use of resources can improve your business. As a restaurant manager, every little detail needs to work perfectly when guests are lining up, and there are things you can do to improve efficiency in your restaurant. Research shows that managers suffer from heavy workload as well as a lack of control and planning. The research found that managers risk spending time on things that are not the most efficient use of their time, for example supervising staff to make sure they prioritise the tasks they are supposed to. Restaurants are shown to benefit from prioritising time management and making sure to use the limited time of both management and staff in the best way. This helps staff to focus on giving guests the best experience, and it also frees up more time for restaurant managers to focus on the creative aspects of running a restaurant and improving their business, such as serving great food and growing sales. One way to plan longterm is for example to find the right solutions for each specific restaurant which will result in a better workflow.
