Boys Hall, a new boutique hotel housed inside a Jacobean manor house, is open now following a careful restoration.
Set amid three acres of gardens, the family-owned property has initially opened as a 70 cover oak-beamed restaurant with two outside terraces and a wood-clad pub, while multiple reception rooms, private dining spaces and 10 ensuite bedrooms are set to follow in December.
Bradley was the former operations director of East London Pub Co, and Kristie is the founder of Drink, Shop & Do as well as Keystone Crescent members club in London’s King’s Cross.
The hotel features five grand suites each with super-king beds and spacious bathrooms, as well as extra touches such as rolltop bathtubs in the room, window seats overlooking the estate and original four-poster beds.
A further three bedrooms will have ensuites, some with bathtubs and two cosier rooms with ensuite showers.
The hotel restaurant, headed up by Great British Menu Chef Robbie Lorraine, will centre around seasonal, local produce and feature daily changing dishes which champion elevated takes on home-cooked favourites.
Grade-II listed Boys Hall was originally built in 1616 and has been renovated under husband and wife team, Bradley and Kristie Lomas.Highlights from the opening menu include Marmite-glazed celeriac steak with chickpea chips, roasted Portobello mushroom, oven dried tomato and peppercorn sauce, followed by brown butter rice pudding with pickled blackberries and parsnip crisps for dessert.
The pub is open to both residents and the public, while a premium wine cellar found underneath the space has capacity for around 4,000 bottles and features speciality vintages from English wineries as well as producers from around the world.
There are plans to add further elements to the property in the
future, including treatment rooms and eight luxury cabins set around a wild pond.

We cannot wait to see life back in the venue with people being able to enjoy themselves whether they choose a cup of tea in one of the reception rooms or a Gin & Tonic out on the lawns admiring the gardens.

‘No time for creativity’ say UK Chefs as New Study Reveals Price Hikes and Staff Shortages in Catering Firms are Worsening Due to Lack of Innovation
New industry survey reveals top concerns amongst catering staff who say happiness, training and food wastage are amongst those aspects being ignored every day
Anew, independent survey of contract catering firms across the UK, has revealed the top concerns faced by operations managers, head chefs and general managers, as the sector continues to navigate a dynamic, largely unpredictable, post-pandemic world.
The study, commissioned by P2P (Procure-to-Pay) catering technology firm Zupa, set out to delve deeper into the key challenges impacting day-to-day operations, as the resilience and innovation of UK catering firms is called into question.
The study revealed that rising costs is the top concern for 27% of staff. Poor kitchen management was a close second (25%), a further 24% of respondents also cited lack of staff as a key concern, as well as food shortages (24%).
Perhaps more worringly, 99% of respondents say that multiple aspects of their day to day job are being overlooked due to time-consuming manual processes. Staff happiness and productivity is also suffering at the hands of poor team cohesion and outdated processes with 44% highlighting this as a major issue. A further 40% of catering staff believe that lack of training and resource is to blame for low morale amongst their teams, while another 20% admit they are frustrated by unnecessary complexity and outdated technology, which they say is making the problems worse.
Food wastage and sustainability is also reportedly being overlooked within catering firms, due to legacy systems and high volumes of manual admin, with 40% admitting this is a real problem for the sector.
Ollie Brand, CEO at Zupa commented, “This latest survey combined with the events of the last couple of years, perhaps highlights that there is no return to the ‘old normal’. We now have a ‘new normal’ defined by unpredictability that requires aptitude, not just acceptance of uncertainty and change,” he continued, “Innovation is paramount and recognition that the right technology can help is critical to creating positive change in this sector. However, the survey does raise concerns as many are still failing to make the connection between outdated, manual processes and key operational concerns raised by their staff.”
The survey also revealed that lack of creativity and innovation is a key challenge for the industry. Lack of training, coupled with poor business vision may also be connected to issues around chef creativity as many blame lack of creativity for several of the sector’s top worries. Chef creativity in particular, was called out by over 20% of respondents who say chefs don’t have the time to innovate. Many of the respondents are chefs themelves, and when asked what they would do with more time in their working day, 65% said they would invest in the creativty of their cooking and menus.
The research also showed an acknowledgement from respondents, that technology would help their business. Just over half (51%) of respondents said they are looking for technology that is easy to use. A further 48% said that technology fits with the culture of their business and there is also enthusiasm around the prospect of introducing new technology, with 43% saying they are excited by the introduction of new technology.
Brand added, “Despite the obvious gap between outdated processes and business functions being side lined, it is clear that workers are over stretched and that this is having a knock on effect on the productivity of catering teams – and quite likely the quality of customer service. Staff attrition and low morale are endemic in this sector, and this comes at a time when the focus should be on business priorities like retention, development and improvement of customer service. Technology has the ability to transform operational performance and profitability for the better, so the time is ripe for change.”

Modernist Beauty
As far as modernist lighting goes, there are very few models that come close to the ARCHIVE collection from Norwegian glassblowing studio, Hadeland Glassverk. With its mid-century lines and sleek Scandi geometry, this on-trend capsule collection represents Norwegian design history.
Influenced by a post war period within architecture and product design, spanning the 1930s to the late 60s, this defining era of style and taste continues to inform and inspire creatives today. It was during this eponymous period that the design team at Hadeland launched a series of lights that were utilitarian, industrial and created to do one thing – illuminate the homes and businesses of Norway in an affordable yet functional fashion.

Comprising a minimal profile and restrained detailing, the lights were an enormous success, defining a period of Scandinavian design known today as Midcentury Modern. So it was of great excitement that the contemporary team at Hadeland rediscovered these gems and re-launched them 90 years later.
The beauty of Hadeland’s designs is that they are born out of handcrafted timber molds, which the company retains in its archive by Lake Randsfjorden, an hour outside of Oslo. What this means is that almost a century after their first production, these original lights have once again been brought to life and presented to a new generation of design enthusiasts.
Using the original wooden molds, the lights went back into production with minimal revisions, other than the beautiful fittings which are now available in brass, black and brushed steel, as well as a simple colour palette which is sympathetic to the original period but in keeping
with today’s interior spaces. The introduction of table and floor lamps across 8 of the original designs, allows for enormous scope to achieve aesthetic interior schemes with lighting that is both authentic and stylish.
Toshiba’s New Generation R-32 VRF Air Conditioning System Helps Decarbonise Hotels and Reduce Running Costs
The latest version of Toshiba’s flagship Variable Refrigerant Flow (VRF) air condfitioning system, SHRM Advance, operates on lower Global Warming Potential (GWP) R-32 refrigerant. The combination of R-32’s lower GWP and reduced refrigerant charge enables SHRM Advance to deliver a significant reduction of up to 80%* in equivalent carbon emissions, while reducing running costs and delivering outstanding comfort for guests. For installers, the fully packaged SHRM Advance is available in 8 to 24HP capacity units, giving flexibility to meet the needs of any commercial building project. A new compact chassis height of just 1.69m helps integration on site, while it is possible to connect up to 69 indoor units per system. A full line-up of wired and central remote controllers is available, offering full compatibility with the new R-32 safety devices. Riso Gallo UK & Ireland Young Risotto Chef of the Year 2023Now Open for Entry
Riso Gallo’s UK & Ireland Young Risotto Chef of the Year 2023 has officially opened for entries.
It is the sixth year of the competition, aimed at young chefs aged 17-23 years, who are either in education or starting out in their professional careers. Entries are open until 1st December 2022.
Entrants are asked to produce, photograph and tell us why they selected their risotto dish, and those selected will be asked to attend a regional heat to produce their recipe.
Regional finalists will have their dishes judged by professional chefs at the top of their game at the Grand Final in London at the Tottenham Hotspur Stadium on the 3rd April, where the winner will be named the Riso Gallo UK & Ireland Young Risotto Chef of the Year 2023.
Riso Gallo, the first international brand in the sector to have produced rice from sustainable agriculture, is supplying Tottenham Hotspur Stadium with its range of sustainable rices for use in their catering facilities.
Tottenham Hotspur was named the Premier League’s greenest club following a study carried out by the UN-backed Sport Positive Summit, with a range of sustainable measures implemented across their operations.
The winner will receive an all expenses paid three day work experience with renowned judging chef Fabio Pisani and his team at the 2 Michelin starred Il Luogo in Milan, Italy.
