The Aussie Gourmet: Beer Glazed Wings

As Labor Day approaches, families will be firing up their grills for one of the last barbecues of the season. A barbecue at our place must always have wings on the menu, and this is one of my family’s favorites.

Ingredients

Baked Wings

◦ 4 lbs. chicken wings ◦ 2 teaspoons kosher salt ◦ 1 teaspoon freshly ground black pepper ◦ ¼ tsp cayenne pepper ◦ 2 teaspoons garlic powder

Beer Glaze

◦ 2 cloves garlic ◦ ¼ inch ginger, grated, or 2 frozen ginger cubes ◦ ½ teaspoon pepper flakes ◦ 1 cup stout beer ◦ ½ cup honey ◦ 1 tablespoon Dijon mustard ◦ 4 tablespoons tomato paste

Preparation

1. Preheat grill to high. 2. In a large bowl, toss together wings, salt, black pepper, cayenne pepper, and garlic powder. 3. Place wings in a single layer on the hot grill, turning once halfway through the cooking, until browned and crispy. 4. Meanwhile, prepare the beer glaze: Combine all glaze ingredients in a small pot. Bring to a boil; lower heat and simmer for about 5 minutes, until slightly thickened. 5. Toss baked wings in glaze to fully coat.
