The Aussie Gourmet: Harissa Roasted Carrots

One of my favorite outings is going to the farmers markets to see all the different varieties of vegetables that aren’t available in the supermarket. When I saw carrots in a multicolored bunch, I bought them right away, knowing how beautiful my recipe will look and how it’s such a perfect recipe for your Rosh Hashana menu.
Ingredients
b 1 teaspoon cumin b ½ teaspoon cinnamon b ½ teaspoon paprika b 2 tablespoons olive oil b 1 teaspoon salt b 1pound fresh rainbow carrots, sliced in half
Harissa Dressing
b 4 tablespoons tehina b 1 tablespoon harissa b 1 tablespoon silan b 1 teaspoon kosher salt b 2 tablespoons water
Preparation
1. Preheat oven to 400°F. Line 2 baking sheets with parchment paper; set aside. 2. In a medium bowl, mix together oil, spices, and carrots; toss well to coat carrots. 3. Place carrots on prepared baking sheets. Roast for 20 minutes. 4. Prepare the harissa dressing: In a small bowl, mix together all the dressing ingredients. 5. Pour dressing over carrots right before serving.
Cook’s Tip: If you don’t have rainbow carrots, this recipe is still delicious with any carrot variety.
