Not Your Momma’s Cobbler

Old Fashioned Peach Cobbler is the bee’s knees but it’s filled with refined sugar, eggs, tons of butter, and loads of shortening. Not exactly awesome for that summer waistline. This recipe is not only low in fat and carbs, it’s also free of grains, refined sugar, cholesterol, and gluten. It’s even Paleo and Vegan friendly!
Healthier Peach Cobbler
PEACH FILLING:
3 Large Peaches 1 Tbs of Coconut Sugar 1 Tbs Coconut Flakes (unsweetened) 1/2 Tbs Lemon Zest 1/2 Arrowroot Powder 1/2 Tsp of Cinnamon
COBBLER TOPPING:
1/2 Cup Almond Flour 1/3 Cup Arrowroot Powder 1/4 Cup Coconut Oil (melted) 1/2 Cup Almond Milk (unsweetened) 1 Tsp Baking Powder 1 Tsp Cinnamon 1/2 Vanilla Extract 1/2 tsp Sea Salt
Preheat your oven to 375 degrees. Pit and slice your peaches. Lightly grease your pie dish with coconut oil. In a bowl, mix together all filling ingredients until well combined. Pour filling into pie dish. Using the same mixing bowl, stir together all of the cobbler ingredients. Add mixture to pie dish by placing large spoonfuls of batter over peaches. Bake for 20-25 minutes until bubbly and golden brown. To ensure cobbler topping is done, insert toothpick until it comes out clean.
Garnish with extra cinnamon if you wish!
