Retiree Academy finishes a Tractate of the Talmud!

The Levi Yitzchok Retiree Academy has reached a major milestone again. Their daily morning class has completed an entire Tractate of the Talmud, Tractate Taanis, which talks about fast days, praying for rain, and many stories. The attendees are a group of lawyers, doctors, marketing directors, other professionals, and laypeople who have chosen to spend their free time during retirement, studying Torah. They all love it. Not only are they enjoying learning about their heritage, but they are also staying healthy by keeping their minds stimulated, socializing, voicing their opinions, and feeling accomplished. Stay tuned for more good news since their Monday afternoon class will soon

finish the Book of Kings.

This Retiree Academy has numerous programs and great classes available to everyone since the program is on ZOOM. You do not need to travel, rather everything is done in the comfort of your home using either your phone or your computer.

Our newest program is a Conversational Yiddish Course. Whether you remember some phrases from childhood or know the words used in sitcoms, you can begin to speak this colorful language. This course will help you build a vocabulary and learn enough grammar to speak basic Yiddish. We will have fun learning some of the more common idioms and expressions you can use in everyday conversation. If you

always wanted to know what your parents or grandparents were saying or baffle your kids and friends, have fun learning this ancient and traditional language.

No prior knowledge is required.

The instructor, Gilda Simpkin, teaches Yiddish at the Norwalk Community College and has also been on the faculty of Fairfield and Marymount Colleges.

The LY Retiree Academy is a project of United Jewish Generations, a Chabad organization for retirees and seniors.

To sign up for the Yiddish Course or any of our other courses, please visit JewishRetiree.com or call (954) 458-6000.

INTERVIEW

CHOOSING TORAH AND JUDAISM

As we go into the holiday of Shavuot, besides the giving of the Torah, one of the main events of Shavuot is the reading of Megillah Ruth. It tells the story of Ruth who followed her mother-inlaw Naomi to Eretz Yisroel and decided to convert to Judaism declaring that your people are my people.

That same spirit and drive still exists today among some who were not born Jewish. We took some time to explore the why and hows of conversion with some of our Jewish brethren who weren’t born Jewish. These are some excerpts from our conversations with some of our community’s new Jewish voices.

DAVID AND RIVKAH LEVY were both born in Venezuela to non-Jewish mothers. David’s father is Jewish, hence his last Jewish name. They converted while living in Hollywood, then moved temporarily to Argentina. They have just moved back to Hollywood with their one-and-ahalf-year-old daughter.

WHAT WAS THE MOTIVATION FOR YOU TO CHOOSE TO BECOME A JEW?

“There was not one single factor that motivated me to choose to become a Jew,” explains Levy. “Instead, there were many things that motivated me…I always had a special connection

to the Jewish people and I think a big part of that is thanks to my grandfather, Jacobo Levy Obadia.” Levy shared with us that his grandfather was a Jew born in Melilla, Spain who moved to Caracas, Venezuela when he was 2 years old. “Unfortunately, my family did not escape the wave of intermarriage and assimilation at the time.” Despite this, Levy’s grandfather intentionally worked on growing a seed of curiosity and love for the Jewish People in his grandchildren, which Levy tapped into more deeply in his mid-20s. “At this time, I had been searching for life’s meaning and spirituality in all places and studied many religions, including Buddhism, Hinduism, and any trendy new-age Guru out there.”

Levy shares how he “did not find lasting explanations for the meaning of life in any of them.” After the passing of his grandfather, Levy was once again motivated to try and satisfy his curiosity for Judaism. “For the first time, I started to seriously learn about Judaism, Torah, and my grandfather’s side of the family. It did not take much time to realize the infinite wisdom in the Torah and that it comes one hundred percent from the creator of the world.” Levy passionately states how “this is the ultimate Truth and best possible way to attempt to live a life in accordance with G-d’s plan, thus full of meaning.” Levy’s

P.32 / TSFCOMMUNITYVOICE.COM

passion and conviction are evident as we discuss his journey. “There’s a unique connection with G-d that the Jewish people experience when living in accordance with Torah.” Levy also desires to have this for both himself and his future generations. It is a “way to reconnect to my ancestors” shares Levy. “That’s what I was looking for all my life.”

MANY PEOPLE DON’T LIKE THE LABEL OR STIGMA OF BEING CALLED A CONVERT. HOW DO YOU THINK OF THE PROCESS AND HOW DO YOU FEEL OR REACT WHEN DISCUSSING THE NON-JEWISH NATIONS THAT YOU WERE ONCE A PART OF?

“In the USA, I’ve never been called a convert in any of the communities I’ve been part of. I would imagine that being uncomfortable because we don’t want to feel like a different class or something.” Levy explains it this way, “it is the same with a Baal Teshuva, who doesn’t want to get reminded about his past.” Appreciatively, Levy says that he has “only experienced a welcoming and even unbelievable kindness towards me and my family that re-affirms to me every day how special and lofty the Jewish People are.” Levy has experienced “a warm-hearted curiosity about my background which is normal when you’re meeting new people, and you want to know more about them, right?” Levy does not find this to be negative in any way and feels that it comes from a friendly place. “I think for anyone out there that went through the process, we

just want to feel as one more of Am Israel.”

WHAT HAVE SOME OF YOUR BIGGEST CHALLENGES BEEN IN TERMS OF ACCEPTANCE INTO JEWISH

CULTURE?

“Hebrew is fundamental to Jewish culture,” explains Levy, and it is “one thing is to know how to read” but finds it challenging to not be able to “ speak or understand well what I’m reading in the prayers.” Levy recognizes how knowing Hebrew would be tremendously helpful in bonding and connecting with others.

HAVE THERE BEEN ANY CHALLENGES DEALING WITH THE NON-JEWISH PART OF YOUR FAMILY?

“One of the most difficult challenges after converting was dealing with our families, many of them didn’t understand our decision.” Levy shares how some “felt rejected” or their “feelings were

hurt, especially when we stopped coming over for goyish holidays or Shabbat.” Levy and his wife have had to navigate this new normal, finding ways to overcome familial hurdles such as Jewish Holidays. It always “poses a tough decision for us, do we invite our non-Jewish family over or not? Then of course, if they do come, they want to help us by doing things around the house like turning lights on and off.” The candid and realistic way Levy shares these experiences is likely one many converts face.

“Also, there’s so much misinformation out there about Israel and Jews lately, especially with everything happening in Israel, states Levy. “Rivka’s family can’t always understand how we feel, and what it’s like for us to be a part of the Jewish Nation. Some of them have even expressed some anti-semitic feelings.” David and Rivka have both faced some very difficult times with this. “They are our family, and we sometimes feel

FOR ANYONE WHO’S THINKING OF “JOINING THE TRIBE”, WHAT ADVICE DO YOU HAVE? WHAT WERE SOME OF YOUR BIGGEST CHALLENGES GOING THROUGH THE PROCESS?

“You have to ask yourself how strong your desire to convert first because that’s what will keep you going through all the challenges. Your life will need to change, 180 degrees.” Levy further says that there are “tons of new things to learn and incorporate into your life, and your old environment will not understand what’s going on with you. You must be strong and separate yourself from your old environment and customs that don’t align with Torah, but be understanding and gentle with those who see you change so much.” David also shares how having “an open space for your family and old friends to ask questions and learn more about your new lifestyle so that it is not something so foreign to them. It’s your job to show them that your new lifestyle is a beautiful path and is making you a better person.” Adding to his new-found wisdom, David also explains that, “last, but not least, ask G-d to guide you and send good Rabanim your way. The Rabanim have tremendous wisdom and will help you in your journey.”

Mitzvot and bring generations of Jewish families committed to the Laws of Moses, with G-d’s help!”

DAN AND FABIOLA FELD

started their journey in South Florida. Dan was born Jewish but fell in love with a wonderful woman named Fabiola. Fabiola was born in Cuba, and neither of her parents are Jewish. She was working in New York as a renowned fashion designer. Her career was growing but she felt that something was missing. So she chose a life of meaning over a life of trendiness:

WHAT

WAS THE MOTIVATION FOR YOU TO CHOOSE TO CHOOSE JUDAISM?

“My mother-in-law asked me sincerely if I could consider

conversion. After taking a class in a reform synagogue, I realized reform would not be enough for me to convert to Judaism and I decided to go all the way with it and convert to Orthodox Judaism. It was a journey of 7 years to discover true Torah Judaism and I’m so incredibly grateful and proud of my life now.”

Dan shares how “the process of conversion is long, there is no other way around it. However, if you are looking for meaning and truth it can’t be a short process.”

Dan understands that this journey takes “ a long time because you have to go through the process of experiencing, actually observing the mitzvos (commandments).” The Feld’s share how important

P.36 / TSFCOMMUNITYVOICE.COM

it is to “see different people and how they observe, and experience how a community comes together to know where you would like to fit in. You have to read a lot and learn actual Torah hashkafah to understand the context of why we are observing Hashem’s ratzon.”

MANY PEOPLE DON’T LIKE THE LABEL OR STIGMA OF BEING CALLED A CONVERT. HOW DO YOU THINK OF THE PROCESS AND HOW DO YOU FEEL OR REACT WHEN DISCUSSING THE NON-JEWISH NATIONS THAT YOU WERE ONCE A PART OF?

“I’m proud to call myself a convert, some people feel they have to hide it, but I am passionate to talk about how blessed I am to get to live a life mitzvos. As the secular world gets crazier, I feel stronger in holding on to this gift that Hashem has allowed me to be part of.”

WHAT HAVE SOME OF YOUR BIGGEST CHALLENGES BEEN IN TERMS OF ACCEPTANCE INTO JEWISH CULTURE?

“My husband and I have three daughters who all converted with me, and Baruch Hashem we live in a very warm community that has opened their arms to us” joyfully shares Fabiola.

HAVE THERE BEEN ANY CHALLENGES DEALING WITH THE NON-JEWISH PART OF YOUR FAMILY?

“I am blessed to have wonderful parents who although they are not Jewish, have accepted my choices and have seen and appreciate

INTERVIEW

how much I have grown spiritually and how sweet and wholesome my life is.”

FOR ANYONE WHO’S THINKING OF “JOINING THE TRIBE”, WHAT ADVICE DO YOU HAVE? WHAT WERE SOME OF YOUR BIGGEST CHALLENGES GOING THROUGH THE PROCESS?

“For anyone wanting to join the tribe, my advice is to read any book by Rabbi Avigdor Miller. Rabbi Miller, in his books, gives a clear point of view of what our responsibility is as Hashem’s chosen nation. He speaks to your soul and points out the blessing it is to be a Yid. My biggest challenge was that it took so long to be exposed to true Torah Judaism. Once I read Rabbi Avigdor Miller’s books and watched the documentary called Torah and Science by Rabbi Yosef Mizrahi, it became clear to me that I wanted to live my life as a Jew and observe Torah commandments.” The Feld’s also suggest you “find a Rabbi who can guide you, teach you, and expose you to an Orthodox community. Once you are immersed in the

Torah Jewish experience, you won’t be able to imagine life outside of it.” They share how they were able to Rabbi Avraham Levy who was able to guide the “process through the curriculum of Torah learning” needed for conversion.

LOOKING TO THE FUTURE,

HOW DO YOU SEE YOUR ROLE WITHIN

JUDAISM GROWING?

Rivka shares how feels blessed that “both me and my husband are very much on the same page and continue to strive in our Torah learning and reaching higher in our spiritual growth. We remain focused on building a house of Torah and a family rooted in passionately serving Hakadosh Baruch Hu.”

These are some of our community members who have chosen to accept the Torah and Judaism. Now we also have the same opportunity. On Shavuot, we are again being given the choice to accept the Torah, to accept HaShem as our G-d, and to embrace the true meaning of being Jewish. May we all be inspired.

A Story of Inspiration and the Ripple Effects of Kindness it Created

A follow up to the story really touched me. Someone approached me after returning from his brother in law who was sitting shiva for a young married son who died in a tragic motor vehicle accident. The gentleman tells me he happened to pick up the South Florida Community

Voice upon his return and read my article. He continued by saying that his brother in law and wife are not religious. Here is what touched me so very much… because of my article he is saying Kaddish for this young man. He comes to shul all the time and the article moved him without

any hesitation. I don’t know how many people were truly touched in one way or another, however, I know it was worth writing even if only one person was impacted.

Thank you again for publishing it.

‘Dreaming Big Dreams’ Gala

Elegant. Classy. Meaningful. Emotional. The JEMS Academy ‘Dreaming Big Dreams’ Gala was that and much more; an incredible show of support from the South Florida Jewish Community.

Dreams, especially Big Dreams, have been the driving force behind the miracle that is JEMS. Mrs. Shoshana Jablon and Mrs. Avigayil Shaffren, co-founders of JEMS, began dreaming years ago of a school for children with diverse special needs in the South Florida Jewish community. Now completing its second year, JEMS has tripled enrollment, and expects to grow by another 50% in the coming year.

It’s amazing how 15 special students can cause a veritable tsunami of connection, and fill a ballroom with over 250 people. The magnificent decor centered around the shining faces of the JEMS students, along with some of the more than 200 students

at four community schools who integrate at JEMS. 12 Corporate Sponsors generously and graciously helped make the gala a reality.

Asiatiko really outdid themselves with elegant hors d’oeuvres, a magnificent sushi table, and sumptuous dinner buffets complete with delectable dishes and carving stations.

Emcee Nachi Gordon, Founder of Meaningful People, began the program by thanking the two representatives of the Florida Highway Patrol for their incredible dedication to JEMS’ security after October 7th. He then introduced Yisroel Silverman, a JEMS student, who gave a heartwarming welcome speech.

One of the many highlights of the night was the amazing Meaningful People podcast with Rav Judah Mischel, who is the current director of camp HASC and has worked there for the past 18 years. Rav Judah shared

some of his unique viewpoints on the connection between the community and its children with special needs. He said that “the impact and the ripple effect here is just extraordinary,” and that the incredible impact JEMS is making on the community is teaching the community true Ahavas Yisroel; this is “Torah in action.” Said Mischel, “There’s nothing more important in our lives than the transmission of values...this is the incredible value of making sure that every child has a place to shine in our community.”

Operation Inspiration: Use Your Brain

Most of us like testing our intelligence with brain teasers - riddles and questions designed to see if we’re smart enough to reach the correct answers. From the time we’re young children, the excitement of figuring out the solution to problems is ingrained in us, and that’s a great thing. That desire and drive to unravel the mysteries around us are quite useful in life. We develop problem-solving skills and critical thinking abilities which will come in handy. Life is full of problems and situations which need us to figure out how to maneuver around them, so they start us young.

Do you remember this one?

“As I was going to St. Ives, I met a man with seven wives. Every wife had seven sacks, and every sack had seven cats. Every cat had seven kits. –Kits, cats, sacks, wives, how many were going to St. Ives?” (Kits, I guess, is a way of saying kittens.)

When hearing this, you immediately start to do math in your head. 1 man, plus seven wives. That’s 8. Each wife has seven sacks full of furry little animals. We start multiplying sevens, figuring out how many

were going to St. Ives. Ooh! Don’t forget about myself. But don’t count sacks, as they’re not alive. Or maybe I do count them, because it’s included in the riddle. Well, that’s another forty-nine if I count sacks.

Typically, you would solve this one by saying, seven (wives) times seven (sacks) times seven (cats) times seven (kits). Let me help you: seven, forty-nine, three-hundred forty-three, two-thousand four-hundred and one. Then add in yourself and the husband, so you proudly come to the conclusion of 2403, and announce your answer. You are in for a surprise when the questioner tells you the “right” answer.

The correct answer, at least according to the brain teaser, is one. That’s right, just one.

If you go back and reread the question, it begins, “As I was going to St. Ives.” That means you know you were going there. Then, it says you met this man with his wives and animals. Does it say anywhere that they were going in the same direction as you? No, it doesn’t!

They could have been to St. Ives already and were coming back. They could have lived in the village you were passing along the road. Or maybe, they were just hanging around and walking in a circle. It doesn’t matter. The bottom line is that they weren’t going to the same destination as you were, but you got distracted by all the noise and got the riddle wrong.

One of the skills this riddle helps you develop is critical listening. You have to be able to hear what is being said, and what is NOT being said. Based on those, you make the decisions about which direction your brain will go. Now you know, that unless you are specifically told they’re all going the same way, you have to assume there’s a good chance that they aren’t.

Well, guess what? This brain teaser isn’t just child’s play. In life, we’re on a journey.

P.50 / TSFCOMMUNITYVOICE.COM

We have a destination in mind and as we traverse the course, we will run into others. There could be lots and lots of them, with big networks of interrelated people and things, like our friend with all the cats. But if they aren’t going the same way, they are just misdirection on the part of the One posing the question who wants you to see past the deception.

Instead of the questioner trying to trip you up, and you having to use all the tools at your disposal to cut away the extraneous material in order to find the right answer, this time it’s Hashem who wants to

see you get safely where you’re headed, to an eternity spent basking in Hashem’s presence and enjoying the fruits of your labors in life. Just like when dealing with a brain teaser, you need to figure out what is pertinent to reaching your goal and what is going to confuse you and lead you astray.

All the people you thought were heading in the same direction may turn out not to be, and their presence can trick you. If you follow the crowd, you may not end up where you were trying to go, because they have different destinations and goals than you.

You have to look at it like you’re on your own path and journey, and make sure you know where you want to end up. If you find others who clearly state and demonstrate that their intended destination is the one you are heading for, then you can team up with them and get some help along the way. But don’t just take it for granted. Otherwise, you could be left holding the proverbial bag.

Making The Numbers Work In Your Favor

The US president sought estimates from contractors worldwide to paint the White House. The Indian contractor estimated three million dollars. The European contractor said the cost would be seven million dollars. The third contractor, from China, estimated it to be ten million dollars.

The president asked the Indian contractor, “How did you come up with three million dollars?” The contractor replied, “One million for paint, one million for labor, and one million for profit.” The president asked the European contractor about his seven million estimate. He replied, “Three million in paint, two million in labor, two million in profit.

The president asked the Chinese contractor about his estimated ten million proposal. He replied, “Four million for you, three million for me, and the remaining three million will be given to the Indian crew to do the job. The Chinese contractor got the contract.

The unfortunate lesson for some is, “Say what you need to say to make it work.”

According to a recent report by Clever Real Estate, a staggering 82% of recent homebuyers expressed regrets about their purchases despite overcoming the challenge of limited housing

inventory. This report has gone viral on social media, and major news outlets have used stats from it for many of their housing articles over the past few days.

An overwhelming 85% of buyers reported making compromises on their home purchases. Notably, while 48% sought affordable homes, 37% ended up purchasing properties that exceeded their planned budget. Among this group, about one in four agreed to buy their home “as is.”

Financial difficulties were a common theme, with nearly one-third of buyers finding the homebuying process more challenging than anticipated due to high interest rates and unexpected purchase prices. Additionally, 47% of buyers admitted feeling financially overextended post-purchase, with over 40%

struggling to make timely mortgage payments or taking on new debt to maintain their lifestyle.

This 2024 Edition American Home Buyer Report from Clever really paints a gloomy picture of the housing market. The report is full of negative numbers and depicts consumers who deeply regret almost every aspect of their home purchase.

As I was delving into the data, I noticed an interesting sentence: “To learn more about today’s home buyers, we surveyed 920 Americans who have recently purchased a home or plan to buy in the next year.” The numbers revealed that of the 920 people surveyed, only 420 people actually bought a home in 2023 or 2024. The additional 500 people planned to do so in 2024 or 2025.

To achieve their click-bait statistics and attention-grab-

P.56 / TSFCOMMUNITYVOICE.COM REAL ESTATE

bing headlines, they relied on a few hundred disgruntled home buyers to make major commentary about the current state of the real estate market. It’s really shameful and misleading if you ask me.

I speak to many homeowners who have bought homes over the past year or two, and the majority of the feedback that I receive is highly favorable. While many lament about not buying sooner to obtain a lower rate and reduced purchase price, most are thrilled that they bought when they did.

It’s a shame that certain media outlets must resort to exaggerated stats to attract attention and that many don’t read the fine print to qualify these find-

ings. Despite the questionable figures, strategic planning and professional assistance can help buyers mitigate financial stress and make more informed decisions.

Would You Rather: If you had to pick one, which would you choose? Start a business with a partner or take out a loan against the whole value of your home to avoid taking on a partner? Please email or message me to let me know your choice! Please let me know if you have a good “Would you rather” question, and we will highlight your submission.

A Fighting Chance Is Always My Guarantee

My client had a chargeback from a transaction done ninety-five days ago and it was granted. Issuing banks often allow up to one hundred and twenty days to make a claim.

What’s a chargeback? If you’re a business owner, no need to explain. For the common folk, it’s when you reach out to your credit card company regarding a transaction done on your card that you’re disputing. This approach is a nightmare approach for a business. They would much rather you contact the business directly to negotiate. Chargebacks result in a loose loose for everyone, in a majority of the cases. The business is often willing to extend itself and keep a customer satisfied, or at least meet halfway with a negotiation. This article won’t be discussing a fraudulent claim on a stolen credit card, which is an entirely different beast.

VA. As much as a client getting notified about this will be frustrating, being the front facing part of my clients’. processing means I get to enjoy the benefits of helping them throughout this frustrating process.

As much as I felt the need to jump right into this dispute on a Sunday, now just wasn’t the time. Instead, this was put out of mind until the next day. No need to wait too long as my Monday missed calls and

ture of my client but knew they meant business. Many merchant service companies leave dealing with chargebacks off their to do. Who wants to deal directly with Visa, Master Card, Discover, and Amex?

The next setup is disputing the customers side of the story once the transaction is debited. Instead of having my client go back and forth with Visa, I become their point allowing this confusing process to be off my clients to do list.

messages came faster than the frustrations of cyber truck owners.

Getting back to our story, this surprised debit was for a sale done back in February. The product in question? A gun. I got the notification on Sunday, right as our family was about to donate a Torah to our outof-town community in Norfolk

“Hey Shalom, this is James. I got an email for a chargeback to our business for $500 from February 27 but Carol said when she checked her files that she doesn’t see that we did this transaction on February 27, so I’m confused. Could you look into it please?”

I appreciated the calm na-

So how would I fight this chargeback? Let’s go into the customer dispute. Her allegations were that the same day of the transaction, the item ended up being defective. Upon calling the location of my client, she was advised that she would be receiving her full refund. It never came. Thus, a claim of defective merchandise was filed and approved by Visa.

This now requires our merchnat bank to debit those funds directly from my client, to be deposited back into the cardholder bank.

This may sound like a decent allegation, and an open and shut case. However, my client’s rebuttal is that “although

P.60 / TSFCOMMUNITYVOICE.COM
BUSINESS

a transaction was indeed made in the amount of $500.00 regarding a sale of a firearm to the above party, Mrs. C stated she contacted our business the same day the firearm was purchased and claimed that it wasn’t working properly or broken. I or my employees never received a call from Mrs. C, nor have we seen Mrs. C since the pickup of the firearm on February 27, 2027.

Please see the attached payment via credit card slip receipt, a copy of Mrs. C’s driver license, signed sales receipt and a copy of the Virginia Firearms Transaction Record for your information.

On top of this, we would have offered her an exchange for the

firearm if it was found to have been working improperly but it was never returned for an exchange or store credit. If it was returned, it would have been required to be logged back into the Virginia Firearms Transaction Record.”

Because I’m just the processing bank for this transaction, and not the card holders bank, fighting a chargeback isn’t within our terms of service. Yet, I’m proud to jump in and take the initiative. I believe that communication is the key factor to retaining clients.

I therefore believe that we have a good case, and that the chargeback will eventually be reversed. Once it is, our merchant bank would receive those

funds back from the cardholder bank. It would then be deposited back into my client’s bank account. However, the customer, Mrs. C still has another opportunity to refile the same chargeback once again with Visa with a valid rebuttal. If granted by Visa, the process repeats itself again. The next step is pre arbitration and arbitration but that’s for another article.

In this case, although an uncomfortable chargeback call was necessary, my position in all this and with every client’s chargeback is simple. Guide the businesses next steps to help fight for their money back. Guaranteed it’s not. A fighting chance, it is!

Kosher Recipes Made Easy

• 110MIN DURATION • 60MIN COOK TIME • 20MIN PREP TIME • 8 SERVINGS

ISRAELI CHEESECAKE

Gvina levana is an exceptionally soft and creamy cheese. Using gvina levana for cheesecake ensures a delicate cake. Tangy and slightly sweet, Israeli cheesecake is light and creamy. For those unable to find this Israeli treasure, Quark cheese is similar in texture and is readily available in most stores.

To avoid cracks in the top of the cake it is best to cover the pan with foil and bake in a water bath, but it will taste amazing either way.

INGREDIENTS

CRUST

• 2 cups graham cracker crumbs or cookie crumbs

• ½ cup melted butter

• 5 tablespoons sugar

CUSTARD

• 1½ pounds gvina levana (white Israeli cheese)

• 1 cup sugar

• 1 cup sour cream

• ½ cup heavy cream

• Zest of 1 lemon

• 2 tablespoons fresh lemon juice

• 2 teaspoons vanilla extract

• 4 whole eggs

• Pinch of kosher or sea salt

PREPARATION

Crust:

1. Mix crumbs, butter, and sugar together. Reserve half cup of mixture for topping cheesecake. Press remaining crumbs into the bottom of the springform pan. Chill the crust while making the filling.

Custard:

1. Preheat oven to 350°F.

2. Either by hand or in a mixer at low speed, combine cheese, sugar, sour cream, heavy cream, lemon zest and juice, vanilla, eggs, and salt. Try not to whisk any air into the custard.

3. Pour into chilled crust. Place cheesecake into oven. Bake at 350°F for 40 to 50 minutes or until the center of cake is just a bit jiggly. Sprinkle reserved crumbs on top of cake and bake for an additional 15 minutes.

4. Turn off the oven and crack open the door. Allow cheesecake to cool in hot oven for 30 minutes.

5. Remove cheesecake and chill for 4 hours or overnight before serving.
