Tuna Tartare with Honey Sesame Wonton Crisps

Tartare or other mostly raw fish recipes are ideal for last minute menus. They are not only quick to prep, but they don’t need to be cooked. So they save your oven and stove top for more important work.

INGREDIENTS

• Cooking spray

• 16 Gefen Square Wontons, thawed

• 3 tablespoon honey

• 2 tablespoon toasted sesame seeds

• 1 (10-ounce) sushi-quality ahi tuna steak, cut into ¼-inch dice

PREPARATION

1. Preheat oven to 350° F. Lightly spray a rimmed baking sheet.

2. Lay wontons out on the prepared baking sheet. Brush with honey, spray with cooking spray, and sprinkle with toasted sesame seeds. Bake 6 to 8 minutes, or until golden brown.

3. In a medium bowl, combine tuna,

INGREDIENTS

• 5 ounces bittersweet chocolate

• 2 tablespoons extra virgin olive oil

• 2 tablespoons honey

PREPARATION

1. In a bowl over simmering water, stir together chocolate, evoo, and honey until smooth and combined.

2. Use glaze while warm, or cool completely overnight in refrigerator and then using a mixer fitted with whisk, whip at medium speed until light and fluffy. Spread on cake as a frosting.

• 1 tablespoon rice wine vinegar

• 1 tablespoon chopped cilantro

• 1 teaspoon red chili flakes

• 1 teaspoon toasted sesame oil

• 1 teaspoon black sesame seeds

• 1 teaspoon olive oil

• ½ teaspoon kosher salt

vinegar, cilantro, chili flakes, sesame oil, sesame seeds, olive oil, and salt. Gently stir to evenly coat.

To plate: Place a ring mold or round cookie cutter in the center of each appetizer plate. Pack the tuna mixture into the mold tightly. Remove the mold by slowly pulling it straight up. Serve with wonton crisps.

The Secret to Health: How to Get it - and Keep It

With all the information we are exposed to every day from friends, marketing companies, and the media, achieving our health and fitness goals can seem complicated. “Eat less Carbs! Get more steps! Drink more juices!” are just a few of the many “pointers” we receive. For most people, being healthy includes, as the Oxford dictionary defines it, “… being free of illness or injury,” but does it stop there? When asking my clients what it means for them t o be healthy, most declare, I want to feel more energetic; I want to look better; I want to live longer; I want to be stronger - or some variation therof. To best maximize your health and achieve any fitness goal, you will want to include the following three pillars of health and fitness in your life - exercise, nutrition, and sleep.

Exercise provides your body with the opportunity to acheive numerous adaptations within every realm of health. Whether your goals are to improve energy, gain strength, sleep better, or even live longer, every health plan will include exercise as a basic necessity. As Dr. Peter Attia (MD and renowned expert in the field of wellness and longevity) states: “Exercise might be the most potent “drug” we have for extending the quality and perhaps quantity of our years.” Getting half an hour of moderate-tovigorous activity every day is an excellent place to start.

Nutrition provides your body with vital nutrients that are used for many critical functions. Proper nutrition will directly impact how your body performs and transforms over time. The quick and dirty is: focus on protein - 1 gram per pound of

bodyweight per day, increase veggie intake (especially green leafy ones), and make sure to drink one ounce of water per two pounds of body weight each day.

Sleep allows us to not only recover from physical and mental stressors, but it also allows us to integrate what we experience throughout the day. Proper sleep affects not only cognition, memory, stress levels, and dopamine production but also many other facets of life. Rest assured, sleep is critical for long term health. A basic place to start: give yourself between seven to nine hours of sleep each night, ensure it is deep, quality sleep, and try to be as consistent with bed times as possible.

Focusing on improving these three aspects of your life will significantly decrease your risk of disease and injury - while simultaneously improving the quality and quantity of your life. Consistency is key and, as James Clear explains in “Atomic Habits,” it takes an average of thirty-three days to integrate a new habit into your life. Give yourself time, incorporate the right system of accountability, and you will be successful.

Success in Business

Ever get that nervous feeling when making a phone call? Can’t relate? How about when it’s a major ask to our unsuspecting caller? It can be natural to feel those churning butterflies. Natural as reaching for a french fry before biting into the actual sizzling burger in front of us.

Getting back to the phone, some will seldomly find themselves as the initiator of such calls. Others, for some odd reason, have a knack to make it a daily habit of theirs, me included.

One industry that almost guarantees this type of encounter is sales. While the saying goes, “we’re all in sales”, many of us don’t consider the fact. Examples of inactive selling, are barbers, landscapers, and party planners. They aim to complete the perfect job; they understand many will inquire. But it’s word of mouth and maybe a bit of advertising that will ultimately get them in-front of their client.

The business services industry, or B2B can dramatically change these ground rules. Selling in a B2B market

is a personal thrill and a rewarding experience.

There’s that familiar hesitation, however, which can creep in when the job involves the direct and vulnerable approach of a good old phone call to a stranger, you would otherwise shy away from. Making sales this way will have many checking out of a sales job before even tasting some semblance of success.

Why? There are many reasons, but the two simple explanations are, 1. Rejection being a true fear, and 2. We then start making excuses, such as, ‘my hands are still oily from that first french fry’. Our mind holds us back. It’s just too strong.

Let’s take an example of a high school baseball player. The likelihood of getting on base if inserted in a major league game is close to nil. He’s mostly given up before the at bat. It’s easy to feel like this player as we attempt to dial the phone. No chance!

That’s why a recent cold call I made is something that keeps on replaying as a personal motivator.

I cold called, Phil. He runs a

manufacturing company, an industry I enjoy working with for many different reasons. It turns out, the company had its payment gateway drop their current ERP operating system and was now in the market for the services I offer. They also needed this to integrate into their current systems, and seamlessly (Phil made that clear to me).

Help! My kitchen pantry is a disaster! I thought a deep pantry would give me more space but it just means I can never find what I need. I keep buying more of the same items, not realizing that I already have them in the back of the closet. How can I regain control over the most important closet in my house and make it functional?

Dear Harried Mom from Miami, I understand your dilemma, and if this makes you feel better, I deal with clients who have the same issue every day! Not only can you make your pantry functional and systematic, but you can make it beautiful too. Here are a few pointers to get you started:

1. Categorize your pantry: Begin by sorting your items into three main categories: cooking, baking, and pantry foods. Once sorted, decide where each category should go. Each category needs its own center somewhere in the kitchen. Ideally you should store items where they will be used.

Categorizing is crucial so that you know exactly where to find and put things back. When you are ready to gather ingredients to bake a cake, you only need to go to one pantry or shelf, and all the baking staples will be in the same place.

In the Baking Center, you will keep your sugars, flours, cocoa, baking powder, baking soda, cinnamon and chocolate chips.

Cooking items generally consist of ingredients for cooking, such as rice, pasta, cans, legumes and breadcrumbs.

Your Pantry Center would include ready-to-eat foods such as snacks, cereals, crackers, etc.

Put spices where you will use them most, usually near the stove.

2. Containerize: The best bins to buy would be long acrylic bins. This way you use all the space in the back. Make sure to measure the inside of your shelf to ensure you are buying the right size. Put all items of the same category in one bin. This way, when you need a sauce, you just have to pull out the sauces bin, rather than rummage around a cluttered shelf for the bottle you need.

3. Have a Stock Shelf: Create a shelf that’s less accessible for stock items. Keep items that are currently in use in “prime” locations, in other words, shelves that are within easy reach. This way you don’t run into the problem of three open packages at the same item. Use the product until it’s finished and then fetch the new package from your stock shelf. This will help you know when you really need to buy more of that item.
