Ingredients:
1 C shortening 3 ½ C milk ¼ C sugar
2 packages dry yeast 2 medium potatoes, boiled and mashed 3 eggs 1 T salt 13 cups all-purpose flour 2 ½ lb. Oscar Mayer Smokies

Directions: In a medium saucepan, melt shortening Add the milk and ¾ C sugar stirring together while cooling to lukewarm Set aside Soften the yeast in a ½ C lukewarm water and ¼ cup sugar In a large bowl, combine milk mixture, yeast mixture, 2 eggs, 1 T salt, and the mashed potatoes Mix until smooth Stir in the 13 cups of flour until a sticky yet pliable dough forms Cover and refrigerate in a greased bowl overnight Punch down the dough Make a ping-pong sized ball of dough, flatten and then bury a sausage in the dough Place raw Kolaches in a pan barely touching Brush the tops with raw egg Bake in a preheated oven at 400 degrees for 12-15 minutes until golden brown Yields approximately 9 dozen
Notes: Suggestions: use disposable, aluminum trays to bake with, greased. Use a large bowl. These freeze well.
Artichoke Dip Servings:
Ingredients: 1 can artichoke hearts, drained 1 cup grated Parmesan cheese ½ cup mayonnaise 1 tblsp diced onions 1 dash pepper

Directions: Mix ingredients and place in a pie pan. Broil until golden brown and bubbly. Good served with Triscuit thins.

Bacon & Cream Cheese Stuffed Mushrooms Servings: From the kitchen of:

Ingredients: 8 oz bacon ½ cup finely minced sweet onion 1 clove garlic, minced 16 oz white button mushrooms 4 oz cream cheese ½ cup grated Parmesan cheese Salt & pepper
Directions: Preheat oven to 350 degrees. Using scissors or a sharp knife, cut raw bacon into small pieces. In a large sauté pan, over medium heat, cook bacon until nice and crispy. While bacon is cooking, remove mushroom stems from caps and chop stems into small pieces. When bacon is done, remove from pan and set aside. Reserve 2 tblsps of bacon grease and pour the rest from the pan. Sauté onion until soft, about 5 minutes, scraping up any brown bits on the bottom of the pan. Add chopped mushroom stems and garlic; cook a few minutes longer. Reduce heat to low. Add cream cheese and Parmesan cheese; stir until melted. Add reserved chopped bacon and season to taste with salt and pepper. Remove mixture from heat and stuff each mushroom cap generously with mixture. Bake at 350 degrees for about 20 minutes or until mushrooms are soft and filling is nice and hot.
Notes: The stuffing mixture can be made, cooled, and stored, covered, in the fridge for up to two days.

Ingredients: 1 (8 oz) pkg cream cheese 1 cup shredded cheddar cheese 1 tsp Worcestershire Sauce ½ tsp onion flakes ½ tsp lemon juice 1/8 tsp cayenne pepper

Directions: Combine all ingredients and shape into a ball. Spread on crackers.
Black Bean Dip
Ingredients: 1 large jar picante sauce 1 can black beans 1 can field peas with snaps 1 can white shoe peg corn (can or frozen) Cilantro – 2 to 2.5 cups 3-4 Romano tomatoes 1 cup sweet onion 2 cloves garlic Juice of 2 limes Black pepper

Directions: Rinse & drain black beans Drain corn Dump together picante sauce, black beans, field peas, and corn. Chop cilantro, onion, tomatoes - add to above mixture Mince garlic – add to above mixture Add lime juice Pepper top, then sir.
Notes: Regular canned or frozen corn can be substituted for shoe peg corn. Refrigerate overnight for best flavor.
Blue Cheese Date Wraps (Taste of Home, April/May 2008)
Ingredients: 12 bacon strips 35 pitted dates 2/3 cup crumbled blue cheese

Directions: Cut each bacon strip into thirds. In a large skillet, cook bacon in batches over medium heat until partially cooked, but not crisp. (I bake the strips in the oven) Remove to paper towel to drain. Keep warm. Carefully cut a slit in the center of each date, fill with blue cheese. Wrap a bacon piece around each stuffed date, secure with a wooden toothpicks. Place on ungreased baking sheet. Bake at 375 degrees for 10-12 minutes or until bacon is crisp.

Ingredients: 16 oz Cream Cheese 2 Large Cans of Cocktail Shrimp, coarsely cut 2 Stalks Celery, Chopped 1 Tbsp. Tabasco Sauce 2 Tbsps. Worcestershire Sause Garlic Puree or Garlic Salt 1 Tbsp. Mayonnaise Juice from ½ Lemon Salt & Pepper Celery Salt
Notes: Good to stuff celery with.
Directions: Soften Cream Cheese with milk Add ingredients and blend. This dip refrigerates well and tastes better the second day. Serve with Ruffles Potato Chips, Crackers or Vegetables.
Chili Cheese Dip Servings:
Ingredients: 8 oz cream cheese 1 cup Turkey Chili w/o beans 2 cups of cheddar cheese

Directions: Spread cream cheese on the bottom of a quiche dish and pour chili over cream cheese, then sprinkle cheddar cheese over the top. Microwave 7 minutes and serve with crackers or chips.
Clam Dip Servings:
Ingredients: 4- 6 ½ oz. Canned Minced Clams ½ C of Liquid from Minced Clams 2 8oz. Packages of Cream Cheese 2 t. Chopped Chives ½ t. Salt 2 drops Tabasco Sauce 2 t. Worcestershire Sauce 2 t. Lemon Juice 1 Round, French or Sourdough (best) Bread 1 Round, French or Sourdough (best) Bread

Directions: Hollow out bread setting top aside to replace later In a large saucepan, melt cream cheese while adding all ingredients, sans bread, stirring until cream cheese is melted and mixture is well blended. Pour into hollowed out round bread. Replace top and wrap whole bread in aluminum foil Bake for two hours in a preheated, 300 degrees oven Prepare bread loaf by cutting into cubes for dipping Present with toothpicks
Notes: Suggestions: This is great for parties or small gatherings. Great during the fall season, holiday entertaining or early spring. One of my favorite recipes for a party and one of the first appetizers to get eaten. Including the bread bowl!
Corn Dip Servings:
Ingredients: 8 oz Cheddar Cheese, shredded 8 oz Jack Cheese, shredded 1 small can Chopped Green Chilies 2 cans MexiCorn 8 oz Mayonnaise 8 oz Sour Cream Green Onions to taste Chopped Jalapenos to taste

Directions: Cook sausage and mushrooms together until done. Drain. Stir in package of room temperature cream cheese and add green chili stew. Pour into a baking dish and top with cheese. Bake at 350 degrees until cheese is melted and bubbly. Serve with corn chips, crackers, or slices of a French baguette
Notes: Use 505 Green Chile Salsa or any other Salsa Verde if Green Chile Stew is not available. Any kind of cheese can be used. Preferably Cheddar or Jack.
Hot Crab Dip Servings:
Ingredients: 1 – 8oz package cream cheese – softened 1 ½ cups flaked King Crab 2 Tablespoons finely chopped onion or shallot 1 Tablespoon Milk ½ teaspoon cream style horseradish Salt & Pepper – to taste 1/3 cup slivered almonds

Directions: Preheat oven to 375 degrees F Mix the ingredients well in a bowl Transfer to an oven proof dish and bake for 25 mins It will be bubbly and lightly browned Let cool for 10 mins before serving Serve with Fritos Scoops or toasted bread
Notes: This recipe can be easily doubled for a larger crowd. Try a dash of sriracha or harissa for a spicy version. I use a 9” pie dish (non-deep dish) or split if between 2 smaller dishes and freeze one for later use. My Sister says this dish is hard to stop eating.
Jalapeno Popper Dip Servings:
Ingredients: 2 pkgs. (8 oz. each) cream cheese, softened 1 c. mayonnaise ½ c. shredded cheddar cheese 1 can (4 oz.) chopped green chilies 1 can (4 oz.) diced jalapeno peppers ½ c. shredded Parmesan cheese, divided ½ c. seasoned bread crumbs 1 Tbsp. olive oil Corn chips, tortilla chips or assorted crackers

Directions: In a large bowl, beat the cream cheese, mayonnaise, cheddar cheese, chilies, peppers and 1/4 cup Parmesan until blended. Spoon into an ungreased 1-1/2-qt. baking dish. In a small bowl, combine the bread crumbs, oil and remaining Parmesan. Sprinkle over cheese mixture. Bake, uncovered, at 350° for 20-25 min. or until golden brown. Serve with chips or crackers. Yield: 16 servings (1/4 cup each).

Directions: Brown the beef until cooked through. Add celery, green pepper and onions. Fry until tender. Put bread aside and add remaining ingredients to the mixture. Cut circles in slices of bread. Butter one side of the circle and place buttered side down in muffin tin. Fill with meat mixture and bake at 350 degrees until brown (15 – 20 minutes).
Mexican Shrimp Cocktail Servings:
Ingredients: ½ cup Clamato juice ¼ cup ketchup 1-3 tblsp salsa ½ tsp sugar 1 garlic pod, minced 1 large avocado, cut chunky 1 large fresh tomato, chopped ¼ red onion, finely chopped 1 celery stalk, finely chopped ½ cucumber, small quarters ¼ cup cilantro, chopped/torn Juice of one lime Sprinkle of cumin ½ lb small cooked shrimp

Ingredients: 1 large Spanish onion, diced 8 eggs 18-20 cheese Ritz crackers, rolled into fine crumbs 2 cans diced mushrooms 12 oz medium cheddar cheese, grated Choice of smoked meat (ham, bacon, salami, etc.) Salt & Pepper to taste

Directions: Preheat oven to 375 degrees Sauté onion in butter. Drain and set aside. Beat eggs, add Ritz crumbs, mushrooms, onions, cheese and smoked meat. Pour mixture into each cup, filling halfway. Bake for 20-25 minutes. Remove from pan immediately.
Ninfa’s Green Dip (Houston) Servings:
Ingredients: 1 ripe avocado ½ cup sour cream 1 teaspoon minced onion 1 clove garlic, mashed ¼ teaspoon salt 1 tablespoon minced fresh Cilantro or ¼ teaspoon dried cilantro 3 drops of hot sauce 2 tablespoons salsa 2 to 3 tablespoons lemon juice

Directions: Peel avocado, remove stone, and mash to a smooth pulp. Add remaining ingredients and blend in mixing bowl. Let stand for at least one hour before serving. Refrigerate to keep fresh. Serve with tortilla chips or as an accompaniment to Mexican dishes.
Notes: This recipe was published by the renowned restaurateur in Houston Ninfa Lorenzo. I usually double the recipe. You will want to taste the dip to make sure it suits your tastebuds. Sometimes, I may add a little more salsa.

Ingredients: 4 oz Chihuahua or Monterey Jack cheese 3 flour tortillas 2 tsp vegetable oil 1 medium firm nectarine or peach ¼ roasted red peppers, drained Zander patted dry 1 Serrano pepper, seeded 2 T finely chopped red onion 2 T finely chopped cilantro 1 lime ¼ tsp salt Additional finely chopped cilantro

Directions: Preheat oven to 400 degrees Cut cheese into 24 - ½ inch cubes Brush both sides of tortillas with oil Stack tortillas and cut into 8 wedges for a total of 24 wedges Press tortillas into cups of a mini muffin pan Place one cheese cube into each cup Bake 5-7 min. or until edges of tortillas begin to brown and cheese is melted For the Salsa, dice nectarine or each and roasted bell pepper. Finely chop red onion and cilantro and Serrano pepper Place all of this in a bowl and add salt and 1 T of lime juice Mix well and set aside Remove tortillas from oven and let sit 2-3 minutes. Carefully remove from pan to serving platter Divide salsa evenly among cups Sprinkle with additional cilantro if desired

Ingredients: 1 – 8oz package cream cheese ½ cup sour cream 1 Tablespoon Lemon Juice 1 Tablespoon minced Dill 1 teaspoon horseradish ½ teaspoon salt ¼ teaspoon ground pepper ¼ lb Smoked Salmon – minced.

Sausage Swirls or Pinwheels Servings:
Ingredients: 1 lb bulk sausage, browned 1 8 oz block cream cheese 1 can Pillsbury Crescent Dough Sheet

Directions: Drain cooked sausage. While still hot, mix with cream cheese. Roll dough sheet out on waxed paper and spread sausage/cream cheese mixture on dough sheet evenly, leaving about ½ inch on one long side. Roll it up as tight as you can, then seal the edge left without mixture on it. Roll it up in the waxed paper and put in the fridge to cool and allow the cream cheese to get a little firm. (makes it easier to cut.) Cut with a serrated knife about ¼ inch thick slices. Bake at 350 degrees for about 20 minutes or until browned.
S&D Oyster Company – Spicy Shrimp Dip
Ingredients: 2 lbs peeled, deveined shrimp 8 oz package cream cheese – softened ½ cup mayonnaise (Hellman’s!) 1 cup thousand island salad dressing ¼ cup minced fresh green onions 1 small onion or shallot grated 4 teaspoons Tabasco sauce 1 Tablespoon Lawry’s seasoned salt 1 tablespoon fresh ground horseradish

Directions: Boil shrimp and chop into chunks Blend softened cream cheese with mayonnaise and salad dressing Stir in shrimp, minced onions, grated onion, Tabasco sauce, Lawry’s seasoned salt and horseradish Serve with saltine crackers
Notes: This recipe makes a large quantity (1.5 quarts) – I usually half this recipe. Also good to make in advance and chill before serving.
Spinach Dip
Ingredients: 1 10 oz package frozen chopped spinach ½ C finely chopped green onions ½ C minced fresh parsley 2 C mayonnaise 1 t salt 1/8 t pepper

Directions: Thaw and thoroughly drain spinach – put in medium bowl. Add remaining ingredients. Mix until well blended. Makes 3 cups Serve in a round bread loaf hollowed out. Use chunks of bread for dipping.

Directions: Mix together spinach, sour cream, mayonnaise, bacon, dressing mix, onions and water chestnuts. Spread at least ¼” thick on tortillas and roll up. Refrigerate overnight in a covered container. Trim edges and slice into ¾ “ pieces to serve.

Ingredients: 1 – ¼ lb boneless, skinless chicken breasts 2/3 cup brown sugar, firmly packed 1 lb pkg sliced bacon 2 tsp chili powder

Directions: Preheat oven to 350 degrees. Cut chicken breasts into 1 inch cubes. Cut each bacon slice into thirds. Wrap chicken cube with bacon and secure with a toothpick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a broiler pan with non-stick cooking spray. Place chicken on broiler pan and bake at 350 degrees for 3035 minutes, until bacon is crisp.

Ingredients: 1 lb. Velveeta Cheese 1 lb. Owens sausage 1 loaf Cocktail Pumpernickel Bread (Kroger’s)

Directions: Brown sausage and pour off grease, place on paper towel to blot. Allow to cool. Meanwhile, cut cheese into cubes and place in a cooking pot. On medium heat, melt cheese. (Add a small amount of milk (tsp) and cheese will be smoother when melting,) Add sausage to cheese and mix well. Place a small amount of cheese on each slice of bread. Directions: Heat olive oil and 2 tbsps. butter in a large pan or skillet. Add garlic and sauté until fragrant (about 30 seconds – 1 minute.) Add shrimp, season with salt and pepper to tase, and sauté for 1-2 minutes on one side (until just beginning to turn pink), then flip. Pour in wine (or broth), add red pepper flakes. Directions: Line the bottom of a 9” X 13” slightly greased pan with six tortillas cut in fourths, overlapping. Brown ground beef and onion in a skillet. Drain off grease. Spread meat over tortillas. Layer undrained beans over meat and sprinkle half (8 oz.) of the grated cheddar cheese over the beans. Overlap remaining six flour tortillas, cut in fourths over cheese. Mix soup and Rotel tomatoes. Spread over tortillas and top with remaining grated cheddar cheese. Bake covered at 350 degrees for 50 minutes. Cook uncovered for an additional 10 minutes. Depending on your oven, you may consider putting a cookie tray underneath the lasagna pan to prevent spillage into the oven. Directions: Lightly grease a 9x13 baking dish with non-stick cooking spray. Arrange chicken breasts evenly in the prepared dish. Salt and pepper the chicken breasts. In a small mixing bowl, whisk together the mayonnaise, Parmesan cheese, Italian seasoning, and garlic powder until evenly combined, Add the mayo mixture in dollops evenly over the chicken, then use a spatula to spread as necessary to cover the chicken completely. Ingredients: 1 ¼ lbs boneless skinless chicken thighs, cut into 1 inch pieces 2 garlic cloves, finely chopped 2 – 15oz cans white or yellow hominy, drained & rinsed 1 medium onion – chopped 1 teaspoon dried oregano ½ - 1 teaspoon cumin ¼ - ½ dried red pepper flakes 4 – cups chicken broth 1 - 14.5 oz can diced tomatoes with green chilies (like Rotel) 1 can Black Beans drained and rinsed 1 tablespoon lime juice ¼ - ½ teaspoon salt and pepper Notes: Can also cook on stovetop. Directions: Season both sides of the pork chops with the ranch dressing mix, garlic powder, and pepper. In a large slow cooker whisk together the brown gravy mix, cream of chicken soup, and beef broth. Add the seasoned pork chops to the slow cooker. Cover and cook on low for 6-7 hours or high for 3-4 hours. (Thin pork chops cook quicker than thick ones) Remove the pork chops carefully from the slow cooker and put onto a plate. Directions: Lightly spray slow cooker with non-stick cooking spray. Ingredients: 2 to 2-1/2 lbs. boneless, skinless chicken breasts 1 cup onion, chopped 1 cup Sweet Baby Ray’s BBQ Sauce ½ cup Kraft Zesty Italian salad dressing 2 tablespoons Worcestershire sauce ¼ cup brown sugar
Place chicken in single layer in slow cooker. Top with diced onion. Mix remaining ingredients (BBQ sauce, Italian dressing, Worcestershire sauce and brown sugar). Pour over chicken. Cook on high for 3 to 4 hours, until chicken is tender and easy to shred. When ready, shred with two forks. Reduce slow cooker temperature to low and cook an additional hour. Cooking the extra hour allows the yummy sauce to be absorbed into the chicken. Serve chicken piled high on your favorite rolls along with your favorite barbecue sides – coleslaw, potato salad, etc. Tips – Use leftover chicken to make BBQ pizza, serve on top of rice, baked potatoes or salad. Also, makes an awesome wrap.

Directions: Melt ¼ cup butter in large skillet and sauté onions until tender. Place half the onions in a 1 ¼ quart deep dish pie pan. Sprinkle 1 cup Swiss Cheese and ½ cup cracker crumbs over onions. Repeat layers of onions and cheese. Beat eggs with cream, salt and pepper. Pour evenly over onion mixture. Melt 1 tbsps. butter in a skillet and stir in remaining cracker crumbs. Lightly brown, then sprinkle crumbs over casserole. Bake at 350 degrees 25 minutes.
Asparagus Casserole Servings:

Directions: Mix soup and some of the asparagus juice in a saucepan until heated through (you won’t need to add all the juice). Directions: Cut Bok Choy into small pieces and add chopped onion. Set aside in fridge until ready to serve. In a large pan, melt butter, then add sugar, sesame seeds, almonds and crushed Raman noodles. Cook until a light golden brown. Remove from heat and let cool until room temperature. Place in zip lock bag for storage. Dressing: Blend all ingredients together in a shaker until well blended. When ready to serve, combine all ingredients and add dressing.

Directions: Preheat oven to 375 degrees. Halve squash, remove seeds, and place on jelly-roll pan, upside down. Add ½ cup of water. Cover with foil and cook until very soft about 40-50 minutes. Cook bacon until crispy, remove from skillet. In bacon drippings, cook onion until soft and move to a large pot. Add softened squash pulp, chicken broth, bay leaf and thyme. Bring to a boil, turn down heat and simmer for 30 minutes. Remove bay leaf! Let cool for 1 hour. Working in batches, puree in blender until smooth. May stir in cream and season with salt and pepper. Serve with 1 tsp of crumbled bacon.
Notes: To prevent blender lid from popping off, remove small plastic insert in lid and cover with several paper Towels.

Directions: Cook bacon, chop into pieces, Chop jalapeno, scraping seeds out for less spice Sauté in butter with finely chopped garlic in a sauce pan or skillet large enough for two cans of corn and cheese. Recommend adding jalapeno 2-3 minutes prior to garlic which cooks faster. When garlic and pepper start to soften, stir in two cans of corn , cut up bacon, 2 tbsps. of butter, cream cheese, cheddar and Parmesan. Season mixture with salt and paper. Pour into casserole dish. Mix the saved ½ cup Parmesan, bread crumbs and herbs together then sprinkle over casserole dish. Bake at 375 degrees for about 15 minutes until cheese is bubbling and melted.

1 eggplant, sliced in ¼ in rounds 1 c. Panko bread crumbs ½ c. Parmesan cheese 4 oz. cream cheese ½ c. milk 1 tsp garlic powder Shredded mozzarella cheese 1 lg. tomato

Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Mix bread crumbs and parmesan cheese together in a shallow dish. Spray slice of eggplant on both sides and dredge in crumb mixture. Place on baking sheet. Repeat for all slices. Bake for 15 minutes. Turn. Bake additional 15 minutes or until golden brown. Remove from oven. Meanwhile, melt cream cheese in microwave safe bowl for 45 seconds. Whisk in milk and continue whisking until smooth. Add garlic powder. In a 9-inch pie plate, add small amount of milk mixture to the bottom of plate. Arrange a layer of eggplant. Pour a small amount of milk mixture on top. Sprinkle with cheese. Repeat another layer. Place remaining slices on top. Arrange tomato slices on top of eggplant. Sprinkle with remaining cheese and crumb mixture. Bake in preheated oven for 30 minutes or until bubbly and golden.

Directions: Cut cauliflower and broccoli into bite-sized chunks. Slice the olives, halve the cherry tomatoes, and slice the red onion into rings. Drain and rinse the water chestnuts. Mix with the other vegetables in a large serving bowl. Prepare the dressing by adding the Good Seasons mix to the vinegar and water, mixing well before and after adding the oil. Note that this is less oil than suggested in the package instructions. Add the dressing to the vegetables and mix well. Cover the bowl and place in the refrigerator overnight (or for at least 8 hours). Mix once or twice while marinating and again before serving.

Directions: Cook pork sausage in an ovenproof Dutch oven over medium heat for about 5 minutes, stirring until sausage crumbles and is no longer pink. Drain and rinse the sausage, reserving 2 tsp drippings in the Dutch oven. Return sausage to Dutch oven and stir in onion, and next 8 ingredients, and if desired, garlic powder. Bake at 350 degrees for 45 minutes or until thick and bubbly. How I make this recipe: Brown the meat, drain. Cook the onions for about 5 minutes. Put all the beans, onion, and meat in a crock pot. Mix the BBQ sauce, brown sugar, mustard, peppers and garlic powder together. Pour over beans and mix well. Cook on high for about an hour, then on low.
Notes: I use Sweet Baby Ray’s Sweet and Spicy barbecue sauce, but other spicy brands work. To make it less spicy, use 1 bottle spicy and 1 bottle regular sauce.

Directions: Cake layer: Heat oven to 350 degrees. Grease a 13” X 9” rectangular baking pan. In a large mixing bowl combine flour, sugar, butter, eggs, and chocolate syrup. Beat until smooth. Pour into the prepared pan and bake for 25 to 30 minutes or until the top springs back when lightly touched. Cream Center: In a small bowl combine all of the ingredients until smooth. Spread cream center over the cooled cake. Cover and chill. Frosting: In a small saucepan over low heat melt margarine and chocolate chips. Remove from the heat and still until smooth. Cool slightly. Pour chocolate frosting over the chilled dessert. Cover and chill several hours ahead of serving. Keep refrigerated for freshness. Can be frozen for leftovers.
Notes: The reason to use margarine for the frosting is that it makes it easier to cut through the mint squares for serving.

Directions: Preheat oven to 350. With an electric mixer or stand mixer, combine the flour, sugar, salt, baking powder, milk, eggs, and vanilla. Once that is combined, you slowly stir in 4 TB melted butter. Pour the batter into a greased 9 x 13 pan. In a medium sized bowl, mix the softened butter, brown sugar, cinnamon and nuts, if you are using them. Drop evenly in chunks over the cake batter. Directions: Preheat oven to 325 degrees and flour a 10-inch Bundt pan. Sprinkle chopped nuts and coconut evenly over the bottom of pan. In a large bowl combine cake mix and pudding mix. Mix in eggs, ¼ cup water, ½ cup vegetable oil and ¾ cup Irish Cream liqueur. Beat for 5 minutes at high speed. Pour batter over nuts and coconut in Bundt pan. Directions: Mix eggs and sugar. Add pumpkin and lemon juice and mix again. Add other ingredients except for the nuts. Line a jelly-roll pan with wax or parchment paper. Thoroughly grease and flour the paper. Spread batter in the pan. Sprinkle with nuts, if using. Bake 13-15 minutes at 375 degrees. (Check at 11 minutes; if it bounces back, it’s done. Sprinkle a cotton tea towel with Confectioners’ Sugar. Invert the cake pan on the towel, and roll along the short side like a jelly roll. Let cool for about an hour or two. Unroll the cake and spread with the filling. Re-roll and refrigerate. Icing Beat together Confectioners’ sugar, softened butter, softened cream cheese and vanilla together. Spread on unrolled cake as shown above.

Ingredients: 1 pkg of your favorite brownie mix (I use Ghirardelli) 1 ¼ cups milk 2 pkgs white chocolate instant pudding (3.4 oz boxes) ¼ cup warm water 4 tsps instant coffee granules 2 cups Cool Whip, thawed 1 cup Cool Whip for top (optional) 1 pkg Heath Toffee Bits or Milk Chocolate Toffee Bits 1 – 2 cups white chocolate chips 1 – 2 cups semi-sweet chocolate chips

Directions: Bake brownies as directed and let cool completely; set aside, Combine pudding mix with milk and whisk together until it thickens. Stir together warm water and coffee granules until dissolved. Add coffee to pudding mixture. Mix thoroughly. Fold in 2 cups of Cool Whip. Set aside. Cut brownies into bite-sized pieces. Put a layer of brownie pieces on the bottom of your bowl. Next, put a layer of the pudding mixture. Sprinkle the top with Heath bits, white chocolate chips, and semi-sweet chocolate chips, Use as much or as little of the toppings as you would like. Continue to alternate brownies, pudding mixture and toppings. If desired, add additional Cool Whip on top of the last layer of pudding mixture before adding toppings. You can also melt some of the chocolate chips and drizzle chocolate on top to make it look more decorative. Refrigerate until ready to serve. Serve chilled.
Swedish Apple Pie with Cinnamon Cream Sauce
Ingredients: 1 – 9” deep dish pastry shell, unbaked 1 cup sugar 4 cups sliced, peeled Granny Smith apples 1 egg 1 tbls cinnamon 1 cup flour 12 tbls butter, melted Dash of salt Cinnamon Cream Sauce 1 ½ cups sugar 2/3 cup light corn syrup 1/3 cup water 1 ½ tsps. cinnamon 2/3 cup evaporated milk 1 tsp vanilla

Directions: Place sliced apples in unbaked pastry shell. Combine 1 tbls sugar and cinnamon; sprinkle over apples. Combine melted butter, the 1 cup of sugar and egg; beat until smooth. Stir in flour and salt; spoon over apples. Bake on bottom rack in 350 degree oven for 45 minutes until golden brown and apples are tender. Cool. Serve with ice cream or Cinnamon Cream Sauce. Cinnamon Cream Sauce In medium saucepan, combine sugar, corn syrup, water and cinnamon. Bring mixture to a boil. Boil over medium heat for 4+ minutes. (Cook to consistency of corn syrup. Remove from heat and cool slightly. Stir in evaporated milk and vanilla. Serve warm.
Notes: Cream sauce can be made a day ahead; keeps well in fridge.

Ingredients: Crust: 1 box yellow cake mix 1 stick butter , softened
Directions: For Crust: Mix ingredients together and pat into a 9x13 pan. Spray bottom of pan with baking spray. Bake at 350 degrees for about 10 minutes.
Filling: 1 can Eagle Brand Milk 1 egg 1 tsp Vanilla
For Filling: While crust is baking, mix up the filling ingredients. Pour over the pre-baked crust. (You may have to spread to cover all the crust.)
Topping: 1 cup Chopped Pecans 8 oz Heath Toffee Bits
Topping: Sprinkle topping evenly over filling.
Notes:
Bake at 350 for 30-40 minutes. Cool and cut into squares.

Directions: Ingredients: ¾ cup packed brown sugar ½ cup powdered sugar (10x) 1 tsp. vanilla extract 1 8 oz. block cream cheese, softened ¾ cup toffee bits (About 4 oz.) 1 cup pineapple juice 6 Red Delicious apples cut into wedges 6 Granny Smith apples cut into wedges
Notes: Make up to 12 hours ahead.
1. Combine first 4 ingredients in a bowl, beat with a mixer at medium speed until smooth. 2. Add toffee bits; mix well. Cover and chill. 3. Combine juice and apples in a bowl; toss well. Drain apples. 4. Place apples in an airtight container and chill. 5. Serve dip with apples.
Whipping Cream Pound Cake Servings:
Ingredients: 3 cups sugar 2 sticks softened butter 3 cups cake flour 8 oz room temp heavy whipping cream 6 eggs, room temperature 1 tsp vanilla 1/3 tsp salt ½ tsp baking powder

Directions: Cream butter and sugar. Add one egg at a time. Alternate adding flour and cream. Add baking powder, Salt, and vanilla. Put batter into a greased tube or Bundt Pan. Start with a cold oven rack in the middle. Turn Oven on to 350o and bake for approximately one hour. Toothpick test to ensure the cake is done. Let cool before turning on to a cake plate.
