The Quad Cities is a region in northwestern Illinois and southeastern Iowa that consists of four primary cities: Davenport and Bettendorf in Iowa, and Rock Island and Moline in Illinois. This corner of the Midwest is home to Tom and Jane Reese, whose childhood along the Rock River, Mississippi River and the lakes that pepper this part of America, set the stage for a lifetime of boating enjoyment. Born and raised in the small farming community of Geneseo, Illinois, Tom remembers a modest farming home life punctuated by seasons in the sun and waters of the Midwest. “If we were not in the Rock River, we were in the Mississippi. There was also a lake on our farm where we spent a lot of time. I can hardly remember a time during the Summer we weren’t in a boat or in the water during my childhood. That is no doubt the source of my love of boating,” says Tom.

GRILLED ASPARAGUS BRUSCHETTA A loaf of crusty Italian bread Bunch of thin asparagus spears ¼ Extra virgin olive oil 1 Tsp. freshly chopped rosemary 1 Tsp. sea salt Fresh ground pepper Garlic cloves, peeled 10 Oz. fresh mozzarella
To make it happen: Slice the bread at a diagonal about ½ inch thick, brush both sides with the extra virgin olive oil and place on the grill. Lightly toast both sides. As you remove them from the grill, immediately rub the toasted rounds with the peeled garlic cloves on sides. Add the rosemary, sea salt and pepper to the remaining oil. Trim the asparagus about a third of the way up the spears from the base and place in the seasoned oil thoroughly coating the asparagus. Place them on the grill and cook until lightly charred and the tips are crunchy. Slice the mozzarella to cover the toasted rounds about ¼ inch thick. Layer the toast, cheese and asparagus on foil or a sheet pan that will fit on the grill. Place the assembled bruschetta onto the grill. Close the cover and turn the grill off. Let stand for 5 minutes and remove from the grill. Serve immediately.

To make it happen: Cut tuna into equal portions. Season with ¼ teaspoon of the sea salt and teaspoon of the freshly ground pepper. Heat 2 tablespoons of the olive oil in a large skillet over medium–high heat. Place the tuna and rosemary in the skillet and sear each side for 30-40 seconds. Remove from the heat and slice into ¼ inch thick slices. Boil potatoes in a pot with salted boiling water until fork tender. Drain and transfer to a bowl. Pour the white wine over the potatoes and let cool. Slice into ¼ thick slices and set aside. Blanch the haricot vert in boiling salted water for 4 minutes. Immediately cool in iced water to suspend cooking. In a separate bowl combine the shallot, vinegar, mustard, thyme and the remaining olive oil. Wisk well and set aside. Clean the lettuce, pat dry and tear into bite sized pieces. Assemble the salads on 4 dinner plates as a main course.
