AMATEUR SPOTLIGHT

SUSAN SWOPE Where were you born and raised? I was born in Elizabethtown, Kentucky… where I was first introduced to horses at around 18-months-old. My father told me there was no possible way I could remember anything from that age. I’m a bit of a freak… as I remember quite a lot from that age, and very clearly my neighbor’s harness pony. It has a lasting effect. They used to drive it around the neighborhood. It was love at first sight. At two-years-old, we moved to Louisville, where my father expanded his business. I remember THAT too. Another story. Where did you go to school? I graduated from Walden School in Louisville. I was a member of the first graduating class in 1977.. a school that continues to thrive and provide a wonderful education K-12. I then experienced the best four years of my life, graduating from Stephens College in Columbia Missouri in 1981. What was your ﬁrst exposure to horses? See the above! After that, I took my first riding lesson from Helen McGreevy in Louisville, Kentucky, as many of us in my generation of that area did. Rock Creek, Ed Teater, Charlie Smith and Don Judd provided my most formative years. A little bit of history – when you were married, your children, etc. I married at 24 and had three beautiful children. Gavin, who would have been 32 now. Tragically, I lost him in 2010, at Age 23. I have my wonderful twins,Travis and Julia Winkler, Ages 29,

born in 1990. Julia her husband, Lance Hutchison, have blessed me with two wonderful grandchildren, Arlo (2) and Elia (1). Please tell us a bit about your family. I was raised in a family of extremely driven entrepeneurs. My father, Sam Swope, had one of the largest auto dealerships in the country with 22 lines. My sister, Patti, ran that company for many years. My brother Brad, and his wife, Ann, have a very successful interior design company, established in 1985. My uncle, and his sons, daughter, in-laws also have very successful dealerships in Elizabethtown and Lexington, Kentucky. What are some of the favorite horses/ponies you have shown? I loved my Friesian, Onne. We had some wonderful years together and won just about everything that could be won with a Friesian. My favorite Saddlebreds of the near past were Miss Can’t Be Wrong. I showed her her junior year to some fun successes. Followed soon after was Talk Is Money. I don’t think he and I ever finished lower than third, and had a lot of nice wins. And last but not least, Stanley Steamer, my roadster under saddle who too, me to three consecutive world’s championships in Amateur Roadster Under Saddle. What horse(s)/ponies do you currently show and in what divisions? Right now, amongst others, I’m enjoying On Higher Ground in the Ladies Amateur Three-Gaited, Texas Pete in the Ladies Amateur Five-Gaited, Street Legal GRS in the roadsterunder-saddle division. There is also Genesis, roadster-to-bike,

Greyridge Wildcat in the park division, Heartland Seriously, roadster pony, State of Nirvana, a 3-year-old Five-Gaited stallion, and my latest acquisition, I’m On Fire, a 3-year-old fine harness gelding. What has been your most memorable show ring moment thus far? Without a doubt, winning the open roadster-to-saddle, followed by the roadster-to-saddle world’s championship with Street Legal GRS in 2017. The horse has a work ethic like none other. We had only had two rides together before we embarked upon Louisville together that year. What has been your biggest challenge to overcome? I transition between different disciplines. I’ve done it most of my equestrian years. It does make things a LITTLE bit complicated sometimes, but I like the challenge. It’s made me a well-rounded horsewoman and I have an appreciation and understanding of a lot of different kinds of horsemanship. What are your horsemanship goals? Ha! At this point in my life, to keep on movin’ on! As any lifelong horseman/woman knows.. these amazing and beautiful beasts take a toll on the body, yet, at the same time, they keep the mind very, very sharp! I just want to be “hands on” as long as I am able. And when I can no longer? I want to be in the crowd cheering on babies that perhaps I’ve bred and the people and trainers that I love.

How has showing horses shaped your life and made you who you are today? Oh my gosh yes. It’s always been what’s driven and defined me… from the time I was a very young child. I wasn’t born into a “horsie” family. And yet, the DNA is there. I do believe it is an inborn thing. Of the places to which you have traveled, which is your favorite? I have a beloved background in endurance racing, which gave me an incredible appreciation for riding in the great outdoors. No matter what your horsemanship background, there is no better way to see the world than on the back of a horse. It’s incomparable. I’ve traveled the world on horseback and it’s been amazing. My favorite? Of all the places I have ridden, without a doubt, it is Kenya, Africa. I did a safari on the Masai Mara in 2013. This September, I will repeat that trip with my trainers and dear friends, Camille, Peter, and Kim Cowart of West Wind Stables, along with my sister, Patti Swope, and my son, Travis Winkler. What is one place you would love to go? New Zealand and Australia are still on my bucket list. Just trying to decide what mode of transportation I’d like to use… horse, motorcycle or Greyhound tour bus! What are your hobbies? I dabble in photography and have always enjoyed that. I LOVE boating and during the winter months spend time aboard

QUICK FACTS Favorite Food: Cheese. Any cheese. And wine (it’s made from grapes… I think that counts as “food”). Favorite band/music/singer: I have a VERY eclectic taste in music. I’d ﬁll a page or two with that answer. Favorite Movie: Out of Africa. Now a classic. One thing you couldn’t live without: Fresh air and sunshine. One thing you wish didn’t exist (or you could “take it or leave it”): What do I wish didn’t exist? Prejudice and an intolerant attitude. Favorite Horse Show and why: Hands down.. Rock Creek in Louisville. I grew up in that city and my formative horse years were at Rock Creek. Favorite destination: Blue waters and sunshine (despite the fact that my Irish skin protests both). What’s one thing no one knows about you? Or something people would be surprised to find out about you? I’m an extroverted introvert. While I love my people dearly and I love a good gathering, I need my down time. My solitude. I need to recharge, per se. One word to sum up “You.” Redhead.

What do you do in your free time for fun? If I’ve got free time, I try to do something I enjoy. I like to read, and these days, a lot of that time is spent with my trail riding buddies, Ducati and Gatsby.

What was the name of your ﬁrst horse/pony? “Sport.” He was about a 1000-years-old when my father traded a car for him. My first show horse was Penny Lane. Ditto the car trade. Dad traded a car for the mare. I laugh because Charlie joked for the next four and half decades that my dad got the better end of that deal.

What’s a “typical day” for you from start to ﬁnish? Tending animals. Pets and horses. If I’m not personally feeding or cleaning up after something, I’m paying a bill for someone else to make “magic” to happen for my animals. I wouldn’t have it any other way. How frequently do you spend time at the barn? I try to get to West Wind Stables at least once a month to work with my show string with Camille, Peter and Kim Cowart. That’s ALWAYS a fun day. The crew there is just indescribably amazing. Most days, I’m spending lots of time on the trail with at my home at Balsam Mountain Preserve, Sylva, North Carolina with equestrian program manager, Lila Kilby, and my beloved Saddlebreds, Ducati and Gatsby. We ride on these stunning mountain trails. I have the prettiest trail horses in the world. My goodness! How could I not? They are American Saddlebreds, and they are bold, beautiful, driven and smart. Lila, a recent Clemson Veterinary Science graduate and is so enjoying her introduction to the American Saddlebred. When we ride this area, it reminds me of what the Saddlebred ancestors accomplished as the mounts of

Do you remember, your ﬁrst horse show experience? Please share! I do! It would have been Rock Creek in maybe 1970. In those days the show was called the Rock Creek-Kentucky Home School Horse Show. I was eleven and I showed Sport in the open pleasure class for Kentucky Home School girls. By this time, Sport was 1001-years-old. I had no idea what to expect, but Sport did his thing and we brought home a pretty, green ribbon. What advice would you offer to others starting out on the “horse show adventure?” Keep a sense of humor, keep on practicing and do your best. Sometimes it’s a rollercoaster-ride, but in the course of that, prepare for the adventure of a lifetime. When the bug hits you, it never leaves. And for children? It’s one of the best sports around. There’s responsibility for another living being that creates maturity and sensitivity in a child that is incomparable to other sports.

LISA HOLT Where were you born and raised? I was raised in Austin Texas. Where did you go to school? I attended The University of Texas with a degree in Interior Design with a minor in Architecture.

How (and when) did you meet your signiﬁcant other? I am married to my best friend and biggest cheerleader, Ben Holt, and we have two wonderful adult sons, Benjamin and Harrison.

What are some of the favorite horses/ponies you have shown? With Rob Wilson, I had many wonderful horses, Endolane What was your ﬁrst exposure to horses? Admiral being my first gaited horse. Rene Biggins has been I was raised around horses at my Grandparents farms. one of my greatest teachers and I eventually moved to Riding was part of my life, working cows and exploring the Biggins Stable. With John Biggins, I had the amazing Shame countryside. My first horse was Lady, a strawberry roan. on You and Nuttin’ to Lose. I am currently with the amazing We jumped, swam, and hung out with fellow horse-crazy team of Steve & Tiffany Wheeler at Autumn Hills Farm and friends. Merrill Murray from Merlin Farms. How did you get involved with Saddlebreds/Hackneys in particular? I wasn’t introduced to saddle seat until I was forty when a fundraiser for riding lessons at Blanco County courthouse was purchased for our sons. That led me to Pat Ryan’s ranch and her beautiful Morgan horses. David Hadley was her trainer and my sons were not interested but I certainly was. A move to Kentucky from Texas led me to Rob Wilson and the introduction to the Saddlebred Horse!

What horse(s)/ponies do you currently show and in what divisions? My current show horses are I’m A Blues Man who has been my greatest teacher & My Royale Prince who gave me the thrill of my first World’s Championship. As well as The Hathaway Man. What has been your most memorable show ring moment thus far? Winning Louisville and winning the nationals on both horses (I’m A Blues Man & My Royal Prince) has been a thrill. There

have been so many horses and people that have made this so special, fun and have taught me so much! How has showing horses shaped your life and made you who you are today? Determination, humility, patience, joy, commitment, sacrifice, humor and love! Those have been my greatest lessons from my Equine friends 2 and 4 legged. What do you do in your free time for fun? At home we all love the outdoor life! We have two Ranches where we raise Brangus cattle. Farm, and participate in Conservation and land management practices. We love to hunt, fish, hike and just observe the beauty of God’s natural world. What advice would you offer to others starting out on the “horse show adventure?” My advice to anybody coming into the horse show world would be find a great riding instructor and trainer that share your values and bring you along thoughtfully! Don’t be over-mounted, take your time and learn from each horse as you progress up the level of competition.

SAMANTHA SWIGER How old are you? I turn 15 on July 21 Where do you go to school/what year are you in school? I am going into 9th grade at Charleston Catholic High School. What would you like to be when you grow up? I’m not quite sure what I want to do when I grow up. I have changed my mind several times over the years, but always want to be involved with horses.

How often do you ride? I try to ride 3 times a week at home, and get to Milestone as often as I can. What is a typical practice session like for you? During a lesson, I usually do exercises, pattern work, and no stirrups. It really depends on what I am trying to work on at that point. What are some of your favorite horses you have shown? Some of my favorite horses I have shown are Ultimate Spitfire, Nuttin But the Best, Miss Mheiry Mac, Supreme Spotlight, and Ch Man of Hour Dreams.

Name your family/Siblings/pets: My parents are Brian and Debbie Swiger. I have 4 dogs, BoBo, Moose, Jewel and Bolt. At my farm, I have my first pony ever, What horse(s) do you currently show and in what divisions? Butterscotch. I currently show WCC CH Ultimate Spitfire in the five-gaited pony division and Nuttin’ But the Best in 17 and under Equitation. When did you ﬁrst start riding? How did you get involved with horses? How has riding American Saddlebreds shaped your life and made you who you are today? It has made me a lot stronger and tougher person. I have learned how hard you need to work to accomplish goals in life, and It has been amazing meeting so many new people throughout my career. Of the places to which you have traveled, which is your favorite? My favorite is definitely St.Thomas and Hilton Head. What is one place you would love to go? I have always wanted to travel to Canada. What is your trainer’s favorite phrase or words of advice? Some words of advice I usually get from Todd and Macey Miles is to keep riding hard and pay attention.They are both amazing people for whom I am so thankful. Meliska Uys is always there for me and I get great help at home from Stephanie Lilly and Lisa Lawrence.

Do you have any nicknames? I have had the nickname Sam Sam for as long as I can remember. What is your favorite food? I like a lot of different foods, but I really like seafood and a good steak What is your favorite music, singer or band? I enjoy a lot of older music from the 80s. What is your favorite movie? Some of my favorite movies are the Rocky movies, The Client, and The Parent Trap. What’s one thing you couldn’t live without? I definitely couldn’t live without my family and friends. I also couldn’t live without Buddy (Ultimate Spitfire). What’s one thing you wish you didn’t exist (or something you could live without)? I could live without hours of homework.

What are your hobbies? Well I really enjoy playing tennis and have started running for cross country.

What’s something no one knows about you? I don’t think anybody knows that I loved to bake, and would always pretend I was on the kids baking championship.

What do you do in your free time for fun? During the summer, I really enjoy going to the pool, fishing at my farm and, going on trail rides

Use one word to sum up “You.” I’m not really sure about this one, but a lot of people say I smile a lot so I would say “happy.”

TOP TEN LIST OF TIPS AND TRICKS FOR SHOW DAY

e know that nerves leading up to the show day can be a concern for everyone from seasoned professionals to the first-time exhibitor. So, we asked Amanda O’Keefe Murchison to let us in on some of her tried and true Tips and Tricks for Show Day. We asked her because Amanda has shown horses her whole life. During her childhood, she showed a Shetland pony, an Appaloosa, and a Morgan, and began showing Saddlebreds when she was ten years old. She was the 1993 13-Year Old Equitation World’s Champion with CH SS Sweet Revenge, and won two Reserve World’s Championship titles as an amateur in Ladies and Ladies Amateur Five-Gaited with CH Like an Admiral (2000). She won World’s Championship titles in Adult Three-Gaited Show Pleasure with CH Bonnie Buck (2004) and CH Stocco (2013). In 2015, 2016, and 2017, she and CH Spread the Word won World’s Championship titles in Adult Three-Gaited Show Pleasure, and in 2016 and 2017 were the World’s Champion of Champions. They were also the National Champions in 2015, 2016, and 2017. She currently owns and loves One Rare Moment, and is working to finish her doctorate in Educational Leadership. She rides with David and Kristen Cater at Cater Stables in Dunbarton, New Hampshire. Here is what she had to say: You have prepared. You have ridden your horse at home, practiced on lesson horses, and discussed strategy with your trainers. Now, it’s time to shine.

But, what if you’re nervous? What if your husband loses the golf cart key in Louisville ten minutes before you’re supposed to leave the hotel to go get ready to show in your class (thanks, Big Ger)? What if you have run out of hair nets or hair spray or some other essential and had no idea until you need those things and are now freaking out because you don’t have them? What if your mind goes to that horribly dark place and you hear the voice that says, “you’re not good enough,” and you listen?

You cannot predict what will go wrong. But, here’s what you CAN do to get yourself into a positive head space so that if things go wrong, you will stay calm and focused.

When your alarm goes off the day you are showing, be thankful that you get to show. Take a deep breath or two before you even get out of bed, and remember how much you love these horses. I guarantee your love is not tied to a class or a ribbon. It’s tied to the moment you lost your heart to horses. Take another deep breath or two.

Listen to music that pumps you up. Playlists are wonderful things. I listen to mine in the hotel room as I’m getting ready to show. Big Ger has heard the same song on repeat, sometimes for an hour (payback for the golf cart key).

I watched a gymnast at the Olympics say to herself, “you got this.” She then hopped onto the balance beam and absolutely killed it. Remind yourself “you got this,” especially when you think you don’t.

Work out. Whatever the word “work out” means to you, do it. Getting your heart rate up will release endorphins and will help you get into the right head space.

Get ready where you have space, time, and quiet. Getting dressed at the show is definitely not for me. If it works for you, go for it. However, I need space to spread out and to sing and to dance to my music if I choose to.

A wise professor, Dr. Russ Quaglia, once told my doctoral class that “fear is enthusiasm in need of an attitude adjustment.” Remember that, too.

Visualize. Visualize your class from the perspective of your horse’s back. Remember where your transitions should be, for example, and practice them in your head. Run the class through. Picture other horses and where they may be. Envision a ride that is the result of all the practicing you have done, and all the hard work that you have dedicated to this sport.

If you’re nervous, close your eyes and feel your feet pressing into the ground. Close your eyes and listen to the sounds around you. Identify them. Take a deep breath. I thought this was ridiculous until I tried it. Shockingly, it works.

Find what works for you and do it. Try the tricks I’ve mentioned, but try others you’ve heard as well. Make your own top ten list for pre-show times, and go through it each time you show.

Enjoy being on your horse’s back. My favorite moment of showing is going through the gate and seeing the ring with my horse’s neck and ears in front of me. Take in that moment, knowing how incredibly lucky you are to be able to do this with a creature as amazing, as incredible, as a horse.

MICHELLE SPRENGELMEYER Where were you born and raised? East Dubuque, IL, a small town in northwest Illinois on the Mississippi River.

Jones was a kind horse that taught me a lot and was the source of great fun. He was equally good natured at home in the stable, at the horse show, or riding out on the trail.

Where did you go to school? I attended high school in Dubuque, IA; college at Mundelein College in Chicago, IL; and medical school at George Washington University in Washington, DC

How (and when) did you meet your signiﬁcant other? My husband, Joel Wright and I met on eHarmony. We were married in 2008. I have two step-daughters Emma (24) and Olivia (23).

What was your ﬁrst exposure to horses? My first exposure to horses was through our neighbors across the road when I was growing up. They had two horses in their pasture and I was over there all the time petting them, feeding them treats, and I was even known to hop on them bareback at times.

Please tell us a bit about your family. My two biggest cheerleaders are my husband, Joel, and my mom, Mary Beth Sprengelmeyer. My husband, Joel, is an engineer and CEO of a company that manufactures traffic signals.

How did you get involved with Saddlebreds in particular? I think my parents recognized my affinity for horses and thought it best if I learned how to ride properly and safely. I think they bought a package of four riding lessons at the local stable in Dubuque, IA and the rest is history. My first lesson was a western lesson on a quarter horse named Lightning. I saw some of the other kids in the class riding saddle seat on Saddlebreds and quickly decided that that is what I really wanted to do. My first horse was a Saddlebred named Mr. Jones. I have fond memories of showing him and my POA pony at the local one day shows near my home town. Mr.

What are some of the favorite horses/ponies you have shown? My favorite horse is my current horse CH Fox Grape’s Dandy Lion. He is Mister Personality and makes me laugh and smile. What horse(s)/ponies do you currently show and in what divisions? I currently show Dandy Lion in show pleasure. My other horse is Chicago White Sox (Louie). He stays at home in Iowa with me and he keeps me in shape between horse shows and in the off season. What has been your most memorable show ring moment thus far? It is difficult to pick just one memorable moment. The first

two years I showed at Louisville I was reserve world champion 17 & under show pleasure with my horse CH Capricorn’s Spirit. Dandy Lion winning the WCC Junior Park Pleasure Championship with our trainer, Smith Lilly, was a thrill. Most recently winning the 36 & over show Pleasure class at Lexington was exciting, and winning it unanimously was like the icing on the cake. Being top five in the AHSA medal finals (now USEF) was a highlight from my equitation career. There are others I can think of from my old equitation days but these are the top three. What has been your biggest challenge to overcome? Currently my biggest challenge is to find time for practice. It is difficult when also working full time. Trying to squeeze in time to practice at home and time to travel to WV to practice is a challenge. What are your horsemanship goals? My horsemanship goals are pretty straight forward. I want to show my horse to the best of its ability and I want to have fun! How has showing horses shaped your life and made you who you are today? I think showing horse has influenced me in several ways. It has reinforced my respect for all animals. It has taught me the importance of caring for animals. At a young age,

it taught me the importance of hard work, responsibility, dedication, and perseverance. And it has introduced me to so many people and taken me to so many parts of the country. Of the places to which you have traveled, which is your favorite? It is hard to pick just one favorite place I’ve been. I’ve had the good fortune to have had three “trips of a lifetime” in my life thus far. I have been on a Safari to Kenya and Tanzania which was magnificent for the wildlife. I have been to Finland and Russia, which was fascinating in that Russia is such an enigmatic country to those of us living in the US, and I have been to BoraBora which was wonderful from a sheer beauty and relaxation standpoint. What is one place you would love to go? Again, It is difficult to say just one place I would like to go. I would like to see Machu Picchu and the Galapagos. I would like to see the Holy Land and the great pyramids of Egypt. And I would love to see tigers in their natural habitat in India. What are your hobbies? My hobbies, other than horses, are travel and scuba diving What do you do in your free time for fun? Free time? What’s that?

What’s a “typical day” for you from start to finish? My typical day is very uneventful. I get up in the morning and take the dog for a walk before work. I go to the office for the work day. I work at a medical clinic in the small, rural town of Tipton, IA. After we get home from our jobs, my husband and I have dinner and walk the dog. That’s about it. Nothing exciting. Very uneventful. How frequently do you spend time at the barn? I ride my “ home horse” Louie twice a week. I like to go to the stable early in the morning when it is quiet and cool. What was the name of your first horse/pony? My first equine was a POA pony named Sugar. I showed her hunt seat before getting my first Saddlebred horse, Mr. Jones. Do you remember, your first horse show experience? The first time I went into the show ring was an in hand class with my pony Sugar. We showed in Pony Halter and got first place! It was a good omen for the rest of my showing career! What advice would you offer to others starting out on the “horse show adventure?” The advice I would give to someone starting out in the horse show world is to find an instructor who you are confident will provide you with good fundamentals. Without sound and proper fundamentals, it is hard to progress and build to success.

Imagine that you’ve been assigned the task of feeding every single horse at the Kentucky State Fair World’s Championship Horse Show. You have to select and buy the oats, corn, pellets, supplements, and hay -- fresh each day, hire the staff to mix the feed and deliver it to every horse at the same time, and make sure the water buckets are filled and refilled throughout the day and night. The classically trained French chef has been the executive chef of Churchill Downs since the September 2013 race meet and was executive sous chef for the two previous years. If you’ve sat in premium seating at Churchill Downs in recent years, you’ve seen the changes in the menu – more locally sourced and fresher ingredients and sauces, dressings, dips, and desserts, all of which are identifiably Kentuckian.

hef Danielson’s approach to food is like a like a horse trainer’s approach to a good horse – “I can make it better” If what’s been done isn’t good enough – come up with another plan. When Chef wasn’t satisfied with the quality of the fresh greens available at Derby time, he partnered with Aqua-Fresh Farms in Mount Washington, Kentucky to grow and deliver the thousands of heads of fresh lettuce (hydroponically gown) that he needed each day. The temperature variation of cooked foods being delivered to the dozens of serving areas stretching the length of the track from the fourth turn to the first wasn’t up to his high standards? Work with a local technology company to develop superior holding equipment – problem solved! Involving local businesses in provisioning for Churchill Downs doesn’t extend only to food products and equipment, Chef Danielson has also enlisted the student body of a local cooking school to prepare the specialty pastries for Derby Week.

In addition to providing the entire premium food service for race meets (as well as overseeing the grandstand and infield concession vendors), private events and catering keep the Churchill Downs’ kitchens open year around. Because the race meet doesn’t start until September, fairgoers won’t be able to experience the dining experience at Churchill Downs, but no worries, another, more intimate dining experience awaits. A mere 30-minute drive east of Churchill Downs and the Kentucky State Fairgrounds is Simpsonville, Kentucky – the self-proclaimed “Saddlebred Capital of the World” and home of Chef Danielson’s very own Old Stone Inn and Tavern. Saddlebred devotees have been patrons of “OSI” for decades, whether it was family dinners in the many dining rooms, horse trainers popping in for a drink or two at the bar, or out of town visitors lunching after a morning of horse shopping. This time a year ago, the restaurant was closed, to the disappointment of the community and patrons alike, but never fear – Chef Danielson to the rescue! (Pun intended, but the sometimes celebrity chef, cookbook author, and cooking show judge should give the author a little leeway.) He’d had his eye on the restaurant for a number of years and, even with all his responsibilities at Churchill Downs, was looking for a place where he could get back to the kitchen on a daily basis and do what he loves most. Invent, cook, taste, serve, re-invent; repeat.

Contemporary Southern Cuisine f you tried to define “contemporary Southern cuisine,” you might come up with “a modern-day style of cooking ingredients and dishes usually associated with the American South.” Okay; hmm. If that makes you think of a plate of country ham or fried chicken, a mountain of mashed potatoes swimming in butter, with sides of fried okra and stewed apples, you might need to head to another well-known Shelby County restaurant a few miles down the road. So, what does it mean? At The Old Stone Inn & Tavern, first and foremost, it means fresh, seasonal vegetables, fruits, and herbs. Fresh as in, that day – brought to the kitchen by the local farmer who grew it. “Local” is also the key word for the sourcing of other ingredients, such as honey, cheeses, meats, nuts, and even wines. “Kentucky wines lean a little toward the sweet side,” acknowledged Chef in a recent interview, “so we incorporate them into our sauces, dressings, and even desserts.” If you mention the current “farm to table” trend, you’ll get a shrug from Chef. “It’s not really a thing to me, because as a cook trained in France, that’s how it’s always been – farmers and bakers and butchers and fishermen bringing their fresh foods to the back door of the kitchen every day.” The second thing to expect is that the cooking method is more up-to date – quicker cooking techniques and less reliance on salt and fat for flavoring. “The real difference, though, is in the updating of the ingredient combinations,” said Chef. “The [American] South has many new food cultures today and we bring that into the cooking. Yes, you can enjoy a Caesar Salad, but why not eat our salad of bourbon apples, cheddar pecans, fresh local lettuce, with a spicy pecan vinaigrette?” The constant invention of new combinations of traditional southern fare into completely new dishes is the hallmark of the restaurant’s ever-changing menu. Chef Danielson brings his own ideas, but also encourages the entire kitchen staff to offer their own creations. “One day I might say, ‘let’s make some new salad dressings,’ and everyone will get to work mixing whatever sounds good, fun, and interesting. We all taste each other’s preparations and offer suggestions on additions and what kinds of ingredients the dressings would go with. It’s really fun to have the whole kitchen involved in the process!” The evolution of a dish doesn’t involve just ingredients and flavorings, but also changes in the physical properties of the food, bordering on the science known as “molecular gastronomy.” A great example is the “compressed” watermelon in a popular seasonal salad. Altering the physical properties of cubes of watermelon concentrates the flavor and makes them more dense; the resulting product works better in the dish and keeps the delicate topping of ultra-creamy burrata mozzarella from becoming “cream of watermelon soup.” Even the ice cubes in on-the-rocks cocktails have benefited from innovation – the mini bourbon barrel

that sits atop the bar in the “tavern” (with its own menu, mind you) portion of the restaurant was the brainchild of Chef. It heats, then “presses” the ice into a large, perfectly square, clear cube of ice. The light and popular Kentucky Blackberry Wine Aspic dessert (don’t be afraid, this is not your auntie’s Thanksgiving aspic) got a further upgrade by using custom made silicone injection molds – defying the question: where’s the aspic? One of the most popular dishes on the menu, Braised Pork Spare Ribs, with buttermilk-jalapeño dressing, is the culmination of all that Chef puts into his cooking. “This idea actually started from a Chinese dish I first ate in Beijing, and then again at Tony Hu’s restaurant in Chicago – shrimp dusted in rice flour, quick fried, then tossed in orange water-infused mayonnaise. Okay, that’s not Southern, but I started thinking about what I could cook that had a crispy exterior and would be balanced with a flavored emulsion dressing. It works – it really does; people love it.” Ribs and buttermilk – you can’t get much more Southern than that.

Personally Speaking

urely a chef of such talent for innovation eats regular food sometime. Maybe meatloaf and Kraft macaroni and cheese or some other guilty pleasure? The actual answer to that question was a very firm declaration: Chicago Italian Beef Sandwiches. All visitors to Chicago must return with the goods.

Chef Danielson is married with two teenage children, and lives in Crestwood, Kentucky. Breakfast at home is its own culinary adventure, especially if the kids have friends for sleepovers. How about some Nutella crepes with fresh strawberries? Belgian Waffles? Homemade [Krispy Kreme] donuts? Yummy!! The family enjoys beach vacations in the Caribbean. When asked about kinds of restaurants he enjoys while on vacation, he replied “small, cool, stuff, like tapas. Things that are creative or with new flavors. Food that is fun!” Just listening to his enthusiasm for new food ideas makes you want to know when his next vacation is, so you can plan an OSI visit after the incubation period for those new inspirations.

The Old Stone Inn & Tavern

t first glance, not much has changed about the building under it’s new ownership, whose history dates back to the late 1700s.The front doors still say “push” to enter, although about 9 out of 10 patrons “pull” as they do with every other public space door in the United States. The tavern/bar is in a renovated space in the rear righthand side of the building (a change made by the most recent previous owner). The horse-trainer set initially bemoaned the relocation of the bar from the front entrance to the new location (but perhaps it was the loss of illicit smoking privileges that they really missed). The old bar area is now a “garden bar,” where racks of the still-growing heads of lettuce from Aqua-Fresh Farms, bowls of fresh vegetables, bouquets of herbs, and jars of seasonings await the assembly of your made-to-order salad. Patrons can choose from a variety of seating areas with comfortable, well-spaced tables and chairs. The tavern seating is at the bar or at high-top tables. On the walls are photos of many of the famous Saddlebreds and Hackney Ponies who hailed from Simpsonville, as well as other horse-themed art. The patio has been covered and is available for events (100 people), as is the upstairs of the restaurant (40 people). The restrooms are more

functional and a family restroom has been added. The real differences are in the food, quality, and service, which Chef says,“are really in line with what the community needs and wants.” When you visit, you’ll be greeted in a friendly manner. The service will be prompt and very professional, and the food will delight your senses. And Chef (or Chef de Cuisine Jeramiah Brown) will very likely visit your table and ask about your food – and he really wants to know, so the next time you come back, it will be the best he can make it. KAYAND JIM HARRELL Where were you born and raised? Jim: I was born in southwest Georgia, but spent most of my childhood on St. Simons Island Georgia, where we live now.

Kay: I was born in Wilmette, Illinois, a northern suburb of Chicago .

Kay: I started riding ponies at a local “pony ride” facility when I was 5. Then I started formal riding lessons when I was 7 at Elmer Holdorf Stables in Morton Grove, Ill. and they taught only saddle seat riding. Then my father bought me my first horse, a Saddlebred/Morgan cross named “Snippy” when I was 11. (Unfortunately, 2 days after my father bought Snippy, my father died of a sudden heart attack at the age of 52.)

Where did you go to school? Jim: I attended the University of Georgia, initially intending to be a veterinarian, but I changed major in my sophomore year and have a BA and all but writing a thesis on a master’s degree in French Literature. (All the while, though, I continued to be hooked on horses and, at age 27, I decided I wanted to leave academia and become a horse trainer). So, in 1972 I went to work for Carol Greenwell at Green Oaks Farm and moved through a succession of assistant trainer and trainer jobs over the next several years until I became trainer for Pinetree Stables in northern Illinois in 1980. Kay: As I got hooked on horses, I got very serious about my education – I graduated from New Trier High School (Winnetka, Ill.), 5th in 1959 class of 750 students and a Summa Cum Laude of Northwestern Univ., Evanston, Ill. In 1963. What was your ﬁrst exposure to horses? Jim: My first exposure was at age 4 when we lived across the

How did you get involved with Saddlebreds/Hackneys in particular? Jim: When I began riding on St. Simons at Sea Island Stables I was immediately exposed to Saddleseat riding. Marvin Long, who owned the concession for the stable and provided rental horses to the Sea Island Resort was an old school southern horseman who trained both Saddlebreds and Tennessee Walking Horses. All trail rides were done on flat English saddles, (no forward seat, no Western!). Mr. Long was a good mentor (he told me “whatever you do, don’t become a horse trainer!) I quickly became a “stable brat” and learned to ride by trading out work for riding time and watching other kid’s lessons. Mr. Long was instrumental in teaching me my first training techniques and even taught me how to gait my first horse, a grade saddlebred that he had bought to use as a school horse.

How (and when) did you meet your signiﬁcant other? Kay: I hired Jim to be trainer at my Pinetree Stables,Wauconda, IL, sight unseen, based on his Curriculum Vita. Jim & Kay: This is a little complicated. In 1980, I (Jim) answered an ad in a horse publication for a trainer position at Pinetree Stables in Illinois. I interviewed over the phone, accepted the job and began on April 1. I did not meet my employer, Kay Hahn, until several days later as she was traveling on business. The job worked out well and we began to have some success as a stable. Our personal relationship did not develop quickly but evolved over a couple of years as we realized our goals and ambitions were always in sync. A little bit of history – when you were married, your children, etc. ? Jim & Kay: We married in December 1983, and as Kay explains all our children have 4 legs. As we were both dedicated to our careers, we married late and did not have children. Please tell us a bit about your current family. Jim & Kay: Our current family is two dogs and three horses. The two dogs are Twister (CH Greylock’s Look What Blue In”, a 5lb Toy Poodle and Lily “Royal Court Petal to the Metal” a Miniature Schnauzer. Twister is Jim’s dog (he decided he wanted a “one-handed dog” after handling our three previous Miniature Schnauzers). Lily is Kay’s dog. The three horses we now show will appear in our favorite horses below.

What are some of the favorite horses/ponies you have shown? Jim: Having worked with horses for over 60 years, it is hard to remember and list your favorites, however I am fortunate enough to currently have two horses that qualify as my all-time favorites. Roselane’s Ready Set Win, my 5-gaited Pleasure Horse that I have had since he was two. I developed him and showed him with success as a young horse and he is still very competitive in our region in 5-gaited pleasure, winning the ASHAG High Point Award in 2018. My other favorite seems to be on almost everyone’s favorite list – CH Ashlyn’s Voodoo Charm. He has it all, beauty, talent and charisma! At age 15 he still gives his all every time he hits the ring. Kay: Some of my favorites have been Pinetree’s Steppin’ Out, Fancy Ace, Pinetree’s Heir To Glory, Tropical Heir and of course, CH Ashlyn’s Voodoo Charm, and CH HS Dignitary. Voodoo Charm was bought to be my “grand finale” gaited horse and we had a terrific season in 2016, winning major Ladies and Amateur Championships throughout the southeast. We began 2017 with a bang, winning the Ladies Championship at Pro-Am but two weeks later my hip unexpectedly broke so I had to turn him over to Jim to show. I have been able to return to riding but we decided he was too much of a powerhouse to risk showing and we didn’t want to “dumb him down” to make him safe. So now I have the wonderful CH HS Dignitary to show in fine harness.

Kay: My first major win was in 1982 when I won the very competitive Five-Gaited Amateur Stake at Illinois State Fair – I showed my first Five-Gaited horse 65 years ago, a stallion by Indian Penny that did not have the bottom to be a really good one. What has been your biggest challenge to overcome? Jim: Shy? Kay: Recovering from a broken hip and relearning how to get on and off a horse. What are your horsemanship goals? Jim: To keep on riding and showing for as long as I can and

Kay: The first horse I showed was Snippy, the next spring after my father had purchased him. I won my first class and still have the trophy from 1953.

aty Sterba has been a lifelong lover of the American Saddlebred. Growing up in the industry, training horses was certainly not on her radar.

Born in Albuquerque, New Mexico, Sterba was born into the horses, her parents, Janet and Jeff Sterba having been longtime Saddlebred owners and exhibitors. Sterba lived in New Mexico until about the eighth grade, where her parents had a small farm with a barn on the property.They did it themselves and taught Sterba how to ride until she was old enough that as she put it, “she didn’t listen anymore”. Her first horse was a Quarter Horse/Arabian mix, but it wasn’t long before she was riding Saddlebreds. Sterba recalled one of her first horses, Bugsby, who she showed in country pleasure when she was just eight-years-old. As an adolescent, the Sterba’s moved Katy’s horse to Eloise Garcia, who ran a small training operation nearby. It was with Garcia that Katy began to show competitively, and even started catch-riding some horses. At age 13, Katy received a horse named Worth AFame, as a Christmas present from her parents. Fame was one of the horses she had been catch-riding the previous season under Garcia’s direction. She enjoyed much success with Fame, winning in their debut in the junior exhibitor three-gaited division. The pair formed a lifelong bond, and in fact her farm is named after the horse, when as a teen she had created her AOL Instant Messenger screen name “Famesgate” after her beloved companion.

When the Sterba family moved to Virginia in the late 1990’s before she entered high school, Fame went too. While there, they started riding with John Champagne. That was when they opened a public training operation, called Seven Oaks Farm, with Champagne as the trainer. She continued to show Fame in several different divisions over the years, and showed several other horses as well throughout her junior exhibitor days. After several years of running a public training operation, they decided it was a lot for them, so they closed the barn, and Janet moved her horses to Bret Day’s in Kentucky. When it came time for college, Sterba made the decision to go to the University of Virginia. She continued to ride and show as well; they purchased a young horse named My Stiletto from Clark Clouse. At UVA, Sterba majored in philosophy and biology. At first, thinking she wanted to become a doctor, her interest changed and she decided to pursue a career with HIV/AIDS treatment in underdeveloped countries. Sterba joined the Peace Corps post-graduation, and the horses were put on hold for several years. She was placed in Senegal, West Africa where she was a volunteer in the Sub-Saharan desert. She lived for 27 months with a local host family, with no electricity in a small town of just about 250 people. “I did finish my service, but realized that it wasn’t the direction that I wanted to head professionally,” recalled Sterba. “So, I came back to the States and moved to Washington D.C. to work for a lobbying firm. “I had always thoroughly enjoyed

politics so it seemed like a natural path, however after a bit I realized couldn’t see myself doing it long-term.”

Since coming back to the U.S., Sterba had been back in the saddle, and was making the trip from D.C. to Virginia where she was practicing with Smith Lilly of Mercer Springs Farm. They had moved the horses from Grey Ridge to Princeton to be closer to Janet while Katy was living in Africa. Sterba was also showing her mom’s horse, CH Take It From The Top, in the five-gaited show pleasure division.

“Sometimes I would ride in the truck with Smith to horse shows, and he would tell me stories from his start that provided some insight into the life of a head trainer. He would discuss horses he’d trained, customers he’d had, and gave some advice on how to deal with both.”

“I went to look at horses with Smith and my mom, and she dropped some hints saying I could always show horses if I wanted to.” That conversation planted the seed, and Sterba began thinking of the opportunities for her future with horses. One late night over Christmas break in 2011, Katy and her brother, Dane, spent some time talking about her making the big jump. “He said, ‘you should try it, because what’s it going to hurt.’.The next day I called Smith and I’ll always remember, he told me ‘there will always be an open cubicle somewhere.’ So, I quit my job and moved to Mercer Springs in January of 2012.” At the time, Lilly was just starting out his apprenticeship program. The program grew, and soon there were four girls, including Andrea Harry who had been there for quite some time, Claire Karst and Tori Heck. “He has a lot of horses and quite a few colts, so he started fostering young trainers. I took

After two years under their tutelage, Sterba decided to expand her knowledge yet again, and wanted to experience the Saddlebred world in its mecca, Kentucky. Katy went to work for Susi and Bret Day at their Grey Ridge Farm. It was there she met many of her friends in the industry, and also where she met her husband, Patrick, the very first week she lived in Kentucky.They were married in October 2016. “Bret has always been extremely supportive,” said Sterba. “I think they [Day and Lilly] realize that it benefits them as well, as us young trainers are just more people to continue buying and selling horses and keep the industry growing and going in the future.” After learning and growing as a young trainer with the Day’s, Sterba moved to Simpsonville, Kentucky to work with T.J. Santaferra under the Stachowski Farm banner. It was while there that her parents found a dream property in Troy,Virginia – just east of Charlottesville.The farm, at nearly 300-acres, was

an opportunity they couldn’t pass up. So, after talking things over with Katy, they moved forward with purchasing the farm, and Katy made the move back to her homeland. Jeff and Janet lived nearby in a neighborhood, and when Jeff retired, he started aggressively looking for a farm. “He’s retired, but he doesn’t do well retired,” laughed Sterba. “He’s in the midst of building a house on the property and he’s living in a different house on the farm.” “I have always been fairly independent and I love the state of Virginia. I really wanted to come back and expand the Saddlebred industry in a different state.The horses have a lot to offer, and Virginia has a pretty steep Saddlebred history. There are quite a few trainers who’ve worked here including Tre Lee and his dad, and John Conatser when he worked for Karen Waldron. There’s a pretty big contingent of people that had been here before. I talked to Smith [Lilly] about the location and he addressed the level of work it takes to be successful. He stressed what an asset it would be to have family close to support the barn and myself. I’m sure it’s no surprise that he was 100 percent correct.” In February of 2018, the year after Katy moved back to Virginia, her mother Janet was diagnosed with cancer. While Katy wasn’t aware when she moved what would soon come, it was a blessing in disguise that she and her husband moved back just six months prior to the diagnosis. Her private battle with cancer sadly came to an end March 29, 2019.“She came to the barn almost every day, I know she was super proud, and it was something we were able to do together.”

While the Sterba family is still grieving the loss of such an incredible woman, they are pushing through the day-to-day work and continuing on with the horses in her legacy. The farm itself has quite a lot of wooded acreage, and included a 24-stall barn, and an outdoor riding arena. “We added an indoor arena, and my dad did quite a bit of work to the stalls before I moved back,” said Sterba. “It’s really nice and has giant windows, so it’s really bright and airy.” “My dad has always been extremely supportive of me and my mom’s love of the horses. When I was growing up, he and my mom did everything themselves and that’s how I grew up riding. As Famesgate Stable’s became a reality, my dad’s support became somewhat of the foundation that built the barn. He built every single tailboard, installed every waterer, and rebuilt the inside of every stall in the barn. My mom was the heart and soul of the barn and he helped to build the foundation that we could grow from.” Her dad continues to support her as well by having several horses under Sterba’s training, including; Julia Sugarbaker, Cornerstone’s Moondance, and Double Blue NKF. The location of the barn is also perfect. Nestled in the foothills of a section of the Blue Ridge Mountains, nearby Charlottesville is the gateway to Shenandoah National Park. The barn is only about two miles off interstate 64, and is easily accessible to her customers, and her growing lesson program. A program she would like to develop a bit more this fall after horse shows end. In the future she would like to bring on

someone to help with the horses and training so she can keep the lessons going as well. She has eighteen horses in training currently, with two lesson horses and a pony that live outside. They also do limited breeding. Their gray gaited mare, Callaway’s Born for This, has two yearlings on the ground via Embryo Transfer, one is by Top of the Mark and the other one is by Northern Kiss.They have two more coming next year. Some of the first customers under the Famesgate banner were Dan and Jennifer Joiner. Jennifer had shown Snowman on the Kentucky circuit, and had the horse in training with T.J. Santaferra at Stachowski Farm while Sterba was working there. The pair made an instant connection, and when Sterba opened her own place, Snowman was one of the first to fill the stalls.“In addition to having faith in me to show Snowman, they’ve put three young prospects with us that are all wildly different but all extremely special,” said Sterba. “They also owned Coffee Lace, who we sold last winter to Wes and Sena Bowling, who helped start the career of Famesgate in a stellar way.” Another of Sterba’s customers is the Stinnett family who have been in the industry for many years. Clayton has been enjoying quite a bit of success with his new mount in the Junior Exhibitor Park division, Far Away Saloon Cat. They recently won at Shenandoah and Lexington Junior League. “She’s been a project of the best kind. She has all the talent and show charisma but has a few quirks we’re still figuring out.” MBA’s Revival of the Blues took some time off to have a few babies

and came back to the show ring this year. She was on fire at Lexington to win the Junior Exhibitor three-gaited qualifier and take reserve in the championship with Clayton. They also have Nuttin’ Could Be Finer, who competes with Clayton in the Junior Exhibitor five-gaited division, Central Perk in gaited pleasure with Emilea Stinnett and Fort Chiswell’s Wild Kiss who competes with mom, Amy, in the gaited pleasure division. “Ceil and Kenny Wheeler have also supported the barn from day one loaning us lesson horses and companion donkeys. Their two-year-old, Walterway’s Kiss Me is spectacular. I’m so grateful that they continue to support Famesgate and us as a family. Sterba is grateful for all of the connections she has made within the horse industry, and loves the sense of community the young trainers have within it as well. “I think that the biggest thing that has helped me was living in Kentucky. I got to know a lot of young trainers, and developed relationships through the UPHA Young Professionals. We are all in the same boat trying to make it and be successful. If I ever have questions, I know that there are always people I can call.There is a lot of support amongst the young trainers in our industry.” Her goal for the future is simple. “I would like to continue progressing as a trainer, learn new things and always strive to do the best job I can. Having successful horses and happy customers makes the hard work 100 percent worth it,” she said.“It’s a lot of work, and it’s expensive so it should be fun.We tend to have a pretty good time in general.”

It has taught me how to be humble, to take the success our team has had over the past 4 years and turn it into a passion while being determined to always do my best. To always try my hardest and to be physically and mentally prepared. Of the places to which you have traveled, which is your favorite? In 2019 my favorite place traveling with my horses and horse family was to Lexington, Virginia to the Shenandoah Horse Show-it was a great week with my favorite people. With my family I loved going to China and Hong Kong this summer.

THE WAY TO GO

n 2013,two years after the Africa Saddle Horse Futurity started, the initiator thereof, Ross Millin, indicated that ‘the ASF is now really on a roll and the most successful incentive to breed Saddlebreds in South Africa. Breeders and owners have the opportunity to have a real return on their investment through breeding. It has also become a huge marketing opportunity for our beautiful breed’. Even the toughest critics of the ASF now have to admit that the competition has opened opportunities for Saddle Horse breeders in the country and that it has, since its inception in 2011, gone from strength to strength. Like the previous eight years, this year’s competition again had its fair share of highlights and a number of challenges. MONDAY, 22 APRIL 2019 Of the thirty one foals entered for the competition, twenty one would eventually compete in the preliminary rounds during the SA National Championships in Bloemfontein during April 2019. The morning started off cold, foggy and wet. The weather conditions were less than ideal and some of the foals had to be shown in pouring rain. This year’s judges were Allison Deardorf and Matthew Roberts from the USA and Carine Stephan, Jaco Jonker and Wim Bester from South Africa. Ten foals would ultimately be selected to compete on Thursday, 25 April 2019 during the final of the ninth ASF competition. On Monday afternoon the ASF Stallion Auction took place with forty two of the best stallions in the country on the list. Services to the value of almost R400 000 were sold. Auctioneer Johannes Maasdorp did a sterling job with his knowledge of the stallions entered and the saddlebred industry in general.

The imported stallions were again in demand with Undulata’s Made in Heaven’s service that was sold for R28 000. The services of Quantum of Solace and Ultimate Joe, were sold for R26 000 each. The service of Undulata’s Mr President was sold for R18 000, while the services of Valley’s Rising Music and Charmed and Bewitched were sold for R17 500 and R17 000 respectively.

ASF PERFORMANCE CLASSES This year’s performance classes were very well supported.The ASF Three Gaited Stallion, Mare or Gelding Three Year Old class was won by One and Only I’m Angus, shown by Attie Koen. This horse is by Uncle Angus out of I’m French.

From a humble beginning at the Parys Indoor Show, where services of twenty stallions were auctioned to the value of just under R70 000 the ASF has grown into a very popular competition where the services of forty two of the best stallions in the country were auctioned for almost R400 000 this year.

The ASF Five Gaited Stallion, Mare or Gelding, Four Year Old class was won by JG Touch Me Nice for trainer Paul Coetzer. This horse was the winner of the 2015 ASF Weanling class. His sire is Touch Me Twice and dam Valley’s Starmaker.

The competition celebrates its tenth anniversary in 2020.

The ASF Fine Harness Stallion, Mare or Gelding Three Year Old class had a total of nine competitors. M-E Dirty Harry for Michelle Emberson won the class with Dreto Secret Night the reserve. This horse was placed third in the 2016 ASF Weanling Championship.

I am positive that the organisers will arrange something spectacular to match the quality of the contestants most likely to compete in this special event next year with unquestionable the best prize money at a Saddlebred show in South Africa.

ASF CONTESTANTS AND THE FUTURE Many of the foals born due to the ASF competition continued to show their class and abilities during the SA Championships in Bloemfontein. The most successful ASF winner though remains Something French (French Legionnaire x Miss Gracias). She won the ASF Weanling competition in 2012, continued her winning streak by also winning the SA Champion Weanling Filly the same year, the Year Old Filly class in 2013, the TwoYear Old Filly class in 2014 and the Champion Mare over Three Years for five consecutive years (2015 – 2019). She was also the winner of the Fine Harness mare class in Bloemfontein in April 2019.

Jackle Berry and Sanna Botha put on a spectacular performance in April this year to clinch the most sought-after Three-Gaited title in South Africa.

JACKLE BERRY CONQUERS BLOEMFONTEIN In a star-studded group of three-gaited horses, an elegant and swanlike mare stepped up a notch to defeat three former title holders and a host of other seasoned contenders to clinch the 2019 South African National Three-Gaited Grand Championship earlier this year. On route to her stunning victory, the sensational Ocksan Jackle Berry â&#x20AC;&#x201C; having just turned seven years old â&#x20AC;&#x201C; not only became the youngest mare in 31 years to take top honors in the walk-trot division, her elated breeder/ amateur trainer/owner/rider, Sanna Botha (56), can now also lay claim to being the oldest female rider ever to win a Three-Gaited Grand Championship title in the Bloemfontein oval.

WIthin the first few days of her life, Jackle Berry was faced with a life-threatening medical condition. Luckily her innate fighting spirit had the last say.

Even as a yearling, Jackle Berry’s textbook beauty was clear to all.

he fairytale started on a glorious summer morning in March 2012 when a dainty little filly was born at Hillside Stables, a privately owned amateur barn in the Boschkop region east of the South African capital, Pretoria. In attendance to make sure that everything went smoothly were Sanna Botha and her veterinarian husband, Dr. Ockert Botha. It was a day that Sanna remembers fondly: “Although she was the smallest little thing imaginable, she was quite exceptional – a flashy chestnut with four white socks and the most beautiful little head and ears to complete an already perfect picture.”

Limebank Jack Daniels, the sire of Jackle Berry, was crowned the South African National Reserve Grand Champion in the amateur Five-Gaited division in 2011.

Limebank Little Roxy, the dam of Ocksan Jackle Berry, made only a handful appearances in the show ring before the decision was made to retire her to stud.

back and proceeded to prance around – almost as if to proudly announce herself to the outside world. Says Sanna, “I knew then that she was quite extraordinary.” Although the Bothas always knew how superior she was, Jackle Berry was not denied a normal carefree life as a weanling. With her stablemates she would tear up the ground in the paddocks and come to gut-wrenching stops inches short of the fences – much to Sanna’s dismay.

DREAMING UP A CHAMPION Breeding the perfect Saddlebred is, at the best of times, a humbling affair.After all, a great horse on paper does not necessarily translate to a good horse on the ground. Sanna unashamedly admits that she has always relied heavily on “gut feel” when it comes to pairing Within days, however, Ockert realized that something was amiss. stallions and mares. Regent, a grandson of the legendary Valley View Supreme, made an appearance in the five-gaited stake at Ladybrand. Although he was an absolute handful, I have never forgotten his phenomenal presence in the ring.”

With Sanna’s daughter Nicola Burger in the saddle, Jack Daniels reached the pinnacle of this showing career in 2011 when he was crowned South African National Reserve Grand Champion in the amateur five-gaited.

As a breeding stud, Longview’s Regent is best remembered for producing the magnificent Call Me Jack, a former South African National Grand Champion in the fine harness division as well as a national title holder in the senior stallion in-hand division – a horse Sanna had the privilege of working when she took over the training duties for a few months at Rovic Stables in Zwavelpoort, Pretoria, after the untimely death of resident trainer Willie Beukes in 2001.

Jackle Berry’s dam, Little Roxy, has served Sanna well as a broodmare. Three full siblings of Jackle Berry look set to make their mark in the show ring as well: Charming Jack is a three-yearold colt that Sanna expects to show in harness and/or the park division; Jack’s Rox Star is a two-year-old mare who will start her training later this year; and Lady JackLynn is a weanling. After a string of Jack Daniels foals, Sanna decided it was time to breed Little Roxy to an outside stallion. After much deliberation, the lot fell on the three-times South African National Five-Gaited Grand Champion, Valley’s Rising Music, owned and recently retired to stud by Irene van der Westhuizen of Mountainview Stables in the Eastern Cape. Sanna’s excitement knows no bounds: “We are super stoked. We are literally counting down the months to February 2020 when the foal is due.”

“Call Me Jack was a superb horse,” remembers Sanna. “Although he was not particularly big, his athletic ability was unparalleled. With his perfect shoulder, textbook conformation and long neck, he exhibited the most rhythmic trot imaginable.” The two best horses produced by Call Me Jack were the full brothers, Striking Jack and Jack Daniels, both out of the pristinely beautiful mare Indiana’s Pretty Woman. Striking Jack showed to many a regional and national title with Pula and Reinette Giliomee, while Jack Daniels found his way to his forever home at Hillside Stables as a yearling.To this day, he remains Sanna’s sire of choice.

THE PATH TO STARDOM Jackle Berry’s introduction to the show ring was in the in-hand division where she was undefeated as a two-year-old. As a threeyear-old, she completed her first class in harness by competing in the Natural Mane and Tail division in 2015. With Sanna’s assistant

When Number 32 was announced the winner of the prestigious title, the Bloemfontein crowd erupted in a frenzy of applause and jackal calls. Almost as if the long-striding mare had at long last realized the enormity of the occasion, Jackle Berry put back her swanlike neck and carried Sanna to the center of the ring in spectacular form. If there had been a Doubting Thomas looking on, the gorgeous mare had now refuted any misgivings. She had unequivocally convinced friend and foe. BACK IN THE BUGGY

ichard Cicero Jr. grew up with hackney ponies, his parents had their own barn in Connecticut called Rochelle Farms, named after his two sisters, Rose and Shelly. While his dad held a full-time job as a policeman, he made time for the farm as well. They worked the ponies themselves, and had a small breeding program as well.“My parents tell stories about how they use to set up a little corral at shows for us and the oldest kid would be in charge,” recalled Cicero. He remembered the family atmosphere and community fostered during his days showing on the east coast circuit. As he got older, the training and care of the horses was something he learned as part of the family, and he got more involved. At just 16, he started training horses professionally. “I had the pleasure of learning and being around some of the best trainers there were. They taught me so much and they were willing to take a young guy like me and help.” Some of the trainers that Cicero watched and learned from were Gib Marcucci, Doc Raun, Denny Lang and Terry McKenzie. While his background was with the hackney ponies, he became more involved with the Saddlebred industry when Jan Lukens convinced him to broaden his horizons and step on a horse. He had been exposed to the breed while he was at shows, but hadn’t spent as much time around them.“She told me to come to Ravena and learn to ride, so I did.You can’t become a good horse trainer until you learn all aspects of it.”

Cicero continued to work with the horses, honing his craft, and enjoying success in the industry, but when he was 21-yearsold his path changed dramatically when he joined the army. He had grown up in a family of servicemen and felt the duty and responsibility to go and serve his country, as the Gulf War was going on in the Middle East. His dad had downsized the training operation, and worked just a few ponies for other people. While the ponies had to take a back seat, Rick tried to keep up with what was going in the industry, and would make it to as many shows as possible. He recalled how he would come home and go to horse shows. “I would fly home from the Middle East in time to go to Louisville for the World Championships.” While in the army, Cicero served as a paratrooper from 19901994, and another three years in the Army National Guard. He followed in his dad’s footsteps and became a police officer after his service, first in Connecticut, and later in Virginia. While he enjoyed the ponies still, and fooled around with them now and again, he never again had his own barn or really showed much. “I actually got involved with police dogs and their training,” he explained. In 2003, Cicero joined the Virginia State Police. “I was a Virginia trooper and had a shift partner whose wife had Saddlebreds. I went and taught her how to bit a horse, and I broke a couple young ones for her.” Cicero retired from the police force in 2007 after a training injury damaged his knee, and then moved to Florida and went

on to become a military defense contractor in the middle east for three years. He worked with the U.S. Marines and their dogs, and then returned to work with the Royal Canadian Regiment as an IED (Improvised Explosive Device) detection dog handler in Afghanistan. In 2010, he was working with a team of men from the Canadian forces, teaching the soldiers to work with dogs trained to sniff out explosives. His team came under fire when an IED detonated. Cicero was credited with clearing the area of any secondary devices, aiding a wounded soldier, and setting up an evacuation zone. Just days later, his dog sniffed out another bomb, leading him directly to it.Too close, the IED exploded, targeting Cicero, and resulted in catastrophic injuries from the detonation. Cicero lost his right arm and right leg in the explosion. After a long and arduous recovery, Cicero was fitted for prosthetic limbs. It was a hard adjustment, but his bravery and faith never wavered. Of course, lucky to be alive, the thought of being around the horses again was the furthest thing from his mind. In 2015, Cicero was awarded the Defense Medal for the Defense of Freedom, the civilian equivalent of the Purple Heart for service members. It was also in 2015 that Cicero began working with the Walter Reed National Military Medical Center in Bethesda, Maryland as a medical test subject in the study and engineering of prosthetic limbs. Cicero now has a

battery-powered arm that moves when he thinks it, just like his other intact arm.The robotic arm is attached to bone, which is an experimental procedure called osseointegration. “Inside my arm, and my leg as well, the bone was hollowed out and tapped, just like you would tap a nut to screw a bolt into, and the base piece screws directly into that,” Cicero told Bay News last year. The technology was pioneered in Europe and clinical trials began at Walter Reed just a few years ago. Traditional socketbased prosthetics offer many challenges for their users, including skin irritation and pain.The process of osseointegration is done in two stages several months apart, as the bone must have time to heal in between stages.The prosthetic device now clicks on in just seconds, and eliminates the extra weight, the plastic, and the sweating from a traditional prosthetic limb. In March of 2018, Cicero had surgery again so that doctors could attach a prosthetic leg straight to his thigh bone, making him the first person in the U.S. to have osseointegration in both an upper and lower limb.“I have the benefit of sensation as well as advanced control and function of the prosthetic and that’s what finally got me back into horses,” explained Cicero. “When it came time to liquidate my dad’s ponies and tack last year, I called Lark [Henry] and asked if she would like some stuff.” Cicero and Henry had been acquaintances for many

years. “We basically grew up together on the New England show circuit. I was from Massachusetts and he was from Connecticut,” said Henry. “At Eastern States Horse Show we were always stabled across from each other.”

Henry asked Cicero to stop by and fill her in on the ponies, what they needed, and how they worked. Rick’s father wasn’t doing great health-wise, so he was trying to help him downsize. “He sent me two older ponies, I found one a home, and the other is in the pasture, and will end up being a lesson pony,” said Henry. “Then he had one I believe he got from Gib Marcucci, he’s a really nice pony, somehow I got that pony. He’s in training, so I was messing with him, and I said, ‘Rick, I haven’t done the ponies, will you come out and give me some pointers? He said, Ok, when do you want me to come’.”

“He’s become so capable. In the beginning we were all a little frightened. He’s always said, ‘what’s the worst thing that can happen, I’ve already died,’’’ said Henry. “I would say in the beginning; I had heart palpitations. But now I completely have faith in him, and trust him 100 percent. He can do more than I can do, especially being around the farm and being handy. He made me a believer, and I think it’s made him a believer too. I don’t think he knew he could even do what he’s doing.”

Cicero hadn’t worked with horses at all since his injuries, and he came out to the barn, with no intentions of actually handling the pony. He just expected to give her some insight into it’s previous work routine. “The next thing I knew, there was a set of long-lines in my hand, and it was like sticking a needle in a junkies arm,” recalled Cicero excitedly. “I never really thought that it was something I would ever be able to do again. I did it with one hand, and I really never thought that I would have the ability to walk like I could.”

“Here we are today and going into Louisville,” added Cicero. “Getting back on the green shavings, and being able to do it in the position I am in now is incredible. A week later, Cicero was back out at Henry’s Bobbin Hollow Farm north of Ocala, Florida to work with the pony again. “We got him hooked and I swung a leg over the cart.”That feeling was one that Cicero had been waiting years for, even though he didn’t even know it. After some discussion between Henry and Cicero, Henry slipped the right line onto Cicero’s prosthetic hook. Neither had any idea if it would work, and Henry admitted she was a bit terrified of the situation. Neither knew if he would be able to steer or have control of the pony, but both were willing to give it a shot. “It was an absolute game changer for me,” said Cicero with emotion in his voice.“I could feel his mouth through my arm, and I couldn’t believe it.”

“We have a lot of kids in the industry; the equitation programs, the road pony medallion programs, there are so many opportunities for them. I want to help be a good example to overcome adversity in life and not let small hurdles stop them. I can help change the dynamic for the better and I want to be a part of that. That’s something the horses have given me the opportunity to do, that no place else can.”

“I’m very active in the veteran community. I want to get more veterans engaged in the horse industry, getting them out to the farm and watching them work and learn a little bit. Every barn I know of needs help and we can get these guys trained and get them employment and get them out of the house every day.” Cicero also worked with Bobbin Hollow Farm on creating a day for Veterans during the Summer Fun Horse Show in June. “We invited some of the area veterans to come out and see the horses. I would love to get a program and funding for them. Whether it be they want to hop on a tractor and go for a ride, or come and learn about horses, teach them the horsemanship aspect of it – because horses never lie to you. It takes the human element out of it. Many veterans have emotional issues from combat and it takes the personal nonsense out of it. It makes them productive and helps us out too.The more they learn, the more they want to learn, and the more they want to do.” “His military friends are wonderful people and wonderful friends,” added Henry. “To be honest with you, I didn’t think it was possible, until Rick. They don’t want it to be therapy, they want to feel a part of normal life. I’m now a believer that this can happen. Not only injured veterans, but veterans that may have PTSD. Cicero has two children, a son Dylan who is 28, and a daughter, Scarlet, 21. They are both following in their father’s footsteps, serving their country. In fact, Dylan was stationed in Afghanistan at the same time as his father, when the accident happened. He flew with Rick to Germany on the Medevac flight and stayed with him at the hospital. Cicero said that having his son there when he woke up was the best thing because he had always taught his own son to make the best of any situation. He didn’t complain, instead had faith that he would be okay. Scarlet, is currently stationed in California in the Monterey area. “She’s a driving force that kept me coming back to the horses,” explained Cicero. She learned to ride while they were living in Virginia, and then was involved with the ponies as well.“She was at the horse shows when I was not. She’s helping learn the barn duties and doing all these different things. The horse industry is so welcoming and those are the kind of things that bring it all together.” She plans to stay active in the horse industry and continue to ride herself. When in Florida, she spends much of her time at Bobbin Hollow as well. Rick spends as much time as he can at the farm.“He is obsessed now.This is his thing.This is what it’s supposed to be about. He makes me look at it new as well,” added Henry. Cicero has a camper at the farm so he can spend days at a time there, and he enjoys working on the farm when he’s not working with the ponies. “He’s fixed our golf cart, our lawnmower, he’s fixed everything on the farm, we need to keep him around for our farm hand,” laughed Henry. “There’s literally nothing he can’t do.”

What horse(s)/ponies do you currently show and in what divisions or what would be your dream horse to show? I would love to have a Five-Gaited horse and show in the gaited stake at Louisville one day. What has been your most memorable show ring moment thus far? My most memorable show ring moment would be when I won my first National Championship in South Africa! I was the South Africa National Three-Gaited Pleasure Champion Equitation 18 and under with Bridgewater’s Elegant Nite. In 2016, I lived in South Africa for a month and got to compete at their National Championship in Bloemfontein. I showed under Harold Poil Stables. A few years later, I had the opportunity to show Fort Chiswell’s Hot Kiss at Kansas City and won my first National Championship in the United States with Cater Stables. He is a very special horse to me so being able to win my first National Championship with him meant a lot to me. Who do you most look up to in the Saddlebred world

and why? The person I look up to most in the Saddlebred world would be Kristen Cater. She is an amazing representation of how hard work pays off. She is so dedicated to her barn, horses and clients and I think it shows every time you see them in the show ring. What has been your biggest challenge to overcome? My biggest challenge to overcome was to accept that nothing is ever going to be perfect. What are your goals for the future? My goals for the future would be to continue in the horse world. What advice would you offer to others starting out on the “horse show adventure?” Not to get wrapped up in being perfect and putting too much pressure on yourself. Everyone learns at their own pace. Just because you aren’t great one day does not mean you won’t be the next day. The more comfortable you feel, the more you will allow yourself to learn but sometimes it just takes time.

U.S. SADDLE SEAT YOUNG RIDERS TEAM SWEEPS GOLD MEDALS at Saddle Seat Invitational Test Event

ew Orleans, La. – The 2019 U.S. Saddle Seat Young Riders Stripes Team secured all four gold medals and gained valuable experience in international competition at the 2019 U.S. Saddle Seat Invitational Test Event in New Orleans, La. Hosted at Cascade Stables from July 1-5, the U.S. team faced off against two teams from South Africa. Under the guidance of Coach Christy Parker (Hortense, Ga.) and Assistant Coach Mary Mag Wilson (Cave Creek, Ariz.), the U.S. saddle seat equitation program has again proven itself to be a force in international saddle seat competition.

U.S. Saddle Seat Young Riders Stripes Team, Three-Gaited Section Alayna Applegate, Lauren Beck, Gabriella Costantini, Alayna LoCascio, and Hallie Ricci earned double gold in threegaited sections against the South African Junior Team, who earned the silver medal for the junior three-gaited section, and the South African Senior Team, who took silver for the senior three-gaited section.

Wilson added, “I look forward to their example motivating the future of the Arabian [horse], Morgan, [American] Saddlebred, and saddle seat equitation industries.”

The riders competed on horses they were unfamiliar with as a true test of their equitation and horsemanship skills. Teams participated in the draw for horses on Monday, July 1, and had practice time over the next two days to familiarize themselves with their new equine partners. The judged portion of the event began on Thursday, July 4, where the U.S. made a strong first impression on the judging panel of Dejané Poil (South Africa), Michael Craghead (Fresno, Calif.), and Lisa Hillmer (Kearney, Mo.). Competition concluded on Friday evening and the pressure was on as riders performed rail and pattern work one last time. The U.S. athletes produced strong individual workouts, solidifying victory for the U.S. Saddle Seat Young Riders Stripes Team in the junior three-gaited, senior three-gaited, junior five-gaited, and senior fivegaited sections. Adding to the importance of the Saddle Seat Invitational Test Event, the competition serves as an opportunity to develop and observe potential riders for future team competitions, including the Saddle Seat World Cup. “I definitely want to try out for the 2020 [Saddle Seat] World Cup team, it would be amazing to represent my country in South Africa,” said first time team member Michalek. “Being part of the [young riders] program has boosted my confidence and made me a more defined and versatile rider, and it’s a very supportive environment.”

For three-gaited rider Beck, and many of her teammates, one of the best parts about the young riders program has been the social aspect, “The team gets along really well together and we’ve became really good friends through the process which is something that I am grateful for. JUNIOR EXHIBITOR PROFILE

OLIVIA HORAN How old are you? 17 Where do you go to school/what year are you in school? I am currently a senior at Northern Guilford High School in Greensboro, North Carolina What would you like to be when you grow up? From a very young age I have dreamed of working in the medical field with either humans or animals. I would like to be a specialized veterinarian or a pediatrician Family and Pets I am an only child and my parents are Jason and Lisa. I have 2 dogs, 2 cats, and 5 horses. 4 of my horses are either retired or being used in the High Caliber lesson program and the 5th is my current show horse, Ruby. When did you ďŹ rst start riding? How did you get involved with horses? According to my Mom, I started to show interest in horses at the age of 2 after attending the Roanoke Valley Horse Show. She said that I sat for hours watching classes come in and out and talked about horses non-stop after that. A preschool friend later recommended Meadowood Stables and at the age of 3 I started riding horses with Nancy Troutman. After my first lesson I immediately fell in love with riding. Where do you ride? Have you always ridden there?

I currently ride at High Caliber Stables with Mary and Evan Orr and have been riding with them for about 4 years. Although my riding career has not always been under the High Caliber banner, Mary and Evan have been a part of my life since I was little, as I attended multiple camps and horse shows with them because of my best friend who also rides here. Prior to riding with Mary and Evan, I had the opportunity to ride with many other great trainers including Nancy Troutman, Andre Fourie, and Lee Hudson. They all played a major part of getting me to where I am today. How long have you been showing? I have been showing horses for around 11 years. I started showing in Academy when I was five and at the age of 7 I got my first show horse, Morelli. How often do you ride? On a normal school week I ride in 4 to 6 lessons a week.Typically 1 to 3 of those lessons are group lessons on Wednesdays, 1 is a private on Friday, 1 is a group on Friday, and 1 is a lesson on my show horse on Saturday morning. During the summer, however, I am normally able to ride multiple times a day during the week and once on Saturday. What is a typical practice session like for you? At High Caliber, there is never a set routine or way of doing things in a lesson. Mary is always thinking of new, fun, and creative things for us to do. Sometimes we may just get on and ride

and other times we may do pairs, play “angry bees” (a HCS favorite), do cone lessons, ride outside or inside, circles, and the list goes on. The lessons don’t stop there; we normally have a discussion halfway through the lesson about riding horses or life in general. I am also very lucky as High Caliber has a wide variety of lesson horses that range from game horses, those that are green and young, gaited horses, and ones that still think they are show horses. What are some of your favorite horses you have shown? There are two horses I have enjoyed showing the most. The first is definitely WCC CH Bubble Bath. He was such a good teacher and taught me countless lessons no other horse could have. The other is my current show horse Really Really Red. We call her Ruby and she is REALLY REALLY FUN. What horse(s) do you currently show and in what divisions? I currently show Really Really Red in 14-17 Country Pleasure. What has been your most memorable riding moment thus far? My most memorable riding moment was definitely at this year’s Lexington Junior League after winning my qualifier with Ruby. Being able to win was so exciting but seeing everyone from the barn standing up in the stands and cheering for me as I walked back is one thing that stands out the most. Seeing the smiles on the faces of my barn family, parents, and trainers that have supported me for so long made things extra special. What has been your biggest challenge to overcome? The biggest challenge I’ve had to overcome in my riding career is to find the courage to keep going and never give up after I went through multiple seasons of horses getting sick

and injured. I needed to believe that everything was going to work itself out in the end. What are your riding goals for the future? My biggest goal for riding horses right now is to have great rides and be successful in Louisville. How has riding American Saddlebreds shaped your life and made you who you are today? Riding American Saddlebreds has helped me become who I am today. They have taught me trust, patience, dedication, and teamwork. I have learned from this sport that you can’t always do something on your own. You need a team of supportive people to guide you along the way. What is one place you would love to go? I would love to visit Paris, France What is your trainer’s favorite phrase or words of advice? My trainer’s favorite phrases are “believe in yourself ” and “do it in a suit”. What are your hobbies? I spend most of my time riding horses or spending time at the barn. What do you do in your free time for fun? When I’m not at the barn I am normally spending time with family and friends or working on schoolwork. Do you have any nicknames? Most people call me Olivia, but I am sometimes called Olive, Liv, or Miss O.

ZOE SCHAFFEL Where were you born and raised? Tampa, FL Where did you go to school? I’m currently a senior at University of Florida in Gainesville, FL majoring in Animal Science. What was your ﬁrst exposure to horses? I was 4 and my parents let me ride a horse named Mouse on vacation in Colorado. I was hooked from that moment. How did you get involved with Saddlebreds? I started taking lessons when I was 5. I moved to Academy from there and showed a horse named Somersby and then my first show horse, The Perfect Touch when I was 13.

What has been your most memorable show ring moment thus far? There have been many but I will always remember getting a long ovation after my ride on Wrapped In Chocolate in my first amateur year at Louisville in the Five Gaited Amateur Stallion/Gelding class for the 3rd place ribbon.
