Bacon and corn crustless quiche This bacon and corn quiche is a great recipe for those who want to limit their carbohydrate intake without compromising on flavour. Kids love it and is an easy and quick meal for busy moms to prepare. Ingredients • • • • • • •
5 extra-large eggs 60ml cake flour 250ml milk 1 onion, chopped 250g diced bacon 310ml tinned or frozen corn handful rocket
Method 1. Preheat oven to 180°C. Grease a 22cm quiche dish. Beat the eggs, flour and milk together. Season. 2. Dry-fry the bacon and onion over medium heat until cooked. Remove from the heat and add the corn and egg mixture. Pour into the prepared dish. Bake for about 30 minutes until cooked. Serves 4 l Takes 40 min

From the Tower on the Highland’s Road to the Strowan Road. This delightful hike in your own backyard passes a dam, farmland and indigenous bush. We will meander down from the Tower and the wind turbines and hike past the dam and up a valley through farmland and indigenous bush. The bird life is fantastic. The last section is along a farm road to stroll down to Mike Palmer’s historic farm for a picnic lunch by the dam. Cost: R30 – proceeds go to charity – please pay on arrival. Kids under 12 free.
