The audience looked at the photo of the man-planted mono-culture field of yellow canola flowers and condemned it saying it was very bad for the soil and the planet. Princeton University Emeritus Professor of Physics, William Happer, explains that the beautiful yellow flowers of the canola fields come from a variety of rapeseed developed in Manitoba, Canada many decades ago. The first syllable, "Can", is from Canada. Canola has less irritating erucic acid than old-fashioned rapeseed oil, and it is a much better marketing name.
