They’re an old, universal and endearing means to mark and appreciate special times. Said red velvet cake arrived at our office to celebrate Edgars Club’s 25th year, upped the happiness quota in the making of this issue and stood for Edgars Club’s endeavour to enhance life’s moments with its programme of benefits. he word ‘cake’ conjures up fond memories of celebration and with Club turning 25, we did some digging into the history of this baked good. During weddings in Ancient Rome, revellers would break cake over the bride’s head for good luck. Centuries later, the Celts were rolling cakes downhill at the Beltane Festival – if they stayed intact it was a sign of prosperity for the year ahead. Cakes were even considered to bring good fortune to single women in 17th century England when they were hidden under their pillows to give them sweet dreams about their future husband. Today, cakes are still part of any special occasion, which is why we celebrated our birthday with a slice... or two.

wade shares his recipe for our decadent red velvet birthday cake INGREDIENTS

185ml sunflower oil 185ml warm water 300g sugar 1tsp red food colouring concentrate 400g cake flower 30g baking powder 2tsp cocoa powder 6 eggs

250g cream cheese 90g butter 500ml icing sugar 1tsp vanilla essence Juice of 1/2 lemon

fondant icing

20g powdered gelatine 50ml cold water 100g fructose 20ml water 1tbsp glycerine 900g powdered sugar

METHOD

Step 1 • Mix together the oil, water and sugar until the sugar is dissolved. • In a separate bowl, sieve dry ingredients and add to sugar mixturewith the food colouring. Mix well for three minutes. • Separate the eggs and add egg yolks to mixture. • In a separate bowl, whisk egg whites with a pinch of salt until they form soft peaks, then fold into mixture. • Divide into 2 x 23cm prepared cake tins and bake at 170°C for 25-30 minutes. Allow to cool and slice each cake in two horizontally. Step 2 Beat together ingredients for cream cheese filling and ice each layer of cake, stacking one on top of the other. Step 3 Dissolve gelatine in 50ml cold water and leave to stand for a few minutes. Combine fructose with 20ml water and boil for 30 seconds. Remove from heat and add gelatine and glycerine. Add mixture to half of the powdered sugar and stir. Gradually add rest of the powdered sugar. Place mixture onto work surface and knead until well combined. Leave to stand for 30 minutes. Spread a thin layer of cream cheese icing over cake and then apply the fondant. Decorate with macaroons.

What to expect: Close your eyes and you’ll be transported to a faraway land as the spicy, opulent warmth of an oriental fragrance envelops you. Expect warm and spicy chords like nutmeg and musk. There are also softer floral orientals as well as woody varieties. Gourmand orientals have a dessert-like quality with notes of honey, chocolate and cinnamon. Notes: Musk, vanilla, oriental resins and exotic flowers. Story of spices: If you’re a fan of Tom Ford Sahara Noir, you’ll be intrigued by Gucci Oud. Oud, an extremely rare, dark resinous heartwood, is a precious resource sourced in Laos through a sustainable process. It’s the oud that gives nuances of ambergris, sweet incense, tobacco and wood. Another key player in the oriental arena is amber, which is a blend of gum resins and has a sweet, powdery, spicy aroma. When to wear it: This is perfect for date night – a fragrance like this is sure to turn heads.

What to expect: From armfuls of mixed bouquets to an ode to a single flower – these scents celebrate spring’s bounty. It’s no surprise this category is the fragrance industry’s most popular. Notes: Jasmine, rose, white gardenia, peony and tuberose are the usual suspects. Roses and beyond: While you can find sweetness for the younger crowd and more powdery notes suitable for granny, florals have more diverse offerings. They can be fresh and fruity, soft and romantic, and intense and playful. The orange blossom in Paco Rabanne Lady Million Eau My Gold! is warm and sensuous while the combination of mandarin, tuberose and jasmine in Estée Lauder’s Modern Muse makes for a sophisticated scent. When to wear it: Most florals are easy to wear and work for day or night.

What to expect: Cool and elegant, the signature of a chypre is the tension between fresh citrus and pungent earthy moss; think of a forest floor hours after the rain. Often very distinct in their smell, chypres evoke a strong love or an equally strong dislike in fragrance wearers. Modern chypres come in many guises from floral to green, leathery to sweet. Notes: For a classic composition you’ll find citrus, floral (typically rose or jasmine), woody, oak moss, amber and/or musk. Dare to try: Armani Sì Intense has been described as a modern chypre and, as if to prove the contradictory nature of chypres, reviewers say it is both intense and soft at the same time. Meanwhile a fragrance like Miss Dior Chérie, known for creating a love-it-or-leave-it response, is unapologetic in its chypre roots with its creators describing it as “exalting extreme femininity.” Wear it when: You want to express your femininity in a business-like way.
