RUSTIC
Modern rustic is an interior style that creates elegant homely comfort. Could this be the style for your country property? Charlotte Starling offers tips on how to develop this pared-down elegance.
You’ve bought the country house of your dreams and now you want to create a home which is authentic. Not flash, not self-conscious nor heavily styled, just laid-back, pared-down elegance involving natural materials, skillfully-designed simple furniture and muted colours – look no further than modern rustic. Modern rustic is a style which has emerged in interiors in the last few years. It is a back-to-basics look which places the emphasis on mixing the old with the new and achieving a space which is unfussy and calm. It signals a welcome departure from the twee frou-frou of the 80s and 90s country style, with its pastel ginghams and slightly shouty paint finishes. Also known as ‘rough luxe’, modern rustic is all about teaming the rough with the smooth. Using textures to provide contrast is key. A soft sheepskin against a steel chair, a whimsical chandelier with a brick floor, a woven wicker basket against a timber wall. The trick is not to cover anything with paint or wallpaper that would instead be better laid bare. The combination of exposed natural features like brick or wood juxtaposed with modern lines, hardware and accessories is the aim. Although modern rustic uses vintage and up-cycled pieces, it mustn’t be confused with an entirely vintage look, as it is about combining a few carefully-chosen finds with contemporary materials and know-how. Use colours and textures which link naturally between outside and in. Upholster bar stools in sleek conker-brown leather or tile a floor in coppery-pink terracotta. Mix up smooth and reflective surfaces, 4 |
for example, by lining up earthenware bowls on a galvanised steel shelf. Let the quality of the materials do the talking and keep the colour palette harmonious. Rose of Jericho in Dorset do the best chalky paints in muted tones. The secret is not to let it tip over into looking too rustic or homespun. A polished concrete surface will keep the look functional and utilitarian and heavy linen makes unpretentious curtains or chair covers. What’s great about this style is that you can tailor it to your requirements. A state-of-theart cooker or fridge will sit happily alongside an antique cupboard and floorboards, thus avoiding a sleek minimalist look or out and out rusticity, instead creating something much more individual. There’s always the danger that such elegant simplicity can start to look somewhat pofaced if you carry it too far. Think about injecting a fun twist with the addition of a quirky clock or eccentric mirror: a little shot of humour to finish off with.

“Turn it all the way,” instructs Jerome from the passenger seat. My biceps are straining as I pull hard on the steering wheel, yanking the heavy vehicle round inch by inch. “More,” he demands. “I’m trying,” I hiss through my teeth and he sighs in exasperation. We are on a country lane, barely wider than a goat track in an ex-army Land Rover on a Kankku off-road driving adventure in the Lake District. We’d been told in the briefing at the office in Windermere that the day was going to require good teamwork between navigator and

driver. We were still working on that. I had no confidence in Jerome’s navigational abilities and he’d become a little anxious when I’d clambered in to the cab and confirmed that the pedal on the left was the clutch. I have a driving license. I just haven’t used it for a while. I’d nervously edged the beast of a vehicle on to the road and we’d made it through Windermere and on to the winding track we are now on, bouncing and bumping over the rocky, rutted trail. Sheep pause in their grazing
to give us nonchalant stares as we rumble by and birds flit from branch to branch in the trees that graze the side of the vehicle as we pass. There are blue skies overhead and the sun is lighting up the green and gold landscape. “Gate,” yells Jerome, and I stamp my foot on the brake. He jumps from the cab and pulls the gate open for me to pass, giving me the thumbs up as I squeeze through the narrow opening. In the rear-view mirror, I see him carefully close the gate behind us, a smile lighting up his face as he takes in the scenery, paddocks stretching into the distance over the hilly landscape. This area of the countryside really is beautiful and we’re out in it, just the two of us, with a sheaf of detailed notes to direct our every move. I take a deep breath, let my shoulders drop from their hunched position, and relax. We can do this. For the next half hour, we fine-tune our teamwork. Jerome stops critiquing my driving skills and I relinquish the need to know what’s coming. We give ourselves over to the driving experience and soon we’re laughing as we read instructions like “Farm on left. Care! Chickens.” We’re in this together and we the whole day is stretched out before us within the Lake District National Park. I admit I’d been skeptical about the whole fourwheel drive thing. I’d envisaged rough driving requiring nerves of steel and an inner constitution to match. Jerome had talked me into it, with the proviso that he’d do the driving. Then he’d decided I should give it a try. I could start with the easy town driving part. He knew I’d grow attached, that I’d want to master the machine. He was right. Now I don’t want to stop.

Rattling over cattle grids, past farmhouses and fields filled with livestock, we’re seeing a different side to the Lake District. In Bowness, visitors and day-trippers throng the quaint streets, lining up for ice-cream and boat rides. | 9

Out here, a farmer gave us a wave as we passed through the gate by his field, but apart from that, we have the place to ourselves. It feels like the countryside equivalent of an idyllic desert island. As fortune would have it, at coffee o’clock we find ourselves near Fell Foot Park. Pulling into the car park, we notice a few admiring glances cast at our muscled vehicle. There’s an odd pride that travels with a sturdy 4X4. Unlike a Ferrari, the look-at-me factor isn’t to do with the price tag, but rather the outdoor lifestyle that’s implied. Our next stop is Gummer’s How lookout. Jerome is not one for the great outdoors, so I leave him to guard the car and tramp off into the woods. Fifteen minutes’ later I trudge back the other way, having headed off in completely the wrong direction. Once I find it, it’s a lovely short hike on a well-maintained path that narrows as it leads up the rocky escarpment . From the moorland on the summit, the view stretches along Windermere and also down beyond Newby Bridge to the sea. Returning off-road, Jerome is itching to take a turn in the driver’s seat. We trade places and he grips the wheel, setting off down a muddy track. “Turn right here,” I direct and he tugs lightly on the steering. Nothing happens. He takes a firmer grip and hauls it around, his eyes widening. “You’re
really strong,” he exclaims. I feel vindicated. “Stay next to the wall,” I read out. “Do not drive over the edge trying to avoid fallen sections of wall”. Jerome nods and almost immediately swerves to avoid a section of wall, sending us skimming by the edge of the track. He quickly brakes and gives me a glance. “That would be why you don’t avoid fallen sections of wall,” I point out unnecessarily.

These are rugged vehicles. I have no doubt that had we veered off the track, we would have bounced straight back on again. There’s a reason the Land Rover has long been the vehicles of choice for the military. They’re hard-wearing, tough-looking, go-anywhere mammoths with an impressive safety track record. That’s part of the appeal. By the end of the day, we’re racing against the clock to get back before the 5pm deadline. We’ve taken a few unplanned detours, but we’ve ended up where we’re meant to be. The Kankku experience has given us a new perspective on the beauty of the Lake District, the thrill of off-roading and the value of teamwork.

The décor may be rustic, but the cuisine at The George in Rye is contemporary in every way. Giselle Whiteaker samples some of East Sussex’s finest produce. From the cobblestoned High Street of the medieval town of Rye in East Sussex, a maze of passageways and lanes lead to intriguing discoveries such as the almost millennium-old St Mary’s parish church, the Ypres Tower and Henry James’ Lamb House. The town itself is a lovely place to be, but the biggest attraction for foodies has to be The George in Rye. The George in Rye dates back to 1575 when it was a coaching inn. Its white frontage, dating from the early 18th Century, acts as a frontispiece for a timber structure at least 200 years older. Perched in a central location on the High Street, The George’s 34 rooms and suites have been restored by the current owners, with co-owner Katie Clarke and her design partner Maria Speake of Retrouvius pulling together a rustic chic look that’s immediately apparent from the comfortable lounge space near the entrance. Anyone seeking to emulate the look can pop into The Shop Next Door, a dedicated retail space a few doors down selling the property’s homewares, from Frette bed linen to Lineas candles and Farrow and Ball paints. My friend Mohamed and I flop into a cushy sofa in the lounge for a coffee before we check in to the gorgeous attic-style room once the temporary abode of Kevin Costner. We are reliably informed that
George Clooney stayed in the room next door. We’re in good company then. Passing through the cosy bar and the courtyard set up for al fresco dining, we see a few punters soaking up the fading afternoon sunlight that is flooding the area, but we shoot out to explore the town. By the time dinner rolls around our stomachs are rumbling, but we’re confident that The George Grill’s eclectic menu, featuring classics like fish and chips – albeit Harvey’s Ale battered cod and hand-cut chips – alongside more avant garde dishes like Josper-roasted native lobster, will fill our need. Local seafood features heavily and after some debate, Mohamed and I agree to focus on the bounty of the ocean for our starters. The Rye Bay scallops are lightly seared, leaving them tender and moist. I can see the lady on the next table eyeing them covetously as I slice into the first morsel and pop it into my mouth to melt. “I’m having those tomorrow night,” she announces loudly to her husband. The dollop of prune jus on top and the smear of cauliflower purée underneath sandwich the roe-on scallops in a fragrant sweetness, offset by the accompanying Boudin Noir, which I discover is the more romantic name for black pudding.

The Josper roasted Giant Gambas in lemon, chilli, garlic, fennel seed and olive oil are equally mouthwatering, the tender flesh of the oversized crustaceans highlighted by the exquisite combination of flavours in the sauce. We mop up the remnants with wedges of crusty bread, unable to let a single drop go to waste. In the pause before our mains, we admire The Grill’s décor. The dining room has been designed and furnished entirely from reclaimed finds including a whole gym floor from a girl’s school in Wales and a huge fish wall-piece which was originally commissioned for the reception of the Barclays London office in the 1950s. Past the plant pot on the table packed with cheerfully blooming spring bulbs we can see into the open kitchen, where the chefs industriously whir around, tweaking each dish with calm precision. I’ve been straightforward and ordered a rib-eye steak cooked medium-rare on the Josper charcoal grill, which comes served with a slice of tomato resting on a grilled mushroom, with onion rings and hand-cut chips. Often, the true test of a restaurant is how well they prepare the simplest of dishes, and The George Grill’s efforts prove to be exceptional. The meat is so tender it parts under the lightest pressure from my knife and it dissolves on my tongue in waves of flavour. Mohamed is not the most proficient cook. “If there’s no fire, I give myself a high five,” he tells me as he tucks into the tantalising tang of his Bream fillet cooked in crazy water, with fennel, tomato, saffron potatoes, chilli and rosemary. The zing of tomato in the wine sauce complements the flavour of the succulent Bream, and Mohamed falls silent until the end of the dish, caught up in savouring every mouthful.

“Can I interest you in the dessert menu?” asks the waiter, laying out a list of temptations. We hesitate as we scroll through the treats, settling on a shared sundae. Moments later, I see an old-school sundae glass piled high with whipped cream hit the counter of the pass, from where it is swiftly delivered. We dig deep, down to the vanilla, chocolate and blackcurrant icecream, finding brownie chunks, chocolate straws, meringue discs and glacé cherries buried in the cream’s fluffy depths. It’s truly decadent and it’s with sighs of satisfaction that our spoons tinkle on the bottom of the empty glass. The meal complete, we stumble back to the comfort of our room, where I fill the deep metal tub for a relaxing soak. In a state of complete satiation, I crawl into my plush bed to dream of movie stars and sundaes and the full English breakfast to come.

SPAGHETTI
1) Make the chilli and garlic paste, adding the chilli, garlic and fennel seeds to a drizzle of olive oil and pulse into a paste. 2) Heat a medium pan with a fitted lid on high heat. Add in all of the ingredients; butter first, the spaghetti, tomatoes, clams, sherry, cream, garlic and chilli paste, and lovage. 3) Put the lid on and shake. 4) Cook on a medium heat for about 4 minutes. Remove the lid and bring to the boil then reduce for 1 minute. Stir to ensure all the ingredients have mixed together thoroughly. Serve in a pasta bowl.

and top quality cuisine. For everyone else, there are numerous bars, and every seat has uninterrupted views of the course.

In the evening, I dine in the hotel’s modern, refurbished Hyperion restaurant. The pan-fried scallops with black pudding and sprouts seems a strange combination on paper, but on the palette they are a mouth-watering blend of moist and light, served in just the right tantalising volume. The scallops are followed by Highland rack of lamb with beetroot, pied bleu mushrooms, turnip and salt-baked potatoes. The lamb is a light pink hue inside, succulent and tender, and the aromas of the dish gently waft from the plate, leaving my taste buds anticipating the delicious flavours to follow. A dark chocolate fondant and fig ice-cream tops off a feast that, accompanied by a well-chosen glass of red and wonderfully comfortably seating, begs me to just sit and soak up the ambience until it’s time to sleep. In the morning, I make use of the hotel’s superb sports facilities. The gym is small, but equipped with the latest models, tracking your workout. After running and riding, I’ve worked up an appetite and breakfast calls. The morning buffet includes the quintessential full English, with eggs cooked to order, as well as cereals, continental cold meats and cheeses.

Satiated, I walk back into town to browse a few of the shops and imbibe some well-brewed coffee in one of the local cafes. Many of Ascot’s reputed attractions are outside its borders. Windsor, with its ancient castle and Legoland theme park, is a short distance away, and also within striking distance is the PGA-quality Wentworth golf course, as well as a plethora of lesser-known, but equally engaging, places to tee-off. I’m

staying local though, with total relaxation in the Macdonald Berystede Hotel’s spa on my agenda for the afternoon. Inside the spa is an 18-metre swimming pool with an attached indoor-outdoor hydrotherapy pool where I bask in the warm afternoon sun while powerful jets throw a never-ending supply of bubbles onto my rapidly relaxing muscles. Next door is the thermal suite, with a steam room, stone sauna, infra-red sauna, salt water room, two types of massaging showers, heated loungers and, for the truly brave, an ice room. It’s the perfect place to while away a few lazy hours. In the evening as I sit in the bar with a refreshing mojito, I can hear the merriment of a wedding reception in the garden outside. Berystede is made for weddings, with the Windsor and Eton Suite providing space for up to 300 guests and the landscaped garden acting as a perfect backdrop. I’m on my own though, so I roam into the town for dinner, settling on Ascot Spices Indian restaurant, where departing diners give me the thumbs up on the chicken bhuna. It’s the best I’ve had in a long time, and energises me for a few hours in one of the town’s lively nightclubs. It may be a small town, but Ascot knows how to throw a weekend party.

I’ll be leaving the pleasures of Ascot soon, but I have just enough time to duck back to the spa. Macdonald’s Hotels offer top quality spa therapies and treatments, so I treat myself to a deep tissue massage. For an hour, I’m in bliss as the stresses of my working week are eased out by the therapist’s soothing hands, the Elemis products melting into my skin. I try to maintain small talk, but relaxation takes over and I drift into speechlessness, content. Ascot and the Macdonald Berystede Hotel has been the perfect weekend escape. It’s removed me from the humdrum of normality, giving me time for indulgence. I know where I’ll be next race day.
