elcome to the Cooking Under the Tuscan Sun Experience!
My cooking school offers you one day cooking class, cooking vacations and fun!
Silvia Baracchi The classes celebrate traditional Tuscan recipes and are designed by Silvia Baracchi, Michelin Star chef and owner of Relais& Chateaux Il Falconiere & Spa. You will learn to cook authentic Tuscan cuisine in focused, spirited classes in our residential style kitchen, using local ingredients personally selected by the Chef under healthy, ethic and protection of the land criteria. Following your cooking class you will enjoy a seated, served dinner in our charming dining room, in which we will enjoy the food you have prepared. When you walk through the front door of our kitchen, you are walking into a house. We carefully designed the Cooking Kitchen to avoid comparisons with stainless steel dominated restaurant kitchens and Cookery Schools. We want you to feel relaxed and at home and so our courses are designed around the sort of cooking you would do in your own kitchen to entertain family and friends: our aim is to inspire you and send you home with new and exciting recipes whilst at the same time giving you time to cook with like-minded people. It doesn’t matter what level you are, just come along and enjoy the experience!
COOKING UNDER THE TUSCAN SUN DAY 1 Upon arrival, You are shown to your rooms and made comfortable. Welcome cocktail with Silvia Baracchi your host for the week. The aperitif will be followed by a delicious Gourmet dinner in our Michelin star restaurant. DAY 2 After breakfast welcome in my kitchen for your first cooking lesson. As an example: Frances Mayes menu Eggplant roll with prosciutto and buffala mozzarella; Pici with cherry tomatoes and aromatic herbs; Beef loin with shallot and balsamic vinegar; Pear cooked in red wine with cheese and sabayon Lunch based on your creations paired with our wines In the afternoon , departure for a guided sightseeing tour of Cortona for a visit of this charming city, setting of the book and movie “Under the Tuscan Sun.” Dinner at Bottega Baracchi, our Tuscan Bistrò DAY 3 Today you will visit a local farm: you can see sheep , chickens, rabbits, geese and many other animals. We will buy the milk we will use for our second lesson focus on making cheese. Light lunch and ready to become expert cheese makers! Pici Pasta and recipes with ricotta cheese just made, will be the ingredients of our recipes. Dinner with your creations at the restaurant. DAY 4 In the morning departure to Montalcino and Montepulciano : you will be captured from the enchanting landscape of Val d’Orcia. We will visit outstanding wineries and will taste the famous Rosso di Montepulciano and his majesty the Brunello. Lunch. In the evening tour of the vineyards and winery of the Baracchi estate including a guided walking through the vineyards and an in-depth explanation of winemaking from the vineyards to the bottles. followed by the sabrage of our Metodo Classico and wine tasting during the dinner at the restaurant.
DAY 5 After breakfast we will go to visit a local vegetables producer, close to the relais: we will buy some seasonal vegetables that will be the genuine ingredients just cut of our last cooking lesson at the Locanda del Molino. Farwell candlelight dinner at the Locanda : you will receive your cooking certificates. DAY 6 After Breakfast , checking out procedure depending on your departure schedule.
