RECIPE ADAPTED FROM THE SMITTEN KITCHEN
Ingredients
Instructions
• 1/2 cup of sugar turbinado (sugar in the raw is amazing!)
• 1 and 1/2 teaspoons of baking powder • 5 tablespoons melted butter • 3/4 cup of sour cream • 1 egg • 1 1/2 cups all-purpose flour • 1/4 teaspoon baking soda • 1/2 teaspoon salt • 1 teaspoon of lemon zest... a must! • 1 and 1/2 to 2 cups of fresh blueberries
bowl . . .stir in sour cream add baking powder and baking soda here! Mix throughly to remove all the lumps. • Stir in flour, and salt (I add a tad of nutmeg here.) • ADD fresh blueberries and stir just until mixed.
• Drop batter into a well greased muffin pan
(I only use 7 of the muffin spots)
• Add a little water to the remaining ones to keep from burning. BIG AND FLUFFY • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly.
