START the day with a super blend

Mint Choc Strawberry Chip

Fresh mint leaves

1 handful

Strawberries (fresh or frozen)

1 handful

Coconut & almond butter (or any nut butter you have)

1 tsp

Coconut yoghurt (or live ‘normal’ yoghurt if you prefer)

3 tbsps

Cacao nibs or powder

1 heaped tbsp

Pea & hemp protein powder (or any vegan protein powder)

1 tbsp

Chia seeds

1 tsp

Coconut milk (or any plant milk you like)

250ml

Ice

1 small handful (if not using frozen fruit)

Add ice (if using) to your blender, followed by the other ingredients. Blend for 15-30 seconds.

Fruit & Nutcase

Mixed berries (fresh or frozen)

1 handful

Pineapple chunks (fresh or frozen)

1 handful

Cashew & almond butter (or any nut butter)

1 tsp

Coconut milk

300ml

Pea & hemp protein powder (or any vegan protein powder)

1 tbsp

Ice

1 small handful (if not using frozen fruit/veg)

Add the ice to your blender, if using, followed by the other ingredients. Blend for 15-30 seconds.

Paw Me, Paw Me Another Juice

Paw paw/papaya1/4 Celery 1 stick Apples 2 Courgette 1/4 medium Cucumber 1/4 medium Ginger root 1" Ice 1 small handful

Pop the ice into a glass. Juice all the other ingredients and pour.

ENJOY these zingy super juices

Minty Ginger Lemonade

Apples (Gala or Golden

Delicious) 2 Ginger root 1"

Fresh mint leaves

1 handful Lemon (unwaxed) 1/3 Ice 1 small handful

Juice all the ingredients, add the ice to a glass, pour and enjoy.

POP a cheeky ball as a treat

Coconut, Chia Seed & Lime Balls

Makes 12–18 balls

Lime (zest & juice) 1

Cashew nuts (raw)

80g or 2 handfuls Coconut flour 50g Chia seeds 50g

Shredded coconut

70g or 2 handfuls Coconut oil 1 tbsp

Raisins

80g or 2 handfuls Coconut water 120ml

Using a fine grater, remove the zest from the lime and squeeze the juice into a small container. Put the cashew nuts, coconut flour, chia seeds and 50g of shredded coconut into the mini food processor container of a hand blender and blend for 10-15 seconds to combine the ingredients. Next, add the coconut oil, raisins, lime zest, lime juice and coconut water and blend for 30 seconds. Sprinkle the remaining 20g of shredded coconut onto a chopping board. Take a small spoonful of mixture, roll into a ball and then in the coconut, continuing until the mixture is all used up. Pop the balls in the fridge and enjoy at your leisure.

TUCK IN to a delicious bowl meal

Roasted Veggies Served With Wild Rice & A Thick Lemon & Rocket Pesto

Courgette 1/3 medium Red pepper 1/4 small Yellow pepper 1/4 small Red onion 1/2 small Sweet potato 1/3 medium Olive oil 5 tbsps Himalayan rock salt 2 pinches Ground black pepper 2 pinches Wild rice 60g Parmesan cheese 25g Rocket 25g or 1 small handful Pine nuts 20g Lemon (juice of) 1/2

1. Preheat the oven to 200°C (400 °F/gas mark 6). Peel the sweet potato and onion. Chop the courgette, peppers, onion and sweet potato into small chunks. Place into a roasting tin, drizzle with two tbsps of olive oil, a pinch of salt and pepper and combine. Cook for 30 minutes, mixing midway through. Meanwhile, cook the rice according to the packet instructions.

2. Next, make the lemon pesto by roughly chopping the Parmesan cheese and placing into the small food processor container of a hand blender, followed by the rocket, pine nuts, lemon juice, three tbsps of olive oil, a pinch of salt and pepper. Blitz for 30-60 seconds.

3. Place the rice in a bowl. Then arrange the roasted veggies on top, spoon over the lemon rocket pesto and finish the dish with a pinch of pepper.

Quinoa Salad Bowl With Toasted Seeds & a Zesty Tahini Dressing

Quinoa 50g Red pepper 1/4 small Cucumber 1/4 small Avocado (ripe) 1/2 Mixed seeds 15g or 1 small handful Pine nuts 15g or 1 small handful Olive oil 2 tbsps

Chickpeas

(drained & rinsed)50g Himalayan rock salt 1 pinch Ground black pepper 1 pinch Lemon (juice of)1/2 Tahini 2 tsps Rocket 25g or 1 small handful

1. Cook the quinoa as per the packet instructions and leave in the pan. Thinly slice the red pepper. Cut the cucumber in half lengthways, then slice diagonally. Remove the stone and skin from the avocado and slice lengthways. Lightly toast the mixed seeds and pine nuts in a pan (do not add oil) until they turn golden or ‘pop’. Remove from the heat, add a tbsp of oil, chickpeas, salt and pepper and sauté 1–2 minutes.

2. Combine the lemon juice, tahini and remaining olive oil by blending for 10 seconds. Put the chickpeas, rocket and half the dressing into the quinoa pan and combine, then transfer to a bowl. Place the other ingredients (except the seeds and pine nuts) on top, drizzle with the remaining dressing and sprinkle with the toasted seeds.

“I love my life!,” she says. “I’m enjoying being 60 and devoting this year to my health. I’m doing loads of exercise and working on a project to see if I can set back my biological age, trying all the tests and machines to benchmark my health and fitness. I’ve taken up weightlifting and walk daily. I’ve already seen a huge difference and feel much stronger – a onehour walk is an amble and often I’ll go seven-miles, then go for a second walk afterwards. Later this year, I’m doing a big fundraiser cycle ride which ends in Las Vegas, so I want to be fit for that and be able to do the splits! It’s wonderful not to be racing against myself, as life has always been so busy. I want to be as alive as I am today when I’m 80!”
