PHILIPPINES: The New Frontier
E
VERY YEAR, I GUEST EDIT FOR the November issue. This year also marks five years of my editorship, and Zee Lifestyle’s 20 years in the community. We are celebrating a lot of milestones together in 2016 as a magazine family. We assessed the trends that have come and go, and we also assessed the changing needs of the “family, friendships and business unit.” What is entertaining these days? We understand that everyone has become a fitness junkie, but may still not be willing to give up the gourmet. A lot of us have weekend beach escapes with an “island picnic basket” in tow. While there are changes the culinary scene has achieved for the community, we realize in our busy packed lives, we want easy. Not simpler, necessarily, but no stress. We set out a clear direction when we started the framework for this issue. As we faced the last two weeks before closing, the storylines and the framework we mapped out initially no longer fit the theme. Just like the course life—you are so set on the direction you were headed then it changes on you. The structure and the flow directed another story. As I look at the evolved pages, it had even become a powerful conglomeration of east, west, north and south perspectives. The pages have become a work of art.

LOREM IPSUM On the day of love, during the second week of February, your lifestyle jotter went off to Mactan island to avoid the city traffic of lovers dining, wining, and yes, loving. Instead of celebrating the night sweetly with a romantic partner, my friends and I enjoyed a divine tasting home-cooked Chinese dinner prepared by Lili, the Beijing-based sister of Nelly. Nelly Egle, the wife of Rene Egle, the General Manager of Shangri-La’s Mactan Resort and Spa, has been residing in these islands for barely two years but she’s already made a lot of local friends. She hosted a casual dinner for of eight and, since I was

already billeted at the Shang that day, I attended. Needless to say, we had so much fun. Heading back to the hotel after dinner was a precious experience. I woke up the next day refreshed, rejuvenated and reveling in the uninterrupted panorama of the sparkling azure seas and clear blue skies. I thought I was at Conway’s Lost Horizon lamasery but then I realized that I was at a much better place: Panorama Suite Room 7001, a luxurious one-bedroom suite with a private balcony, separate parlor and dining area, just an hour away from the heart of Cebu City. It took great effort to peel myself self off from the soft bed with its 300

LEBKUCHEN LOVE Lebkuchen is Austrian for gingerbread cookies and my sweet tooth instantly loved them, particularly, the non-fat, handpainted delicacies by the multilingual baking diva, Chary Dumont of Dumont’s Cookies and Treats. Aside from Lebkuchen, Chary also makes specialty European treats, healthy goodies like Moringa crepes with triple nut filling, veggie pies, organic breads and my favorite energy bars. With just one bite of her concoctions, one notices the culinary artistry and high quality that she maintains expertly. Proof of her high standard is the recognition she garnered from past international culinary competitions by the HRRAC. Chary won three silver awards for her Authentic Austrian Gingerbread Cookies,

OXES OF FLOWERS are arranged on the floor Anzani Prime on the afternoon of the special dinner the restaurant, together with Zee Lifestyle and Moët &
Chandon was throwing for an exclusive group of guests. It was set to be quite a special evening— Chef Marco Anzani had prepared a special menu especially to complement Moët & Chandon champagnes, and the hostess Kate Anzani had worked with florist Jaime Santiago, who had arrived from Manila, to create the perfect setting.
Which leads back to that afternoon, Jaime
slowly taking bundles of the beautiful flora and putting them together in vibrant color combinations
to serve as centerpieces for each table, while the sweet floral smell filled the room. “The flowers’ flight was delayed,” Kate says, explaining the 30

bouquets had all been flown in. “They were supposed to arrive last night, but something happened. Thank God they arrived this morning.” Thank God, indeed. The flower arrangements were the stars of each table, giving pops of color and freshness to the luxurious home décor and plates from Rustan’s Home. Each table was conceptualized to represent a specific Moët & Chandon variant. The Moët Rosé Impérial was right at home with the pink roses and orchids, the large bouquet sitting on a rose gold tray flanked by mini arrangements in martini glasses. The femininity of the candleholders is grounded by gold-rimmed plates with blue floral details. The Moët Ice Impérial is the brand’s answer to hot summer days by the beach. The first and only champagne that’s meant to be enjoyed on ice, the Ice Impérial is fruity and refreshing. The bottle is complemented by the green and gold

palette of one table, lilies and other flora complemented by an array of leaves and gold accents in the form of gilded pineapples and plates. While that particular arrangement harks to its freshness, the table decorated with yellow roses and baby’s breath calls to its fun spirit. Bird sculptures and a metallic twisted candelabra lets the bright flora shine, and is a fitting setup for the ice bucket that shows how the Ice Impérial is meant to be enjoyed—with servings of fresh fruit and sprigs of mint. With its red flowers enveloped in decidedly earthy pots, the table for the Moët & Chandon Brut Impérial matches this variant’s classic taste. The classic color combination of green, red and purple stands out against the black pots and clear chargers, creating a look that’s decidedly sophisticated. Deep shades of violet represent the Malbec from Altos del Plata, the dinner’s red wine of choice. Featuring shades that are easily related to wine, its more subdued and serious tone is broken up with the floral detailing on the otherwise stark plates. Guest who arrived were treated to a Belvedere Vodka Cocktail, before being seated for the first course of Yellowfin Tuna Tartare to complement the Moët & Chandon Brut Imperial. A chardonnay was served with the Homemade Boston Lobster Tortellini, which had sautéed lobster meat wrapped in egg pasta and served with lemon-reduced beurre blanc.
