nother incredible tool I have recently started utilizing is Zenlist. Zenlist is a website and phone application for real estate brokers (who subscribe to it) to invite their clients to access. The agent invites the prospective buyers, and then those buyers are able to browse Active listings as well as Private Network Listings. The listings in the PLN weren’t previously available to the public. Now, people looking to buy can expand their search pool with private network listings. It is important to note that not all brokerages allow their Private Network listings in Zenlist. It is up to the discretion of each brokerage. Ask your broker if your listing will be accessible in Zenlist.

t is hard to believe we are already halfway through 2021. As you may know, the real estate market is still thriving. In the Barrington Area in April 2021, closed sales were up 53.4% from a year ago. According to the current Barrington Housing Market trends on Redfin.com, homes are currently averaging 22 days on the market, compared to an average of 131 days last year. In the summer months, you can expect the housing market to stay busy.

ccording to an article published by U.S. News and World Report, senior economist for realtor.com George Ratiu notes that “growing consumer confidence, the rollout of vaccinations for adults and declining unemployment numbers all make selling a home feel less risky. ‘A lot of sellers have been looking at these as a green signal,’ he says. Expect inventory to pick up in April, May and as we head into summer, June and July.” With inventory levels picking up, the competition will increase. Ratiu is also notes that “this increase in inventory will be at a ‘measured pace’” as sellers, in turn, contribute to the rising demand.

Barrington native, fashion designer Cynthia Rowley, a graduate of Barrington High School co-hosts with her daughter, Kit Keenan, Ageless—a podcast first and foremost about their relationship, with a focus on fashion and wellness. “We are both very busy ladies,” says Keenan, “so having the time to sit down together, chat, and learn from our guests is an amazing bonding experience. At 21 years old Keenan, herself born and raised in New York City, is a senior at NYU’s Gallatin School of Individualized Study where she’s studying fashion business. Her favorite Ageless episode thus far is “If You’ve Ever Asked Yourself ‘WTF Do I Eat?’” with holistic nutritionist Bianca Valle. “My grandparents,” says Keenan, “still live in Barrington, and The Canteen has the best breakfast!” In fact, Rowley’s parents still live in the house she grew up in, and she has fond memories of the Carlow movie theater and parades down main street. “One of my greatest honors was receiving the key to the city a few years ago,” says Rowley. “You can take the girl outta the Midwest, but can’t take the Midwest outta the girl.”

DENTAL TECHNOLOGY UPDATE

ew technologies help shape our future. Dentistry’s future is no exception. With advances in electronics, software and 3D printing, dentistry is on track to bring these technologies to patients and make a visit to the dentist more comprehensive than ever. 3D printing does not need any introduction. Its incorporation into healthcare has been newsworthy with the technology’s potential to print medicines, prosthetics, and even organ replicas. Its importance was further highlighted during the COVID-19 crisis to bypass supply chains to meet hospitals’ demands. As the technology is set to become an integral part of healthcare practice, it will also become incorporated in dental labs.

Computer-assisted design (CAD) and computer-assisted manufacture (CAM), including 3D-printing, are already changing the way dental lab technicians do their work. Traditionally, when a patient needs a crown, a dentist must make an impression of the tooth, ship it to the dental laboratory and then wait for them to make a permanent crown. With CAD/CAM technology, the tooth is drilled to prepare it for the crown and a three-dimensional scan is taken of all the patient’s teeth. This image is then emailed to a laboratory that CAD designs the new tooth and begins the process of creating an oven fired glass-like crown. With a 3D printer doing the hard work, dental labs eliminate the bottleneck of manual modelling and can get the final product back to dental offices faster than ever before. 3D printers are also able to produce orthodontic models, surgical guides, aligners, retainers and more dental equipment faster and precisely; tasks that would take longer with traditional methods. This helps in improving workflows and reducing errors. While there is currently CAM that allows a dentist to have a crown milled right in the office, the materials in the final product do not have the same glass-like finish as the materials that are created in a dental lab. But as 3D printing materials improve, the dental office may be able to completely bypass the dental laboratory all together. The dental profession is always looking for ways to improve the care of its patients. Technology is paving the way for making a visit to the dentist more comprehensive than ever. A

s seniors age, their medical needs and daily activity needs increase. In my practice, we often see seniors that were independent and living in their homes develop medical issues that require more help, support, and medical care. Fortunately, there are wonderful senior living communities with an array of on-site services. Sometimes navigating the options and choices can be very stressful to families dealing with aging loved ones. There are various types of senior living care levels. These include independent living, assisted living, memory care, and nursing homes. Each provides a different level of service and care. Independent living is basically an apartment, rented by an individual or couple, with no additional healthcare services. Other on-site services like dining, laundry, and activities may be available but this can vary from one community to the next. All medication needs, doctor appointments, testing, and services are left to the senior to coordinate. Assisted living includes some level of nursing care, certified nursing assistant support, and usually medication management. Ask about staff to resident ratios, hospitalization rates, and other available services such as physical therapy. Memory care is typically the assisted living support level, in a secured or locked area of the community. This is to prevent resi-

dents from accidentally leaving due to cognition issues or decline. Nursing homes are often reserved for the highest level of care needed. This includes treatments like IV antibiotics, tracheostomy care, chronic large wounds, and post-surgical therapy. There are long-term residents of nursing homes as well, depending on their needs. At my practice, we continue to provide important needed care at the assisted living, memory care, and nursing home levels. We also provide care for independent living seniors and that is gaining in popularity. It allows health care to be conveniently brought to the senior, prevents many common issues like falls, and keeps folks independent longer. This has been financially beneficial to families, as independent living is typically less expensive than the other higher levels of care. Shopping for your aging loved one’s place to live can be challenging. It’s also stressful to relocate from a home they have loved and lived in most of their lives to a smaller condo or apartment. Most families prefer a location close by and one that is within their budget. However, there are many other factors and services to consider. Visiting various communities is key to making the final decision. Factor in the ancillary services, food quality, activity programs, and most importantly the medical care available on site. W

hat you notice first about the painting are the subject’s eyes. Clear blue and direct, they seem to study you as you study them. And then, there’s the graying beard, so long it flows past the collar of the white shirt, which (you notice) drapes over some rather gaunt shoulders. Breathtakingly beautiful, the oil painting, done in the style of the old masters, was painted by artist and former Palatine resident Scott Pohlschmidt when he was only 21 years old. The painting comes with a fascinating story. As an exchange student from DePaul University where he’d won a dean’s art scholarship, Pohlschmidt was studying with Charles H. Cecil (a New Trier High School graduate) who had a painting and sculpture atelier in Florence. Pohlschmidt took to the atelier so well, he stayed on to study longer, and to teach. One day eating in a tiny rustic restaurant near the atelier a fellow student noticed a striking looking man—a homeless gentleman from Germany named Hans, and pointed him out to Scott. “His look was so distinctive, he was hired by many of the formal art schools in Florence to model for paintings,” Pohlschmidt explains. “The man’s earnings from modeling were more than enough to take him off the streets, but Hans chose to live that way. When I asked him to model for two terms of painting, he was more than

happy to comply. So I put him in my white shirt, and we set to work on that painting.” But the story of Pohlschmidt’s painting doesn’t end there. It so happened that some Charles Cecil studios were located above the British Institute. When the institute decided to name its library for Prince Charles, his Royal Highness came to Florence for the ribbon cutting. Venturing up into the studios while there, the prince greeted Cecil, and walked over to admire Pohlschmidt’s portrait of Hans. “Did you paint this?” the prince asked Cecil. “No,” he replied. “That painting was made by one of my students, Scott Pohlschmidt.” Twenty-six years later, the painting hangs in London. It’s one of the dozens of art works Pohlschmidt went on to produce first in Florence, and then in England where Scott and his wife, artist Ann Witheridge, cofounded their London Fine Art Studios. In addition to the fact that both have identical twins, Scott and Ann have an important commonality: Their reverence for traditional fine art. Together, they have dedicated their lives to giving aspiring artists formal training in representational drawing, oil painting, and sculpture at their school. Situated on Lavender Hill, the school’s 10 studios and art store are housed in an 18th century building, the Battersea Business Centre. It’s just steps away from the house where Scott and Ann live with their two daughters, Florence and Liberty. The couple and their supporting teaching staff of eight artists—plus school Director Clare Witheridge, Ann’s twin—welcome students of all levels. “We provide a supportive learning environment in which to acquire new skills and a deeper understanding of the figurative tradition,” says Pohlschmidt. Scott and Ann also actively paint and sculpt. Ann paints portraits, landscapes and still lifes in oil, and also does pastel and charcoal drawings, and etchings. Scott sculpts with clay and casts in bronze, and also does formal individual and group portraiture and still lifes. and enthusiasts who may participate in foundation classes on the fundamentals of drawing and painting. There are short courses in figure, portrait, still-life, landscape, and cast drawing. There are classes in etching and sculpture, and workshops with visiting international artists. All of that, plus art history talks, student-led discussions, study groups, painting demonstrations, and museum visits. In short: Something for pretty much everyone. Scott and Ann’s strengths balance well. “Ann is such a people person,” says Scott. “She was educated at Christ’s College, Cambridge, studying Art History, before going to Italy to study painting. Her father was a diplomat, so she grew up all over the world— Paris, Baden-Baden, Brazil, Portugal. She really is the public face of our studio. But if you have a technical question, or questions about sculpture, or art supplies from our London art shop, Lavender Hill Colours, I’m the one to speak to.” Scott takes commissions for both portraits and sculptures. He considers the life-size sculpture he did of Australian entrepreneur Garrick Hawkins—which stands in Mayfield Gardens on the Hawkins family’s 160-acre private estate, to be among his best commissions. He says one of his most noteworthy paintings is the full-length life-size portrait he painted of Ann’s uncle, John Witheridge, former headmaster of Charter House School in

Godalming, England. Talking about his work, Pohlschmidt says he didn’t initially set out to become a sculptor, “But while I was in Florence, Charles Cecil added a sculpture department to his school and I just had to be a part of it. I just loved it, and never stopped. Not many painters sculpt, so it’s nice for me to be able to shift back and forth between the two.” Polhschmidt sculpts with his students three times a week, “so I get a nice balance of teaching, working on my own things, and finishing commissioned work. I like all of it. A commission forces you to think and work in a different way. It’s more specific, but can also push you into a different area of creativity.” Working with the students, he says, is also great. “It’s so important to know how to verbalize your working process to help them learn.” Pohlschmidt’s interest in painting and drawing started when he was quite young. He still remembers when a third-grade teacher asked the class to draw pictures of their homes. “She was so shocked when I handed her a painting of my house done in perspective,” Scott laughs. “Everyone else drew facades, but I was always interested in structure, the underpinnings and shadings of things.”

He also recalls the moment he decided he wanted to make a career of art. On a class trip to the Art Institute of Chicago, the teacher gave the students an hour at the end of the excursion to roam freely. “I vividly remember finding my way to a painting by John Singer Sargent called, ‘Venetian Glass Workers,’ painted around 1880,” says Pohlschmidt. “I was completely blown away. Sargent’s pictorial, almost filmlike representation of these women threading beads. It was a glimpse of daily life, a genre painting made for no other reason than Sargent’s pure pleasure. Standing there I thought, “I would like to paint pictures like that.”” Today, he, Ann and the teachers and students at the London Fine Art Studios do just that, adhering to the traditions of figurative drawing, painting, and sculpting. “I suppose in a way we are ambassadors for the figurative tradition,” sums Pohlschmidt. “There are so many art schools in London, but we get the students who want to learn representational art—to learn to in a systematic way about proportion, values, and painting

techniques, working from life in a lively but controlled environment. I can’t tell you how many artists have come to us saying they wish they had had a year of cast drawing as part of their art school training. A GUIDE FOR THE TIMES A former Chief Pilot looks back on his 35 years in handling the unexpected.

rowing up in a small Wisconsin town and spending lots of time on his grandfather’s farm, John Jirschele, a 35-year veteran pilot for American Airlines—12 of those as a Chief Pilot at O’Hare—learned early to operate and repair machinery. His grandfather taught him to drive pickups and tractors to help with the relentless farm work. Jirschele’s father, himself an accomplished pilot in World War II, instilled in him the desire to fly and taught him the basics. “Thanks to my father, I got into flying early, receiving licenses to

fly for hire and teach other aspiring pilots by age 18. While still in high school, I was teaching other high school friends to fly,” says Jirschele. His father challenged him and his four siblings to explore new things like chess, photography, technology, and flying. It turns out these early skills mapped out a career plan for Jirschele. Jirschele planned to take off in an aviation career, but the Vietnam War had other plans for him. “I graduated from the University of Wisconsin at Madison in 1972 and the war was still going on,” he says. “I had a low draft number and would JWC | COUNTRY 49

likely be drafted, so I joined the Air Force.” He spent the next year learning to fly high-performance, supersonic jets. It turned out joining the Air Force was the right move. A large, systemic shift was about to take place: The 1973 oil embargo. Had the airlines hired him out of college, he would have been furloughed. Later, a second major shift occurred. The United States pulled troops out of Vietnam and the Air Force had too many pilots, so the military released him. “I got out early and started a career as an airline pilot. No matter how much you plan, a lot of career success is just being in the right place at the right time.” When he was in the military, Jirschele flew wounded soldiers in C-9 medical transports. He used his teaching experience to help design a new training course for C-9 pilots. He transferred this love of flying and teaching when he joined American Airlines in 1976. Progressing from flight engineer to captain while there, Jirschele always loved teaching and the technical side of flying. Jirschele rose up the ranks to become the Director and head Chief Pilot at O’Hare, a job resembling the puzzles his father used to love. “The airlines operate large, complicated travel networks to fly passengers,” he says. “Safety is first, always first, but then you work hard to give passengers a smooth ride, great service, and do it all efficiently.” There were a lot of pieces of the puzzle at O’Hare. He was the link to as many as 2,200 pilots for airline operations, making sure pilots were ready to fly, and resolving any operations problems. He helped resolve problems crews identified, and safety remained paramount. It’s this piece of the puzzle that he’s most proud of. “My friends and acquaintances often ask if flying is really safe. I always give them the same answer—the riskiest part of your next trip will be the drive to O’Hare.” Now retired, Jirschele witnessed another massive systemic shift

with the pandemic. But he weathered the change the same way he endured them in the past—using the skills he’s learned to help people. He’s heavily invested in the Habitat for Humanity ReStore and helping fellow retirees. “We have a group of retirees called Silver Stripes that have recently discovered Zoom meetings,” he says. They meet monthly to discuss issues, current events in aviation, and to socialize. “We were concerned about our members’ loneliness and lack of socializing, so we tried Zoom, and it’s been great,” Jirschele says. “Besides socializing, we invite guests to discuss aviation, finance, COVID issues, and more. A retired airline CEO even joined one of our Zoom meetings!” He relays a story about how to weather stressful times. It is a wing stress-testing story. When you’re flying and you’ve hit some unforeseen turbulence and the wingtips are bouncing up and down and it’s scary—just remember the plane can withstand much, much more. “When they certify wings on a plane,” Jirschele says, “They have to stress test the wing for 50 percent more G forces than ever expected in flight.” “At times, there was a lot of ‘stress on the wings’ during my career, and I expect the same during the pandemic,” Jirschele says. But if you maintain a positive outlook, there are opportunities, too. It’s comforting to know that even when your wings flex from stress, they will continue to fly just fine.

Perfect for a picnic, Lemony Salmon Dip

LEMON Y SMOKED SALMON DILL DIP

I

’ve always loved smoked salmon, so tucking it into a creamy dip with fresh herbs and lemon is always a go-to when I need to make a quick, delicious appetizer. I like to keep some of the texture of the salmon intact, so I shred the fish into small pieces with two forks, rather than pulverizing it with a processor. The dip includes a dollop of crème fraiche blended with Greek-style yogurt, plenty of fresh snipped dill and chives from the garden, and the brightness of fresh lemon juice and zest. • 8 ounces good-quality smoked salmon • ¼ cup crème fraiche • ½ cup Greek-style yogurt (I like to use Fage Total 5% Milkfat in this dip) • Very finely grated zest from one lemon • Freshly squeezed juice from ½ lemon • 2 Tbsp fresh snipped dill • Pinch of salt and finely ground black pepper to taste • ¼ cup finely snipped chives, divided (some in the dip; some to sprinkle on top) In a medium-sized bowl, using two forks, pull the smoked salmon into small bits, pushing any chunks that clump on the tines of the forks as you work back into the bowl. Stir in crème fraiche and yogurt. Stir in lemon zest, and squeeze in juice from ½ lemon. Stir in dill and most of the snipped chives. (Reserve 1 Tbsp of the chives to sprinkle on top of the dip as garnish.) Adjust seasoning with a bit of salt and pepper. Serve immediately with your choice of crisp crackers and vegetable crudites. O

n a direct flight, in just three hours, we arrived in The Bahamas—famous for its pristine beaches hugging the Atlantic Ocean’s turquoise waters. After a short scenic drive, we arrived at the Baha Mar enclave, consisting of three interconnected resorts, a casino, and an abundance of dining and entertainment options. The resort handled COVID testing efficiently and effectively. Upon arrival, we were escorted to an onsite clinic where we completed forms and received a complimentary COVID-19 Rapid Antigen test before being whisked off to our room and asked to wait until we received our results. After approximately twenty minutes, we received “the green light,” and were off to explore Baha Mar. We began on the east side, where we found the world-class Rosewood—a hotel awash in a serene coastal palate with a British colonial island aesthetic. The words that best describe this resort are tranquil, serene, and luxurious. We adored the Manor Bar on the first floor and the beautifully appointed conservatory. On the enclave’s western end is the hip SLS resort with a spirit that encompasses a playfully mischievous vibe with a hint of sexy. The resort was envisioned as a tropical sanctuary for those who enjoy global culture and style, infusing a spirit of sensuality and glamour. Think upscale Miami Beach. Topping SLS Baha Mar is Skybar, the island’s only rooftop bar and a venue with breathtaking views. From the line to get in, I would say it is also the island’s most popular weekend destination. With a sip of my elderflower martini surrounded by a crowd of the young and the beautiful, I was taken back to my youth, and in an instant, I understood Skybar’s allure. Also located in the middle of Baha Mar is the Caribbean’s largest casino, extensive high-end shopping (think Cartier, Rolex, and Tiffany & Co.), an endless number of restaurants and lounges, a massive fire fountain, and lots of fun. Depending upon your mood or the basis of the trip (romantic getaway, girls weekend, family sojourn, or golf trip) Baha Mar has something to satisfy every taste, sensibility, and/or purpose. One cannot conjure up an image of The Bahamas without visuals of crystal blue water. Baha Mar offers an epic variety of pools to choose from, each with a distinct energy—tranquil (the pools located near Rosewood), filled with family fun (near the Grand Hyatt), and hip (at SLS). We visited four locations and, of course, Cable beach. Our first day, after awakening from a deep slumber induced by the extensive tour of the Baha Mar property and a late night at Skybar, we headed to the gorgeous Bungalow pool at SLS and a private black and white striped cabana outfitted with couches and a television. It proved the perfect place for acclimation. One spot that spoke to our inner child was the replica of the world’s second deepest known saltwater sinkhole, Dean’s Blue Hole. Here we leaped from a “cliff ” about 20 times, snapping photos

of our heroic feats. On another day, after a little siesta poolside at Fortune (the buzzing central pool deck surrounded by palms punctuating the circular movement of the pool’s edge), we spent the afternoon at Cable beach using a myriad of complimentary water sports equipment, including paddleboards and kayaks. Beyond water activities, the resort is known as a culinary destination with the widest array of world-class restaurants, bars, and lounges in The Bahamas, designed to satisfy every craving, occasion, and mood. Our first night, we dined at the French-inspired Café Boulud. The newest restaurant to Baha Mar offers the glamour of traditional French cuisine in a sophisticated Bahamian setting. Led by globally renowned chef Daniel Boulud, the menu is inspired by his four culinary muses—La Tradition, La Saison, Le Mer, and Le Voyage and highlights the seasonality of local ingredients. My husband began with an appetizer from Le Voyage (World Discovery), a divine yellowfin tuna carpaccio with harissa, crispy chickpeas, chayote, mint, and lemon confit. I started with the Vichyssoise from La Tradition (Classics & Country Cooking). The chef ’s twist on this classic was a chilled avocado soup with shrimp, dill, caviar, and crème Cafe Boulud’s Caramel fraiche. I will never be able to Molten Chocolate enjoy the potato/leek version, as the chef ’s take on the dish has forever spoiled me. We moved to La Saison (Spring flavors) for our entree of tender Maine Lobster with green asparagus and rice pilaf kissed with “sauce Americaine.” We accompanied the meal with a delicious 2018 Arnaud Lambert Clos de la Rue and topped our exquisite experience with a decadent Chocolate Coulant with a salted caramel interior and a luscious vanilla ice cream. C’est magnifique. Our favorite lunch spot was Costa, the darling little restaurant of linked open-air cabanas, which rests over a Koi pond. Coastal cuisine infused with Mexican flavors offered an unexpected approach to traditional seafood. Musts are the guacamole served with house made chips and any one (or all) of the Ceviches. We sat here for hours enjoying the atmosphere and the movement of the gentle Koi

ically similar to the Rosewood. Boasting nine state-of-the-art tennis courts, six are professional hard courts, two Har-Tru clay, and one, the only grass court in the Caribbean. Jim Tressler, the club’s director, gave us a private lesson on one of the Har-Tru courts. We had such fun learning new skills on a beautiful day. The roasted thick piece of Chilean Seabass is served with hints Baha Mar’s arts program and studio space designed to support local artists and promote Bahamian arts. He also oversees art installations of ginger, soy, and coriander—pure perfection! We savored every bite in the Dragon Room surrounded by a painted serpent writhing all over Baha Mar. You will find art everywhere you look, in your room, the spa, reception, hallways, and restaurants. It is a visual feast up the walls and across the ceiling. FOOD INSECURITY

F

ood insecurity is a huge challenge all over the world. Yet it’s hard to believe that so many people are still going hungry in a country with as many resources as ours. That’s why it’s heartening to hear about people like Barrington resident Joe Intrakamhang, who is using his professional skills to help eliminate hunger in America. Intrakamhang has spent the past several years rethinking and reorganizing the way America addresses food insecurity. When he was growing up in Chicago, his family was one of the first to open a Thai restaurant there. “Growing up in the restaurant industry really caused me to have a passion for food.” That’s why when this project came up at Google, he readily volunteered for it and then became a full-time employee on the project. “I was completely familiar with food insecurity. A lot of people think, ‘I have extra food and I should be able to donate it and this should be pretty easy.’ But it’s a very difficult and complex system. It’s not a simple fix.” Intrakamhang was an employee of Google X, the semi-secret research and development sister company of Google. Intrakamhang and his team at X used innovative data techniques to work toward solving food waste and food insecurity. “We partnered closely with Feeding America, the largest non-profit food hunger-relief organization in the United States that just happens to be based in Chicago. And then we also partnered with Kroger which has a zero hunger zero waste initiative,” Intrakamhang says. Some background information that may be helpful: Kroger is a longtime historic partner of Feeding America—the two organizations have worked together for four decades. As part of a nationwide retail donation program, Kroger stores (locally that’s Mariano’s) regularly set aside food to be donated and Feeding America member food banks coordinate pickups and distribute the food in their communities through pantries. Much of the food system in the U.S. still operates on paper printouts and spreadsheets. While these ways of capturing, analyzing, and communicating data have increased the pace and scale of business over time, they do bring limits. As disparate organizations look to work together and share vast amounts of data in real time, emailing spreadsheets back and forth no longer suffices. As part of their company-wide Zero Hunger, Zero Waste initiative, Kroger sought to make more of their vast donation and waste database. Leading the industry, in 2017 Kroger publicly committed to donating three billion meals by 2025 and were keen to find as many donation opportunities as possible across their network of 2,700-plus stores nationwide. To do so, they wanted to find deeper patterns in their own store data and also in the food charity data of their food banking partners pertaining to Kroger’s donation patterns. By partnering closely with both Feeding America and Kroger, X was able to take advantage of what Google exceeds at, big data, in order to optimize the products Kroger had to give and find the best places to donate that food. “My role was to gather all this information by working closely with Feeding America, gather all their data in a single spot and try to make some insights,” says Intrakamhang. “My work entailed looking at the data so I can understand where food hunger is and then working closely with Feeding America and understanding who most needs the food and what is the best way to get it there.”

One of the goals of the data was to help Kroger identify excess food that can be donated to food pantries and how to do that in a timely and efficient manner. For example, let’s say there’s a store that has an excess of produce. The technology that Intrakamhang and his team developed will help identify what nearby pantry has a need for it and how they can most efficiently get it there. Combining his professional data skills and his passion for ending the food insecurity crisis, Intrakamhang is really helping stamp out hunger in America.
