Estate Manager’s Desk And just like that winter is here, the time for comfort, for good food, hot chocolate and talks beside the fire. I would like to take this opportunity to welcome our newest residents, the Mothibe family to the Estate. They moved in at the beginning of May. We hope you will enjoy your new home. Our Estate is currently growing and we have: 21 houses completed • 16 stands left for sale • 28 Construction sites currently building. I would like to encourage all the residents who are currently building to please advise your contractors to abide by the Estate rules. Also please advise cement mixing trucks to make sure they don’t spill cement on our Estate roads. LRM concrete mix is one of the companies in specific that often spills concrete on the road. If you are using their services please advise them that there will be a fine if they spill and eventual ban
from entering the Estate if this problem persists. We are currently busy with a tender for a new landscape company which will make sure that our landscape is on par with the likes of Waterfall Estates and surrounding Estates. We are also currently in the process of obtaining quotes to fix our two play grounds. The pond in front of the sales office is leaking and it was wasting lots of water hence we decided to stop filling up. Quotes have been outsourced and the pond will be fixed soon. I would also like to remind our residents to be careful when leaving the Estate as some of the parents dropping their kids off at the school are not slacking down as they approach the school. Also be careful as you join the R55 coming from the Estate as it is dangerous with taxis speeding and not following the rules of the road. Wishing you all a warm & blessed Winter season! BUILDING RULES
• A toilet must be in place before any work commences. • Water meter must be in place and switched on before any work can commence. • A rough sketch of the layout of the house must be available before work commences. • Green fence 1.8m high with 80% density must be erected around the fence line using steel poles only. The poles must not be higher than the fence line. • The fence must be of Agricultural make only. • The fence line must have five (5) rows of mesh wire holding the fence in place. • The fence must have a locked gate in place to seal off the yard after hours. • The contractor’s sign must be viewable at all times and must also indicate the site number. • Generator onsite when needed. • Shed in place within the fence line at all times. • Bin / Chicken mesh within the yard to store all rubble. • OHS file to be on site always. • Workers to wear clothing with company name / logo for identification purposes. • Workers are not to loiter to other sites. • First Aider to be on site at all times. • Cement box for mixing. • Copy of deposit slip for pavement deposit required. • A copy of the builders NHBRC. It was a difficult choice between the variety of starters but I eventually settled on the Fried Crumbed Camembert wheel, ripe and piquant on the inside, served with homemade Cranberry jelly. If you are a cheese lover, this is definitely something to try – an absolutely delicious combination of creaminess and sweet and sour delight. The rest of our party had the Prawn and Fresh Avocado Cocktail, Cured Springbok Loin Carpaccio and the Hollandse Bitterballen. All three dishes were not only delicious but easy on the eyes too, with fantastic attention to detail. The Hollandse Bitterballen was particularly interesting to me. Double-cream Béchamel studded with beef jus and beef bits, which were then crumbed and deep fried. A sure must-have!

Grilling the night away. For the main we all had one of the house specialities. Fillet Bearnaise, Hollandse Biefstuk, Chateaubriand and fillet on the bone with a complimentary scrumptious side dish. Fillet Bearnaise, their most classic and popular offering prepared according to the true French culinary technique. Hollandse Biefstuk, a beef fillet studded with coarse black pepper and flambéed in brandy and butter. And Chateaubriand, a succulent cut of fillet topped with brandy and flambéed, served with Béarnaise sauce on the side. All our mains were super tasty and grilled to perfection, whether medium rare or, medium to well done, we got it exactly the way we wanted it and this is something seldomly experienced at

other restaurants. It is refreshing and comforting to know that the culinary policy of The Hussar Grill is to grill meat cuts on the bone, as it is from its bone and marrow that a lot of the flavour and the juiciness is derived. Whatever your favourite cut of meat, from lamb loin chops and shanks to beef fillet and sirloin, you will find everything and more here. Exquisite sauces and compound butters and sides, even crispy onion rings all round off the perfect meal.
Hats off to the chef. At this stage I was very happy I didn’t eat much during the day, as their portions are everything but small. We asked Lucky to compliment the Chef on the food he prepared for us, as we were all ecstatic about every one of the meals we had so far. Lucky explained that every Chef who prepares grilled dishes at The Hussar Grill first has to undergo extreme training in order to master the “grilled to perfection” art.
Sweets for my sweet. There is always room for something sweet and when their signature dessert - Chocolate Vodka Martinis arrived, I found myself in a haze of yum which I never wanted to leave. It sounds so simple, chocolate vodka and cream – but it is pure heaven! No wonder this dessert has become The Hussar Grill post-dinner tradition. I wouldn’t have wanted it any other way. It is an outstanding venue. From the hostess that greeted us at the door until our departure, everything and everyone was so professional, friendly and hospitable. This is definitely the best restaurant I have been to this year and it will definitely not be my last visit. The Hussar Grill The Grove offers families an elegant, yet cosy evening out. CARING FOR YOUR LAWN IN WINTER By now, after all the rain we’ve had in Gauteng during summer, most lawns resemble a lush green carpet. Sadly, for most gardens, it is a picture that will deteriorate over the next three months. But did you know that with the right lawn care you can have a beautiful lawn all year round? Also, some maintenance during winter is essential for the perfect spring lawn.
• Aerate your lawn by perforating multiple small holes. A garden fork will work well for this. Aerating your lawn is great to let air, water and nutrients in to further encourage root development. Spread cool season/ wintergreen grass seeds A lush green lawn isn’t necessarily out of the question. Some expert advise to mow your existing grass on the lowest setting and to sow cool season wintergreen grass seeds. Soon a fresh layer of green will make its appearance. Scarify late winter Removing dead lawn is the quickest way to let roots breathe and receive light in order to ensure a spring-ready lawn. Mow your lawn using its lowest setting, cover with lawn dressing and water twice a week until new grass becomes visible through the dressing.
Here’s what to do: Winter maintenance Because our lawns seem dormant during winter, it is natural to think it requires little to no maintenance during this season too. However, please remember to: • Regularly rake and remove any debri such as dead leaves as this limits sunlight from getting through and encourages moisture build-up. Dead leaves are great for the compost heap however, so don’t let them go to waste. • Zone in on weeds as they tend to take over in winter. • Treat your lawn with a fertiliser high in phosphate (2:3:2) to encourage root development during the months ahead.

Brauhaus am Dam: A German Gem at Olifantsnek Dam
In the beautiful setting of Olifantsnek Dam and the Magaliesberg Mountains you will find the North-West’s best kept secret – Brauhaus am Dam, an authentic German brewery, eatery and events venue. The brewery boasts a female master brewer behind its award-winning beers. Now that the secret is out, we decided to find out more about her (Imke Pape) and why this wonderful place is the ideal outing any weekend of the year. 2019 • I SSUE 3 1 8
WHAT’S NEW
Brauhaus am Damm was started by a group of friends. It sounds like the perfect collaboration. How did this come about and what are each of your roles in the business? A friend of ours heard about the closure of Famers Bräuhaus in Hattingspruit KZN and convinced us together with another friend and investors to buy it and build a new venue to house this magnificent brewery. We divide the roles of Brewery, Director and Maintenance Manager between us.
Where did the German influence and inspiration come from? We are all Germans in the “conglomerate” and therefore the German aspect came naturally. Your beers have won multiple awards. Congratulations! What sets your brewery-method apart from the rest? Our Brewery is a state of the art piece of equipment. I have excellent cooling facilities for my fermentation
and lagering tanks and therefore I am able to produce very good lager beer. Furthermore, I studied extensively to understand the processes in both the actual brewing and fermentation of the different beer styles. My month spent in Craft Breweries in Germany and Austria, doing practical work also helped to prepare me for brewing award winning beer! Why did you choose Olifantsnek as the location for your establishment? What makes this area so magical?

Brauhaus am Damm was built on a piece of our Farm “Steinfurt”. In trying to find a perfect location for our Brewery we looked all over the Rustenburg area and finally decided to build a new “home” on our own Farm at the Olifantsnek Dam. The location is extremely tranquil and overlooks the Dam and the magnificent Magalies mountain range.
The Magaliesberg biosphere has been declared as an UNESCO World Heritage Site.

Brauhaus am Damm is not just a brewery with beer tours and beer tastings and a delectable restaurant, it is also a popular events venue. What types of events do you host here? We cater for any event, any number of guests and any budget! The main dining area and outside deck can seat up to 200 guests and
is ideal for weddings and large functions. Our conference room can accommodate around 30 delegates and has a private dining area adjacent to it, should you require more privacy for the conference. Apart from the Eisbein we also serve other German specialties such as Schnitzel, Sauerbraten, a variety of German sausages and homemade Pretzels, to name but a few of our delectable dishes.

Every now and again I brew a once off specialty the next one might just be a “Bock”

TIPS FOR WINTER DETOXIFICATION
FOR WINTER WELLNESS By Wellness Warehouse It may seem strange to do a detox in winter, but there’s nothing like a bowl of delicious nutrient-dense soup and a sauna to balance out the winter chills. Although the body is designed to eliminate toxins, it can battle to do so effectively in the face of environmental pollutants and additive-laden foods. In fact, one of your body’s defence mechanisms against toxins is to store them in your fat cells. This means that toxins can remain in your system for some time, becoming a regular source of dis-ease. Flushing out toxins can help you gain energy and set your body up for healthier functioning. The basic principles of detoxing are about allowing your organs to rest – through fasting; stimulating your liver to drive toxins from your body; promoting elimination of toxins through your gut, kidneys and skin; improving circulation; and refuelling with healthy nutrients. You may want to prepare your body for detox by fasting. You can do this slowly - by not eating any solid food for a day or two, and drinking lots of water. Do remember, though - if you only drink water, you could flush your body of important nutrients, so it’s best to also drink a nutrient-rich soup. Once you’ve given your digestive system an opportunity to rest, you can begin the process of detoxing.
UP YOUR FIBRE This is so important for ensuring your digestive system works effectively. Include brown rice and organically grown fresh fruit and vegetables. Beetroot, radish, cabbage, broccoli, seaweed, artichoke, spirulina and chlorella are all great detoxifiers. HEAL WITH HERBS Your liver works extremely hard - it holds about 13% of your body’s blood at any one time, and is fundamental for eliminating toxins in your body. Drink green tea and take herbal supplements like Wellness Milk Thistle and dandelion root to support your liver. ADD VITAMIN C Vitamin C assists the body in producing glutathione, which is a liver compound that helps drive away toxins. Try Wellness Sustained Release Vitamin C for a powerful antioxidant in a buffered formula. HYDRATE Drink about two litres of water during the day to ensure you stay hydrated. SWEAT Help your body eliminate toxins through your skin. If you have access to a sauna, this is a great way to get it all out. If not, create a sauna in your bathroom by running a shower on its hottest, with all the windows and doors closed. Remember to hydrate when you are in a sauna. SCRUB Dry brush your skin with a relatively rough brush to help remove toxins through your pores. EXERCISE There’s nothing quite like exercise to boost your body. Yoga is a fantastic way to do this, as is qigong. Both include exercises specifically aimed at detoxifying. The JungleNastix product range This product was created 15 years ago, when a need was identified for quality, durable and practical playgrounds to enhance the motor skills and body strength of children of a new generation of IT and TV-driven entertainment. The following highlights of our product explain what makes this a unique and very successful concept: • During the development, the essential input was gained from professional individuals (physio- & occupational therapists), as well as from kids themselves, to produce a product range that was interesting, safe, comfortable and fun. • Our products are made from the most durable and environmentally-friendly materials available that also makes this product affordable and long-lasting: I. The interior of our caps are painted with a high density waterproofing as well. Slides are moulded and reinforced during the manufacturing process that we personally supervise. In order for our kids to learn to listen, focus and follow instructions as they grow, they need to develop proprioception and vestibular sense by experiencing many physical challenges during their early childhood development phase. Without it, kids can’t pay attention in school because they are too distracted by their own bodies. Basic activities like putting on clothes, trying new foods and completing homework or chores become insurmountable tasks when kids don’t have a strong vestibular sense or well-developed proprioception. Vestibular sense relays information about where the body is in relation to its surroundings. This is the sense that helps kids grasp the concept of balance – and therefore connects with all other senses. Proprioception is our awareness of where our body parts are and what they are doing without having to look at them. It also functions to help you make sense of gravity. It provides you with the ability to bring popcorn to your mouth without taking your eyes off the movie screen. This is the important part: In conclusion, for our kids to listen, focus and learn to sit still for a period of time, they MUST develop both proprioception and vestibular sense.
The most critical time to develop your child’s proprioception and vestibular senses is before the age of six. Nowadays with allowing too much time spent in front of screens, while telling kids to “sit still”, “don’t climb” and “stop jumping”, the result is that it is impossible for our kids to listen.
