ORGANIC DIETS REDUCE PESTICIDE EXPOSURE
The organic food movement is thriving. The latest Australian Organic Report has revealed the nation’s organic industry is worth $1.72 billion, up by 35% since 2012 and growing by over 15% each year. Despite more Australian’s becoming increasingly aware of organic products (as seen on shelf) and becoming more knowledgeable there is still a debate on whether organic food really is better for our health. Dr Liza Oates (PhD) from RMIT University led a research study to determine whether an organic diet reduces organophosphate (OP) pesticide exposure in adults. The study involved 13 Australian adults consuming a predominately (>80%) organic diet or conventional diet for 7 days. The 13 adults were randomly assigned to a diet for the first 7 days and then put on the alternate diet for a further 7 days. On day 8 of each diet, participants were required to provide a first-morning urine sample, complete a food intake survey and an additional survey to record factors that may affect pesticide
exposure, such as non-dietary pesticides and food preparation behaviours. The study concluded a significant reduction in urinary OP pesticide exposure in participants who consumed an organic diet. Dr Oates believes the significant reduction in pesticides suggests food is a contributing factor, however, pesticide exposure may also come from other variables, such as inhalation and skin absorption. These results are consistent with a study conducted in 2003, where the DAPs in children aged 2-5 years were examined. Children who consumed organic fruit, vegetables and juice had significantly lower levels of urinary DAP metabolites than those consuming conventional food. Larger studies across geographical locations is required to confirm clinical relevance. It is evident, however, that this study is a turning point to continue the research and ask the question – how does organic food impact our health?
COULD A HIGH FIBRE DIET COMBAT FOOD ALLERGIES? According to a study published in the Cells Report Journal, a group of scientists from Monash University in Melbourne, discovered that eating a high fibre diet altered the immune system to reduce food allergies. The study was largely led by PhD student Jian Tan and involved feeding a high fibre diet to mice with a food allergy. According to Tan, by feeding mice a high fibre diet it appeared to alter the gut and colon microbiota, which reduced the allergy. “The microbiota in the gut assists the immune system in resisting allergies through the breakdown of fibre into short-chain fatty acids”, states Tan. Scientists examined short-chain fatty acids in further detail and identified that short-chain fatty acids boost dendritic cells, known to control the allergic response. “Effectively, increasing

levels of short-chain fatty acids switch these cells to stop the allergic response, while a lack of fibre may have an opposite effect. These specialised dendritic cells require vitamin A, another factor which can only be obtained through the diet and is high in fruit and vegetables”, states Tan. Vitamin A is the name of a group of fat-soluble retinoids that are responsible for vision, reproduction, cellular development and immune function. Scientists in the participating study believe that a deficiency of vitamin A in infants, alongside a deficiency in short-chain fatty acids may promote food allergies in children. Tan believes human trials are required in order to confirm these results. Nevertheless, the results will potentially lead to further research and analysis in reducing food allergies.

THE BENEFITS OF GREEN BANANA FLOUR Green banana flour is not only gluten free and paleo-friendly, but offers great health benefits due to the green banana’s resistant starch content. Before we explore the health benefits of resistant starch, let’s gain an understanding of what green banana flour actually is? Green banana flour is made by drying and grinding green ‘unripened’ bananas, before the sugar content has fully developed. It is naturally gluten free, low GI, paleo-friendly and is gaining momentum by people who follow these diets. Green banana flour is commonly used as a gluten and grain free flour substitute in cooking, baking or in smoothies. It naturally contains a high source of resistant starch II (RS2), a type of starch that directly impacts digestive health, metabolism and insulin resistance. Resistant starch is a type of starch that is termed ‘resistant’ due to its inability to be completely digested in the small intestine. Resistant starch enters the large intestine and acts as a prebiotic, therefore feeding beneficial intestinal bacteria. When the beneficial intestinal bacteria in our gut digests resistant starch, it forms several compounds, including short-chain fatty acids and butyrate - a primary source of fuel for cells that line the large intestine. It improves digestive health, reduces inflammation and lowers the risk of colorectal cancer. Resistant starch has various benefits on
metabolic health and insulin resistance. The American Journal of Clinical Nutrition studied the effects of resistant starch on insulin sensitivity, in 10 healthy people. Researchers used a 4-week supplementation period of 30g resistant starch per day, compared to a placebo. Researchers concluded the consumption of resistant starch improves insulin sensitivity and has a lowering effect on blood sugar levels. This evidence is important for people who are diagnosed with diabetes or metabolic syndrome. Besides resistant starch, green banana flour contains a high level of potassium – one of the seven essential macrominerals we require in our diets. The World Health Organization (WHO) recommends an intake of 3,510mg of potassium per day and believes most of the world’s population is not meeting this requirement. A diet low in potassium has been linked to high blood pressure and cardiovascular disease, which makes it all the more important to include potassium containing foods into our diets. Green banana flour is a versatile flour that is light and fluffy in texture. The taste offers a hint of banana when raw, however, when used in cooking or baking it has a wholesome earthly flavour. Green banana flour can be used to add a boost of nutrients to your morning smoothie, in baking, to thicken soups or sauces or is a great addition to homemade baby foods.

AS A CHILD, IT WAS A COMPETITION WHO COULD EAT THE MOST ON CHRISTMAS DAY. THE THOUGHT OF IT NOW MAKES ME GRIMACE, AS I KNOW BETTER. The festive season can be exhausting, however, the lead up; parties, late nights and preparation that’s required is a skill in itself. The festive season can be enough to have us feeling overwhelmed and completely ruined come Boxing Day. I made a choice, if food was going to be the center of my life during this time, I was going to make it count. It’s time to take anxiety out of our festive calendar and place more of an emphasis on our health, while still having fun! Overindulgence from a Traditional Chinese Medicine (TCM) perspective damages the spleen and stomach. When we talk about the spleen and stomach in TCM, it isn’t so much the physical ‘spleen’ or ‘stomach’, but more so it relates to the digestive system if we try and translate it into Western thinking. This notion of digestive disruption possibly comes as no surprise given the exploration and investigation of gut health currently being a hot topic. Seems TCM even though it is an ancient form of medicine was ahead of its time. It has always viewed the gut as being the pivot of one’s health and the fundamentals in treatment within it’s ability to be well supported. This is just one example of many that show great correlation between Eastern and Western medicine practices, a few of which we will explore more here. If you’re unfamiliar with TCM it is based on the meridian theory, where each meridian or pathway stems from an organ. This provides an intricate pathway for Qi (energy) and blood to move around the body for nourishment. The fundamentals of TCM lies within the organ systems, just like western medicine, but adds the concept of Qi and blood flow to ensure they are functioning with the best possible balance for optimal health. However, where TCM 8

differs is that signs and symptoms form the basis of diagnosis and appropriate medicines or treatments like acupuncture are administered based on these signs. This can mean that two polar opposite conditions (for example adrenal fatigue and endometriosis) may be treated in the same way, as the root cause at an ‘organic level’ may be the same. We all have a choice to make for everything that we do. It’s very easy to get overwhelmed and swept up in the chaos that is the festive season, especially if we allow ourselves to be propelled by the frantic energy of others. The festive season is a time of engagement; being social and spending time with loved ones is so important, not only for our physical self, but equally our emotional wellbeing too. Research now tells us social interaction is one of the greatest forms of stress relief we can engage in. And so, whilst the festive season may be seemingly full of stress, we should draw on the benefits of spending time with others to help us wind down, connect and be mindful. When I feel like I’m wound up tighter than a rubber band, I ask myself, am I choosing to allow stress to filter into my social life? Quite frequently the answer is yes, because I (just like you, are only human after all) engage in the crazy habits. Stress becomes a default response and unless we are aware of who’s driving the show (be it stress or ease), we can easily and swiftly shift into autopilot. The festive season is one sure time where this can easily happen. From a Traditional Chinese Medicine perspective, stress impacts the liver and stagnates the body’s energy flow. As a result, it leaves us feeling like we are constantly ‘holding our breath’, leading to abdominal pain and indulgent behaviour. If we implement simple tricks in preparation for the festive season, I am confident we can come out the other side better than we left off.

PLAN TO SUCCEED Have go-to snacks and treats on hand where possible and offer to bring a plate to gatherings such as, home-made bliss balls or delicious vegie sticks and dips. This way, you won’t end up eating something that you’ll regret later. Plus, it’s all about leading by example, show others around you just how delicious and nutritious healthy food can be.
DITCH THE FUSS Don’t feel guilty if you don’t attend every party or gathering and certainly try not to get caught up spending hours joining the large crowds of people at the shops. If you don’t manage to see your friends during this time of year, chances are they’ll still look the same in the New Year.
AVOID HANGOVER GUILT Know you might have a few too many drinks? Well, it’s all about hydration! Coconut water is rich in electrolytes and helps keep your body well hydrated and nourished, ward off any head or body aches and will put a zing back in your step. As a result, make sure you keep your liver energy in check. Keep a bottle of coconut water handy in your bag, take a drink before bed and upon rising. Research suggests avoiding alcohol for at least 90 minutes before bedtime, this way your body will still have a restful nights sleep and detoxify overnight.
EAT FOR WELLNESS If it doesn’t serve you, you probably don’t need to eat it. TCM enrolls consumption of warm, cooked foods to place less of a load on digestion and prevent the stagnation of Qi through the digestive system.
If you find yourself bloated as a result of rich foods on offer, keep it simple for a few days and allow your digestive system to get back on track. You could tap into the wonderful world of herbal ingredients if you find your tummy upset by seeping a few slices of fresh ginger into boiling water and allowing to seep for a few minutes before drinking to warm and support your digestion – this helps to move your digestive Qi.
THE ELIXIR OF WELLNESS IS SLEEP Eight hours of sleep per night is recommended as a minimum. Implement this short time movement and try to stick with it; eight hours of sleep, eight hours of work and eight hours of play. TCM theory suggests that we repair and rebuild blood between the hours of 1am – 3am (this is the optimal time of the liver which is said to store the blood), so ensuring good quality sleep especially at this time is essential for maintaining good health.
MAKE IT COUNT! Above all, make the most of your time off. Give yourself a chance to take the pace down a notch, come Christmas day and have your health at the forefront of each and every moment. Without a little drive, a little stress and a little excitement in our lives, we lose our own sense of purpose. The secret lies in the right mix. Perhaps you could ask yourself this festive season, how can you use this as your new superpower? We all know how good exercise is for us, but we are so good at finding excuses not to do it. Exercise should be a habit, just like flossing or checking Facebook. Exercise can be anything you want it to be; the more variety the better. Some days you’re itching to put on your sneakers, other days you would rather defrost a fridge than exercise. I get it. Even on the difficult days, just try. Do something. Consistency is key.
BODY The art of a successful detox is planning. From preparing your mind by setting goals and clearing your work and social calendars as much as possible, to preparing your body by shopping before you start and clearing your pantry and fridge of the things you might crave during the detoxification phase. Enjoy a nourishing, wholefood diet ensuring adequate protein, healthy fats, a small amount of fruit and unlimited salads and vegetables. I also recommend bentonite clay and detoxifying oils. Massage is pampering and therapeutic, improving circulation and lymph flow, relaxing tight muscles and de-stressing your body. beta-carotene, zinc and vitamins A, C and E. Include healthy monounsaturated fats, such as avocado, olive oils and coconutderived products. Silica-rich foods include; leafy green vegetables, cucumber, millet, oats, onions, rice, whole grains, alfalfa, barley and beetroot. Replace posh lotions with cups of green tea and rosehip tea. Sweat a lot to clean skin cells. Jump in the ocean as often as possible. It’s one of the best things you can do to recharge and revitalise your skin. If you can’t get there, a salt bath (Epsom salt, sea salt or Himalayan crystal salt are my favourites) is the next best thing.
SPIRIT Sure it’s great to cleanse your body, however, detoxification is also about slowing down, relaxing and coming back to a sense of self. It’s a time for reflection and contemplation; re-evaluation where you want to be and what ‘stuff’ you need to let go of. Take time to do things that make you happy. This will vary from person to person. Spend time with family and friends, meditate, read a book, sit in the sun or have some quiet time to yourself.
MIND Keeping a journal whilst you’re on a detox is a great way to track your symptoms, as well as your emotional state of being. Jot down any physical symptoms you’re experiencing, as well as how they are affecting you mentally. It is common to feel tired, cranky and emotional during a detox. Acknowledge and accept these emotions and know that they will pass. Identifying and accepting negative emotions can be confronting and somewhat tricky. A helpful way to release old stress is to write a letter directed to the person your emotions are targeted towards (don’t worry you don’t have to send it). This allows us to freely express ourselves without interruptions or fear of confrontation.

Moroccan Fish Skewers with Millet Ingredients: • 700g thick white fish fillets (such as barramundi or snapper) • 8 bamboo skewers, soaked in cold water • olive oil, for drizzling Marinade: • 1 x 400g tin crushed tomato • ½ teaspoon ground cumin • ½ teaspoon turmeric • 2 teaspoons paprika • 1 teaspoon mild curry powder • 2 cloves garlic, finely minced
• 4 cm piece fresh ginger (20g), grated • 2 tablespoons lime juice Salad: • 200g hulled millet • 1 teaspoon saffron threads • 100g baby spinach • 1 red onion, finely chopped • ¼ cup flat-leaf parsley leaves, finely chopped • 40g pine nuts, toasted • 2 tablespoons olive oil • 2 tablespoons lemon juice
Method: Cut fish into large cubes, thread on to skewers and place in a large shallow baking dish. Combine marinade ingredients and pour over fish, coat well. Set skewers aside in the fridge. To make the salad, add millet to a saucepan with saffron and 625 ml water, bring to the boil over high heat, then turn down the heat to low, cover and simmer for 25 minutes until all water is absorbed. Remove from heat, fluff with a fork and allow to cool slightly. Combine millet with remaining salad ingredients in a large salad bowl and set aside. Heat oven grill to high, drizzle skewers with a little olive oil, then grill for 2-3 minutes on each side or until just cooked through. Serve with the salad. Tip: Adding millet to the salad makes for a more filling meal. You can also try the fish skewers with a green salad for a foodcombined version. Use any type of lowmercury white fish.

HEALTHY LUNCHBOXES Preparing healthy school lunches is far from an easy task. It’s very tempting to lather a nut spread on a slice of bread and pack a small juice. Coming up with creative ways to make food interesting and fun each day can be difficult. However, it doesn’t need to be challenging, nor should it take up too much of your time. A nutrient dense, fun and tasty lunchbox requires “some” preparation and a few basic components. Children of school age are constantly developing; this is a vital time for growth and the food that they eat needs to be able to fuel and aid their development. Children who attend primary school are bundles of energy and there is still significant brain development and building of strong skeletal systems and as such, they require supportive nutrients. Children require a variety of foods to support hormonal changes, increase learning capacity, reduce stress and support physical activity.

For children of all ages, protein is essential. This should be the basis of all lunchboxes. Protein is the building blocks for muscle development, energy, recovery, brain function and learning. Food sources are; red meat, poultry, fish, nuts and legumes.
ESSENTIAL FATTY ACIDS (EFA): Required for brain growth and development, skin, eye and heart health. EFA’s reduce allergic conditions and inflammation. Food sources are; salmon, cod, tuna, flaxseed, olive oil, avocado, coconut oil, walnuts and sunflower seeds.
Required for skin health (especially for acne), brain function and eye health.
FIBRE

Let’s be honest, most children are more interested in playtime rather than eating a gourmet lunch; the trick is to keep it simple, flavoursome, filling and packed with nutrients. This requires a main meal and spreading the rest over breaks and possibly an after school snack.
• Fibre and EFAs: a small salad with chopped nuts or seeds, raw vegetables, avocado or even sliced fruit of choice. • Water: a refillable water bottle that is easy to carry. • Snacks: nuts, dried/fresh fruit or a bottled smoothie.
TIPS FOR PREPARING HEALTHY SCHOOL LUNCHES Plan ahead! • A simple list of school days and food ideas next to them will save time in the mornings and parents, you won’t feel overwhelmed mid week when the fridge and pantry start looking bare. • Prepare a grocery list and place it on the fridge. • Make a list of proteins, vegetables and any other essentials you may need, including; nuts, fruits, milk and treats. Make it in advance • Fresh almond milk, baked goods, snack packs, water bottles; anything that needs to be ‘packed’ will save you a lot of time during the week. • Bake a tray of banana muffins and freeze them; every night before bed, grab one and leave to defrost. It will be perfect by mid-morning break. • Make up snack pack containers of mixed nuts, seeds and dried fruit – five for every school day and that’s another break meal done. • Have two or three water bottles on rotation, while one is being used, the other is in the fridge ready for the next day. • Make a batch of fresh almond milk or fruit juice and bottle it. You can find small bottles in homewares stores that are light and fit into lunchboxes.
Lunchtime is usually broken up into food-time then playtime, so lunches need to be easy to eat. A spoon or fork should be the only utensil your child requires; keeping in mind fruit or raw vegetables should be pre-cut into manageable pieces. Get children involved! Think back to when you were little, you ate what was put in front of you right? If it looked bland, chances are you didn’t eat the full amount, or you picked bits and pieces from your plate and left the food you didn’t feel like eating. We all went through it and looking back, it was not the best early food education. It is very important to include children in preparing their lunches and of course other meals too. By exposing children to new foods, tastes and textures, they will develop a broader palate and this will reduce the chance of them becoming ‘picky eaters’. Start them young by doing simple tasks in the kitchen, for example, stirring a bowl, sifting flour or simply adding ingredients into a bowl; this adds to the excitement of creating a dish and children will be more likely to eat something they helped make. As they get older, encourage children to add their own spin on certain dishes; it might be adding a new ingredient to a family favourite, or they might surprise you and create a Masterchef worthy plate of food. Exploring markets and buying fresh produce is a great way to include children in the preparation process; meeting growers, feeling and smelling different ingredients is a fantastic way for children to learn where food comes from and how to cook new vegetables. Primary-aged children are exposed to many different attitudes at school. A healthy relationship with food is important, as it lays the foundation for life. Early education in nutritious foods lays down the groundwork for a lifetime of healthy living – the saying ‘food is medicine’ means more now than it ever did; fresh, organic, “vital” food is the best chance for a healthy sustainable lifestyle.
HERE ARE SIMPLE RECIPES TO ADD NUTRIENT VALUE TO ANY LUNCHBOX. EASY LUNCHBOX IDEAS • Coconut yoghurt with some fresh berries and chopped almonds • Seed crackers with a homemade beetroot dip • Quinoa salad made with leftover roasted vegetables and fresh spinach • Mountain bread wraps with chicken, tomato, avocado, cucumber and tahini • Homemade rice paper rolls with leftover roast beef, tomato, green beans and chutney • Banana muffins, sweet potato brownies, peeled mandarins, kiwi fruit, fresh berries all add fibre and are great treats.
Beetroot Dip Ingredients • 2 beetroot, cut into bite-sized chunks • 2 carrots, halved • 1 clove garlic • ½ teaspoon nutmeg • 4 tablespoons olive oil • Salt and pepper to taste
Berry-berry smoothie Ingredients
Method Steam beetroot and carrot until tender. In the last 5 minutes of steaming, add the clove of garlic; so it’s not completely raw. Place the vegetables into a bowl and let them cool.
• 1 cup frozen organic mixed berries
Once cooled, place the vegetables, garlic, nutmeg and 2 tablespoons of olive oil into a blender. Blend to a smooth consistency; add more oil if required. Add salt and pepper to taste.
Method Place all ingredients into a blender. Whiz until combined, keep chilled. This can be made in advance and bottled to last up to 2 days.

Method
• 250g unsalted butter
Rub salt all over chicken, then wash and pat dry with paper towel. Place chicken and half the tarragon into a tight fitting glass or plastic bowl. Pour red wine over chicken and ensure it is well covered. You can add up to a cup of water to bulk up the brine, so it covers the chicken. Leave chicken in the fridge for 12-18 hours to brine. Once ready, drain well while reserving the brine.

Please note: you can remove the chicken from the brine after 18 hours even if you’re not going to cook right away. Cover and refrigerate for up to another day, but don’t leave in any longer. In a blender, combine butter and rest of the tarragon and blend well. Season with a pinch of nutmeg and black pepper. Take ¼ cup of butter to sauté the diced fennel until soft. Tear up the sourdough, then add walnuts, currants and lemon zest. Use this mixture to stuff the chicken then truss the legs together with string. Take another 2-4 tablespoons of butter and gently rub it over the skin of the chicken. Meanwhile, heat the oven to 180oC for 30 minutes while the chicken comes to room temperature. Roast the chicken for 2-2.5 hours until the skin is golden and cooked through. While its baking, reduce the cooking/ brining liquid to a third. Mix the corn flour, molasses and mustard with a little cold water and stir into gravy. Add the resting juices from the chickens roasting pan once cooked and rested. Carve and enjoy.

Take aside 2 tablespoons of butter to sauté the diced onion until soft. Add the quinoa, wine and stock and bring to a simmer. Stir until the liquid has evaporated and the quinoa is still underdone. Add the zest, nuts and fruit. Use this to stuff your chicken then wrap the bacon around it, starting with the breasts. Squeeze lemon over it when its in the pan. Roast your chook, according to the size, for 1 ½ to 2 hours at 170oC. If bacon starts to brown too much, cover with foil. Carve and serve with kale sautéed in your tarragon butter and your quinoa stuffing.

In a blender, combine the butter and tarragon and blend together, then season with a pinch of nutmeg and pepper. Take 2 tablespoons of tarragon butter to sauté the diced apple until soft. Add mince and brown lightly. Add orange zest, nuts and fruit. Use this mixture to stuff the chicken, then wrap the bacon around it. Place the wrapped chicken in a baking pan and add organic wine. This will keep the chicken moist and form a demi glaze, or the start of a gravy which you can later add stock and thicken. Roast the chicken, according to the size, for 1 ½ to 2 hours at 170oC. If bacon starts to brown too much, cover with foil. Use extra tarragon butter to sauté the veggies you have with the chicken.

Method Blend fennel, apple, onion and carrot into a food processor, then sauté mixture in a large pan with olive oil until soft. Pour wine, orange zest, nuts, apricot, cranberries, oats, drained lentils, tarragon, yeast flakes and 1 teaspoon of each of the sauces. Stir and season with a pinch of nutmeg, pepper, salt and ½ teaspoon of smoked paprika. Grease a loaf tin with extra oil and press in your mixture. Top with extra nuts and fruit, then mix 2 tablespoons of tomato sauce with 1 teaspoon of Worcestershire and 1 tablespoon of sugar and spread this over the top of the loaf. Bake at 180oC for 40-60 minutes. Leave to rest for 10 minutes before carving. Toss the veggies with it with a herb oil and a pinch of smoked paprika.

Add cocoa and whisk gently to combine, then fold in choc bits. Scoop large spoonfuls, equivalent to 2 tablespoons of mixture onto a baking paper lined tray. Place meringues into the oven for 1½ hours or until firm to touch. Turn the oven off and allow to cool inside the oven. Store meringues in an airtight container for up to 2 weeks.

Once cool, remove from the cake pan or tray and decorate with whipped cream, sliced banana, kiwi and passionfruit pulp for a traditional Pavlova or try figs, mint and orange zest for a Summerinspired Pavlova.

THE “JERFING” MOVEMENT SEEMS TO BE THE LATEST TREND, BUT WHAT IS IT?

LIKE MOST OF THE POPULATION, OUR LIVES REVOLVE AROUND SOCIAL MEDIA. While surfing the web or flicking through your Instagram news feed, you may have seen the term “Jerfing”. The “Jerfing” movement seems to be the latest trend, but what is it? To put it simply, Jerfing refers to the movement or mantra to “Just Eat Real Food”. However, doesn’t the phase “Just Eat Real Food” sound familiar? It sure does. From a Naturopathic point of view, Jerfing is a brilliant philosophy and is what I use to preach to my patients. Forget fad diets, this is about eating real, fresh, honest and wholesome food. This is the food that our bodies are designed to naturally breakdown and absorb, so that we fuel our minds and organs properly.
JERFING MAKES PERFECT SENSE Jerfing involves eating food that spoils. Yes, fruit and vegetables have a short shelf life - unlike the burger from that multi-national company or the packet of processed cereal in your cupboard. If you’re incorporating Jerfing into your lifestyle, don’t be surprised if your fridge is full one day and empty the next.

JERFING PROMOTES EATING LOCAL Take a trip to your local farmers market. There is an abundance of farmers’ markets in Australia who carry natural produce that is seasonal, organic and produced locally. However, it’s important to keep in mind that fresh, organic produce spoils within a week of being harvested. Even better, grow your own fruits and veggies. Backyard veggie patches and co-op gardens are booming, as we become more educated and question where our food is coming from.
JERFING TRANSLATES TO EATING “SIMPLE” FOOD Avoid foods that contain unidentifiable numbers labelled on their packaging. These foods often contain high levels of additives, preservatives, salt and sugar to extend their shelf life and reduce microbial growth. A simple rule I live by is, if I can’t pronounce it, I don’t eat it – with the exception of quinoa (“kin-wa”). Next time you reach for that protein bar or a loaf of bread that claims to be healthy, take a second look. If it doesn’t abide by the guidelines of Jerfing, then it probably isn’t “real food”.

I GREW UP IN INDONESIA WHERE TURMERIC IS NOT JUST A TREND, IT IS A RITUAL AND A BIG PART OF OUR LIVES. From a young age, Indonesians would drink “jamu”, a traditional herbal juice every morning to prevent disease, made with combinations of turmeric, ginger and tamarind. Women in Indonesia are taught from a very young age to look after their bodies inside and out, using herbal remedies. Turmeric is commonly used once a week to exfoliate dry skin, heal acne scaring and promote healthy looking skin. Belonging to the ginger family, turmeric is native to Indonesia and Southern India, where it is used in cooking, cosmetics, dye and natural remedies. Turmeric’s active ingredient is curcumin, known for its anti-inflammatory and anti-microbial properties. In the Ayurvedic medicine system, turmeric is used to improve digestion, reduce obesity, skin inflammation and inflammation in the digestive tract. Some studies have indicated that turmeric may assist in preventing Alzheimer’s disease, arthritis, heart disease, IBS, depression (as effective as Prozac) and certain cancers.
TURMERIC CONTAINS AN EXCELLENT SOURCE OF FIBRE, VITAMIN B6 AND SOURCES OF VITAMIN C AND MAGNESIUM. Curcumin is widely available in supplement form, but relatively high doses are required for disease prevention. Curcumin is poorly absorbed into the bloodstream, so it is best combined with black pepper, coconut oil or egg yolks to enhance its absorption. There are no known adverse effects associated with the use of turmeric, however, it is important to consult your natural health practitioner.

Now comfortably vegetarian, it’s not surprising that the rise and rise of plant based diets and veganism in Australia has captured my attention. Euromonitor International reported that Australia is now the third fastest growing vegan market globally behind the UAE and China, so I was keen to understand what was driving this growth. In addition to ethical and environmental reasons, many vegans claim that they simply felt healthier and happier living a vegan life. Naturally, I was determined to know if being vegan lived up to the hype and whether I would indeed feel healthier and happier if I took the next step towards veganism. It is said that it takes 21 days to break a habit, so by day 22, in my view, a vegan diet would become second nature. So I decided to give it a try and recorded my challenges and achievements along the way.

THE VEGAN CHALLENGE WEEK 1 – PREPARATION AND PLANNING My vegan challenge began with closely checking the ingredients of what I already had in my pantry followed by promptly hiding all items containing any dairy, egg or meat. I was surprised to see how many sauces contained ‘milk powder’ or a variation of fish sauce. After researching recipes on Instagram and Pinterest, I made a list of meal options that were quick and easy to prepare that would also taste delicious. During the week, breakfast consisted of chia puddings, porridge or smoothies depending on what fresh fruits I had available. I prepared meals on the weekend for my weekly lunches to ensure I ate something healthy. Lunch consisted of soup, stir fries with soba noodles or pasta. Dinners would be similar to lunch, unless I was going to someone’s home for dinner or out to a restaurant. On days where I failed to prepare something, avocado on toast with salt, pepper and chilli flakes was a lifesaver.
WEEK 2 – STRUGGLES BEGUN By week 2 I felt healthier, I wasn’t bloated after meals and my sleep improved, however, I was presented with one of my biggest challenges, attending a family birthday party. After confirming the main meal wasn’t vegan, my sister kindly prepared two vegan options to take with us (chilli sin carne and pasta salad). I was able to eat homemade capsicum dip with bread as appetisers and my side dish of roasted vegetables, however I had to forgo the main meal that was served. Dessert was a killer; cheesecake, raspberry and pear slice and caramel slice, all of which contained some form of dairy and eggs. I almost talked myself into a ‘cheat day’, but instead had a black coffee and enjoyed the feeling of not being bloated after the party.
WEEK 3 – RESULTS WERE EVIDENT By week 3 I felt fantastic. I wasn’t bloated, my skin glowed and I spent less money eating out. I was in the habit of checking labels before eating and thoroughly researched restaurants before going out to dinner to ensure they had something vegan-friendly that wasn’t just a salad and chips. But there were challenges… The hardest part of being vegan was eating out. The little questions such as “did you cook this in butter or oil?” or “what are you planning to cook for dinner?” made me feel like I was a burden instead of a guest. Eating at restaurants was easier than I thought, as vegan options were often highlighted on menus. If I had any concerns I would just inform the waiter that I was allergic to dairy or eggs and generally waiters would help me navigate my way through the menu.
POST-CHALLENGE Keeping in mind the ethical and sustainability arguments behind a vegan lifestyle motivated me to maintain an elevated sense of purpose and resolve. It also helped me to resist that 3pm chocolate craving, and gave me a higher resistance to giving in to overindulging in cheese and crackers. Eating a vegan diet forced me to become more organised with my meals and I saved money and time. I did a big shop on the weekend at my local farmers market then steamed or roasted the bulk of vegetables all at once. I did miss eating some of my favourite foods, but the food I missed the most was cheese. Not surprising then, my first non-vegan meal was an overindulgent, cheesy burrito with lavishes of sour cream! Less surprising, was the way I felt the next day, sluggish and bloated. So there is definitely some truth in the concept of feeling healthier on a plant based diet and it was interesting for me to make the connection between what I ate and how I felt.
THE VERDICT Living a plant based vegan diet for 22 days proved to be a positive experience, however, at this stage it’s not a change I am prepared to commit to 100%. Whilst I respect the movement and was able to experience firsthand how much better a plant based diet can make you feel, I simply love indulging in cheese and eating eggs for brunch on the weekend. I will however remain vegetarian. I can’t justify eating meat when there are so many other healthier, animal free options available. If you’re considering making the transition to being vegetarian or vegan, I recommend cutting foods out in stages or having ‘meat free days’ to ease yourself into it. It’s very intimidating if you’re used to eating meat with every meal to suddenly cut it out. Research recipes that are alternatives to your favourite meals so you won’t feel like you’re missing out. By example, I love Mexican cuisine, and clearly one of my favourite vegetarian meals is burritos. I simply replaced minced meat with black beans and salsa as a delicious alternative. If you need a final push to become vegetarian or vegan, watch ‘Cowspiracy’. It’s a highly graphic and confronting documentary, however, it forces you to make the connection between what you put on your plate and the effects they have on the environment, your health and animal welfare.

If swallowed, only natural ingredients are ingested.
Sodium benzoate and potassium sorbate are preservatives and anti-microbial agents, used in Lifestream’s skin care and aloe vera range. Aloe vera leaves will start to spoil as soon as they are cut from the plant, just like an apple turns brown once cut open.
WHAT IS THE DIFFERENCE BETWEEN A BODY SCRUB AND A BODY POLISH?
Both preservatives are needed to stabilise and preserve the fresh aloe vera juice. Without them, the products may not be microbiologically safe and the drinking quality, clarity and end of shelf life is not guaranteed. Citric acid is also used in the aloe vera juice, aimed to balance pH levels. Lifestream only uses the bare minimum necessary to assure safety and quality. If Lifestream could bottle aloe vera juice without the use of preservatives they would, however, this would require harsher processing and diminish its active components.
WHAT IS LIFESTREAM SELENIUM YEAST? Selenium yeast is yeast that has selenium added to it. During the fermentation of the yeast, it readily uptakes the selenium and creates a “high selenium yeast”. Lifestream Selenium is organically-bound within the yeast Saccharomyces cerevisiae, in an inactive spray dried form.

FAQ ORGANIC BASICS WHAT IS ORGANIC? ‘Organic’ refers to the method in which produce is grown and processed. Organic crops must be grown without genetic modification and remain separate from conventional crops to avoid contamination. Farmers are not allowed to use synthetic pesticides, herbicides and petroleum-based fertilisers. Organic livestock must have access to the outdoors, be fed organic feed and not be exposed to antibiotics or growth hormones. WHAT ARE THE BENEFITS OF CHOOSING ORGANIC PRODUCE? Organic produce is nutritious, grown without hidden nasties and has a positive impact on our health and environment. The benefits of organic food includes; • Fresher produce: organic produce is fresher than conventional as they often don’t contain any preservatives. Without preservatives, organic produce needs to be consumed faster. It is often grown on smaller farms close to where it is sold. • Better for the environment: organic farming practices reduce pollution, conserve water and use natural fertilisers, such as manure and compost. Weeds are controlled naturally using crop rotation, hand weeding and mulching. The soil is rich in nutrients, therefore increasing soil fertility and nutrient-dense produce. • No genetically modified ingredients (GMO): The U.S. Food and Drug Administration (FDA) believes GMO foods are safe, however, some studies indicate that the use of pesticides even at low levels may increase the risk of certain cancers, a build-up of pesticide exposure and a compromised immune system. • No antibiotics or growth hormones: organically-raised animals are not fed animal by-products, antibiotics or growth hormones.
WHAT DOES IT MEAN IF A PRODUCT STATES…“ALL PRODUCTS ARE CERTIFIED TO THE NSF/ANSI 305 STANDARD”? The NSF/ANSI 305 Standard is the American National Standard for Personal Care Products Containing Organic Ingredients. This standard indicates materials, processes, production criteria and conditions, requires a personal care product to be labelled “made with organic”. Under this standard, all products must contain a minimum of 70% organic ingredients. All other ingredients must not be available in organic form and must be evaluated and approved by an independent scientific panel. This evaluation aims to minimise environmental impact during production and ensures safety for the product user.

CURATING YOUR STORES RANGE IS AN ENDLESS LABOUR OF LOVE THAT CAN BE TIME CONSUMING BUT REWARDING. The benefit lies in repeat business and loyalty as your customers come to trust your choices. Our industry is growing rapidly and changing quickly with increased competition at both the wholesaler and retailer level. Keeping ahead of industry trends is no longer an option but an imperative as we work hard to keep up with an increasingly educated consumer. The challenge lies in simply getting through the plethora of information out there and taking the key points back to the shop floor.
SO WHAT ARE SOME OF THOSE KEY POINTS AND WHAT IS TRENDING IN 2016? Research by Mintel looked at the Global Food and Drink trends for 2016 and not surprisingly named ‘back to basics’ as a common theme among this year’s picks. A movement to “just eat real food” or JERFing is gaining momentum as consumers shift away from artificial and processed foods towards age old, staple ingredients that are better for you than the modified versions available ‘en masse’ today. Fat has improved its reputation after years of being ousted as the root cause of obesity and health issues, to a more balanced view where consumers are educating themselves on the difference between good and bad fats. “From the inside out”, is another growing trend Mintel identifies which supports this shift in thinking, as more of us recognise that diet is at the heart of how we look and feel. Technomic’s research findings on 2016 food trends recognizes the established Non GMO movement as increasing in intensity as consumers protest in numbers for GMO free food. They cite the rise and rise of GMO free menus in restaurants or the “Healthification” of menus (according to Food Technology Magazine), and clean product labelling, as agendas that are not waning. The paradox here is the

argument by large food manufacturers that a reversal of modified crop production will decrease food supply, and challenge our ability to feed the growing global population. It is clear that more innovation is needed here to find a third alternative. The ‘Hartman Group’s 10 Trends in Health and Wellness’ list was more specific to the health and wellness channel and cited these health consumers as “increasingly influential in redefining food culture”. They cited Generation Z as the generation to watch for revolutionary change, however Food Technology Magazine credited the Baby Boomers, Gen Xers, and Millennials as influencing nutritional trends and product labelling today. The US Organic Trade Association found that 52% of the parents surveyed within the 18-34 year age bracket bought organic, whilst Generation X parents made up 35% of parents purchasing organics. This is an encouraging trend as younger consumers switch on to the source and sustainability of their food and the health impacts of their diet decisions. The clean label agenda shows no sign of lessening nor is the call for minimally processed, organic, GMO free and naturally derived foods, which continue to deliver positive growth in volume and value. Lastly, in terms of trends in nutrition, research completed by magazine, Today’s Dietician, provided few surprises as sprouted grain, less sugar, full fat dairy, sprouting, probiotics, protein and pulses continue to dominate. Interestingly, beets and souping are both seen as emerging trends with the later favoured over juicing as it retains the fibre that juicing generally discards. A well curated range can be a competitive advantage in our hyper competitive organics, natural and health space and given the increase in younger consumers subscribing to authentic, organic, and natural health foods, the investment is very likely to deliver a positive return - in more ways than one!

Method Preheat oven to 170oC.

LOTUS ORGANIC BESAN FLOUR 500G
Melt coconut oil and sugar and allow to cool slightly. Transfer mixture to a standing mixer and add egg, egg yolk and vanilla, then mix ingredients for 2 minutes until smooth. Add dry ingredients on a low speed then fold in choc bits. Roll 1 tablespoon of mixture into balls and place it on a lined baking tray at 3cm apart. Press balls down slightly to flatten. Bake for 15 minutes then allow to cool for 5 minutes before transferring it to a wire rack. Sprinkle coarse sea salt and serve.

Lotus Organic Besan Flour is a vegan and nut free flour made by milling chickpeas from Australia. A good source of protein and dietary fibre, it can be added to stews, soups or be used to make slices, fritters, pancakes and sweets
• 2 tablespoons Global Organics Sunflower Oil
• Pinch of Gourmet Organic Herb Ground Black Pepper • ½ cup fresh spinach • ½ cup semi dried tomatoes • 2 cups lukewarm water
Method Preheat oven to 250oC and line a large skillet with baking paper. Combine besan flour and water, then whisk until smooth. Cover bowl and leave at room temperature for 2 hours or refrigerate overnight. Whisk salt, garlic, rosemary and 4 tablespoons of olive oil into batter. Pour 2 tablespoons sunflower oil in a high heat skillet and swirl to coat the skillet. Quickly pour batter into hot oil for 5 minutes, then carefully transfer the skillet into the oven for 25 minutes or until brown and crusty. Transfer immediately to a plate, garnish with spinach, semi dried tomatoes, savoury yeast flakes, Kalamata olives and ground black pepper.
