What happened to all the bees? Honey supply has seen an all time low, not only in Australia but also in the UK, Europe and America with retailers under pressure to meet their customers’ demands. For bee-keepers the rise in deaths as a result of Colony Collapse Disorder (CCD) is threatening crop pollination and further honey production. According to Executive director of the Australian Honey Bee Industry Council, Trevor Weatherhead “The high temperatures have caused stress and erratic behaviour in local bee populations and in extreme cases have caused beeswax in honeycombs to melt inside the hive.” Bees are responsible for pollinating 70% of the world’s horticulture and agricultural crops. According to Dr Denis Anderson, a bee pathologist, “if the bees are taken out of the agricultural system, we just could not compensate for the pollination that bees do for our crops, particularly fruit and vegetable crops. Stone fruits, cherries, plums, peaches, watermelon, rockmelon and cucumbers all require pollination. We’d have to come up with other systems of pollinations, but we are so dependent on honey bees for this role, we wouldn’t be able to do it quickly enough.” Pollination services to Australian agriculture is valued at more than $1.7 billion per annum. In a normal year 25,000-30,000 tonnes of honey is produced in Australia. We should still do all we can to help the local industry and continue buying local honey.

Health crisis

drives change... A recent survey concluded that Australian shoppers are motivated to change their eating habits if they experience a health crisis, says researchers Mobium group. “Its the first time the organisation has asked people why they started to buy organic. Anecdotally we hear that people are motivated to switch to organic diets because of health reasons, but this is the first time we’ve measured it,” says Chair of Australian Organic, Dr Andrew Monk. “The survey also shows that primary grocery buyers who would otherwise not consider buying sustainable goods, have significantly increased their consumption of organic products, states Dr Monk. With the growing evidence of scientific research into the benefits of organic purchases, consumers are more inclined to change their eating habits after they experience a health crisis. Organic farming in Australia has been one of the economy’s best performing industries over the past five years. Statistics show organic purchases have grown 12.1% annually between 2009-2014, with revenues to reach $557 million between 2013-2014.

Apple Cider Vinegar

Natural beauty tonic Patricia Bragg has been advocating the benefits of organic Apple Cider Vinegar for a number years and now Hollywood has recognised it too, with actresses like Scarlett Johansson, Gwyneth Paltrow and models Megan Fox and Miranda Kerr actively endorsing it. Scarlett Johansson revealed to Elle UK that she uses apple cider vinegar as her go to product if she is experiencing acne from time to time. She claims, “ it cleanses out the system entirely. “ While on the other hand Gwyneth Paltrow uses this very versatile product as a condiment in her favourite salad. Ancient grains are booming!

According to SPINS data, sales of unrefined ancient grains like kamut, spelt, amaranth, quinoa and freekah are showing growth in sales compared to manufactured gluten free products specifically designed for coeliacs or individuals with gluten intolerance. The high fibre grain freekah, although not naturally gluten free has grown by 159%, spelt by 363% and kamut by 686%. The gluten free grain amaranth known for its high iron and magnesium content has grown by 123%. The dramatic growth in grain consumption, both gluten free and those containing gluten shows that consumer interest in healthier, less processed foods is a trend that continues to expand and shows no sign of slowing. Why natural sunscreens are better...

In summer we leave our homes and head for the great outdoors. Promotional slogans of years gone by like ‘slip, slop, slap’ have taught us to apply sunscreen before going outside and to protect our skin from the harsh Australian sun. In a world of endless information, well informed individuals are now much more aware of the health risks associated with the sun and the damage it can cause. Over the years sunscreen has changed dramatically. People are now gravitating towards natural or organic sunscreens, which not only nourishes and replaces the moisture back into our skin, but also protects it from ultraviolet radiation. Is there really a difference between sunscreens that contain natural ingredients as opposed to chemical fillers? Absolutely… The purpose of sunscreen is to shield our skin from the sun’s harmful UV rays or ultraviolet radiation. UV rays are naturally produced by the sun and are part of the electromagnetic (light) spectrum that reaches the earth. The rays are made up of different types of wavelengths such as: UVA, UVB and UVC. UVA is divided into two wave ranges, UVA I and UVA II, which extends from UVB. UVC has the shortest wavelengths and is absorbed by the ozone layer. UVA damages skin cells called Keratinocytes in the basal layer of the epidermis and may potentially lead to the development of skin cancers. UVB rays are the main cause of

skin reddening leading to sunburn damage of the outer layer of the skin (epidermis). All sunscreens have a specific SPF or Sun Protection Factor rating and are generally between 4 and 50. The rating refers to how long it takes for UVB rays to cause redness of the skin when using a sunscreen, compared to how long it would take to cause redness without using the product. An SPF of 15 or higher is necessary for adequate protection. No sunscreen products including those with 50+ rating provide 100% protection against UV radiation. The following table by the Australian Radiation Protection and Nuclear Safety Agency identifies SPF and at the percentage of UV rays blocked. SPF

Traditional thick white sunscreens contain chemical fillers such as Padimate O (2-ethylhexyl-4-dimethylaminobenzoate). This has been found to produce free radicals when exposed to direct sunlight. Oxybenzone, which is absorbed through the skin at a staggering 97% is another widely used chemical, linked to hormonal disturbances. Its main function is to provide ultraviolet protection and absorb ultraviolet light. Sunscreens that contain natural ingredients such as green tea, roman chamomile, coconut, walnut, sesame oil and aloe vera tend to be rather transparent and much easier to apply. Traditionally, green tea has been used for sunburn for many years. It does this by reducing inflammation and scavenging free radicals. Topical green tea applied to human skin may provide photo-protective effects, healing sunburn and reducing DNA damage formed after UV radiation exposure. Since inflammation and oxidative stress increases the aging process, green tea with its anti-aging effects is known to slow the process. The Chinese apply cooled black tea to the skin to soothe sunburn. Tannic acid and Theobromine in tea helps remove heat from sunburns. The main ingredient in tea, epigallocatechin-3-gallate (EGCG), works well as an anti-inflammatory antioxidant and sunscreen. Roman Chamomile is a medicinal flower and is excellent for sensitive skin-types. When applied topically, soothes skin irritation and relieves sunburn. Plant oils such as coconut, sesame and walnut contain UV protection properties. Sesame oil in particular blocks 30% of UV rays whilst coconut, peanut

and olive oils block 20%. Avocado oil which is rich in lecithin, vitamin E, b-carotene, vitamin D, protein and fatty acids, will also soothe, moisturize and protect the skin. Aloe Vera is widely used for cuts, burns and healing wounds, and has been found to have a prophylactic effect before, during and after skin damage. It soothes and cools, accelerates the collagen process and moisturises the skin. It is excellent for all burns including radiation and thermal. Other non-toxic and highly recommended ingredients such as zinc oxide and titanium dioxide provide broad-spectrum protection against the suns rays. Zinc oxide protects against both UVA and UVB rays. Knowing what ingredients to look for in your sunscreen is very important, but how much sunscreen should we be using and how often? An average adult should use two tablespoons of sunscreen lotion to protect the entire body at least 15 minutes before sun exposure. Taking care of your skin in summer and using the right product is crucial to prevent the effects of the harsh summer sun. Natural sunscreen contains many plant-based ingredients that are soothing, nourishing, chemical-free and most importantly, protect the skin against UV rays. The idea is not to cover the entire body in clothing as small amounts of sun daily increases vitamin D stores which possess many excellent health benefits, but choosing a natural or organic based sunscreen without chemical fillers may mean great smelling skin, good health and an even greater protection.

These ten simple recommendations will ensure both you and your family stay safe this summer. 1. Stay in the shade where possible, especially between 10am and 4pm. 2. Avoid tanning and UV tanning beds. 3. Cover up with clothing. 4. Wear a broad-brimmed hair and UV-blocking sunglasses. 5. Us a broad spectrum (UVA/UVB) sunscreen with an SPF of 15 or higher. 6. For extended outdoor activity, use a water-resistant, broad-spectrum (UVA/UVB) sunscreen with an SPF of 30 or higher. 7. The importance of staying hydrated in summer By Anna Batsanis Editor Staying hydrated during summer is paramount, especially when fun-filled outdoor activities are undertaken as the temperature rises. Failing to do so may result in dangerous heat-related issues and an extreme loss of bodily fluids. Importance of water Every living cell requires water to function optimally; especially considering the body is made up of approximately 60% of water. Water is required as a transport mechanism to absorb many nutrients in the body. It assists with regulating body temperature and flushing out toxins from vital organs. Even the slightest state of dehydration can cause a person to feel lethargic, dizzy, unmotivated and tired. So, how much should I be drinking? Daily water recommendations vary and are dependent on age, environment (temperature, air-conditioning), food intake, high or low intensity exercise and overall kidney health. Approximately 8-glasses of water daily is recommended, but that doesn’t take into account the above factors and is just a general rule. From a nutritional medicine viewpoint the guide that I use is: a daily water intake of 35ml per kilogram of body weight, increasing to 42ml per kilogram of body weight when exercising.

What if I don’t like water? If you aren’t too keen on drinking massive amounts of water, you can increase the intake of foods that have a high percentage like: cucumber, iceberg lettuce, celery, radish, tomato, watermelon and green pepper. With the festive season soon approaching, here are some suggestions to make a glass of water delicious and flavoursome, with seasonal ingredients and the added bonus of nutrition. • Sliced fruit (try citrus, cucumber or melon) and ice • Let pineapple chunks soak in water for at least two-three hours. • Mash up raspberries or blueberries at the bottom of a glass then add water. • Pour in a splash of unsweetened organic cranberry juice • Make ice cubes out of organic fruit juice • Tear up fresh mint or basil leaves, add to a jug of water and leave overnight • After boiling vegetables, reserve the water and chill overnight for a vitamin-packed drink. • Brew your favourite herbal tea and refridgerate. • Add a dash of Acai powder to your water Summer 2014-2015 11


Why am I always HUNGRY? By Dr Libby Weaver The lure of the fridge late at night can result in even the most health-conscious person’s downfall. So why is that despite our good intentions, we demolish a block of chocolate after swearing we’d only have two pieces or head to the fridge late at night in search of that delicious and magical snack that will fix all, despite knowing we haven’t replenished the fridge in a week. Over-eating is more common than you think, often regarded as a lack of will power; the desire to eat more food than is needed to satisfy hunger or nourish your body can be driven by numerous factors.

Are you missing nourishment or looking for flavour? Sometimes we overeat in search of nourishment. Nourishing foods typically have a satiating effect on appetite. Over the last few years the western diet has moved steadily towards more processed and refined foods. Processed foods tend to be lacking in fibre and of course essential to our very being, vitamins and minerals. I believe many people over consume these foods, as they provide little to no nourishment and don’t engage the satiety signal in the brain. Or in the busyness of life it may be a reliance on takeaway foods, which have an emphasis on flavour as opposed to nutrition and unfortunately often use ingredients, which take away from our health. It is also common to overeat in search of flavour. Pay special attention to simple ways of adding more flavour to food. Use good quality oil, fresh herbs and spices and fresh chilli for a bit of spiciness if you can tolerate and enjoy it. Try this: Make and store nourishing condiments in the fridge to accompany meals. you can spread over vegetables, salad or meat options. Blend in an avocado, some lemon juice, fresh flat leaf parsley or coriander and a dash of olive oil. Season to taste adding lemon juice and olive oil to reach desired consistency. If snacking is your downfall take the time to arrange a vegetable platter. Cut up your favourite vegetables and serve with a dip such as hummus, an interactive way of increasing the nourishment of your diet. Once I start I cannot stop, is a phrase I have heard countless times. The wording gives you a clue. If you were truly eating in order to nourish your body, there would be a point you would feel comfortable and nourished. Many people eat to find what I call “soul food.” It’s actually not about the food at all, despite what they would like you to believe. Food has been used to replace a feeling in their lives. Food is reliable, consistent and you know it will taste a particular way, there are not many things in life that do that. Eating for comfort or eating to feel lit up is common and it is just one way you may have learnt to cope. To shift your focus away from eating to fill your soul, bring more of the things that truly nourish your soul into your life. Read more often, dance, sing, move, or rest. What works for you may be completely different for someone else. Food can never truly replace the role of soul food in your life. Try this: Schedule activities for the times you feel most vulnerable to overeating. Engage in an evening yoga or meditation class. Or utilize what is abundant and around you, watch the sun go down or observe your partner as they sleep with their book resting on their lap, filling your heart with gratitude will help you anchor in the now.

Are you serving yourself too much? It is no secret in the west that we serve ourselves too much. Your stomach is roughly the size of your closed fist and so this provides a good indication for portion sizes of concentrated foods such as carbohydrates and protein. The majority of your plate should be water-based vegetables. There are many ways of transitioning to smaller portion sizes and using smaller plates is a great way of making the meal appear larger than it is. Or take a tip from Asian cultures and use chopsticks. Chopsticks will slow you down, it takes the brain approximately 30 minutes to sense there is food in the stomach and for a lot of people they do not allow this time for the feeling of satiety to set in. Try this: Serve your meal in numerous small bowls and make the meal interactive so it is less about consuming your allocated portion sizes, many cultures eat like this especially at night to avoid over-eating.

Distracted eating Eating is an activity in its own right but it has become commonplace to eat whilst checking emails, texting, or watching television. Research suggests that those who eat while distracted, eat faster, are more likely to snack and reported not feeling full after consuming an adequate sized meal. Snacking can become another form of distracted eating, engulfing something as you drive or rush between appointments. There may be times when this is just a by-product of your day but for the most part endeavor to schedule yourself time for eating occasions. Mindfulness is an essential technique to apply when eating any meal. Listen to your body and eat slowly. Being grateful for the food you eat may or may not have a religious connotation for you, but the principle is critical. When you focus on all that you are grateful for you are less likely to over-eat out of frustration, stress, fear or boredom. Try this: Schedule yourself regular breaks to refuel. This can be a reminder that appears from you phone, that way you know outside of these scheduled breaks you may be eating to relieve a feeling, for example boredom or stress.

Hormonal influences Hormones play a vital role in hunger regulation. A typical pattern of food intake that I witness regularly is to inhale a processed breakfast cereal and race out the door to work. Your blood glucose soars and your pancreas subsequently releases a surge of insulin. If you continue to choose options that make

your blood glucose soar (typically refined or processed foods) insulin will be released again and you will continue to feel hungry. Insulin moves glucose out of the blood and into the muscles and fat cells. If insulin levels are high another hormone called Leptin should be initiated to tell your brain you’ve eaten. Leptin is produced by adipose cells (fat), and it circulates through the blood and binds to receptors in the hypothalamus, the area supposed to turn off the desire to eat. Insulin can interfere with Leptins ability to signal to the brain to stop eating. Try this: Add plant fat to your meals for example, raw nuts, seeds, tahini, avocado and extra virgin olive oil. Fat slows gastric emptying and the speed at which glucose is released into the blood, this is particularly important if you are prone to fluctuating blood glucose levels. There will always be occasions where there is temptation to over-do it and sometimes that may be just what your soul needs, put a full stop at the end of the sentence and begin the next day as a completely new day, where you can make choices that will nourish your body, but truly addressing why you consistently overeat is only going to have positive effects on your mind, body and soul. Basic guidelines that everyone needs to know

These top 5-basic guidelines are common sense, but due to our fast-paced lifestyles we neglect the basics that ensures our bodies work efficiently and effectively. 1. Practice awareness: if you prepare your own meals you know exactly what ingredients go into making it. Using your sense of touch, smell, taste and feel alerts your body to produce digestive enzymes – this is where salivating from the mouth comes into play! 2. Take your time: take your time without any distractions and simply enjoy your meal. In a fastpaced world this one may be the hardest to adjust to. Digestion starts at the mouth, chewing breaks down your food and the digestive enzymes are secreted through saliva assisting in the process. 3. The general rule is chewing each mouthful 30 times. Not chewing enough can result in swallowing air as you gulp, causing bloating and gas. 4. Eat organic where possible: When eating certified organic foods that are free of residual synthetic pesticides, herbicides and fertilisers that you really notice the difference in the taste and colour. Eating seasonally cuts costs and allows produce to be fresh and vibrant. 5. Eliminate processed foods: opt for more nutritious, whole and unprocessed foods that your body will love and reduce the need for your body to work harder to eliminate chemical residue from your systems. 6. Summer is here which means it’s the perfect time to supercharge your diet with superfoods. What are superfoods? There is no official definition of a superfood, and the term is used to describe a number of different foods with different properties. You could be excused for thinking the term is used for everything, and therefore useful for nothing. In fact, superfoods are foods that have health-promoting benefits and/or disease-preventing properties over and above their usual nutritional value. The following are foods which are packed with nutrients and potent disease-fighting compounds, or nutraceuticals. Add them to your diet in addition to the normal balance of fresh fruit and vegetables, wholegrains and lean protein sources. 18 Kadac In Health

A mixture of colourful berries such as raspberries, blackberries, goji, and acai berries is actually best. This gives you the benefits of slightly different blends of nutrients and phytochemicals. Whole berries generally have more nutritional value and fibre than berry juices. Berries have a remarkable concentration of antioxidants, which help fight free radicals. Free radicals occur naturally in the body but can damage cell membranes and DNA. They may play a role in aging, as well as the development of a number of health conditions, including heart disease and cancer. The flavonoids in berries like acai also have significant anti-inflammatory action. Daily dietary supplementation with whole blueberries has been shown to improve insulin sensitivity

in obese, nondiabetic, and insulin-resistant people. Greater intakes of blueberries and strawberries were associated with slower rates of cognitive decline. 2. Broccoli - Not only broccoli, but any cruciferous vegetables (brussels sprouts, cauliflower, cabbage, or kale) contain natural compounds which are believed to have cancer-fighting capabilities. Broccoli is also high in vitamin C, fibre, calcium, and folate. To maximize flavour, steam the broccoli until just tender then dunk it in cold water. Drizzle with some organic olive oil and tahini dressing for a delicious treat. 3. Walnuts - Nuts generally have a bad reputation because of their fat content. However, fats help our bodies absorb fatsoluble vitamins (A, D, E, K) and prevent us from overeating. Also, it’s important to distinguish between good and bad fats. A 2011 study named walnuts the healthiest of all nuts for their high antioxidant content. Walnuts also get high marks for their omega-3 fatty acids and anti-inflammatory properties. So if you need a snack to tide you over between meals, a small handful (about 2 tablespoons) of walnuts is an excellent option. 4. Quinoa - Quinoa is the perfect food to add to your diet if you want a lean protein source. It has about 13% protein which is 2 to 3 times that of other grains. Quinoa is also gluten-free, which makes it a good alternative for people with celiac disease or gluten sensitivity. Use it hot as a substitute for rice, or cold in salads. Experiment with the different colours to add an extra creative flair to your meals!

5. Chia - Like flaxseeds, chia seeds are one of the few plant sources of omega- 3 fats. These fats have beneficial antiinflammatory effects, as well as benefits for heart and brain health. Chia seeds are also particularly high in manganese, which has an antioxidant effect. Low levels of manganese in the body can contribute to infertility. Manganese may help some of the following conditions: osteoporosis, arthritis, PMT, diabetes and epilepsy. Chia seeds are also high in phosphorus and magnesium2. 6. Cacao - Great news! Dark chocolate is thought to be beneficial for cholesterol, blood sugar, and blood pressure. Epidemiologic studies support its protective effect against cardiovascular disease. For the greatest health benefits, buy dark chocolate containing 70% or more cacao. Brands vary, so check the packaging to avoid excess added sugar. 7. Beans - Beans are one of nature’s perfect foods! They are a great low-fat protein source. Plus, beans are an excellent source of folate, potassium, magnesium, iron, protein, and fibre. Use a variety of beans to add colour and nutrition to your meals. If beans tend to give you gastrointestinal discomfort, soak them before cooking and then throw out the water. 8. Olive Oil - Olive oil is high in healthy mono-unsaturated fats, which may lower your heart disease risk by reducing cholesterol and by preventing blood from clotting too easily and blocking blood flow. This type of fat may also help control blood sugar— which is good news for people with diabetes.

Eating in season The festive season is a busy time for everyone and the rush up to the main event can leave you feeling a little uninspired in the kitchen. To reinvigorate your enthusiasm we have added a health twist to much loved favourites that the whole family can enjoy, including those with dietary requirements.

The wonderful world of Chia Although this whole-food has been labelled a superfood recently, chia actually dates back as far as 3500BC. Native to South-America from the Salvia hispanica desert plant, the ancient Aztec and Mayan civilisations knew about the wonderful benefits of this grand seed. The word ‘chia’ literally translates to ‘strength’ in Mayan.

Chocolate Chia Pudding - two ways Serves 4 Ingredients: • ½ cup Louts Organic Black Chia • ¼ cup Lotus Organic Cocoa Powder • ½ cup Lotus Organic Rapadura Sugar • 2 cups Australia’s Own almond milk (or milk of choice) • 1 tablespoon vanilla extract • Pinch of Lotus Sea Salt

Both black and white chia contains amazing nutritional benefits. Just 2 tablespoons sprinkled onto your yoghurt, cereal, fruit or in smoothies daily will provide an average between 7-11g of fibre, 4g of protein, 205mg calcium and 5g of omega 3 fatty acids in the form of alpha-linolenic acid (ALA). The good news is that chia contains all nine essential amino acids, which is identified as a ‘complete’ protein, which is why it is so popular amongst individuals who are either vegan or vegetarian.

• Fresh seasonal berries to serve

The health benefits of chia are many, and it is very easy to incorporate chia into your day. Brands like Lotus and NatureFirst offer quality chia products that are high in vitamins, minerals and antioxidants.

For the sago/tapioca texture: combine all ingredients except the berries in a bowl and stir well. Refrigerate for at least two hours or overnight to set.

Method: You can make this pudding two ways: either like a sago or tapioca pudding in texture with the whole chia seeds or blended into a smooth and creamy mousse like pudding.

For the smooth mousse: in a high speed blender like a Thermomix or milkshake blender combine all ingredients except the berries. Blend on high for 1-2 minutes or until smooth. Pour into a serving dish and refrigerate for at least two hours or overnight. Serve your delectable pudding with fresh berries for a wonderful treat that is healthy enough to have for breakfast!

Quinoa Apple Pie Serves 2 Ingredients: • 1 cup organic Granny Smith apples sliced

Turkey and Quinoa Stuffed Capsicum Serves 4

A great snack packed full of protein that can be served hot or cold.

Ingredients: • ½ cup uncooked Lotus Organic White Quinoa • 1 cup water + pinch of Lotus Fine Sea Salt • 1 tablespoon Bragg Organic Extra Virgin Olive Oil • 2 small yellow onions, chopped • 2-3 garlic cloves, minced • 600g ground turkey • 2 tsp Gourmet Organic Herbs - Italian Herbs • 250ml Global Organics Tomato Passata • 60g baby spinach • 4 capsicums, halved with seeds and membranes removed • fresh basil, chopped, torn, or sliced

Peel and core apples and cut into thin slices. Place in a microwave safe bowl and toss with the sugar, cinnamon, nutmeg and ginger.

Method:

Microwave apple mixture for two minutes, stir and microwave for an additional 2-4 minutes or until apples soften and start to release juice. Pour the juice in a bowl or mug and set aside. Mix the quinoa and cranberries and slowly add the juice until desired sweetness and consistency is reached.

Preheat oven to 180 OC. Rinse the quinoa in a fine mesh strainer until the water runs clear. In a small saucepan, combine the quinoa and water with a pinch of salt. Bring to a boil, then cover and simmer for 15 minutes. Remove the lid and cook for 2-3 more minutes until any remaining water has evaporated. In a large saute pan, heat the oil over medium to high heat. Add in the onion and garlic and sauté for about 5 minutes until translucent. Add in the turkey and Italian seasoning, and cook until no longer pink. Stir in the tomato sauce and spinach. In a large bowl, combine the quinoa and turkey mixture. Spoon into the 8 capsicum halves. Top the capsicum with some cheese. Bake for 30 minutes until the capsicum is tender. Sprinkle with fresh basil prior to serving.

Method:

• ½ cup mint leaves

This salad is high in protein from the ancient grain quinoa, plus it is high in antioxidants and rich in festive flavours. The berries make it ideal for serving with roast turkey or with smoked tofu.

Method:

Cook the Lotus quinoa to pack directions and set aside to cool. De-seed the pomegranate and combine with the quinoa and berry mix. This can be kept in the fridge until ready to serve for up to 2 days.

Wash the lettuce and cut or tear into bite size pieces, arrange on a large platter and scatter over the quinoa mix. Chop the mint then mix with the vinegar, oil, mustard and seasoning. Drizzle over the salad just before serving. There are many varieties of red lettuces, raddichio lettuce will give you a lovely crisp salad with a bitter tang, oak leaf or fancy red will yield a softer more buttery salad.

The fresh fruity flavours of this spectacular salad go perfectly with roast chicken, pork or fish. In fact, it can even be topped with barbequed lemon-garlic or chilli prawns. Meanwhile chop the dried apricots and halve the cherry tomatoes and dice the cucumber and combine with the cool quinoa. Zest the orange and then peel and slice the flesh into thin slices. Combine the zest with the finely diced chilli, cinnamon, vinegar and olive oil then season to taste. Set the dressing aside. Just before serving, lay the orange slices in a circle on a platter and pile the salad in the middle. Drizzle the dressing and scatter with mint leaves.

White Chocolate & Orange Truffles Serves 20 Truffles Ingredients: • 2 blocks of Green & Black’s Organic White Chocolate • ½ cup cream • 1 tablespoon orange liquor or orange zest • Desiccated coconut to roll Method: In a food processor chop the chocolate finely into small pieces. Set aside in a bowl. Heat the cream and orange liquor or zest until just simmering. Pour the hot cream over the chocolate and stir to melt completely. Stir the molten chocolate mix. Set aside in the fridge for 10 minutes at time, checking often so it does not firm up too much. When the mix is firm enough to handle, scoop tablespoonfuls of mix and roll in either desiccated coconut or more finely chopped white chocolate.

Eggcellent Eggnog Serves 4 Ingredients: • 4 free range or organic eggs • 1 cup Australia’s Own Organic Almond Milk (or milk of choice) • ½ cups Lotus Organic White or Organic Rapadura* Sugar • ½ teaspoon vanilla extract • ¼ teaspoon Gourmet Organic Herbs - Ground Nutmeg • ¼ teaspoon Gourmet Organic Herbs - Ground Cinnamon • ½ teaspoon lemon juice • ½ cup rum or brandy (optional) Method: Separate the eggs. Put the yolks in a large bowl and refrigerate the whites to use later. Heat the milk with the vanilla and spices. Meanwhile whisk the egg yolks with half the sugar until light and fluffy. Pour the hot milk over the yolks while whisking. Return the milk mix to the pan and cook over a very low heat until it thickens slightly. Transfer to a jug and refrigerate. When it is cool and you are ready to serve, whisk the egg whites with the rest of the sugar and lemon juice until stiff. Stir into the cool milk mix along with the optional brandy and enjoy your fluffy eggnog. Note this recipe uses raw egg whites, although they are partially cooked from the sugar and lemon juice it should be drunk the day it is made and kept cool. If you are concerned you can simply omit them or replace with half a cup of whipped cream. * Using Lotus Rapadura, Panella or Sucanat sugars which are unrefined and made from evaporated cane juice will yield an eggnog with a deep golden hue and rich caramel flavour.

Ingredients glazed ham: • 1 free range or organic ham • 1 cup St Dalfour Fig Jam • 1 tablespoon Global Organics Dijon or Wholegrain Mustard • 1 tablespoon Lotus Organic Apple Cider Vinegar Ingredients glazed vegetables: • 1 bunch heirloom baby carrots mixed colours • ½ kilo kipfler potatoes • 1-2 parsnips • 1-2 red onions • ½ cup St Dalfour Apricot Jam • 1 tablespoon Lotus Fine Sea Salt • 2 tablespoon Bragg Organic Olive Oil Method: Carefully remove the rind or skin from the ham, leaving the layer of fat underneath intact. Score the fat in a diamond pattern. Combine the fig jam, mustard, vinegar and brush generously over the ham.

Ingredients: • 1 free range or organic turkey • Herb butter • 100g butter • 1 tablespoon chopped fresh sage or tarragon • 1 teaspoon smoked paprika • 1 lemon, zest and juice Ingredients Stuffing: • 1kg diced organic pumpkin • 2 tablespoon Lotus Sunflower Oil or Bragg Organic Olive Oil • 1 teaspoon Lotus Fine Sea Salt • ½ loaf sourdough or 1 loaf gluten free bread • 2 free range or organic eggs • ½ cup Real Good Food Tamari Seed Mix • 1/4 Lotus Organic Australian Honey • 1/4 cup parsley • 1/4 cup thyme leaves or sage • 1 tablespoon smoked paprika • 1 tablespoon freshly ground black pepper

Slice the carrots and kipfler potatoes in half, lengthways. Slice the parsnip into rounds and quarter the onion or cut into 8ths if larger. Boil or steam the vegetables for 5-10 minutes until just tender then while hot, combine with jam, salt & olive oil. Toss into a baking dish.

Method:

Bake at 170’C for 1-2 hours basting every 20 minutes with the glaze. Cook until deep golden and hot right through. Use a meat thermometer. The centre should be over 70’C.

Take the crusts off the bread and dice into 1cm cubes. Chop the herbs and whisk the eggs.

Cook the vegetables at the same time, taking them out once golden and cooked through. They can be served at room temperature or warmed up again when the ham is done. Serve with a big green salad of butter lettuce with a simple dressing and extra St. Dalfour fig jam.

Combine the ingredients for the herb butter, except the lemon juice and set aside. Toss the diced pumpkin with the oil and sea salt. Roast in the oven for 20 minutes or until just cooked through.

Combine the pumpkin with the rest of the stuffing ingredients and mix well. Stuff into your turkey and tie its legs. Leftover stuffing can be wrapped in foil and baked in the dish with the turkey. Spread the herb butter under the skin of the turkey and rub over it. Drizzle with the lemon juice and sprinkle with a little extra salt and cook as per the directions on the turkeys packaging, depending on its weight. Place the turkey breast side down for ⅔ of the time then turn over to cook breast side up for the last ⅓. This will yield juicier breasts. Summer 2014-2015 27

Pour the soda water and juice in a large jug and serve right away. Add ice if preferred.

Leave to infuse for 10 minutes or until cool. If you prefer sweeter iced tea, add 1-2 tablespoons of Lotus Rapadura Sugar or honey. Thinly slice the citrus and toss into a large jug with the raspberries. Squeeze the teabags out well. Add 1-2 cups of ice to the jug and pour over the tea and top with still or sparkling water. • 1L sparkling wine Method: Combine the Beyond coconut water with the fruit the day before so it can infuse with all the flavours and chill. When ready to serve fill a punch bowl or large jug with ice and pour over your Beyond and fruit mix and your bubbly.

• 2 cups Lakewood Pineapple Juice • 2 Tbsp Lakewood Lime Juice • 1 mango • 1 banana • 1L soda water Method: Dice the mango and combine with the juice and a banana in a blender. Puree until smooth. In a large jug with or without ice top with the soda water and serve right away.

This lovely punch is almost a dessert in itself, bursting with summer fruits and tropical flavours. You can replace the champagne with soda water, lemonade or ginger ale.

Cherry Spritzer Serves 6 Ingredients: • 2 cups Lakewood Pure Black Cherry Juice • 1L soda water Method: Super simple, simply combine the cherry juice with soda in a large jug with ice and serve right away for a refreshing red bubbly drink.

Oleate found in olive oil helps fuel heart cells...

According to research from the Chicago College of Medicine at the University of Illinois, a compound found in olive oil called Oleate, may restore proper metabolism and functioning of fuel in heart cells. Dr E. Douglas Lewandowski, Director of the UIC Center for Cardiovascular Research and his colleagues found “immediate improvement” in how their hearts contracted and pumped blood. Oleate was also found to increase the activation of several genes for enzymes that metabolise fat. Dr Lewandowski stated, “These genes are often suppressed in hypertrophic hearts. So the fact that we can restore beneficial gene expression, balance fat metabolism and reduce toxic fat metabolites, just by supplying hearts with Oleate, is a very exciting finding.”

Aromatic turmerone to boost stem cells in the brain... Turmeric has been widely researched for its anti-inflammatory and neuro-protective features. Research from the Institute of Neuroscience and Medicine in Julich, Germany, found a bioactive compound in turmeric which promotes stem cell proliferation and differentiation in the brain. Previous studies of aromatic turmerone have shown that the compound can block activation of microglial cells. When activated, these cells cause neuroinflammation, which is associated with different neurological disorders. The study suggests aromatic turmerone could potentially be used for treating neurological disorders such as Alzheimer’s disease and stroke. “The goal in regenerative medicine is to encourage the differentiation of stem cells into neurons,” states researcher Adele Ruegar.

High protein to reduce the risks of hypertension... According to new research from Boston University School of Medicine, a study published in the American Journal of Hypertension in September 2014, examined if high protein diets assisted in decreasing the risk of developing high blood pressure. This study, conducted within an 11-year period, concluded that participants who were consuming 100g/day whether from animal or plant sources of protein, had a 40 percent lower risk of high blood pressure in comparison to lower intakes. Lynn Moore, Author and Associate Professor of Medicine at the Boston University School of Medicine stated “We need to revisit optimal protein intake for optimal heart health.”

Coeliac disease more common than you think... According to new research, Coeliac disease (most severe form of gluten sensitivity) is far more common than previously thought, with more than half of Australians at risk of developing the condition. This auto-immune condition reacts to gluten in the digestive tract by mistakenly believing it to be a foreign invader. Gluten is a protein found in wheat containing grains like barley, spelt and rye and causes some uncomfortable symptoms such as bloating, flatulence, abdominal pain, lethargy and fatigue. Immune cells attach themselves to the gluten proteins as well as the intestinal wall, leading to small bowel damage. The tiny, finger-like projections that line the bowel called villi, become inflamed and flattened, resulting in villous atrophy.

Put your customers’ needs first.... In the last edition of Retail Detail we spoke about the value of customer retention in growing sales and identified ways to make it easier for customers to shop in your store. Whilst many of those principles are timeless they become even more important at this time of year as customers become increasingly time poor wanting to get in and out of stores quickly. This period is closely followed by the January 2nd kick off of “New Year, New You”. That inevitable visit to the local health store in an attempt to reverse the excesses of the holiday season or to kick start that New Year’s resolution - they always seem like such a good idea at the time! Given this increase in interest in our channel it makes sense to maximise the opportunities by focusing on growing basket size to increase the average customer spend. We have heard many times that it costs more to attract new customers than to retain your current customer base. Therefore building the basket size of your existing customers seems a worthwhile value adding pursuit. The question is where and how to start? An article of research by Nielson titled ‘Want to Increase Store Traffic, Loyalty and Growth? Rethink the Centre of the Store’, found that to secure your market position and relevance with your customer base you have to begin with a strong focus on true shopper demand and in leveraging the whole store. Furthermore they refer to a concept called the “demand landscape” put simply it is recognising that shoppers plan their shopping missions based on need. Once you have clarity 38 Kadac In Health

on your customer’s mission in and around your store you can find merchandising solutions targeted at meeting those needs. Examples of health store customers’ needs at this time of year may include, a Christmas menu for individuals who are gluten intolerant, healthy snacks for the party season, organic and sustainable gift giving ideas and detox solutions. A good first step is to think about and list examples of your local customers’ needs over the next three months that are aligned to their regular purchasing needs. Identify any gaps in your range that need to be filled - this may include investing in seasonal lines or increasing minimum order quantities to meet a seasonal demand. By example, a customer on a mission to find ingredients for Christmas lunch will more than likely need multiple pantry essentials. Do you have alternative ingredients for a Christmas pudding for allergy sufferers or a gluten free stuffing for the roast chicken? If not, see page 24-25 for some great recipe ideas. If you do have these ingredients, try merchandising them together to provide a total solution for the customer. Apply the same approach for all “free from” dietary requirements on key seasonal needs. Your customers will love you for it and the result should be reflected in an increased average spend Furthermore, try merchandising compatible products together - grouping pantry ingredients in the same wall, bay or section is known to promote multiple unit purchases. Revisit your product mix for the seasonal sales period by curating a range that meets customers’ needs for the season. Identify small products that would make great Kris Kringle gifts for under $15. Think dairy free or raw chocolate, organic hand cream, natural lip balms, body butters and soaps. Go one step further and try setting up a temporary gift table or end with staff picks that can easily be changed for detox season in January. Additionally, don’t forget the timeless retail winning activities which include, maximising your fixture ends for multi and special buys, completing a seasonal window makeover focused on a “needs” based solution and reviewing your sales mix from the same time last year looking for trends and spikes in product line sales. Detox is a buzz word we often hear. Be it a diet, relationship or beauty detox, it signifies a fresh start. Iona Young shares some top tips for a simple hair detox.

INVEST IN A QUALITY SHAMPOO AND CONDITIONER To nourish the hair and scalp, switch your silicone-based conditioner to a natural conditioner. Using a natural conditioner will re-boost your hair with the nutrients and proteins it needs to look shiny and healthy. A deep-cleansing shampoo will aid in removing product build-up. TRY: If it is too difficult to part with your current styling regime, try reducing the use of silicones by choosing a natural-based shampoo and conditioner, and keep your silicone-based serum for a while. Then, slowly reduce the use of the serum and switch to a leave-in natural hair conditioner.

MAKE GOOD USE OF THE BASICS Break the habit of over-washing. “Wash hair with a gentle shampoo once every few days, as using shampoo daily can strip hair of its natural oils while overstimulating the production of sebum. Those who perspire a lot from physical activity or weather may still rinse hair daily if necessary, as perspiration is freely washed off with pure water,” advises Annabelle Personeni, a botanical chemist. To get the most out of your conditioner, Personeni suggests rinsing it out in two steps as it enhances the deposition of natural conditioning ingredients. “Apply conditioner as usual, but rinse with only half a cup of water first, followed by a full rinse. Doing so will break down the emulsions, releasing more nutrients to the hair.”
