More supplies from the local community & the wild The Kaingu kitchen has made a name for itself with its innovative menu fusing world cuisine with Zambia and local supplies. Vegetarian meals as well as organic meat supplies are on the up and being able to source more vegetables locally is not only good for a low carbon footprint but the greater impact it has on the income of the local community and as a result reducing the pressure on wildlife areas. Local supplies… Crayfish (an alien specie to the Kafue River), however many Mr. Moffy supplies, we buy and eat!, we serve them poached in garlic butter with a smoked tomato risotto and a pea & mint sauce. Clifford cycles every week 20km to KaingU to deliver fresh tomatoes, pumpkin leaves and impwa. Enjoy our triple Pumpkin delight made of roast pumpkin wedges, fried pumpkin leaves and toasted pumpkin seeds. Do you know where the best place is to sundry tomatoes for our delicious activity snack? Exactly, in the middle of the river, on a boat and out of monkey-reach. Foraging the wild.
