An Interview With

Chef David Pan Co-Owner, Orange Beach Concierge

We interviewed chef and (now) local business owner David Pan to shed his personal insight on life along the Gulf Coast and why he chose to relocate there over anywhere in the country. Chef Pan’s specialty is French methods while remaining focused chief-davidon the latest trends and techniques in the industry. After graduating from Le Cordon Bleu Mendota Heights, Chef Pan began his career at the 3 Diamond rated WA Frost in St. Paul under Chef Russell Kline. He expanded his culinary experience working with noted chefs at elite establishments that included the Minneapolis Club, James Beard winning Gustavus Inn. David moved to the gulf coast in 2013 and had the honor of working for Chef Bill Briand of Fishers Orange Beach as well as working for Eric Beech of Brick and Spoon. While he is new to the coast, his culinary impact is already well known by his peers. Pan continues to thrive in his new permanent home, winning the award for “Best Flavor” in 2016 at The Wharf Uncorked Wine + Food Festival and in 2018, he was awarded “First Place” at the 11th Annual National Shrimp Festival Restaurant Challenge – an annual culinary competition for Gulf Coast chefs. QUESTIONS FOR CHEF: “What inspired you to choose the Alabama Gulf Coast to set up your business?” The Alabama Gulf Coast is the hidden gem of the US - then add Alabama’s rich agricultural history, plus everything the Gulf has to offer us. To be able to take advantage of that was my inspiration. “When did you first visit the area?” 2011 “When did you first begin your culinary career?” As a young 14 year old kid frying french fries during lunch rush at McDonald’s in Chanhassen, MN.

“When did you make the move to Gulf Shores & Orange Beach, and how long afterwards did you start your business?” He moved to Orange Beach in 2013 and Orange Beach Concierge was born in January 2015. Our first job was a nine person private dinner at Turquoise Place in Orange Beach.

I love our home!! We closed on the new property in August of 2017 and it provides a safe and comfortable environment for my wife, Tillie, and our loving pets. “What do you think is the quintessential “Alabama Gulf Coast” dish?” For me, there are a few but my current favorite is creamy roasted Silver King corn grits, and Pink Eye peas simply cooked with bay leaves and thyme. Top that with anything you pulled out of the Gulf or harvested from your hunting camp, (add) a pan sauce and I feel right in lower Baldwin County! “Pertaining to the above question, how are you doing it differently than others?”

No straw. No fruit. “What do you feel is the best beverage to pair with high quality Coastal cuisine?” High quality food should be paired with high quality wine, but these are only guidelines. I say always drink what you want - do your thing! “Sotheby’s is an international brand. Do you look at other parts of the world to inspire your culinary creations?” Of course. Travel and exploration of the world are essential to my culinary growth. “Any last remarks?” Live the life you love, and love the life you live. Be humble, authentic and sincere and you will go far in this life; and always do what you say. Under promise, over deliver. Tell the ones you care about that you care. This life moves fast!

Originally colonized to serve as a safe haven for artistic minded individuals, progressive thinkers, and authors, the township was said to have a “fair hope of success,” based on the breathtaking bluffs, calming bay waters, and the lush vegetation surrounding the 12-square mile grove; and the name stuck. Today, Fairhope may seem to be a far cry from the 500 resident community it was more than a century ago. But the charm, the beauty, and the artistic prowess surrounding the township have remained the focal point of the city. Annual events, world class resorts, and cozy properties invite hundreds of thousands of visitors to the Fairhope area, while the Southern hospitality, coastal culture, and one-of-a-kind scenery have them returning year after year.

Fairhope is home to one of the South’s most popular art gatherings each spring, the Annual Fairhope Arts & Crafts Festival. Only those lucky enough to live on the bay (or have friends who sound the “not so secret alarm”) get to experience one of these ultra-rare events. Although the exact dates of a jubilee are unable to be tracked, the natural occurrences seem to isolate to the summer months.
