Line 15x10x1-inch baking pan with aluminum foil. Spray foil with no-stick cooking spray; set aside. Place a large strip of aluminum foil onto large cutting board or work surface; lightly spray with no-stick cooking spray. Combine almonds, crackers, sesame sticks and pumpkin seeds in large bowl; set aside. Combine brown sugar, butter and corn syrup in 1-quart saucepan. Cook over medium heat until sugar and butter are melted and mixture comes to a boil (3 to 5 minutes). Pour over almond mixture; stir to coat well. Spoon into prepared pan. Bake 60 minutes, stirring and breaking up clumps every 15 minutes. Spoon onto foilcovered cutting board. Cool

Directions Preheat oven to 375 degrees. Grease cookie sheets. In a large bowl, cream together the shortening, peanut butter, brown sugar, and 1 cup white sugar until smooth. Beat in the eggs one at a time, and stir in the milk and vanilla. Combine the our, baking soda, and salt; stir into the peanut butter mixture until well blended. Shape tablespoonfuls of dough into balls, and roll in remaining white sugar. Place cookies 2 inches apart on the prepared cookie sheets. Bake for 10 to12 minutes in the preheated oven. Homemade Caramels Ingredients 1 lb. butter 2 lbs. light brown sugar 1 16-oz. bottle light corn syrup 2 14-oz. cans sweetened condensed milk 2 tsp. vanilla Directions Combine all ingredients except vanilla in large dutch oven. Cook over medium-high heat until candy thermometer reaches 245 degrees, about 20-25 minutes, stirring constantly. Take off heat. Add the vanilla. Stir well. Line a jelly roll pan with parchment paper. Pour caramel mixture onto paper. Leave it sit on the counter overnight or for 24 hours. Cut strips of caramel horizontally with a pizza cutter. Whatchamacallit Bars Ingredients 1/2 cup corn syrup 1/2 cup brown sugar 1/2 cup peanut butter 4 cups rice cereal 6 oz. chocolate chips 6 oz. butterscotch chips
Directions Microwave syrup and sugar in 2 qt. bowl on high 1 1/2 to 2 minutes. Stir once. Add peanut butter, stir. Add cereal. Pat in 12"x8" pan. Place chips in 1 qt. bowl. Microwave 2 minutes on 80 percent. Stir them 1 minute more. Spread on bars. Marie Noren, Rush City
Angel Food Cake Fruit TriÄ?e Ingredients 1 oz instant sugar free vanilla pudding (1 package) 1 1/2 cups milk 1 cup vanilla yogurt 6 oz. cream cheese (I used whipped cream cheese) 1/2 cup sour cream 12 oz. whipped cream (I used Cool Whip) 1 angel food cake prepared and cut into cubes 2 cups strawberries, chopped 2 cups raspberries 2 cups blackberries Directions 1. In your mixer whisk the milk and pudding mix together for a couple minutes or until ďŹ rm. Pour into another bowl and set aside. 2. In the bowl of your mixer add yogurt, cream cheese and sour cream and beat until smooth. Fold in pudding and 1 cup of the whipped topping. 3. Place a third of the angel food cake cubes in a 4 quart trie bowl. Top with a third of the pudding mixture, half of the remaining whipped topping and a third of the berries. Repeat layers once. Crazy Cake Ingredients 3 cups all-purpose our 2 cups white sugar 1 tsp. salt 2 tsp. baking soda 1/2 cup unsweetened cocoa powder 3/4 cup vegetable oil 2 tablespoons distilled white vinegar 2 teaspoons vanilla extract 2 cups cold water Directions Sift our, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork. ENTREES Zucchini Hotdish Ingredients 3 zucchini, thinly sliced 1 large onion, chopped 1 1/2 lbs. lean ground beef 1/2 tsp. salt 1/8 tsp. pepper 1 (6 oz.) pkg. stuffing mix 1 cup grated carrot 1 cup. cream of chicken soup 1 cup commercial sour cream Shredded cheese Directions Preheat oven to 350 degrees. Cook sliced zucchini and onion in small amount of water until tender (about 5 minutes). Drain and set aside. Brown ground beef. Season with salt and pepper. Prepare stuffing mix as directed. Spread 1/2 the ground beef in the bottom of a large 9x13 baking dish. Top with half the stuffing. Comine soup, carrots and sour cream. Fold in zucchini and onions. Pour over stuffing layer. Directions Spray down the baking dish with cooking spray, ensuring the sides are as well-covered as the bottom. Heat minced garlic and olive oil in a large non-stick frying pan,

Preheat oven to 375 degrees. Take your mixture off the heat, and prepare tortillas by adding the mixture to each one to get an equal amount for all 12. Place the wrapped up tortillas seam side down into the greased baking dish, Then top all of the enchiladas with the remaining vegetables and sauce. Slow Cooked Kalua Pork Ingredients 1 pork butt roast (approximately 6 lbs.) 2 Tbsp. Mesquite Liquid Smoke 2 Tbsp. coarse sea salt 1 whole head of cabbage 1/2 cup water Directions 1. Pierce pork with fork all over, rub salt and 1 tablespoon liquid smoke on pork. 2. Add 1 tablespoon of liquid smoke to slow cooker with a 1/2 cup of water. 3. Place pork and whole cabbage in slow cooker. 4. Cook on low for 16 to 20 hours, turn once during cooking. 5. Shred with a fork (when ready will fall apart easily), add drippings for flavor. Meat Loaf Ingredients 3 lbs. extra lean ground beef (93% lean) 1 cup dry Italian seasoned bread crumbs 3 eggs 3 Tbsp. chopped parsley 1 Tbsp. sea salt 1 Tbsp. garlic powder 3/8 tsp. pepper 1 Tbsp. tiger sauce 1 Tbsp. Mrs. Dash extra spicy 3 cups shredded cheese 1 cup chopped onion Directions Mix all ingredients together in large mixing bowl. Put mixture into a bread pan or meat loaf pan and bake at 375 degrees for about an hour or until cooked throughout. Optional: Put bacon strips on the top of the meat loaf before placing in oven. Ingredients 12 burrito-sized flour tortillas 2 lbs lean ground turkey 1 red bell pepper 1 green bell pepper 1 vidalia onion 2 cups shredded Mexican cheese 1 large can of Old El Paso mild red enchilada sauce (19 oz.) 3 Tbsp. minced garlic 2 Tbsp. olive oil Garlic powder, seasoned salt and pepper – to taste 13x9 baking dish Non-stick cooking spray
then add in thinly sliced green and red bell pepper and onion. Cook the vegetables until nice and soft, and then set aside in a bowl. Add the ground turkey to the pan and season with the garlic powder, seasoned salt and pepper. Cook thoroughly, and drain if necessary.
Directions In a pot, combine first alfredo sauce, water, chicken, seasoning, salt and pepper. Bring to a boil, stirring occasionally. Stir in the gnocchi and spinach; cook until gnocchi floats (about 3-8 minutes). For a little more pizzaz, garnish with a dollop of pesto. Kirsten Faurie, Mora
Olive Garden’s Zuppa Toscana Soup 1 lb. hot Italian sausage, casings removed 1 large onion, chopped 3 cloves garlic, minced Kosher salt Freshly ground black pepper 6 cups low-sodium chicken broth 4 large russet potatoes, diced 1 bunch curly kale, leaves stripped and chopped 3/4 cup heavy cream 4 slices cooked bacon, chopped 1/4 cup freshly grated Parmesan, for serving

Add chicken broth and potatoes and cook until potatoes are tender, 23 to 25 minutes. Stir in kale and let cook until leaves are tender and bright green, 3 minutes, then stir in heavy cream, sausage, and bacon and simmer 5 minutes more. At Arrowhead Transit we feel it’s important to honor our drivers who provide good service to our riders. It’s the norm among our drivers to go above and beyond. Each are given clear instructions as to what is expected of them as a bus driver, but nearly all of our drivers do more. Gaylen Yates of Rush City was chosen as our Driver of the Month for November by Transit Manager Julia Dupla. “I didn’t choose Gaylen because he outshines all the other drivers in Pine County,” said Julia. “I chose him because he has such a good time with each of his riders. He loves to joke; and he knows just where the line is between making someone laugh and feel good about themselves; and hurting their feelings.” “I have a good time with them,” said Gaylen. “So I don’t just like this job, I love it. I love the people. I treat everybody like I’d like to be treated myself.” Gaylen has a grandson with autism. Gaylen bought his first new motorcycle in 1995 and has ridden his motorcycles over three quarters of a million miles. Since his grandson turned 6 years

old, Gaylen takes him everywhere with him. (His grandson is now 19.) “He tells me I’m not funny. ‘I’m not trying to be funny,’ I tell him. ‘I’m just telling it like it is.’” Gaylen drives all the bus routes, including the contract routes where he takes people to a work/ learning facility. It’s on the contract routes where the riders say to him when he brings them back to their homes, “Gaylen, when are you going to be our bus driver again?” When asked why he thought he was chosen as Driver of the Month, Gaylen said, “It’s probably because of the contract routes. Julia gets notes from the staff telling her how much their clients like having me as a bus driver. --I treat them like my grandson.” It’s not like he needs the work. Gaylen turned 70 in January. Before he started working for Transit he had both his knees replaced. He was retired from working for the City of Minneapolis But I was going where he repaired water mains. “But crazy at the house.
“I’ve been working here for four years and nine months. When I think it’s time to quit, I can’t do it. Because it’s not just the riders. We have a good crew working here. We’re like family. We give each other a lot of guff, but we look out for each other. We talk a lot-- about everything.” “I have three gals in their 90’s who ride the Dial-A-Ride. When I open the bus door and they see me, one of them calls out, ‘There’s the troublemaker.’ ‘Shh,’ I say, ‘You’re going to give me a bad name.’ They laugh, ‘You already have a bad name.’” If you see Gaylen, please don’t give him a hard time about being named Driver of the Month. As you can guess, he’s pretty sensitive to teasing. But do let him know, you appreciate him. It’s drivers like Gaylen that make Arrowhead Transit such a good transportation system.
